CHOPPED THAI CHICKEN SALAD Author: Pinch of Yum Serves: 4-6

INGREDIENTS Salad

      

2 boneless skinless chicken breasts 1 small head green or white cabbage (2 cups shredded) 1 large carrot (1½ cups shredded) 1 green papaya (1½ cups shredded) ½ cup fresh cilantro ½ cup green onions ½ cup chopped peanuts

Dressing

         

2 cloves garlic 3 bird’s eye chili peppers (sub ½ teaspoon minced hot pepper) 2 tablespoons soy sauce 2 tablespoons vinegar 2 tablespoons sugar 1 tablespoon fresh lime juice 1 tablespoon oil ½ teaspoon fish sauce ¼ cup peanut butter ¼ cup water

Bring a large pot of water to boil. Add the chicken breasts, cover, and cook for 15-20 minutes. When the chicken is done, remove from heat, drain water, let cool, and shred with two forks. Chop the cabbage into very thin pieces, like it would be for coleslaw. I did this by rolling up several leaves together and making thin vertical slices across the roll and then chopping them once horizontally. Peel and grate the carrots. Cut off the skin, remove the seeds, and grate the papaya. Roughly chop the cilantro and green onions. Toss the chicken and vegetables in a large bowl and keep chilled. Mince the garlic and chili peppers. Place garlic and peppers in a small mixing bowl with the soy sauce, vinegar, sugar, lime juice, oil, and fish sauce. Whisk until smooth. Add the peanut butter and water and whisk again until smooth and creamy. Toss the salad with the dressing. Add the crushed peanuts. Serve chilled. Leftovers can be stored in the fridge for up to one day. For best results, keep the leftover salad and dressing separate until ready to serve.

Now that the days are warmer, it must mean that the time for Spring cleaning has arrived. One of the areas that tends to get overlooked is the refrigerator. Bacteria and odors from drips and stains can spread through compartments and into other foods, putting your health at risk. Taking the time to clean out the refrigerator will ensure that your food stays fresh longer, will keep it clean, and will also keep your fridge from harboring bacteria that can lead to odor. Start by taking all of the food out of the refrigerator and unplugging it. Remove the drawers and trays. Wash and dry each of these, and set aside. It is suggested that you use the washing solution printed below. It is great for cleaning and the vinegar and baking soda will remove any odors. Using dishwashing soap can leave residue, which can leave foods with a distinctive taste and smell, so it should be avoided. Starting at the top, wipe down all of the walls of the refrigerator removing any dried on foods or spills. Be sure to use a toothbrush to get into those hard to reach corners and cracks. Regular Cleaning Solution This is a great solution for cleaning and removing odors from the fridge. Baking soda is a deodorizer and naturally abrasive so it’ll help remove the stuck on yuck. Vinegar is a deodorizer, and its acidity will help cut through the grease and dirt.   

¼ cup baking soda ½ cup vinegar 1 quart of warm water (*Caution: Hot water can cause cold glass trays to crack. Let the trays sit at room temperature for a while and use warm water instead of hot.

When dry, replace all of the trays and drawers. Go through your food items and check the expiration dates and toss anything that is out of date or smells off. If you aren’t sure on the safe shelf life of some refrigerated items, you can check www.foodsafety.gov for a comprehensive cold storage chart. Now organize for visibility and accessibility. Food that is easily seen is less likely to be overlooked and eventually turn into a science project. Be sure to leave space between items to be sure that you have proper flow of chilled air to keep your food at its best. Also, be sure to know which foods should be separated. Apples give off ethylene gas as they ripen, for example, which can cause green beans to over ripen quickly. On the other hand, apples are overwhelmed by the odor and taste of onions. A smelly refrigerator filled with expired, decaying food is sure to ruin anyone’s appetite. Keeping your refrigerator clean can be a pretty quick task that can help your foods last longer, and help keep odors from coming to stay in your refrigerator.
