“ Kick-Off” Party 6:30pm Saturday, April 5 at Stirling Hall We’re changing things up this year by turning the Saturday Night Pairings party into a party night that everyone can participate in. The 7 piece MPIRE Band will provide the musical entertainment to make the event a real dance Party. Chef Andrew will create a wonderful three course dinner for everyone’s culinary delight. It’s an evening designed for ALL Members to participate and kick off the event.

Table Talk with Chef Andrew Coniglio Spring Salad with Florida Grapefruit Vinaigrette With springtime right around the corner it is a perfect time to enjoy a light salad with a fresh Florida ingredient. Florida Grapefruits have a thinner rind and are sweeter than the California variety. You can buy a spring salad already mixed at any grocery store.

Florida Grapefruit Vinaigrette • 2/3 Cup Fresh Grapefruit Juice • 2 Tablespoons Cider Vinegar • 1 Tablespoon Honey

• ½ Teaspoon Salt • ¼ Teaspoon Black Pepper • ¾ Cup Blended Olive Oil

Salad • 1 Bag Premixed Spring Salad • 4 Whole Shallots • 2 Teaspoons White Sugar

• 1 Teaspoon Oil • 6 Cherry Tomatoes (Cut in Half) • 2 Ounces Goat Cheese

1. Peel shallots, cut in quarters if large, and toss with a small amount of white sugar and oil. 2. Sauté shallots in pan until caramelized. Set aside and let cool. 3. Combine all ingredients for vinaigrette, except oil, in a blender and turn on low setting.

4. Slowly add oil to blender. 5. Dress leaves with vinaigrette and garnish with tomatoes, roasted shallots and goat cheese.

Nature Watch is written and photographed by Golf Operation Dave Noel The North American River Otter is the only river otter found north of Mexico. Its luscious pelt, which is waterproof and allows the river otter to regulate its temperature, was also a staple of the French fur trade in the 1700-1800s and has drawn hunters for hundreds of years. The color of its fur ranges from grey and white to brown and black. River otters are very playful animals and can very often be seen playing games. Social groups are typically made up of adult females and their pups. However, there are also groups of individual males. River otters are most active at night.
