Let me start by congratulating John Senden for winning the 2014 Valspar Championship on our Copperhead Course – we’re already looking forward to another vibrant and colorful event next year. We have of lots exciting and fun family activities this month. Head to the Osprey Bar in Market Salamander Grille for drinks, bar bites and to keep up with the NCAA Final Four or The Masters Tournament. Valspar Championship

John Senden takes out Valspar Championship by Paul Barbieri, Omnisport

Australian John Senden has ended an almost eight-year drought, winning the Valspar Championship by a stroke over Kevin Na in a dramatic finale on Sunday at Innisbrook. Senden found himself two shots off the pace heading into the final day after a sizzling seven-under 64 third round put him right in contention after a solid but unspectacular opening two days.

But the Australian’s one-under 70 score on Sunday against a backdrop of wild and windy weather proved enough to give him victory as Kevin Na missed a long birdie putt on the final hole to force a play-off. The result was Senden’s first PGA Tour victory since taking out the John Deere Classic in July 2006 as he earns qualification for the Masters next month. The 42-year-old was part of a three-way tie for the lead heading into a brutal final three holes, but lifted his game to fire off birdies on the 16th and 17th before salvaging par on the 18th. Senden’s chances of victory looked particularly doubtful as he drove into the trees on the 16th, but he finished the hole with a magic shot for birdie, before a 20-foot birdie putt on the 17th all-but secured victory.

The main driving range is open from 7am to 7pm except Wednesdays and Sundays when it will close at 6 pm. The night range will reopen in November.

TENNIS AT INNISBROOK Women’s Open USTA Pro Circuit Tennis Tournament We had a repeat champion in Sunday’s All-American singles final for the Innisbrook $25k Ladies Challenger on the USTA Pro Circuit. 2012 Champ Grace Min took home the crown with a 75, 60 victory over Nicole Gibbs in front of 200 fans at the Innisbrook Tennis Center. The 19-yr old USTA product is currently ranked 183 in the World and was the #4 junior in the World in 2011 when she won the US Open junior title. Min played main draw in both the French and US Opens in 2013 and reached a career high world ranking of #126.

Runner-up Gibbs, 21, of Cincinnati, won her back-to-back college titles while at Stanford. She’s currently ranked 192 in the World and has been as ranked as high as #166. Gibbs played in the main draw in the US Open in 2012 and 2013. Gibbs has 3 ITF Pro Circuit titles to her credit.

Table Talk with Chef Andrew Coniglio Barolo and Tomato Braised Rabbit Legs with Celeriac Puree For April I wanted to share a dish that represents me in a way. My last name, Coniglio, means rabbit in Italian and as Daffy Duck says “It’s Rabbit Season” right now. When cooking rabbit you want to keep in mind that it is very mild in taste so by using bold flavors and braising it will add flavor. Celeriac (Celery Root) Puree is an excellent accompaniment as it adds a bit of sweetness and helps smooth out the rest of the dish.

Serves 8 • 16 each Rabbit Legs (front shoulder) • 3 each Shallots (diced) • 2 each Medium Carrots (diced) • 3 ribs Celery (diced) • 8 oz Pancetta or Bacon (diced) • 3 sprigs Fresh Rosemary • 3 sprigs Fresh Thyme • 3 each Bay Leaves

• 8 each Roma Tomato (diced) • 3/4 bottle Barolo Red Wine • ¼ cup Chicken Broth • ¼ pound Butter • 3 pounds Celeriac Root • 2 pounds Russet Potatoes • 1 quart Whole Milk • ½ pound Butter

Rabbit

Celeriac Puree

1. Season (salt and black pepper) and sear rabbit legs until golden brown in a little olive oil over medium heat, remove from pan

1. Peel and dice the celeriac and potatoes

2. A dd shallots, carrots, celery, pancetta/bacon and herbs 3. Cook until pancetta is brown, add tomatoes 4. Deglaze with red wine and bring to a simmer 5. A dd the chicken broth and seared rabbit legs back to pan, cover with foil and place in a 325 degree oven for two hours

and white pepper 3. Simmer until tender 4. P lace cooked celeriac, potatoes and milk in food processor with butter until smooth 5. C heck seasoning (tip: if your puree is too

thin you can add instant potato flakes to thicken to desired consistency)

6. C heck for tenderness and add butter before serving (the butter will add a sheen to the sauce and round out the red wine flavor)

With that in mind, here are a few friendly and helpful reminders. • Please watch for children when entering the area around Loch Ness Monster pool. Extra caution should be taken at the cross walk. • Members should have their Membership Identification cards with them at all times. • When entering Loch Ness pool please stop and present your Membership card at the desk. • Members may have up to 4 additional guests per family Membership. • No coolers are permitted into the pool area. • Always present your Membership card when purchasing food and beverage. • Towels will be limited to 1 per person.

Nature Watch Spring Bird Banding

Nature Watch is written and photographed by Golf Operation Dave Noel April is the peak of spring migration bringing the neotropical birds by the thousands. Birds returning to the far north to nest will make a quick stop to refuel before returning to the air. Along the coast of west Florida they are looking for patches of hardwoods and swamps to feed and rest. One park that attracts the migratants is the Hammocks Park in Dunedin, Florida. For three years Jim McGinity and his team of volunteers have banded and released birds in this park. This is an ongoing research station for the park and also a chance for the public to see these very small warblers. The birds are caught in fine mist nets in the early morning hours. Then they are checked for feather wear, age, fat content, measured and new silver bands are placed on their legs for tracking. On our first day of spring banding, March 23, we were able to band over 40 birds. Please join us on Sunday mornings in April from 7am until noon. Bring your camera, bug spray and children to learn more about these migratory birds.
