AERIFICATION:

SOMETIMES IT’S GOOD TO VENT Presented by the Golf Course Superintendents Association of America

It’s a perfect, sunny morning and you’ve just reached the first green in regulation. You feel great and you know you’re within birdie range. Then, you see them, those little holes in the green. Arrggh! They’ve just aerified the course, and it’s going to ruin your round, right? Well, maybe not. Consider the fact that PGA TOUR legend Tom Watson shot a sizzling record 58 at his then-home course, Kansas City Country Club, just days after the greens had been aerified. Consider also that aerification is merely a short-term disruption that has long-term benefits for the course. When you see them, remember that without those little holes, the greens would eventually die. Preventative maintenance is an integral part of successful golf course management. Golfers view aerification as an inconvenience that takes the greens out of play for a day, pulling cores from the greens and leaving holes that can affect putting for many days before healing. To add insult to injury, aerification is best done in many parts of

the country during mid-summer, at the height of the playing season and when most greens are in prime condition. But a golfer needs to understand how important aerification is to producing healthy turf. Aerification achieves three important objectives. It relieves soil compaction, it provides a method to improve the soil mixture around the highest part of a green’s roots and it reduces or prevents the accumulation of excess thatch. Like so many things, the quality of a good putting green is more than skin deep. In fact, the condition of a green has a lot to do with what goes on below the surface. In order for grass to grow at 3/16-inch, it must have deep, healthy roots. Good roots demand oxygen. In good soil, they get the oxygen from tiny pockets of air trapped between soil and sand particles. Over time, the traffic from golfers’ feet (as well as mowing equipment) tends to compact the soil under the putting green – particularly when the soil contains a lot of clay. When soil becomes compacted, the air pockets on which the roots depend are crushed, and the roots are essentially left gasping for air. Without oxygen, the grass plants become weaker and will eventually wither and die. Aerification is a mechanical process that creates more air space in the soil and promotes deeper rooting, thus helping the grass plants stay healthy. In most

cases, it’s done by removing ½-inch cores (those plugs you sometimes see near a green or in fairways) from the compacted soil, allowing for an infusion of air and water that brings a resurgence of growth. The spaces are then filled with sand “topdressing” that helps the soil retain air space and makes it easier for roots to grow downward. Older greens often are constructed of soils with significant amounts of silt, clay and fine organic particles that are prone to compaction. Filling aerification holes with sand improves drainage and resists compaction. The periodic introduction of sand to a green’s top layer can over time, avoid or postpone expensive rebuilding or renovation of greens. Finally, growing of turf adds to a layer of organic matter on the surface. This layer, called thatch, is an accumulation of dead stems, leaves and roots. A little organic matters makes for a resilient green, but too much invites diseases and insects. Topdressing with sand can prevent thatch buildup, and aerification is one of the best ways to reduce an existing layer and prevent an excess of thatch from becoming established. Other aerification techniques use machines with “tines” or knives that simply poke holes through the soil profile. A new technique even uses ultra high-pressure water that’s injected through the soil profile to create small holes that relieve some compaction but heal quickly. There are many types of aerifying machines with different attachments that address different problems in the various stages of the life of a green. So the next time you’re ready to scream when the aerifiers are brought on the course, remember that a little preventative maintenance produces the best greens over the long haul. The bottom line is that aerification is a necessary practice. But before you curse the superintendent for ruining your day, just think of Tom Watson.

On July 28th, SCG fitness, along with SCG Communications hosted the Post-Pandemic “Pick me Up” event at the Sonoran Plaza. For those who attended, thank you! We had a great time in a group setting, applying physical activities based in 6 pillars of wellness; strength, endurance, flexibility, balance, cognition, and mindfulness. After discovering some fresh ways to get our move-on, we thought focusing on each of these pillars over the next several months might enhance learning and adoption of new ideas with regard to benefitting your health. 14

Physical strength is defined as the amount of human force used against a mass. Strength can also be described as an application of Newton’s 2nd law of physics; Force = MA (Force = Mass x Acceleration). When we talk about strength as a principle of physical wellness, we are talking about each individual’s need to retain or gain strength that promotes proper physical function, and allows one to live autonomously; successfully executing activities of daily living (ADL), and adapted to chronic conditions. After the age of 30, those who are sedentary can lose 3-5% of their muscle mass every decade. Resistance exercise (strength training) is a primary solution to offsetting muscle mass decline. Loss of muscle strength can inhibit mobility and balance which increases the risk of falls. Progressive resistance training 2-3 times per week helps improve bending, lifting, pulling those boxes off the top shelf of the closet; improves sleep and keeping up with your grandkids. No one from Microsoft, Apple, AT&T, Verizon, AOL and especially the Social Security Administration will ever call you on the phone to say your account has been compromised or asking for credit card or other personal information. If you receive one of these calls just hang up.

celebrating food WITH CELEBRITY CHEF JET Sun Health Communities, which owns and operates The Colonnade in Sun City Grand, partners with Morrison Living for the operation and management of all food service on our campus as well as at Grandview Terrace and La Loma Village. Besides having great food and access to a large national culinary resource for great recipes and talent, Sun Health frequently has the opportunity to host world-famous chefs as part of the Celebrity Chef Series.

Late last month, Food Network star Chef Jet Tila provided his well-known story telling through food demonstrations on our three campuses and the residents and team members had a blast. Chef Jet is internationally celebrated for his culinary expertise. He is an Emmy and James Beard nominee. He is also a best-selling author who grew up in the first family of Thai food. Jet was appointed as the inaugural Culinary Ambassador of Thai Cuisine by the Royal Thai Consulate, the first-ever chef to represent his country’s culture and cuisine. His culinary operations include serving as vice president Culinary of Pei Wei Group’s 130 restaurants as well as the managing partner of Dragon Tiger Noodle Company, in Las Vegas. His food reaches millions of people a year. Jet appears as a co-host of Iron Chef America and recurring judge on Food Network’s Cutthroat Kitchen, Chopped, Beat Bobby Flay and Guy’s Grocery Games. As well as an array of shows ranging from the Today, MasterChef, Rachel Ray and he holds six culinary Guinness World Records. Sun Health sat down with Chef Jet and asked him a few questions about his favorite subject – food. “I think food plays into living longer, healthier more purposeful lives,” Jet said. I have traveled to many senior living communities and I have parents who are the age of many of the residents at The Colonnade.” 18

For Jet, food is a time to socialize, connect and entertain. “A lot of people watch me on TV or watch the other celebrity chefs that Sun Health brings in as part of the Celebrity Chef Series,” Jet said. “It’s dopamine and happiness and happy hormones vs. stress hormones. Food really does all that. It’s therapeutic.” He added that doing presentations like the one at The Colonnade is a lot of fun. “I really have a dream job being able to come to Sun Health and connecting with people,” Jet said. “I come from a culture that respects and has deep reverence for their elders and I missed this opportunity with my grandmother and grandfather. So, this is a way for me to re-live it. It’s therapy and hopefully somewhere up there I am connecting back with my grandparents.” The Colonnade Executive Director Nina Louis and Dining Services Director Richard Nix welcomed Chef Jet to the community and also praised Executive Chef Kelvin Wong, who has been with The Colonnade

for 10 years. Chef Jet worked with the culinary team to plan out both the food demonstration and a meal for all of the residents at the community featuring Jet’s signature dishes. “We have a great culinary team here at The Colonnade who take care of our residents every day,” Richard said. “And, it’s always a lot of fun and a wonderful experience to work with famous chefs like Chef Jet and have him work side-by-side with our team.” Check out Sun Health on Facebook to watch some of Chef Jet’s recent demonstrations on our campuses. GRILLED PEACH, ONION AND BACON SALAD WITH BUTTERMILK DRESSING

Total: 45 mins Yield: 8 INGREDIENTS n 1/4 cup mayonnaise n 1/4 cup sour cream n 1/4 cup buttermilk n 2 tbsp. chopped mint n 2 tbsp. chopped parsley n 2 tbsp. snipped chives n 1 tsp. apple cider vinegar n Salt & Fresh ground pepper n 1 lb. thick-sliced bacon n 1/4 cup light brown sugar n 1/2 tsp. cayenne pepper n 3 pounds Vidalia or other sweet onions, cut into 1-inch-thick slabs n Extra-virgin olive oil, for brushing n 4 large ripe peaches, cut into 1/2-inch wedges DIRECTIONS Step 1 Preheat the oven to 325°. In a small bowl, whisk the mayonnaise with the sour cream, buttermilk, mint, parsley, chives and vinegar and season with salt and pepper. Refrigerate Step 2 Line a large rimmed baking sheet with parchment paper. Arrange the bacon slices on the sheet in a single layer and sprinkle with the brown sugar and cayenne. Bake for about 25 minutes, until caramelized (the bacon will crisp as it cools). Let cool, then cut the bacon into bite-size pieces. Step 3 Meanwhile, light a grill or preheat a grill pan. Brush the onions with olive oil and season with salt and pepper. Grill over moderate heat, turning occasionally, until softened and browned, 10 minutes. Separate the onions into rings. Brush the peaches with olive oil and grill over moderately high heat until tender, 2 minutes. Transfer to a plate. Step 4 In a large bowl, toss the onions with the peaches and bacon. Total: 3 hrs 44 mins Yield: Serves 10 INGREDIENTS n ¾ cup graham cracker crumbs (about 5 cookie sheets) n ¼ tsp. salt, divided n 1 tbsp. unsalted butter n 3 ½ ounces white chocolate, finely chopped n Cooking spray n 5 ounces 1/3-less-fat cream cheese, softened 1 n /3 cup powdered sugar n ½ tsp. vanilla extract n 2 cups frozen fat-free whipped topping, thawed n 2 tbsp. seedless peach spread n 1 tbsp. peach schnapps n ½ tsp. fresh lemon juice n 3 medium peeled peaches, pitted and cut into 1/2-inch wedges DIRECTIONS Step 1 Combine crumbs and 1/8 teaspoon salt in a food processor; process until combined. Place butter and chocolate in a microwave-safe bowl. Microwave at HIGH 30 seconds, stirring until chocolate is smooth. Add to processor; pulse until combined. Press mixture into bottom and up sides of a 9-inch pie plate coated with cooking spray. Freeze 20 minutes or until set. Step 2 Place cream cheese, sugar, and vanilla in a medium bowl; beat with a mixer at medium speed until smooth. Gently fold in whipped topping. Carefully spread filling over bottom of crust. Place fruit spread in a large microwave-safe bowl; microwave at HIGH 30 seconds or until bubbly. Stir in remaining 1/8 teaspoon salt, schnapps, and juice. Add peach wedges; toss to combine. Established as a National Monument in 1915, Walnut Canyon preserves numerous cliff dwellings located along the limestone ledges of this deep canyon in the Flagstaff region. Evidence of human use of these dwellings can be traced back 2,000 years, when the presence of water in this dry land made the canyon rare and valuable to its early human inhabitants. Nestled into the rocky peak of Mount Lemmon sits the tiny town of Summerhaven, home to the Iron Door Restaurant, where we’ll enjoy lunch on self. Pull up a chair on the patio surrounded by flowers and hummingbirds and treat yourself to a day away from the heat of the Valley.

THE LAKES OF PRESCOTT & WHISKEY ROW AUGUST 30 | MONDAY | $95 PER PERSON There are four beautiful lakes in Prescott: Goldwater, Watson, Willow and Lynx. We’re going to visit them all, with a stop first on Prescott’s famous Whiskey Row for lunch on self, before we begin this exploration. After lunch we’re off to Goldwater Lake, the jewel in the crown of the Prescott National Forest. From here we’ll head northeast to enjoy a spectacular driving tour of Watson and Willow Lakes. Known as the twin lakes, Watson and Willow are in the Granite Dells of Prescott, an area so scenic that it has seen more than its fair share of western movie shoots and was once home to the very popular Garden of the Gods Resort. From here we’ll make our way to Lynx Lake, in the cool and pine-scented Bradshaw Mountains. So completely different from the twins, Lynx Lake is heavily wooded, and surrounded by tall Ponderosa pines, scrub oak and Manzanita. This lovely area is

home to a wide variety of wildlife, offering a fantastic connection to nature and a dramatic ending to our summer escape!

EXPLORING THE MOGOLLON RIM ON HORSEBACK SEPTEMBER 2 | THURSDAY | $155 We’re heading toward Payson to explore Arizona’s Rim Country, a region that has been largely preserved as national forest. It is a land of extreme beauty, and it is rich with wildlife. Upon arrival at Kohl’s Ranch Stables, we’ll meet our capable and well-trained horses, and set out on a 1.5-hour journey to the top of Turkey Mountain! There is no better way to explore this region than on the back of a sure-footed horse! The scenery is remarkable, winding past Indian Springs, through Juniper and Ponderosa pines. At the top of Turkey Mountain, we’ll be rewarded with panoramic views of the Mogollon Rim, and a silent and ancient forest—home to the rare Alligator Juniper, and huge trees that are believed to be at least 700 years old. Riders on this trail often see black bears, bobcats and the Rocky Mountain elk, along with both mule and whitetail deer, javelina and coyotes. The Rim is also home to over 239 species of birds, including eagles and hawks. We’ll explore a trail that winds us around Turkey Mountain before returning to the stable. After our ride we’ll enjoy lunch on self, at Margarita’s Mexican Restaurant in Payson, offering delicious and moderately priced lunchtime specials. After lunch we’ll explore more of Arizona’s beautiful Rim Country as a driving tour, with stops at some of the most dramatic overlooks. This is going to be a bucket list of a tour, limited to a very small group—and you need not be an experienced rider—our trusty horses do all the work!

THE BISBEE BLOOMERS GARDEN TOUR SEPTEMBER 4 | SATURDAY | $99 Nestled into the Mule Mountains of southeastern Arizona, picturesque Bisbee offers a cool day away from the heat of the Valley. We’re looking forward to the 19th Annual Bisbee Bloomers Garden Tour—a quirky annual event that offers us a rare glimpse into 8-10 secret gardens of Bisbee’s colorful residents. This year’s focus will be on the gardens of Old Bisbee and Warren— both historic districts—plus a bonus garden called the Firewise Demonstration Garden in San Jose. We’ll also enjoy lunch on self in

More remote and less developed, the North Rim attracts far fewer tourists than the South Rim. And at an elevation ranging from 8,000-8,800 feet above sea level, the North Rim forms the edge of the Kaibab Plateau— offering some of the most spectacular views in the world. We’ll explore the North Rim as a driving tour along paved roads, stopping at important viewpoints. We’ll enjoy lunch on self at the Grand Canyon Lodge, home to two distinctly different restaurants. Late afternoon we’ll head back to the hotel and take some time for a refresh before gathering for our own Happy Hour, included—then we’re off to enjoy dinner on self, with several restaurants to choose from. Day Three: Breakfast is included at the hotel, then it’s bags out and we’re back on the road—with a stop for lunch on self and plenty of great sightseeing along the way. THE SONOITA/ELGIN WINE TRAIL SEPTEMBER 22 | WEDNESDAY | $140 Journey with us through the rolling grasslands of Southern Arizona to explore the Sonoita/ Elgin Wine Trail. At an elevation of 5,000 feet, surrounded by the Huachuca, Whetstone and Santa Rita Mountains, this region offers stunning views in every direction. We’ll visit Deep Sky Winery where we’ll enjoy a flight of award winning wines at their indoor/ outdoor tasting bar, and a light lunch on their wraparound patio overlooking a wide grassy meadow. And of course, it’s all included! Later we’ll take the road less traveled with a visit to Rune—an off-grid tasting room—and one Sonoita/Elgin’s newest and most exciting

wineries. We’ll enjoy a fabulous flight of wines at Rune, included, before setting out again to see as much of this amazing region as time allows. This tour’s gonna be a blast!

BEARIZONA SEPTEMBER 27 | MONDAY | $115 This trip just keeps filling up, so we just keep on offering it! We’re on our way back to Bearizona—Arizona’s most exciting wildlife park—to enjoy a remarkable closeup experience with a wide variety of animals that are indigenous to North America. We’ll view more than three miles of majestic bison, wolves, black bears and more—in spacious, natural environments—all from the comfort of our own vans. Later we’ll explore Fort Bearizona, a walk-through area offering an up-close look at jaguars, grizzly bears and an assortment of smaller animals. Lunch is on self, with two very different eateries to choose from, including Canyonlands—a 6,000 square foot themed restaurant—featuring soaring canyon walls and ancient ruins, a 25-foot waterfall and breathtaking views of Bearizona’s jaguar exhibit. The Drama and Comedy Club is looking forward to a return to normal in our next season. Most productions planned for this past season have been re-scheduled for the coming year. Fishing trips are organized to areas in Arizona such as day trips to Lake Pleasant and the Salt River and overnight to the White Mountains, Lees Ferry, the San Juan River in New Mexico, Alaska and Canada. The Club assists in stocking fish at Lake Nine and has directions and fishing equipment for kids or grand kids to fish Lake Nine. The Club also supports community efforts including Healing Waters, Adaptive Kids Fishing, and the Veteran’s Home fishing outing. A summer salute to Garden Club members and others as well! June finds Club members on vacation (no meetings in summer). We’ll be “vacationing” until the next Garden Club meeting on Thursday,

October 21, 8:30-11 am in the Gila Room at Cimarron Center; we hope to be meeting in person by Fall! Club dues remain at $10/year pp and are payable at the first meetings of the garden club year (even January, hoping our Canadian friends will again be able to join us). Garden Club meetings are the third Thursday of the months of October, November, NO MEETING in December. Then we begin our “New Year” 2022 - really(?) on January 20, Feb, March, April, and May. We hope to be planning a field trip in the Spring! There has been an almost 2-year gap in Garden Club in-person meetings, so we ask volunteers to again bring goodies to share at our brunch table, “plants & things” for and helping at the plant giveaway table. We’ll appreciate help with starting our coffee pots before the meetings, they’ll be filled with water, just plug in (!). Did we mention a greeter would help welcome previous members and new members, as well as visitors who want to “check us out” for only ($1)? We will miss our friend Gloria Mandracchia and her big smiles and hugs very much at the plant table. Club Website: www.ladiesgrandniners.golfgenius.com Meeting information: The Ladies Grand Niners membership year is October 1-September 30 each year. We play golf in a shotgun format on Tuesdays, November through May. Based on availability, members sign up to play at either 12:30 or 3:00. In the summer months, members can choose to play 9-holes of golf between 6–7AM or 18 holes at 7 AM. (Please note that, with restrictions related to COVID-19, we have been playing with tee times instead of shotguns since mid-March 2020. The format is subject to change.) Membership Ladies Grand Niners is processed through Arizona Golf Association. Members are required to have an active membership in the Arizona Golf Association (AGA), select Ladies Grand Niners as your club and be a resident of Sun City Grand with a valid Community Association Member (CAM) number. The LGN membership rate is discounted for those who join after April 1. Members are required to have a GHIN handicap index. If you do not have a GHIN handicap index, you must establish one. A 9–hole handicap index is also required to be eligible for prizes in any of our monthly Play of the Day events and for our annual President’s Cup Tournament. An 18-hole World Handicap System (WHS) GHIN Handicap Index is established by playing a six 9-hole rounds or a combination of 9 and18-hole rounds to equal 54 holes. The 18-hole handicap index is converted to a 9-hole handicap index for our league. A member must play with the Ladies Grand Niners a minimum of 5-9-hole rounds in order to be eligible to play in the annual President’s Cup tournament (held in March each year). Club Description: Ladies Grand Niners has over 200 members. We prefer to play 9-holes of golf instead of the traditional 18-holes of golf. Although Desert Springs is our home course, we also play Cimarron, Granite Falls North and Granite Falls South during our season. GLGA is a year-round league. You must have a current handicap or, establish a handicap within 30 days of joining the league in order to compete in weekly (Tuesday) play events. The Sun City Grand Mah Jongg Club is again open for play! We play in the Hopi Room at the Chaparral Center on Tuesdays from 12:00 noon to 4 p.m. and on Wednesdays from 5:45 p.m. to 9:30 p.m. We’re playing with the new 2021 card, which became effective April 1, 2021. We play according to National Mah Jongg League rules, with four people to a table. Mahjongg is a game of skill, strategy, calculation, memory, and involves a degree of luck. It is an excellent game to keep your brain lively. Our club offers lessons each year, and we will be giving lessons starting in October of this year. Lessons are a good way to learn the game in a more relaxed setting. If you would like to be on the list for lessons, please email us at scgmahjonggclubl9@ cox.net. One of the nice things about playing with us is that you can arrive or leave at any time during play after you have played a round (4 games) at a table. After you are East, you go to the front of the room and wait for the next available table. It’s a great way to meet other members and make new mah jongg friends. PET CLUB

The Sun City Grand Pet Club is open to all residents of SCG who are pet lovers. You do not need to be a current pet owner to join. Our meetings are designed as both an informational and social interaction among members. Guest speakers talk on subjects ranging from pet health, training, rescue, pet care and community programs. Our yearly dues of $10 per member covers our yearly donations to five community pet programs. Pet Club and Dog Park forms are back on the web! The Pet Club Membership Form, Dog Park Registration Form and Dog Park Incident Report - are all available on the Sun City Grand website, www.suncitygrand.com. Dog Park applications and membership do not automatically enroll you into the Pet Club, so be sure to pick up both applications if you desire to participate in both. It’s still summer, despite all the “back to school” hype! We welcome everyone to stop by our “cool” studio and enjoy our member displays, there is something new hanging on our gallery wall each month and a friendly member there to answer any questions. Our Studio remains open during the summer months for photo processing, printing, matting, SIG’s (Special Interest Group) activities, etc. • We also hold monthly “virtual” photo shoots” where members are challenged to take photos following a theme and then enjoy the pleasure of sharing their photographic discoveries virtually. August’s themes are Tiny & Circular; so think creatively, (perhaps in a tiny circle?) Grab your smartphone (or any camera of your choice) and have fun! • We had such a great response to our photo challenges last summer, we decided we would offer them again. The Grand Pickleball Club is a great place to meet other fun-loving active residents, and get a great workout! There are 22 pickleball courts located at the Cimarron Center. The club offers introductory lessons and has ongoing group lessons, clinics and ball-machine drills all designed to help you learn pickleball skills. The Sun City Grand Music Club and Drama and Comedy Club justifiably receive accolades for the many fine musical, dramatic and comedy shows that they bring to our stages each year. But it’s true for any live entertainment venue – the shows are only as good as the sound and lighting teams make them. We are currently looking for residents who want to practice their existing skills or learn new ones for the upcoming season starting in the Fall 2021. And the best part is absolutely no prior experience or knowledge is required. We will train anyone who is interested in learning the lighting and sound systems. With the many performances we are planning well into 2022, and the different roles each require, there will be much need for more trained technical people. This is a great way to learn some new skills and become a member of the Grand’s entertainment team. If you have ever wanted to be a part of Live Theater, this is your opportunity. Keep Dangerous Traffic Out What is the purpose of a firewall and is it important that I turn it on? Larry, resident of SCG Dear Larry, A firewall’s main purpose is to allow non-threatening traffic in and to keep dangerous traffic out. It filters all network traffic between your devices, home network, and the internet. There are basically two types of Firewalls: hardware and software. When you connect your device/s—Apple, Chromebook, and/or Windows devices —to the internet, it is generally through a router (either wireless or wired) which allows your devices to share a single internet connection. Routers have a hardwarebased firewall protection and assign a unique local IP address to every device connected to the router. This “local IP address” provides a layer of protection against unauthorized access from others since it is only accessible to the devices on that local network. In addition, all three operating systems (Apple, Chrome, and Windows) have their own firewalls built into their operating systems to add an additional layer of protection to monitor outbound and inbound traffic for suspicious activity. n To access the Mac Firewall, go to Settings > Systems Preferences > Security and Privacy > Click Firewall Tab. Chromebook has its own internal firewall and generally there is nothing needed to reconfigure it. If you wish to view the basic settings, go to Menu > Administration Menu > Firewall. To check Windows Firewall, go to Settings > Updates and Security > Windows Security > Firewall and Network protection > Private Network (for homebased computers).

If you manually perform updates, it is essential that you update your device whenever security updates are available. Better yet, configure your device to automatically perform system updates as soon as they are available.

It is essential that you also employ a virus protection program to protect your device against viruses and malicious software (malware). Be advised that the top antivirus packages today include more than just an antivirus scanner. They come with features that provide additional protection, e.g., their own network firewall. Many also include a VPN (virtual private network), password manager, parental controls, etc. These extra features are built to provide improvements to your devices’ own built-in security systems. The more secure your device, the less likely you are to get hacked and/or expose your sensitive data to online crooks. If you want an additional layer of security, to determine which product might be right for you, check your favorite tech sites to review the latest antivirus products that offer the best security, the best
