s Is e c c u S t e e w S f The Wonderful o 75 Years World of

n 1937, Sam Taustin, an ambitious young entrepreneur opened the first Candy Kitchen on 9th Street in Ocean City. America was beginning to emerge from the Great Depression and folks had a taste for the sweeter things in life. Customers would come from near and far to indulge in their homemade confections. Soon there were eight boardwalk shoppes, each operated by one of Sam’s eight sisters. Today, 75 years later, Candy Kitchen remains a family owned and operated business with 20 locations along the Delmarva beaches from Rehoboth Beach, DE to Virginia Beach, VA. Their salt water taffy, fudge and chocolates are still made by hand, the old-fashioned way with the freshest, finest ingredients and no preservatives, at their factory on 53rd Street, in Ocean City. The success is in the skill at Candy Kitchen. The salt water taffy is cooked and cooled, pulled using a taffy hook then wrapped into pieces and packaged. Their homemade, creamy fudge is made in copper kettles, from the old family recipe. Their chocolates are hand-dipped and decorated with precision by skilled chocolatiers. One taste and you will understand the craftsmanship in each piece. Over the past several decades, Candy Kitchen’s image has slowly evolved into what you see today, a bright modern, fun and family-friendly atmosphere, which alongside their quality products, has proven the company successful. Candy Kitchen not only indulges your sweet tooth, their shopping experience completely satisfies all of your senses. They continue to stay on the cutting edge of the latest trends with their extensive line of gifts, novelties and toys, which completes their unique retail ambiance. Candy Kitchen has become a tradition that many families share together while vacationing in Ocean City. They take great pride in providing excellent customer service time and time again. Candy Kitchen offers something for children and people of all ages. Whether you’re 3 or 93, you can enjoy a delectable treat from one of their innovative shoppes.

The 30-Year Tale of M.R. Ducks T

here have been an abundance of fish stories told and beautiful sunsets enjoyed, since the first day of June in 1982, when the open air, Victorian-style gazebo bar, known now as M.R. Ducks, was built at the end of Talbot Street in the original section of Ocean City, overlooking the Sinepuxent Bay. When proprietors Lloyd and Gail Lewis purchased the Talbot Street Pier & Inn from Lloyd’s aunt and uncle in 1972, the business was strictly a charter fishing company and small hotel, where Lloyd had worked each summer for over two decades. When they bought the business, the Lewis’s added a bar, which became an instant success for the O.C. locals, as well as many of the visitors who came to town. The bar remained nameless until the end of the first season, when the name “M.R. Ducks” was chosen from an old duck hunter poem, told in Eastern Shore dialect: M.R. Ducks M.R Not O.S.A.R C.M.Wangs L.I.B M.R. Ducks

Translation: for those unfamilar with the old local dialect.

Them are ducks, They are not! Oh, yes they are! See them wings? Well, I’ll be! Them are ducks!

Not long after the debut and acceptance of the M.R. Ducks’ name, the bar designed a T-shirt for the staff to wear while working, which soon became a “must have” among the locals and visitors. As the popularity and demand grew for the shirts, three motel rooms were converted into a store to meet the demands for the M.R. Ducks apparel division. Each year, the shirt design changes with a different pair of ducks, taken from an original piece of artwork commissioned by a nationally-renowned artist. To celebrate the 30th anniversary this year, two designs are being offered to those loyal and new customers, and other wildlife items are also available, depicting ducks, dogs, and the unique outdoor life of the Eastern Shore region. When you make your next visit to Talbot Street and the Bay, you will not only find the relaxing waterfront bar and affordable eatery at M.R. Ducks Bar & Grille, the Happy Hooker fishing boat can take you on a sport fishing charter in the protected back bays of Ocean City. For the more low-key nature lover, the Assateague Adventure cruises to Assateague Island, to see the wild horses roam in a beautiful, pristine area. The little ones will enjoy a swashbuckling good time on the Duckaneer Pirate Ship, or for an ocean speedboat ride, you can hop aboard the O.C. Rocket.

I THRASHER’S: THE INSIDE STORY

32

Inside Ocean City 2012

www.insideocmd.com

In 1929, a Georgian known as Mr. J. T. Thrasher introduced a unique concept into the business community of Ocean City, Maryland. This creative Southerner proposed a food stand concession which would specialize in only one product: the noble French fry. Meeting with skepticism, Mr. Thrasher, an extremely religious man, forged ahead with this fledgling enterprise. His idea? Simply to produce the best tasting French fry ever eaten- past, present, or future. He did. The process Thrasher originated was based upon quality ingredients, hard work, and above all attention to the perfection of each cup of fries. What a discovery! Of the product itself, Thrasher found that only the highest quality potato would suffice. This meant that potatoes had to be brought from different regions, if not states, for different times of the season. Only the best would do for this hard-nosed professional. For labor, Mr. Thrasher relied upon a group of hard working girls from a Christian affiliated school in Georgia. The operation was run by these dedicated young women for many years. Mr. Thrasher would house the girls in a dormitory above the present Bank of Ocean City. Thrasher’s had been located in the breezeway of the Ocean City Amusement Pier. When forced by his failing health concerns to sell the dearly local business, Thrasher shopped for a buyer who would adhere to these high standards of quality and expertise. This buyer was the legendary Ocean City businessman, Franklin “Chip” Hastings, a selfmade entrepreneur who had a nose for a profitable deal. Hastings move Thrasher’s to the boardwalk location where it is presently located. Yet through the process of automation and mechanization, the original process and recipe were never altered. There was no deviation from quality, no deviation from tradition. In 1974, Charles R. Jenkins purchased Thrasher’s following the death of Mr. Hastings. Again, Mr. Jenkins refused to alter the original secret recipe or the cooking process in the slightest way. While improving and refining certain aspects of the operation, tradition was adhered to. Thirty-four years later, Thrasher’s French Fries is still under the same management. Quality is still the ultimate goal and only through painful and perfectionist management techniques has the fry retained its superior taste and appearance. Through five generations and eighty years, Thrasher’s has changed hands only twice. Tradition rules and quality reigns supreme. There will be no deviation from the original procedure or original recipes. Only experience and exquisite attention to detail have allowed Thrasher’s to grow and flourish as few businesses have. Nowhere will more emphases on quality be found, nowhere will there be a better fry found...anywhere!

Fisher’s Popcorn Bursting With Flavor For 75 Years!

In 1937, Fishers Popcorn debuted on the Ocean City boardwalk, trading as Pixtons Popcorn. The new business, destined to become a boardwalk icon, served gourmet popcorn made with only the finest, fresh ingredients. The popcorn confection, created in a unique copper kettle, was available in caramel, black walnut, coconut, cheese and buttered flavors. Donald Fisher was seven years old when his father, Everett, opened the business, and he can tell you that for the last 75 years, each batch has been hand-crafted in the very same way, and with the same recipe, that his father created that first batch of caramel popcorn. There is a true craftsmanship behind a batch of Fishers Popcorn. The batch masters you can see making the popcorn, while you wait, spend a great deal of time learning technique. It’s a confection never made with a thermometer, but under the watchful, skilled eye of the cook, that makes for a taste sensation. Fishers product offerings have changed just a bit, over the years. During World War II, when popcorn, butter and other staples were rationed, Fishers offered fresh fudge, caramel apples and salt water taffy along with their popcorn creations. You can still find saltwater taffy today, alongside their popcorn line. In the mid 50’s, the name was officially changed to Fishers Popcorn. That’s really the only significant change to the business, over the years. It’s weathered fire, rebuilt and expanded just a bit at the original location, always maintaining excellence in product and service. In 1972, Donald Fisher and his wife, Calvina, took the reins of the business from his father and maintained the family tradition. As time passed, his son Don became involved in the business, followed by his daughter Cindy. Together, they took the Ocean City business into the 21st Century, offering shipments of the boardwalk favorite across the country and to American servicemen and women worldwide. In 1981, Donald’s youngest daughter, Martha, opened a separate Fishers business and the first Delaware location in Fenwick Island. Today 31 years later, Fishers Delaware boasts three locations, including Bethany and Rehoboth Beach. In the Fisher family traditions, two of Martha’s three sons are involved in the business. A visit to Fishers Popcorn, located on the corner of Talbot and the Boardwalk, is a must for every Ocean City vacation. Today Fishers offers its original caramel popcorn, caramel with peanuts, white cheddar, butter and their newest creation, “Old Bay.” You can get a box for now and a decorative tin to take home to family and friends. When you get home, find them online at www.fisherspopcorn.com. Boardwalk popcorn makes a great gift!

DEEP SEA FISHING W W

hile it is a known fact that many people like to fish and enjoy fishing as a hobby, deep sea fishing is a little different from tossing a line with a worm in a pond. It provides a whole new experience for most. Completely surrounded by water, no land in sight, and the possibility of reeling in the fish of a lifetime, sets an exciting scene. Deep sea fishing is an adventure. One trip can change a Saturday morning fisherman into an avid angler. Ocean City offers some of the best sport fishing on the Eastern seaboard, just 30 miles off the coast. White Marlin, Blue Marlin, Bluefin, Yellowfin, Tuna, Wahoo, Dolphin, and a wide variety of big sharks, including Mako, Tiger and Thresher, await the deep sea angler here on the shore. Sunset Marina in West Ocean City reports that “2010 offered some of the best White Marlin fishing yet.” The fishing season begins early in May and runs through early November, so there is no excuse that you’re too busy. It’s a great day with your friends, a memorable family outing or a well-deserved corporate incentive. It’s an opportunity to explore our natural resources with Captains and Mates dedicated to their sport and the conservation of sea life. Captain Larry Weekely of Canyon Blues Fishing Charters tells us his charters occasionally see schools of whales, porpoise or giant sea turtles.

44

Inside Ocean City 2012

www.insideocmd.com

Larry’s conservation oriented staff go out of their way to share these exciting spectacles with you, offering not only a fishing adventure, but a conservation experience, which provides the perfect combination for a very memorable trip. You can even take this adventure one step further and book an overnight trip. There are 24-hour and 30-hour trips at our local marinas, aboard vessels that offer comfortable overnight accommodations. Some trips even include food, beverage, bait and tackle. You will also enjoy the benefit of a seasoned crew skilled at finding and assisting you in landing the big fish. Often, if the fish is intended for dinner, mates will clean the fish onboard, and store it in your cooler, while you relax. If you are truly out for the sport and not dinner, Captains prefer, and strongly encourage, the tag and release of all billfish and other species not intended to grace the table. Don’t have a group of six people to book a charter trip? You can still deep sea fish! Simply call the fishing center for a “makeup” charter. They will ask for the dates you are available, then sit back, relax and wait, while they find the rest of your fishing party. Now, your adventure also turns into a great way to meet new people! You will rendezvous with your new fishing buddies at the dock, the morning of the trip. Deep sea game fishing has reached unparalleled proportions in sport and scope because of the demand for large fish in the kitchen and in restaurants.

Photos, Moore Bills Sportfishing Charters

Today, a variety of fish have become first-class aids to healthy living, and many people are giving up red meat for this low-fat, substitute. Fish is a good source of protein and Omega-3 fatty acids, a vital component of today’s diet to assist in keeping cardiovascular disease at bay. Research has shown that Omega-3 fatty acids decrease the risk of arrhythmias (abnormal heartbeats), which can lead to sudden cardiac death. Omega-3 fatty acids also decrease triglyceride levels, slow the growth rate of atherosclerotic plaque and slightly lower blood pressure. The American Heart Association recommends eating fish, particularly fatty fish like tuna, at least twice a week. What about the Mercury you hear about in deep sea fish? The American Heart Association again states, that “for middleaged and older men and postmenopausal women, the benefits of fish consumption far outweigh the potential risks, when the amount of fish that is eaten, are within the recommendations established by the, Food and Drug Administration (FDA) and the Environmental Protection Agency (EPA).” According to Maryland.gov, only bluefish are indicated as a deep sea fish to be avoided by women Make this your year to deep sea fish! It’s an amazing experience, and one you will never forget. It can be a mental health day, and the bounty is good for your physical health, too. To book your charter, contact the Ocean City Fishing Center at 410-213-1121 or Sunset Marina at 410-213-9600. To reach Captain Larry at Canyon Blues Sportfishing Charters, call him direct at 443-871-1238. Moore Bills Captain, Rob Skillman, who supplied these great photos, can be reached at 410-251-4203. ue to the large crowds visiting Ocean City during the summer months and for obvious safety reasons, surfing is not permitted between 10:00 a.m. and 5:30 p.m. However, two blocks each day are designated as daily surfing beaches. No swimming or wading is permitted at the surfing beaches, and all surfers must wear leashes. The surfing beaches are identified with red lifeguard stands. In addition, signs and flags are used to highlight the area. These designated surfing beaches rotate two blocks south each day. The daily surfing beach schedule is available in the “Information section at www.ococean.com/ ocbp. Surf Beach Facilitators are Beach Patrol members who maintain the surfing beach area, and wear yellow uniforms, so they are not confused with Surf Rescue Technicians (SRT or lifeguards). On certain days, when inclement weather affects Ocean City, the Captain of the Beach Patrol may decide to allow surfing in additional areas. This decision is made daily with the input of supervisors on the beach. If the weather is poor, and not expected to improve, and a low number of people are in the beach, the surfing ordinance may be modified. There are also many other factors which are taken into consideration when making this decision. On days of inclement weather, you can ask any SRT (lifeguard) on the beach if the surfing ordinance has been modified, or call Beach Patrol Headquarters at 410-289-7556.

In the mood for a little shopping? rom boutiques to outlets, shopping is part of any vacation. When the beach gets a little too hot or the weather inclement, it’s time to shower off and explore the town. Fall F F

all can be a magical time at the beach. The color on the drive into town can be just stunning. Ocean City no longer “rolls up the streets, as it did years ago. Today it remains a bustling town year round, hosting several popular events in the fall. Ride into town for OC Bike Fest. Explore the tents at Sunfest, while you enjoy both local and national talent. Sample wines from the region and local wineries at Winefest. In September, Ocean City welcomes back the Cruisers, we could just go on. The beach has smaller crowds, and hotel deals are plentiful. If your here during the season, come back, we have so much more to share!

ear Trap Dunes Golf Club offers one of the area’s most unique and memorable golf experiences on the Eastern Shore and is located in Ocean View, Delaware, just 3 miles west of Bethany Beach. Winding bentgrass fairways are lined with native wetland grasses that drift into stunning sand dunes on this natural golf course. Impeccably groomed oversized greens and four strategically placed sets of tees beckon golfers of every skill level. After just a few minutes at this facility, you will see why these 27 holes of scenic beauty are the locals’ favorite. A former associate of Jack Nicklaus, course architect Rick Jacobson has won acclaim for his course designs. In Rick’s own words, “Bear Trap Dunes is visually unique because of its ample use of sand dunes – adhering to the coastal area’s natural terrain. Because of strategically placed dunes, grassy hollows, bunkers and water hazards, players will have to ‘think’ their way through each hole.”

Bayside

ayside Resort Golf Club is Delaware’s first Jack Nicklaus Signature Golf Course, conveniently located just west of Fenwick Island, Delaware, off Rt. 54 and just 4 miles from the beach. With gorgeous views along the Assawoman Bay coastline and magnificent pine forests, Jack Nicklaus was inspired to create a course that would offer an incredibly unique golf experience. When asked about Bayside, Jack Nicklaus said, “Golfers at Bayside enjoy three distinctly different golf experiences, all in one golf course. Some holes are richly tree-lined, others wind through marshland and still others boast wide-open fairways. It is our hope that Bayside is truly a memorable golf experience, offering variety rarely found elsewhere.”

R

iver Run is an active golf club where guests, members and outings attendees have fun in a relaxed atmosphere on a Gary Player Signature Course. When Gary Player puts his name on a golf course, expect a golf course that reaches and surpasses a higher standard. The golf course is sometimes called a “tale of two nines,” with its open front nine and tighter back side that winds through the timber. The course is fair for the beginner, but is certainly no walk in the park for the scratch player. The greens are medium sized and not especially difficult, the fairways are generous from the tee and modestly bunkered. There are a few lakes to avoid and some marshy areas which are common when you’re only seven miles from the ocean.

Ruth’s Chris at the Glen Riddle Farm

S S

tep back in history when you dine at Ruth’s Chris at Glen Riddle. Your dining experience will take place in the main stable building of one of the most famous Thoroughbred racing stables in the country, The Glen Riddle Farm. Riddle Farm produced such famous racehorses as Man O’ War, War Admiral and Seabiscuit. The horses bred and raised at the Riddle Farm are credited with changing the history of American horse racing. What was previously a sport enjoyed and admired only by the privileged, became one that was supported and embraced by the masses. Man O’ War was born March 29, 1917 and totally dominated horse racing as no horse before or after has done. Previous track records were shattered at almost every race Man O’ War entered, including a walloping 100 length victory at the Lawrence Realization in 1920. Man O’ War was voted as Horse of the Twentieth Century by the Associated Press in 2000. The biggest horseracing event in history was the famous match race between Man O’ War son and grandson, War Admiral and Seabiscuit, held at Pimlico Racetrack in Maryland in 1938. Over 40 million people anxiously listened to that live radio broadcast, representing almost one half of every man, woman and child living in the US at that time. Ruth’s Chris, Ocean City and Glen Riddle Golf have renovated the once grand stable. The history of the farm, the building and the great Thoroughbred racehorses are displayed prominently throughout the building. There is a museum hall that tells the story of the horses that produced the great heritage of the Riddle Farm. You will find pictures of Man O’ War, racing programs, articles and pictures from the Seabiscuit, War Admiral race of 1938. There is also photography taken before the reconstruction that demonstrates the transformation that has taken place. Dine in history, Ruth’s Chris Steakhouse at Glen Riddle, West Ocean City.

The Food Network offers the best summary of this exquisite dining experience.—Jill Cordes & Marc Silverstein “Tanned and fit, with a hearty Italian accent, owner Fausto DiCarlo makes it a point to greet every guest - especially women. In true Europe-

an style, he bestows them with a friendly kiss, the men receive a firm handshake. He's become famous for it. Women remind him if he forgets. Given the large crowds at his restaurant, this guy could make Richard Dawson blush. Talented enought to have once been a cooking sensation in the Philadelphia area, DiCarlo relocated to this vacation playground in 1993. He figured he could work hard in the summer and enjoy golf in the off-season. He might have a six handicap, but he's busy year 'round. Ristorante Antipasti is a first-class Italian restaurant, but the fact that it's in a resort town best known for all-you-can-eat buffets, makes it a true standout. Fausto's signature dish, Timballo Di Mamma, is made of thin layers of homemade pasta filled with ground veal, tomatoes and a bechamel sauce. DiCarlo used to call it a "Sunday Dish,"and offer it as an occasional special because it required so much work. However, it became so popular, he had to add it to the menu. Another mouth watering speciality is the Garlic Steak, a center-cut filet covered in Italian herbs and then grilled black. You won't find this anywhere else. Golf will have to wait. There are guests to be greeted and many kisses to be bestowed.”

Did you know that a breakfast of two healthy doughnuts with a glass of milk has fewer calories than a fast-food breakfast sandwich? Maybe it’s time to “rethink” the doughnut.

Taustin Hospitality

Inside Ocean City 2012

I I

n the early part of the 20th century, entrepreneurs came to Ocean City to build their fortune. One came from the Western shore, others from across the Atlantic, and each arrived with dreams of making their mark on the tiny fishing village. Sam Taustin was the youngest of the large Taustin family who immigrated to America from Austria. As a young man with an eye for new business opportunities, he came to Ocean City to check out the prospects. Soon after, he encouraged his brother Irving Taustin and brother in-law, Curt Dose to join in his new business ventures on the boardwalk. Together the inspired gentlemen opened several businesses on 9th Street —the first Candy Kitchen, a pancake house, the Blue Dahlia- an upscale cocktail lounge/casino, and a chicken and ribs restaurant. Eventually, the menu changed from just chicken, ribs and waffles to include steaks and seafood ….and so The Embers was born! By the early 1960’s, The Embers needed room to grow, and so moved all of its charm, good food and success from 9th street to its current location at 24th Street on the bay. Their seating capacity would more than double with the remodeling of the existing business at that location, and there, The Embers became the premier restaurant for fine dining and great entertainment at the beach. In the early 1970’s, other family members began to take an interest in the businesses. Sam’s nephew, Richard Leiner joined as a partner and financial advisor, and as a young boy, Jay Taustin did every job in the businesses, learning at the side of his Uncle Sam. Jay clearly shared Sam’s love of the hospitality industry and the desire to offer Ocean City visitors a great dining experience. Together Sam and Jay would take the business into the next phase. Ocean City began to grow and the atmosphere began to change. The town became more relaxed and shorts and a tee shirt became the normal dress code, even for dinner. The Taustin family responded to the change and the Embers transformed into the restaurant we know today-- a relaxed, casual dress, family -friendly atmosphere. Truth is, the buffet began as a special Friday night event, but the demand for more once again inspired the family to step up and answer the call of the visitors. Soon a nightly seafood buffet was the focus of the business, and today, 25 years later and seating 900, the Embers Restaurant offers a wealth of dining variety for the whole family with their famous All You Can Eat Seafood Buffet. As we move into yet the third generation, Cole Taustin carries on the tradition of hospitality and innovation that has made the Taustin family such a success in Ocean City. When we asked what the future holds for the Taustins and The Embers, the answer was “well, there is something…”-- which makes us think they have already moved into their next great endeavor. Their new “something” is BLU---a crab house and raw bar adjacent to the Embers--outdoor dining with a decidedly unique atmosphere serving all the best of Delmarva fare including steamed blue crabs, shrimp, and crab cakes. There is much more to this family story we have not shared here. One family member operates the Bonfire Restaurant, and another enjoys the sweet success of Candy Kitchens. But those are other stories for another time. For now, we suggest you visit The Embers and BLU and experience the Taustin family hospitality for yourself. After dinner, take the kids to the Embers Island miniature golf right next door!

Tipping in the Resort

roper tipping shows others that you’re “socially groomed. Your not a cheapskate nor a show off. It is however better to tip generously than badly, but there are critical limits on both ends of the spectrum. Proper tipping also ensures good service, particularly from a bartender. If there is a party of four or more, tip the bartender $10 on your first round. He/she will remember your generosity and pay particular attention to the group. There after tip the standard for each round; $1 for a beer, $2 for a mixed drink. The amount of gratuity depends on the service being provided and is usually a percentage of the total bill. If a service is already expensive, and you cannot afford to tip the proper percentage, then you cannot afford the service. The acceptable tip for food servers, cocktail servers, and bartenders is 15% to 20% of the total bill. The American wait staff is paid an average hourly wage of $2.13 by their employer. If about $85.00, for a week’s worth of carting food and beverage back and forth from grumpy kitchen cooks to whiny customers sounds low to you, that’s because it is.

100

Inside Ocean City 2012

www.insideocmd.com

The National Restaurant Association explains this issue, by citing the federal minimum wage law, which allows employers to pay employees, who receive tips, a lesser wage. Employees, who are tipped, count on gratuities to make up for this huge difference. You may feel that paying your waiter’s salary should not be your responsibility, but the truth is, and it’s no secret, that if you are eating out, you will be expected to tip appropriately. If you are hesitant to tip because you received poor service, do not skip out on gratuity; instead ask to speak to the manager. Most will be very appreciative of less than quality service, and sometimes all the wait staff needs is a little direction to improve their level of service. Other than wait staff at a restaurant, there are others who appreciate tips for quality service. In some instances you will find a “tip jar” in a central location, proper standards are very much appreciated here too. See our tip guide for those standards.

hh…the smell of Old Bay and the sound of crab claws cracking, is music to our ears, each summer. No beach vacation would be complete without enjoying a feast of our famous Maryland Blue Crabs. Although you can find crab on almost every menu in town, the experience of picking them yourself is rite of passage into true Eastern Shore culture. Your table will most likely be covered with butcher paper and your table centerpiece is typically an empty bucket and paper towels. We’re not talking fancy here; we’re talking serious crab eating! Your view may be amazing, but you’re here to eat crabs, and it’s going to get messy! Bring on the bib, grab your mallet, and let’s get cracking! To get started, pull the pincher claws off the body and save them for later. They come off best with a twisting motion. Sometimes the backfin meat will come out when you twist, so bite that off first… yum! Twist off the remaining legs, sometimes they too will offer a bit of the meat from the body, particularly if your crabs are hot. You can enjoy that part too, but the smaller legs themselves only have a trace of meat in them, so it’s not always worth the time to pick. Throw away the legs and move on… To remove the apron, turn the crab over on its back. Now you’re looking at the underside of the crab. Quick note, everyone asks how to tell a male from a female crab. Here’s the scoop. The male crab has an apron that looks very much like the Washington Monument, and the female’s apron looks more like the Great Pyramid of Giza. Whichever view you’re looking at, you need to remove this part to open the crab. Insert the tip of your crab knife into the top of the apron and pull it up and back. This detaches the top shell from the base of the crab. Next, turn the crab over, so it’s now right side up. You’ll see the gills and “mustard.” Using your crab knife, clean these “guts” away. Take the remaining crab in your hands. Snap it in two, and all that luscious crab meat will be revealed. You will now want to cut the two sections of the crab length-wise. This opens up the cavities for retrieving the most meat possible. The meat is contained in small cavities, but be careful not to eat the dividing shell. Don’t forget the claws that you first set aside. Some crab eaters believe, the meat in these are the most delicious. There are two main sections in the claw, (ignore the elbow). To open the sections, place the blade of your knife in the middle of one section and tap it with your crab mallet. You can also use the crab cracker place in the same place. Just be gentle or you will crush your claw and have to pick the shell from the meat before you can eat it. Now gently snap. At this juncture, there is an art to get the clean break which exposes the claw meat in the presentation you find on an hors d'oeuvres tray. However, in reality, no one is looking over your shoulder, just get to the meat. All the meat here is good to eat, but beware. There is a shell in the center of the section with the actual pincher. You can often pull the shell out by breaking the pinchers apart and gently pulling; only the meat will be left in the shell. The art of picking crabs may take some time to master, but it’s worth the time, every time! So Enjoy! 102 Inside Ocean City 2012 www.insideocmd.com

Overlooking the Beach and Boardwalk, the bar at Brass Ball’s Saloon is Lynn’s natural habitat. Friends, old and new, will find him serving up O.C.’s Original Frozen Rum Runner, Real Ice Cream Drinks and Fresh Fruit Crushes. He’ll also be happy to make your favorites, or, if you’re feeling adventurous, try his fruit infused “Donkey Punch” or a “Got Balls?” shot. Friday and Saturday nights find him upstairs at Bad Ass Cafe’s crazy Karaoke Party. Here you can mingle with the crowd or view the stage from overhead swinging chairs. Lynn loves Ocean City, the Brass Balls Saloon, and Bad Ass Cafe and he’ll help you to feel the same. 11th & 12 St. Boardwalk 410-289-0069
