Goff points to the “menu makeover” that began at the end of 2009, resulting in new and improved menus, with more healthy choices at all levels. Among those improvements are increasing the overall nutritional integrity of menus, with lower fat and higher fiber content, a greater variety of fresh fruits and vegetables offered every day, fresher and less-processed food items. Goff said the next steps include working to add more items that are made from scratch rather than offering as much processed food, and constantly looking for ways to offer healthful foods that students can be excited about eating.

Adding more fresh, locally grown food

Other improvements in food quality come from a variety of state and local programs. One is Colorado School’s Harvest of the Month program, which features a fresh produce item each month and includes a student-education component as well as ways of incorporating the food in meals throughout the month. Another established effort is the Farm to School program. Over the last two years, the partnership has grown to support local farmers by purchasing directly from them – a program that benefits everyone, both by supporting the local economy and by giving students the freshest food possible.

West and Goff set a goal of reducing the percent of total calories from fat in District 6 meals. Schools are required to limit fat calories to 35 percent of the total, but with the recent menu makeover, District 6 meals top out at 30 percent, maximum. That is a significant number when one considers that the district is on track to serve more than 2.5 million meals this school year at 27 sites.

That may be the greatest challenge facing school meal staff: Educating students on making good food choices. Parental involvement and support, especially in a time of reduced budgets for classroom initiatives, is key in getting the word out and really teaching students about nutrition. “Parents have got to be at the forefront,” Goff said. Along with additional nutritional improvements, West said menus in the cafeterias next school year will include eye-catching images as well as nutrition information about the food so parents of young students, as well as older students themselves, can identify healthy choices before the students get in line. CDC study shows Half of U.S. adults take vitamins, supplements

TLANTA ­— About half of U.S. adults take vitamins and other dietary supplements — a level that’s been holding steady for much of the past decade, new government figures show. But the data also show a booming number of older women are taking calcium. Federal officials released figures this month showing that the use of dietary supplements has grown since the early 1990s, when it was about 42 percent. The data shows use leveled off in 2003 through 2008, with about half of adults 20 and older taking at least one dietary supplement. The biggest change was for calcium. Two-thirds of women 60 and older take it, up from 28 percent in the early 1990s. Experts note the ranks of the elderly have been growing, and include many women who have been encouraged for years to take calcium to help protect against osteoporosis. The information comes from national, in-home surveys in 1988-1994 and 2003-2008. The surveys in the past decade included more than 2,000

people each year. Interviewers not only asked participants what supplements they took, but also asked to see the bottles to verify their answers. Use of multivitamins — the most popular supplement — crept up to nearly 40 percent. Most people who take vitamins and other supplements are educated, have good incomes, eat pretty well and already get the nutrients they need from their diets, the survey suggests. “It’s almost like the people who are taking them aren’t the people who need them,” said Regan Bailey, a nutritional epidemiologist with the National Institutes of Health. Federal surveys have only recently started asking people why they take supplements, Bailey said. The government supports some supplements as an option for certain people — such as iron for women who are pregnant, folic acid for women thinking of getting pregnant and calcium for older women. But health officials say people should talk to their doctors first and consider enriched foods that can accomplish the same goal. Much of the new data is in a Centers for Disease Control and Prevention report released this month.

OS ANGELES — Colic is a nightmare — for baby and parents. The condition, in which an infant cries inconsolably, is poorly understood and there is no surefire treatment. That’s why parents often turn to complementary and alternative medicines for help. But a study published this month in the journal Pediatrics finds evidence is lacking that CAM therapies are effective. Researchers in England

pooled the results of 15 studies that looked at CAM therapies for colic. All of the studies were randomized, controlled trials, but all also had flaws in design or methodology. Overall, the studies suggested that some therapies may help soothe colicky babies. These include fennel extract, mixed herbal tea (containing chamomile, vervain, licorice, fennel and balm-mint) and sugar solutions. But, the authors of the paper said, “all trials have major limitations” that make

it hard to verify benefits. There was no convincing evidence that remedies such as probiotics, soy formula, massage therapy, mechanical crib vibrator or reflexology were helpful. Much more research needs to be done before CAM remedies for colic can be recommended, the authors said, citing the poor quality of the research. For example, they noted, none of the studies that involved herbal remedies met standards for extraction and preparation of the herbs to ensure quality

and consistency. Fennel might be worth more research. Studies in animals suggest that it soothes intestinal spasms. Sugar water is thought to work because it acts as a painkiller. The researchers note the impact of colic on young parents. “Without symptom relief, (colic) can lead to unnecessary medical intervention (including hospitalization), can affect the parent-child bonding process and, in rare cases, lead to child abuse.”
