THE BASIC BASICS MICROWAVE COOKING FOR ONE & TWO
CAROL BOWEN BALLISBN: 978-1-911667-47-6 | £10.00
Paperback | 160 pages | 234 x 156mm Territory: World rights
Do you own a microwave? Probably, since it is estimated that over 90% of the nation’s households have one. But did you know that recent research has shown that because of the lack of power that it uses, compared with conventional cooking methods, the microwave works out the cheapest of all the cooking appliances? And with energy costs spiralling to unthinkable levels, it seems that the microwave’s moment has come – and not before time. Because of its energy efficiency isn’t it time to use it every day creatively rather than just warming up leftovers?
There are countless dishes that are done beautifully, and completely, in a microwave. Vegetables cook perfectly, losing fewer nutrients than in a pan and fish is generally regarded better done in the microwave than poached or steamed.
So with that in mind this collection of both time-honoured and newly created microwavecompatible favourites is here for you to enjoy
– they represent years of mid-week and special occasion eating developed by the author for her husband and herself, for the numerous times when a speedy dish was required to feed a friend at lunch or when eating alone. We hope you will enjoy the selection.
Carol Bowen Ball has been a freelance cookery writer, food consultant and broadcaster since the 1980s, having previously worked for Good Housekeeping, and Homes and Gardens Carol has advised on various projects including the BBC's Masterchef and has contributed to national newspapers, magazines and radio and television programmes. NORTH AFRICAN COOKERY
ARTO DER HAROUTUNIANISBN: 978-1-911667-46-9 | £25.00
Hardback | 384 pages | 240 x 170mm
Two colour throughout |Territory: World rights
Arto der Haroutunian takes the reader on a tour of the cuisines of Morocco, Algeria, Tunisia and Libya in this comprehensive guide to North African food. There are over 300 recipes for traditional dishes such as tagines, stews, soups, and salads using classic ingredients such as fiery spices, jewel-like dried fruits, lemons, and armfuls of fresh herbs. Simplicity is at the heart of the medina kitchen. The exotic fuses with the domestic to produce dishes that are highly flavoured yet quick and easy to prepare. Dishes such as chicken honey and onion couscous, and 'gazelle horns' filled with almonds, sugar and orange blossom water provide a feast for both the imagination and the palate.
Tunisian cuisine is perhaps the hottest of the region – due in large part to the popularity of the fiery chilli paste, harissa. As well as a strong French influence, pasta is a passion in Tunisia. Morocco's great forte is its tagines and sauces – with meat and fish being cooked in one of four popular sauces. And Libya, although
less gastronomically subtle than Tunisia and Morocco, excels in soups and patisserie.
This collection represents the cooking of the region with refreshingly uncomplicated techniques, short lists of ingredients and the comforting, elemental flavours of various spices and seasonings. Recipes are easy to follow, and evoke the spicy, sumptuous flavours of the region.
With a varied range of dishes from simple street fare to elaborate banquet food, this book is a wonderful introduction to North African cookery flavoured with a slice of history, an anecdote or a fable that brings this ‘land of the sunset' vividly to life.
‘...rich in historical background, full of marvellous proverbs and teaches the use of unusual herb and spice combinations.’
Oxford Mail‘A tour of North Africa for the traveller, the chef, the shopper and the taste buds.’

The Greens Cookbook presents inspiring menus for spring, summer, autumn and winter; everything from easy-to-prepare dishes for two, to meals for large-scale entertaining. It has the first ever guide to selecting wines with vegetable dishes, glossaries of unfamiliar ingredients and useful kitchen equipment.
Deborah Madison developed the style and repertoire of Greens and was the restaurant's founding chef. She has worked with Alice Waters of Chez Panisse, at the American Academy in Rome, and was a contributor to the Time-Life Cookbook Series.
‘Reading through these delicious recipes, I'm impressed by a certain refined taste and style and consistently critical and good palate that comes through. The book is especially important because it's vegetarian, and the excellence of ingredients makes the dishes irresistible.’

Simple and Healthy Recipes for Cooking Anywhere on Two Hotplates

• Sustainable vegan cuisine for beginners and ambitious cooks
• Everyday recipes made from seasonal ingredients
• Minimalistic cooking for maximum taste
• A camper van cookbook inviting you to linger and savour, for the increasing numbers of people taking to the open road
Vegan food from a van kitchen: vantastic! Vegan cooking doesn't need to be complicated. On the contrary, the recipes in this cookbook are so simple they can be easily prepared on two hotplates in a camper van. If you long for more variety and freshness in your diet at home or on the road but are reluctant to spend hours in the kitchen, this is the perfect book for you. The recipes are ideal both for those eager to prepare a quick yet delicious weekday dinner, as well as those willing to invest a little more time to create interesting new food combinations.
During her travels the author visits farmer's markets, health food stores, and packaging-free shops, drawing inspiration from the people she encounters. These very personal stories add a special zest to the various dishes.
She says: ‘The big challenge of the camper van kitchen is to achieve as much taste, finesse, and variety in your cooking as if you were at home, while being confined to a very small space. Instead of four hotplates I only have two. Sounds complicated, but it can actually be rewarding: the space constraints force me to figure out how to simplify, or even reinvent a particular recipe.’
Beautifully illustrated, this book enables you to experience a life on the road to the full.

COMPLETE ARAB COOKERY
ARTO DER HAROUTUNIANISBN: 978-1-911667-86-5 | £25.00
Hardback | 384 pages | 240 x 170mm

The basis of society in Arabia, especially in the south, was agriculture – cereals, aromatics and spices were produced and exported via the caravan routes which passed from Syria through Arabia to the Yemen. Thus Arab dishes are subtle, varied and exotic. The basic diet largely comprised, and still does, dates, rice, milk, goat or lamb meat and coffee.
The patchwork of peoples and countries that form this medley comprise dishes from Egypt – some of the oldest recipes in the world such as melokhia, the famous soup of the Pharaohs. From Syria – an enormous range of vegetable salads. From Lebanon – sun-ripened fruits. From Iraq – date, hazelnut, mushroom and fig recipes. From Armenia and Kurdistan – the cracked wheat burghul dishes. From Cappadocia – the exotic flavours of sesame and tahini. From the Caucasus – the vast array of kebabs. From Assyria and Armenia – classic stuffed vegetable dishes – mahsi, and from Persia – yogurt dishes, fabulous rice dishes, sherbets and sweet and sour dishes.
Incorporating the history, traditions, and techniques of these countries Arto der Haroutunian has assembled an unparalleled breadth of recipes representing the whole gamut of Arab cooking.
Arto der Haroutunian was born in Aleppo, Syria and grew up in the Levant, but came to England with his parents as a child. In 1970, in partnership with his brother, he opened the first Armenian restaurant in Manchester which eventually became a successful chain of six restaurants and two hotels.
Given his passion for cooking it was natural that he should then write cookery books as they combined his love of food with his great interest in the history and culture of the region. Grub Street has over the years reissued many of his books which are regarded as classics, they include: Middle Eastern Cookery, A Turkish Cookbook, Sweets & Desserts from the Middle East, Classic Vegetarian Cookery, North African Cookery, and Vegetarian Dishes from the Middle East
DIABETIC RECIPES FOR ONE AND TWO
MICHELLE BERRIEDALE-JOHNSONISBN: 978-1-911714-00-2 | £15.00
Paperback | 192 pages | 240 x 170mm
Full colour throughout | Territory: World rights
Most health experts agree that the UK is facing a huge increase in the number of people with diabetes. Including the number of undiagnosed people, there is estimated to be over 4.8 million people living with diabetes in the UK at present. There are also estimates that more than 130 million adults are living with diabetes or prediabetes in the United States.
Most of these cases will be Type 2 (noninsulin dependent) diabetes and happily this form of diabetes is controlled by diet and exercise. So understanding nutrition and diet is essential to maintaining your health as a noninsulin dependent diabetes sufferer.
However because of our ageing population and rapidly rising numbers of overweight and obese people among younger generations many diabetics today are either living alone or are a couple. So preparing meals using regular diabetic cookbooks which cater for four or more people can provide meals that are too big and wasteful.
Diabetic Recipes for One and Two solves the problem by offering a collection of easy, tempting recipes in smaller portions. Based on the latest research it gives nutritional guidelines, a menu planner, advice on how to shop and plan your meals, with over 100 recipes catering for contemporary culinary tastes, consisting of meals with a high intake of vegetables, pulses, fruit and whole grains.
Michelle Berriedale-Johnson is an expert on food allergies and intolerances. She has spent all her career in the food business, first as a caterer then as a journalist and food writer. She became interested in special diets when her son was diagnosed as lactose intolerant. She now runs Foods Matter an online magazine and portal www.foodsmatter.com supporting anyone with a food allergy, food intolerance or living on a free-from diet. Michelle is also the author of The Everyday Wheat-Free and GlutenFree Cookbook, now in its 11th printing and one of Grub Street’s best-selling books.

In 1965 Elizabeth David opened a shop in Pimlico, London, where she sold Le Creuset pans and other hard-to-get-hold-of kitchen utensils. The store, with its marvellous window displays, was as influential as her books would eventually be, pioneering a new generation of shops devoted exclusively to kitchenware.
While she was still involved with the shop which bore her name, Elizabeth David Ltd, she produced a series of four little booklets: The Baking of an English Loaf, Dried Herbs, Aromatics and Condiments, English Potted Meats and Fish Pastes, and Syllabubs and Fruit Fools which were sold exclusively in the shop. They were simple black and white
productions which have now become rare, highly sought-after and very expensive collector’s items. So Grub Street is delighted to have acquired the rights to these booklets from the David Estate and we are redesigning them as four hardback books in a slip case making them the perfect gift item. So for the first time in over 50 years these charming works will be available once again.
HAPPY 30TH BIRTHDAY
To Caroline and Robin Weir’s Award-Winning Book
It is now 30 years since Ice Creams, Sorbets & Gelati – The Definitive Guide first appeared in print. It is a testament to the quality of this magnum opus that it is still in print and selling worldwide today. It has garnered awards and glowing testimonials over its long and illustrious history and is universally regarded as the bible on the subject. The book, with glorious illustrations and photographs, has over 400 recipes covering ice creams, gelato, graniti, bombes, parfaits, instructions on making wafers, biscuits, punches, even ice creams for diabetics and vegans, as well as THE authoritative history on ices.
‘They have come up with what I think is the really definitive book on the subject.’
Delia Smith
‘What Robin Weir doesn’t know about ice cream is not worth knowing.’
Heston Blumenthal, The Fat Duck ‘There are many books which claim to be definitive but few that really qualify. This is the
real thing. It’s not just that it is interesting and inspiring. I have had a copy of the first version on my kitchen shelf since it was published, and used it more times than I care to admit.’
Shaun Hill, owner and head chef, The Walnut Tree
‘...it is the illustrations that delight as much as anything. They hold the clue to so much that the authors have investigated about their subject, really bringing the whole matter to life.’
