MEZCALINA Like Mexico, this cocktail is full of personality, spicy, traditional, with a smoky flavor at the same time. It is ideal to drink at daytime, preferably by the pool or with lunch.

Ingredients For the cocktail • 5 spearmint leaves • 3 cucumber slices • 2 ounces (60 ml) mezcal • 1 ounce (30 ml) lime juice • ½ ounce (15 ml) natural syrup • ½ tablespoon worm salt (sal de gusano)

Directions Method Add spearmint and cucumber in a cocktail mixer, add mezcal and lime juice. Balance the mixture with natural syrup; add ice and shake vigorously. Circle the rim of a glass with worm salt and serve on the rocks. Decorate with cucumber slices.

Chef Tip: To ensure better flavor, use joven espadín mezcal and freshly squeeze the lime by hand. Pay attention to the freshness of the cucumber and spearmint to keep the drink from becoming bitter.
