TEMAZCAL It is as intense as a temazcal steam bath, but fresh as lime and spearmint. For those who enjoy subtle contrasts and the intense aromas of mezcal and fernet (Italian spirit), this cocktail is an elegant accompaniment to special moments. The added detail of a creamy and foamy topping will pleasantly surprise you.

Ingredients For the cocktail • 10 spearmint leaves • 3 teaspoons white sugar • ¼ ounce lime juice • 6 drops of fernet Branca • 1 ounce (30 ml) tequila reposado (aged tequila) • 1 ounce (30 ml) mezcal • 1 egg white • 2 ounces (60 ml) club soda

Directions Method Soak seven spearmint leaves in sugar and lime juice in a cocktail mixer. Add ice, fernet Branca, aged tequila and mescal and shake. Pour the egg white and three spearmint leaves into a bowl. Beat until it has a foamy and consistent texture. Serve the cocktail in a martini glass and add club soda. Top it off with the egg white foam and let it float on the cocktail.

Chef Tip: Prepare the foam at the end to maintain proper consistency when serving.
