Located in Piazza della Passera, one of the historic squares in the heart of Florence between Ponte Vecchio and Palazzo Pi i, Tra oria 4 Leoni is a typical Tuscan restaurant with a smart contemporary atmosphere, offering authentic food that varies with the seasons and market availability. One of their signature dishes is braised beef cheeks with Bore ane onions, but how is it made? Let’s find out. PREPARATION: In a large pan, gently fry the garlic, rosemary, bayleaves, white onion, celery and carrot. Meanwhile, trim the beef cheeks, dust with flour and brown in a separate pan. Add these to the vegetables, with enough Sangiovese red wine to cover. Cover and cook for three hours on a low heat, adding vegetable stock if needed. Remove the meat, blitz the vegetables and strain the result, then continue cooking to reduce and concentrate the flavour. Plate the beef cheeks and cover with the sauce; garnish with Bore ane onions sautéed with bay, rosemary, thyme, balsamic vinegar and chestnut honey.
