We spoke to Jo McConnell about her experiences of An Invitation to India – a country close to her heart, with new adventures to unfold…
I have been to India before and absolutely loved it. That was 17 years ago so it was nice to return, and it was to be my first visit to Delhi so I was very excited to have somewhere new to explore. I’ve travelled solo in the past, but this was my first time travelling on an escorted tour.
Our local guide, Shailendra, was incredible and he really made the magic happen. I know from past experiences that India is that kind of destination that you either get or you don’t, so to have him there to explain more about Indian culture was fantastic. It was an assault on the senses with so much to see and do in a short space of time. It does mean there is a bit more coach travel and some early starts to get to places, but it’s worth it for the amount of things you get to absorb.
This tour was a unique mix of the big hitters as well as the smaller, authentic encounters. One minute you’re gazing in awe at the Taj Mahal, the next you’re exploring a local temple where the community cook up meals for 13 000 people for the day.
My memories of the Taj Mahal will stay with me forever. As one of the new wonders of the world, it has that special importance. It’s certainly one of those ‘I remember when’ stories to tell the grandchildren. Out of everything, I loved Old Delhi the most, the paratha-making experience was wonderful and made me feel like I was seeing the real India. Acts of kindness seems to be the way of life in India, people will even buy food for pigeons such is the belief in allowing everyone and everything to live their lives and be happy.
Being exposed to Indian culture in this way was special, and made us all think about how lucky we are, and think about the world in which we live in. Everyone had their own moments for reflection and it makes it a wonderful tour, not only as an introduction to India, but in discovering your own meaningful take on it.
This tour will leave you feeling humbled, more educated on Indian culture, and ready to plan your next tour. Again, India is a place you either ‘get’ or you don’t, but Just You do a remarkable job of making sure you not only get it, but are completely charmed by it.

In celebration of the launch of our 25th anniversary tour to India (see page 10), this curry dish was once cooked by Indian chefs who worked on the railway lines in the 1900s. Need a meat free option? Why not substitute for jackfruit, sweet potato or tofu, or get creative with your own ideas.
YOU WILL NEED:
8 garlic cloves, crushed Ginger, thumb-size, finely grated
2 tsp turmeric
800g leg of lamb, cut into bite-sized chunks
3 tbsp vegetable oil
10-12 curry leaves
1 onion, chopped finely 450ml lamb stock
1 medium potato, peeled and cut into chunks
250ml coconut milk
2 tsp tamarind paste
Rice or roti, to serve
FOR THE SPICE MIX:
1 tbsp coriander seeds
2 tsp fennel seeds
1 tsp cumin seeds
6-7 dried Kashmiri chillies, stalks removed
METHOD
STEP 1
Mix the garlic, ginger, turmeric and lamb together in a large mixing bowl, then leave it to marinate in the fridge for one hour or overnight.
STEP 2
Toast the spice mix in a dry frying pan for 10-12 mins on a low heat, stirring occasionally, until the aromas are released. Remove from the pan to cool, then grind to a fine powder using a spice grinder or pestle and mortar. Set aside.
STEP 3
Heat the oil over a medium heat in a heavy-based, large saucepan. Add the curry leaves and onions, and fry for 15-17 mins, stirring well. As the onions colour, add the lamb and fry for 10 mins. Add the spice mix and turn the heat up slightly. Stir continuously for up to 5 mins. Add the stock, then season to taste. Bring to the boil, turn down to a simmer. Put the lid on and cook for 40 mins. Stir halfway through cooking.
STEP 4
Add the potato chunks and cook for a further 15 mins. Pour in the coconut milk along with the tamarind paste and simmer for 10 mins with the lid off to reduce. Serve warm and enjoy with rice or roti.
