The annual Community Christmas Day Dinner is sponsored by the First United Methodist Church, the Town of Bethlehem Senior Services, many area churches, organizations and individuals. The turkey and ham dinner is open to all residents and church members of the Town who wish to participate. Festivities begin at 1:30 p.m. on Christmas Day with dinner served at 2:00 p.m., at the First United Methodist Church, 428 Kenwood Avenue. There is NO FEE for dinner, however, a Goodwill offering will be accepted.

Transportation for Town of Bethlehem residents, aged 60 and over, will be provided by Bethlehem Senior Transportation Service. For information, meal and/or transportation reservations, call Bethlehem Senior Services at 439-4955, option 4.

Holiday Shopping Safety Tips Shopping during the holiday season can present unique danger. Taking a few prevention measures can help keep your holiday season joyous. The holiday season is a time when busy people can become careless and vulnerable to theft and other holiday crime. The following tips from the Bethlehem Police Department Crime Prevention Section can help you be more careful, prepared and aware during the holiday season. • Shop during daylight hours whenever possible. If you shop at night, go with a friend or family member. • Dress casually and comfortably. • Avoid wearing expensive jewelry. • Do not carry a purse or wallet, if possible. • Always carry your Driver License with necessary cash, checks and/or a credit card you expect to use. • Even though you are rushed and thinking about a thousand things, stay alert to your surroundings. • Avoid carrying large amounts of cash. • Pay for purchases with a check or credit card when possible. • Keep cash in your front pocket. • Notify the credit card issuer immediately if your credit card is lost, stolen or misused. • Keep a record of all of your credit card numbers in a safe place at home. • Be extra careful if you do carry a wallet or purse. They are the prime targets of criminals in crowded shopping areas, transportation terminals, bus stops, on buses and other rapid transit. • Avoid overloading yourself with packages. Maintain a clear visibility and freedom of motion to avoid mishaps. • Beware of strangers approaching you for any reason. At this time of year, "con-artists" may try various methods of distracting you with the intention of taking your money or belongings.

Jim Tschinkel | Trailmaster Joan and Jim Tschinkel are the parents of six children, grandparents to fifteen. On a recent morning, sitting down to discuss the Appalachian Trail and a lifetime spent hiking, the conversation often drifted back to children and grandchildren. Jim Tschinkel, at 82 years, finished hiking the last bit of the Appalachian Trail this past summer. The trail stretches from Maine to Georgia and passes through 14 states. There are two kinds of hikers who take on the Appalachian trail, the thru-hiker and the section hiker. Thru-hikers start and finish the trail in one stretch, often taking as long as six months to complete. The section hikers cover the same ground, but in pieces over time. It took Jim twenty years to complete the approximately 2.181 mile trail. His was a leisurely approach, one meant to ensure he could stop and smell the roses, take in a particularly beautiful vista in the Smoky Mountains or pause to chit chat with a group of fellow hikers. For Jim, this aspect of the hiking experience was every bit as important as covering ground. As his 60th wedding anniversary approached and the goal of hiking the entire Appalachian Trail was not yet complete, his family - especially his youngest daughter - begged him to finish while he was in good health and feeling well. The window, they felt, was closing. Says Jim, “My intent was not to finish it. But to keep doing it. My family had other ideas.” Jim and Joan agreed, then, that they would set off for the pieces of the trail not yet complete. He, the hiker. She, the chauffeur. There were 245 miles left for him to cover in Tennessee, North Carolina and Georgia. Joan dropped him at each trailhead, spent the day touring the area, then met him at the end of the trail. His family, acting as cheerleaders and comrades, divided up the trail and arranged for someone to be with him while he hiked every last mile. Jim’s warm and gentle blue eyes tell of a love story, two love stories, actually. One for his devoted family, the other for the trail and all the adventure it holds. Pulling out memorable moments from this push to 18

finish the trail, he tells of two young grandsons who joined him for a stretch. Ages six and eight, they hiked a total of 33 miles together, over three days and two nights. The boys carried their own packs, hiked for six-hour stretches and slept in a lean-to. When one group of family members left, another was there, hiking boots laced up, ready to go. There was the niece who surprised him, keeping him company for three days. Another daughter and her son. A son-in-law. An old friend. One by one, they all showed up, keeping steady pace and good company for their father, grandfather, uncle and friend. Jim was especially touched by his 27-yearold grandson who met him for the last three days of his hike. Together, they hiked through Springer Mountain, Georgia, finishing a walk that took over twenty years to complete. Waiting for him at the end of the trail, as she always did, was Joan.

“The very best part of my adventure, was the people I met along the way.” Jim has a small closet, just off his study, devoted to all things Appalachian Trail. Maps, boots and shirts occupy the closet, all with an accompanying story. He removes one shirt and points out the white marking on the front. Called a white blaze, it’s what looks like a paintbrush marking. Those familiar with the Trail know to look for this marking on trees. It’s what guides the hikers. Once, while on vacation with Joan, Jim wore this t-shirt in a restaurant. It caught the attention of a few other diners, and a conversation was struck. That t-shirt, and conversation, led to a lasting friendship, one that’s covered many trails and miles over ten years. A familiar theme threads his descriptions his experiences: the views, the landscape and the satisfaction of completing a hike, but always, there is the connection to those he hiked with or encountered on the trail. “The very best part of my adventure,” he says again, “was the people I met along the way.” The hiking hasn’t been confined to the Appalachian Trail. Jim and Joan both are members of the Catskill 3500 Club. Members have all climbed each of the 35 Catskill Peaks above 3500 in elevation. Four of the mountains are climbed in the winter months and twelve have no trail. Hikers find their way to the top with compass and map, then sign in at a metal box attached to a tree. The Tschinkel’s moved to Greene County in 1971, leaving behind New York City’s Queens for a quieter life. Jim worked for the New York Telephone Company for 36 years, climbing poles. He eventually worked his way into management, but missed the solitude

and outdoor work. He went back to the poles and stayed there until he retired, twenty years ago. While their children were young hiking was a family affair. On many weekends, Joan and Jim would pack up their six kids and set off for a new mountain to climb. He’d always bring along a paper sack, with the end removed and opened up. In big letters, they would write the name of the mountain and the date. At the top, a picture would be snapped, with all the kids holding the commemorative sign. “We have so many good memories of hiking with our family,” Jim says. His voice is content and peaceful as he recalls the past. After finishing the Catskill 3500, he moved on to the Presidential Range in New Hampshire. It was on those trails that he came across the white blaze for the first time. Seeing that blaze, and then reading a National Geographic story documenting a young couple spending six months on the Appalachian Trail, set his wheels in motion. “I was so inspired by them. I said this is it. This is what I want to do.” Jim still holds that magazine, slightly dog-eared, in his collection of Appalachian Trail items. He has memories from each of the states, special places on the trail that stand out. In Maine, there is a place on the trail that crosses the Kennebec River. A volunteer sits in a canoe there, awaiting hikers. This was, no doubt, a chance for Jim to stop for awhile and talk. To make a new friend. In New Hampshire, high above the tree line, there are no trees for the white blazes. Instead, hikers stack rocks to guide each other. It can be so foggy that it’s difficult to find your way. The trail is so long in Virginia, over 500 miles in that state alone. Jim says, “I thought I’d never get to the end of that one.” The Smoky Mountains bring up memories of bears. So many bears in fact, that portions of the trails have to be closed to keep humans and bears from

crossing paths. The rockiest of all the sections of the Trail is in Pennsylvania. Jim says many hikers hate this part because it’s hard to find a steady pace because of the scrambling over the rocks but, Jim found it all fascinating. He wondered why there are so many rocks in the area, and learned about the glaciers that dumped them millions of years ago. There are memories and stories and special places all over the Trail. “There are 14 states in all, and each has something beautiful and different to offer - and remember” These days, Jim and Joan are staying close to home in Bethlehem, they spend quiet afternoons together hiking the small trails at Five Rivers Environmental Education Center. He dreams of perhaps one day traveling to Spain, to hike the way of St. James in Spain. It’s a pilgrimage made to a cathedral where the remains of St. James the Apostle are buried. A lofty dream, maybe, but it could be that Jim will always dream of the trails, even when he is not on them. For now, even though Jim has left the woods and the long hikes behind, the people and mountains and a lifetime of sweet memories will always be with him. Interview and article by Caroline Barrett

A letter from Bethlehem Town Hall Dear Bethlehem Residents, You elected me to be Town Supervisor and I did the very best I could to serve our Town and all of its residents and businesspersons, because I believed Bethlehem should and could be better and different. Each winter no matter how hard we try it seems that it is inevitable that we will get sick. With all the germs and stress that seem to come with this time of year, there are several things you can do to help prevent getting a bug. First, make sure you wash your hands and wash them often! If you arenâ&#x20AC;&#x2122;t able to wash your hands, keep a bottle of hand sanitizer nearby, which is almost as effective as washing your hands. Even if you are washing your hands regularly, try not to touch your hands to your face, which is one of the most common ways people let in germs. Second, make sure to avoid people with colds or the flu. There are over 200 viruses that cause the common cold. Talk to your doctor and find out the difference between what is the common cold and what is a more serious flu virus. Consult with your doctor as to what over the counter cold remedy is best for you, especially if you are already on other medications. Also, consult with your doctor to find out if the flu shot is recommended for you. The air this time of year can be very dry. The heat is turned up so you can stay cozy, but you may not realize how much that heat is drying you out. Make sure to drink plenty of water, at least 6-8 glasses per day. Also, apply lotion all over your body each day as well as a moisturizer specifically for your lips daily or as needed to prevent dry, itchy skin and chapped lips, which can be quite uncomfortable. If you are still feeling dry after this, try using a humidifier to put the moisture back in the air.

Need a boost of energy this winter? Make sure to get out into the daylight at least thirty minutes a day. This is harder to do this time of year with the days so short, but that makes it all the more important. Exercise when possible, even if you just take a walk around the house. Eat your vegetables! Vitamin C, which is found in high amounts in broccoli and Brussels sprouts as well as citrus fruits, may help cut down on the duration of a cold. B-vitamins, found in whole grains, green vegetables, potatoes, and beans keep your immune system primed and stave off winter bugs. They also help moderate your mood, preventing you from feeling depressed, stressed, anxious, or cranky. Depression can be a common feeling this time of year. Whether it is assumed to be because of the holidays or a result of a chronic illness, you could be feeling blue this time of year because of Seasonal Affective Disorder (SAD). SAD usually affects people between October and March when the days are shortest due to lack of sunlight, which is a natural antidepressant. Talk to your doctor about what can be done to help boost your mood during these months. Feeling stressed about the holidays? The holiday season is often full of travel, relatives from out of town, shopping stress, and lots of food. Before you go reaching for that piece of pumpkin pie, grab a banana. Certain foods are natural stress fighters because they are low in caffeine and have carbohydrates instead of sugar. Also, make sure to save some personal time for yourself. Q: We had the first hard frost last night. Does that mean I can stop giving my dog and cat flea and tick preventative? A: Fleas and ticks are more than mere nuisances. They can cause tremendous discomfort in dogs and cats and, more importantly, they can cause disease. On-again, offagain preventive programs are not the optimal way to safeguard the health of pets and their families. By the time a pet owner notices fleas on a pet, the fleas may have already transmitted infectious agents and begun laying eggs. Ticks can transmit disease agents to a dog or cat before the pests are even found and removed. That’s why I support the Companion Animal Parasite Council (CAPC) guidelines, which call for year-round, lifelong prevention of common external parasites, including fleas and ticks. The guidelines recommend using parasite control methods that consider the lifestyle and health of the pet, managing the pet’s environment, and working closely with owners to prevent infestation and protect the health of the entire family.

Sincerest Greetings of the Season Fellow Readers… December, for many, is a month filled with the activities of the Holiday Season. This year the “shopping season” started weeks before “Black Friday”. Preparing for the Holidays often brings a whirlwind of necessary obligations, and the joy of the Season becomes lost in projects, timelines, and days jam-packed with errands and commitments. This time of year is also one filled with surprise, wonder, joy, family and tradition. Often there is little time left for relaxing with a good book when there is so much to be done. To do that…one would have to slow the pace, take the time, which is precious at best during this time of year. I challenge you to find a way to bring books into your Holiday celebrations. I just recently sent down Christmas & Winter themed books to my three grandchildren who live on Fort Bragg in North Carolina. My grand-daughter Skye, just turned six and told me that she had her Christmas books already out on her dresser for her bedtime story. In the next few days I am sending down their Advent Calendar (complete with Hershey kisses) and a copy of Jan Brett‛s “The Wild Christmas Reindeer”. What a great countdown book to Christmas, each page beautifully illustrated in the manner of Scandinavian folk-art. Other wonderful Jan Brett books for children at holiday time are: “Who‛s That Knocking on Christmas Eve?”, “The Mitten”, “The Hat”, “The Christmas Trolls”, “The Gingerbread Baby” and “Annie and the Wild Animals” . Her books come in hardcover, paperback and toddler board books. You know parents, with your children in tow while you do your Christmas errands, books are a great way for them to pass their time in the car. In the past years, my husband and I have taken to making “themed” gift bags or baskets as gifts. We always add a great book as part of the gift. An Italian gift basket of pasta, herbs, pasta spoon with a Tuscan or Italian cookbook prominently placed makes for a great gift. If you have a budding artist, why not add an art/drawing book in the midst of the supplies? Crafters in your family would love a beautiful knitting, quilting or crocheting book in the mix with the yarn, needles and trim. We have a lovely selection of “coffee table books” with topics from sports to travel to celebrities to hobbies and decorating to car repair and humor. Donations collected were used to extend the spirit of community to our less fortunate neighbors throughout the entire year. This spirit was so strong that the activities of the Festival continues today.

Bethlehem’s Community Fund quietly helps children, families, individuals and the elderly living in the Bethlehem Community whose needs fall through the cracks of traditional programs. Throughout our sixty-nine year history the fund has come to the aid of thousands of Bethlehem residents, young and old alike, quickly, without red tape. Assistance is given anonymously with the utmost respect for the pride and privacy of the recipients. This is a long-standing tradition of the Fund. School personnel, local clergy, Bethlehem Senior Services and other providers make most of the requests for assistance. • Children receive help with school supplies, tutoring, eyeglasses, clothing, camp tuition and other needs. • A Bethlehem Festival Fund Scholarship is awarded to local High School students each year. • Seniors may find assistance with utility bills, small home repairs, medical costs, a personal emergency response system or pet care. • Each December, over 100 Bethlehem families receive baskets of food, clothing and gifts. With the Holiday Season fast approaching, Bethlehem’s Community Fund is looking at a record number of 125 families needing food baskets. We will soon be ordering our turkeys and coordinating our holiday deliveries. Financial responsibilities and human service needs in our schools and community increase during this time of year. Our goal of $30,000 will enable us to meet many of the needs of our Bethlehem neighbors throughout the year.

What is the best way to treat my cough & cold symptoms this winter to avoid missing the Happy Holidays? A cold is a viral infection of the upper respiratory track. It is also know as the “common cold” because children can get 6 to 10 colds per year with the typical adult having 2 to 4 colds per year. The season for colds is about late August to early April. Do I have a cold or the flu? An Influenza viral infection, “the Flu”, starts off similar to a cold with upper respiratory symptoms, like a runny nose, nonproductive cough and scratchy throat. However, it very rapidly and suddenly progresses to a high fever with headaches, chills, and muscle aches. The fever can last three days with all symptoms lasting about five to eight days. Colds tend to come on gradually and are usually distinguished by a sore throat, runny nose and sneezing. Colds rarely have a fever above 100 degrees and symptoms last about a week or two. (for the latest information on the flu go to www.CDC.gov) What can I do to ward off colds? • Wash your hands – the best defense. • Hand sanitizers containing either ethyl alcohol (62-95%). • Limit exposure to infected people whenever possible. • Practice healthy habits such as eating a balanced diet, getting enough sleep, and exercising regularly. • Drink plenty of water. Cough and cold medications might help reduce your symptoms, but will not reduce the duration of the cold. To reduce the risk of adverse effects, purchase single ingredient products (vs products with multiple ingredients) as the symptoms of a cold will vary over the course of time. Here is an overview of the different types of products to consider. Decongestants: Decongestants make breathing easier by shrinking swollen mucous membranes in the nose, allowing air to pass through. They relieve runny nose and postnasal drip. Decongestants can cause shakiness, tremors, nervousness or keep you awake. They also can raise blood pressure, so patients with high blood pressure should not take them. Expectorants: Expectorants, such as guaifenesin, have been promoted to help thin mucous and make it easier to couch mucus up. However, these products have not been proven to be effective. Cough Suppressants: Suppressants, such as dextromethorphan (DM), control or suppress the cough reflex and work best for a dry, non-productive cough, especially one that keeps you awake. Patients taking antidepressants and sedating medications should check with their health care providers before taking cough suppressants.

Nasal Sprays: These agents work right at the nose and may be used in patients concerned about the drug interactions or adverse effects of oral cold remedies. Some nasal sprays contain plain saline (salt water) to loosen stuffy noses and clear sinuses. Others contain decongestants which can reduce stuffiness but can only be used for 3 days to avoid a “rebound effect,” resulting in more congestion. Zinc gel swabs or nasal sprays have had mixed results in studies showing some evidence to indicate it may lessen the duration and intensity of nasal cold symptoms. Should I take a decongestant or an antihistamine? This depends on your symptoms, your medical conditions and medications. If you have nasal or sinus congestion, then a decongestant can be helpful. If you have drainage -- either a runny nose or postnasal drip or itchy watery eyes -- then an antihistamine may be helpful. However, studies have shown that an antihistamine alone does not reduce the runny nose and sneezing due to colds. Also consider the medication’s side effects on your medical conditions or other medications. Should I suppress my cough? An occasional cough may clear the lung of pollutants and excess phlegm. If you have a cough due to a cold that is keeping you awake, sometimes suppressing it is helpful at nightime. A persistent cough that extends past the duration of your cold should be checked by your physician. What should I take for fever and aches? The very young, the very old, those who suffer from seizures during illness or those with heart or lung disease should consider suppressing their fever. Others, may consider it if they are uncomfortable during their illness. Young people (including those in their early 20s) should avoid aspirin. Acetaminophen, ibuprofen and naproxen are possible choices. Acetaminophen has less risk of stomach upset and interactions with other medications and diseases. However, everyone should ask their health care provider and read the label for use as these medications should be avoided in some patients and taking too much could have negative effects on all patients. What’s best for a sore throat? Medicated lozenges and gargles can temporarily soothe a sore throat. An FDA advisory panel has said that these ingredients are safe: benzocaine, hexylresorcinols, menthol, and phenol and sodium phenolate compounds. The panel suggests avoiding aspirin chewing gum as there is insufficient evidence that it relieves pain, and it may irritate mucus membranes. Don’t use lozenges or gargles for more than a few days. The medications could mask signs of strep throat, a bacterial infection that should be treated with antibiotics. Recent research has found that your HAIR can actually predict whether or not your heart is headed for disaster. We all know that stress is bad for us. And during times of stress, our bodies release cortisol (the “stress” hormone). Now, cortisol is a bit funny. That’s because too little of it is bad for you. Yet, too much is also VERY bad. Unfortunately, because of our busy lives and the way our society is structured, it can be hard NOT to feel stressed out all the time. This is not good at ALL for your health. Chronic stress has been linked to numerous health problems including heart attack and stroke. That's why researchers at the University of Western Ontario set out to discover a way to measure your "accumulated" stress levels...as a way to predict a future event, like a heart attack. Currently, you CAN get your stress (cortisol) levels checked. The only problem is that it only represents your cortisol levels on the day of testing This means you can't see how much TOTAL stress you've been under, say in the last 3 months. That's why this research is so exciting. For this study, published in the journal Stress, researchers recruited 112 participants who were already hospitalized. 56 of the subjects were in the hospital due to heart attack. 56 of the subjects in the control group were hospitalized for reasons other than heart attack. The researchers then collected a 3 cm-long hair sample from everyone in each group. Cortisol levels in the hair were then measured. The study accounted for known heart-attack risk factors (e.g., diabetes, high-cholesterol, triglycerides, etc) in all subjects. Despite this, accumulated cortisol levels in the hair emerged as the strongest predictor of heart attack. (1) “Intuitively we know stress is not good for you, but it’s not easy to measure. We know that on average, hair grows one centimeter (cm) a month, and so if we take a hair sample six cm long, we can determine stress levels for six months by measuring the cortisol level in the hair, ” explained Dr. Gideon Koren, one of the senior researchers involved in the study. He added, “Stress is a serious part of modern life affecting many areas of health and life. This study has implications for research and for practice, as stress can be managed with lifestyle changes… Pretty interesting, huh? The moral of the story: Do whatever you can on a regular basis to reduce your stress levels. Your health (and your heart) will thank you. And remember, the first thing in ANY stress-reduction program is to exercise. It’s a great stress-reliever . Once you’ve got that down, here are a few more things that can help: Vitamin C: In addition to being a great immune system booster, it turns out vitamin C can also help reduce your cortisol levels. One study published in the journal Psychopharmacology recruited 120 volunteers who were subjected to the Trier Social Stress Test (TSST). It’s a test commonly used to measure psychological stress. Those who took vitamin C had lower blood pressure, less subjective stress, and decreased cortisol levels than the placebo group. [2] 54

Breathe: Deep breathing is very effective at calming you down

and lowering your heart rate and blood pressure. Whenever you’re feeling anxious or totally stressed, take a few minutes to breathe. Make sure you inhale deeply, into your belly. Then hold it for a second or two. Then slowly exhale. Do this 5-10 times and you’ll immediately start to feel calmer. Fish Oil: This amazing nutrient seems to do it all… protect your heart, your brain, reduce inflammation, and on and on… But one interesting 2003 study also found that as little as 7-8 grams of fish oil daily can be effective at reducing high cortisol levels due to mental stress. [3] So there you have it. With what’s left of the holiday season, make sure to take a few minutes each day to “stop and smell the roses.” Being stressed out all the time is not good for you, so it’s absolutely critical that you make de-stressing a priority in your life.
