4 to 4 1/2 cups flour 2 Tbsp sugar 1 teaspoon salt 1 teaspoon baking soda 4 Tbsp butter 1 cup raisins 1 large egg, lightly beaten 2 cups buttermilk

4 Transfer dough to a large, lightly greased cast-iron skillet or a baking sheet (it will flatten out a bit in the pan or on the baking sheet). Using a serrated knife, score top of dough about an inch or so deep in an “X” shape. The purpose of the scoring is to help heat get into the center of the dough while it cooks. Transfer to oven and bake until bread is golden and bottom sounds hollow when tapped, about 35-45 minutes. (If you use a cast iron pan, it may take a little longer as it takes longer for the pan to heat up than a baking sheet.) Check for doneness also by inserting a long, thin skewer into the center. If it comes out clean, it’s done.

1. Preheat oven to 425°. Sift together 4 cups of flour, the sugar, salt, and baking soda into a large mixing bowl.

Hint 1: If the top is getting too dark while baking, tent the bread with some aluminum foil.

2. Using a pastry cutter or two knives (can also use your fingers), work butter into flour mixture until it resembles coarse meal, then stir in raisins.

3 Make a well in the center of the flour mixture. Add beaten egg and buttermilk to well and mix in with a wooden spoon until dough is too stiff to stir. Dust hands with a little flour, then gently knead dough in the bowl just long enough to form a rough ball. If the dough is too sticky to work with, add in a little more flour. Do not over-knead!

Transfer dough to a lightly floured surface and shape into a round loaf. Note that the dough will be a little sticky, and quite shaggy (a little like a shortcake biscuit dough). You want to work it just enough so that it comes together. If you over-knead, the bread will end up tough. p. 6

Hint 2: If you use a cast iron skillet to cook the bread in the oven, be very careful when you take the pan out. It’s easy to forget that the handle is extremely hot. Cool the handle with an ice cube, or put a pot holder over it.

Remove pan or sheet from oven, let bread sit in the pan or on the sheet for 5-10 minutes, then remove to a rack to cool briefly. Serve bread warm, at room temperature, or sliced and toasted. Best when eaten warm and just baked.

Bethlehem’s Birthday

2018 is our town’s 225 or 224 birthday depending on how you want to calculate it.

225 years ago, the town of Bethlehem was formally created. During Session 17 of the New York Legislature, in an act passed on March 12, 1793, several towns were created including Bethlehem. The act reads in part: And further be it enacted, That from and after the said first Monday in April 1794, all that part of the town of Water Vliet, as is comprehended with the bounds, following, to wit, beginning on the west bank of Hudson’s river in the south bounds of the city of Albany…shall be and hereby is erected into a separate town by the name of Bethlehem.

The act goes on to specify more items. It designates where the first town meeting shall be held “in the town of Bethlehem, at the dwelling house of Henry Burhans.” It gives the “freeholders and inhabitants” of the newly erected town the power to hold annual town meetings and to elect officials. It “divides the poor.” “That the poor belonging to the said town of Water Vliet, previous to this division, shall be divided among’st the said towns of Bethlehem and Water Vliet.” And finally, it directs that any expenses accrued from before the first Monday in April 1794 are to be “assessed, levied and paid.”

And so, all of this came to pass. The official town minute book is a little unclear about exactly when the freeholders and inhabitants of the new town held their first annual meeting. Here’s what it says, “At a Town Meeting Held at the House of Henry Burhans, Innholder, in the Town of Bethlehem, on Tuesday 1st inst The following Persons as chosen Officers for the ensuing year April 10, 1794” I read that to mean they met on Tuesday April 1, 1794 with the year starting on the following Thursday, April 10.

The persons chosen to serve the newly created town answer the concerns of the rural, agricultural community that was Bethlehem Philip Van Renssselaer was elected supervisor. You might be familiar with his home, now known as Historic Cherry Hill, located today on South Pearl Street in Albany. Philip and his wife Maria Sanders had the house built in 1787. By the time Philip was elected supervisor, the property comprised almost 1000 acres, much of which was in the town of Bethlehem. To me, Van Rensselaer’s election points to a concern by the men of town to elect a wealthy, well known and wellconnected person, establishing an early legitimacy for the town. Philip was a merchant in Albany, an early Patriot in the American Revolution, being a member of the Albany Committee of Correspondence, and an essential part of the supply side of the war. Gen Schuyler appointed him “storekeeper” in charge of sourcing arms, ammunition and other military supplies. Philip died just shy of his 51st birthday on March 3, 1798. He served as supervisor through 1797.

At that first town meeting, John Vanderheyden was elected town clerk. Town clerks are the essential record keepers.

Overseers of the highway, assessors, collectors and constables were also elected with duties that are fairly familiar today. But what about the pound masters and fence viewers that were elected?

Bethlehem’s town seal was adopted by the town board on May 2, 1975 during the United States Bicentennially celebrations. It was designed at the suggestion of town historian Thomas E. Mulligan and the Bethlehem Historical Association. Alice Pauline Schafer made the original drawing and Edwin Becker painted the large version seen here. The design harkens to Bethlehem history and includes a Native American greeting Henry Hudson on the shore of the Hudson River. The resolution adopting the seal notes it is to be “used by all of its citizens to promote a better understanding of the early historical significance of the Town’s land and water area in the origin and development of our State and Nation.” p. 14

Van Rensselaer family tradition holds that this is a portrait of Philip Van Rensselaer. The original piece, held by Historic Cherry Hill, is a color, miniature portrait attributed to John Ramage. It was painted on ivory about 1780.

Walter Hooghtelin and Teunis W. Slingerland were charged with maintaining the town pound. This is the enclosure where animals found wandering the countryside were impounded. Stray cattle, horses and swine were an issue because of the damage they could do to crops and fields. They were dangerous when roaming the roads, and were known to take down fences. Hooghtelin and Slingerland would try and determine who owned the offending beast.

They would send out fence viewers Francis Moak and

Simeon Frazer to assess the damage. If the animal was not claimed within six days, the pound masters were authorized to sell it.

Town clerk VanDerheyden kept records, known as the Book of Strays, tallying who turned in an animal.

For example, on June 8, 1794, both Conrade Luke and Francis Crewell reported strays. VanDerheyden kept track of cattle marks so that the owner of the stray could be identified. The book also makes note of some of the sales from the pound. For example, on June 13, 1797, “John H. Burhans sold cow which came into enclosure of Gerret Sager. Sold to Albert Vanderzee.”

Also elected in 1794 were two Overseers of the Poor, Hendrick Burhans and Barent J. Staats. Life was hard, and those who could not take care of themselves were of concern. At that first meeting, the freeholders and inhabitants resolved to raise the sum of one hundred pounds for support of the poor of the town for the ensuing year. While people cared about the poor, they were also concerned about burdening the community.

Note that the act establishing the town made a point to assign the poor within the new borders to the new town.

No matter how you calculate our town’s age (is it 225 or 224 years old?) Bethlehem has a long history of serving the needs of our citizens. While we don’t have annual town meetings anymore, we continue to elect a supervisor, town clerk, receiver of taxes and superintendent of highways. While we don’t have pound masters or fence viewers, we do have professional staff to handle the conditions of modern living. We don’t elect Overseers of the Poor anymore, but we do have significant resources at the county level.

Therefore, no matter how many candles are on our cake, let’s recognize the 220+ years of our town’s existence!

K-9 Veterans Day

Many things changed after the bombing of Pearl Harbor in 1941. Supplies were rationed. Men were drafted. Women rolled up their sleeves and built war supplies. And dogs were called to duty.

During the First World War, the United States took notice of the European use of canines as sentries, message carriers and several other functions. Dogs for Defense was an American program initiated by a private citizen named Alene Erlanger. With assistance of the American Kennel Club, the group aimed to train dogs for military use. By 1942, the first Dogs for Defense were prepared for duty in North Africa. As the war progressed, Dogs for Defense was unable to keep up with the demand and the Remount Branch, Service Installations Divisions took over training of the dogs.

Following the attack on Pearl Harbor, the U.S. Army received the first nine American-trained sentry dogs.

From these nine dogs, the U.S. Army Canine (K-9) Corps was formed. Before the close of the war, it grew to a force of more than 10,000 dogs.

Since the inception of the US K9 Corps on March 13, 1942 dogs officially became the part of military service.

Border Patrol K9s, Customs K9s, Police K9s, Secret Service K9s, Airport Service K9s and FBI K9s work daily to save and protect Americans and the homeland. That is why military dogs should be honored accordingly.

National K9 Veterans Day is celebrated on March 13th on the official birthday of the US Army K9 Corps.

When integrated into existing security forces, man/ woman and dog teams enable those forces to perform their mission more effectively. Military service dogs perform many duties, including scout and patrol, explosives detection, search and rescue, enemy subdue and guard duty. They also serve as companions to wounded service members who suffer with posttraumatic stress disorder and traumatic brain injury.

Over 30,000 dogs have served in the military since March 13, 1942, with over 5,500 dogs deployed during the Korean and Vietnam conflicts alone. There are currently approximately 2,800 active duty dogs deployed around the world, including over 600 in Iraq and Afghanistan. As a result of their bravery, dedication and devotion to serving our Armed Forces, dogs have earned outstanding records in combat overseas, including K-9 Medals of Honor.

The idea of a K-9 Veterans Day originated with retired military working dog (MWD) trainer Joe White who

wanted recognition for dogs who serve in military, law enforcement, and other capacities. He selected March 13 because it is the official birthday of the U.S. Army K-9 Corps and this month marks the 76th anniversary.

But why stop with sprucing up your living space? This year, consider extending the “spring cleaning” concept to your financial environment, too.

“De-clutter” your portfolio. A YMCA SUCCESS STORY OF FAITH…..

AND FAYTHE When you are faced with significant health challenges; No one seems to know what’s wrong or what to do; Doctors can’t find the answers, and the future is questionable at best…..you have to have faith, or in this case, Faythe.

Faythe Allport, 63, of Glenmont faced exactly this scenario. Not only did doctors question whether she would walk again, they questioned if she would even live. However, with hard work, perseverance and the tremendous support and encouragement of the Bethlehem YMCA, she was able to turn her health, and her life, around.

“Going to the Y was 100 percent beneficial,” Faythe said. “I did not expect, nor did my doctors expect such improvement and it’s all due to the YMCA.” Faythe’s story begins in January of 2016 when she had a partial right knee replacement. During a follow-up visit to the surgeon just two weeks later, the glued incision split open and the knee became infected.

Over the next few months, the infection grew worse. Doctors were puzzled. Antibiotics didn’t cure it. Surgery to clean out the infection didn’t solve the problem. Even after her knee was removed and replaced with what she called “a cement block that delivers antibiotics,” the infection worsened.

Faythe couldn’t walk and was confined to a wheelchair. She wore a full leg brace and had an IV pole to deliver antibiotics. She was already slender, and the inactivity caused her to lose almost all of her strength. “I had lost 25 pounds. I was skin and bones. I hadn’t walked or done anything for more than three months.”

“The infection was raging,” Faythe said. “They said I could lose my leg. They said I could die. They couldn’t figure out what the infection was.”

Last September she had a total knee replacement.

During the surgery, doctors broke her tibia and she was back in a wheelchair. However, the infection went away. Faythe faced a lengthy rehabilitation. Unfortunately, months of traditional physical therapy that focused only on her knee yielded no improvement.

Once her leg healed, her doctor suggested she try water therapy so she turned to the Bethlehem YMCA for help, not just for her knee, but also for her total body condition. Each morning Faythe attends the 6:30 a.m. water aerobics class led by YMCA staff members Ellen Higgins and Chris Corson.

When I spoke with Faythe, the timber of her voice brightened when she talked about how much the YMCA has helped her.

“When I started at the Y I could barely crawl in and out of the pool because I was so weak, no muscle, I limped and my knee hurt,” Faythe said, “and now I walk normally. They really helped me out.”

Faythe said the low-impact water workout is an excellent, and cost-effective, alternative to physical therapy.

“They worked with me and the end result is that I don’t have a limp,” Faythe said. “I’m muscular all over, not just my knee. I got the muscle tone back in my arms. I put on 20 pounds, which
