Thank you to the Salt Spring Farmers Institute, all the participants who entered their farm products, art and animals in the judging categories, and the many volunteers who once again made this year’s event a great success. It’s an honour to be part of a community that celebrates its roots and passes on the joys of farming to the next generation, all while embracing newcomers and folding new traditions into the mix. It’s wonderful to feel community is at the heart of our biggest social event of the year.

INGREDIENTS: 1 1/2 cups flour 1/2 cup cake flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 3/4 cup sugar

Mix dry ingredients with 1/4 cup of the sugar in medium bowl, set aside. In another bowl, mix mashed bananas, yogurt and vanilla, set aside. Beat remaining sugar and margarine together until fluffy, add eggs, beating well each time. Beat in one-third of the flour
3 very large, very ripe bananas, mashed well ( about 1 1/2 cups) 1/4 cup low fat yogurt 1 tsp. vanilla 3 tbsp. Becel 2 eggs 1/4 cup walnuts mixture, then one-third banana mixture. Repeat twice more, then scrape all into 9” x 5” greased loaf pan, sprinkle chopped walnuts on top. Bake at 350 F for about 55 minutes, until centre is cooked. Leave in pan to cool for 10 minutes, then turn out onto rack to finish cooling.

INGREDIENTS Fresh-picked crapapples Sugar Wash and remove blossom end of apples. Cut into quarters without peeling. Cover with water and boil until apples are tender. Cool and strain though jelly bags. Do not squeeze it will make the jelly cloudy. Measure the juice and add 3/4 cup of sugar per cup of juice. Boil rapidly until jelly stage using the frozen plate method or when it reaches 220 F on a candy thermometer. Pour into sterilized jars. Fill to within 1/2 inch from the top. Clean the rim and put on top, screw the band tight. Then process in boiling water 5 minutes.

INGREDIENTS: Pie Crust (makes 4 double pie shells) 6 cups all purpose flour 2 tsp. salt 1 lb Tenderflake lard 1/2 cup butter 1 egg, beaten 1 tbsp. vinegar 1 cup ice water Stir the flour and salt together. Cut in the lard and butter with a pastry blender or two knives until the shortening is in pea size pieces. In a measuring cup, combine the egg and vinegar. Add water. Stir the liquid into the flour mixture, adding just enough to make the dough cling together. Stir the water in with a wooden spoon until mixed thoroughly, then gather the dough into a ball, and separate into four portions.

Cover and refrigerate for one hour, or chill overnight, providing you leave it at room temp for 15 mins before rolling. Pie 1 double pie crust 3 Golden Delicious apples (or other type) 12 prune plums 1/2 cup sugar 1 tsp. cinnamon Line bottom of pie plate with 1/2 crust. peel and slice apples, place on crust. Seed and halve plums and place on top of apples. Cover with mixed sugar and cinnamon. Place crust on top and crimp edges, pick top with knife. Sprinkle with sugar. Bake at 350 F for one hour. Eat and enjoy!

INGREDIENTS: Crust 1/2 cup butter 1 cup almond meal 1 cup dates
Filling 2 packages cream cheese 1/3 cup organic sugar 4 farm fresh eggs 2 tsp. vanilla extract Juice of one fresh lemon 1 tsp. lemon rind
Topping 1 1/2 cups organic sour cream 3 tbsp. sugar 1/2 tsp. vanilla extract
Blend crust ingredients in food processor, then press into springform pan lined with parchment paper. Pour in filling and bake at 350 F until set, approximately 35 min. Cool hot cake for 10 minutes, then pour topping over and bake another 10-15 minutes. Eat warm or chill in fridge overnight. Recipe adapted from the Moosewood Cookbook to have a glutenfree crust. INGREDIENTS 4 cups white sugar 4 cups crushed loganberries (can use blackberries) Juice and grated rind of one lime

Wild Plum Jam substitution 4 cups white sugar 4 cups of wild plums (cut from pits) Juice and grated rind of one lemon Use the same method as below but use an immersion blender before the mixture becomes too hot.
Sterilize jars, funnel, and tongs in the oven or by boiling for 10 minutes. Simmer the lids in a small saucepan of water. In a large deep pot bring the crushed loganberries to a boil. Add the sugar, juice and rind of lime and stir until it comes to a rolling boil. Keep it rolling, and stir often for 10 to 15 minutes. Frequently check by dipping a spoon into the jam and holding it up sideways. When two drips come together and hang there, the jam is ready. Turn the heat off, and stir for a minute or two before pouring into sterile jars. Cover with lids and seal. Sponsored by:

RASPBERRY PRESERVES
By Stephen Roberts - Best Jam/Jelly, Mouat’s Housewares Trophy
INGREDIENTS 10 cups fresh raspberries, not chilled or frozen 3 cups organic sugar 1/2 cup organic lemon juice
Gently toss together raspberries and sugar in a nonreactive bowl. Cover and let stand at least eight hours, or up to overnight in the refrigerator. Place a sieve over a large nonreactive saucepan. Pour raspberry mixture into sieve to drain. Remove the sieve with the berries and set aside. Bring the sugar syrup to a boil over medium heat, add lemon juice. The mixture will foam up, so reduce the heat as necessary. Cook the syrup until reduced by half (five to 10 minutes). Gently stir in the raspberries and cook for two minutes to heat through. Ladle into jars and process.

1/3 cup unsalted butter 1/3 cup white sugar 1/3 cup demerara sugar 2 large eggs, lightly beaten 1 cup mashed very ripe bananas ½ cup coarsely chopped nuts
Preheat oven 350 F, grease 8 1/2 by 4 1/2 loaf pan. Whisk the dry ingredients thoroughly. In large bowl, beat the butter and sugar at high speed until fluffy in texture. Beat in the flour mixture until blended and the consistency of brown sugar. Gradually beat in the eggs. Fold in the banana and nuts just until combined. Place batter in pan, place in oven, and bake for 50 to 60 minutes. Check with toothpick for doneness. Cool in pan for 5 to 10 minutes. Unmold and cool completely.

Be Water Savvy Use Only What You Need
Water is one of Salt Spring Island’s most precious resources. Please join islanders as we work together to ensure that this summer, and every summer, we use this limited resource wisely, and that we respect and protect our island watersheds. Try these handy water saving tips: Keep showers short. Use low-flow shower heads. If bathing, try a 1/4 tub only. Run only full loads in dishwashers and washing machines. Shut off the tap while brushing teeth, shaving, or washing up hands or dishes. Use low-flush toilets. Flush less often. Use a bucket to capture and reuse shower, bath and dishwater in your garden. Inform guests from the mainland about our islands’ limited water supply, and ask them to be please be aware of keeping consumption down.
