Gingerbread is a broad term that can describe anything from a firm and crispy cookie to a moist, soft cake. Traditionally, gingerbread is seasoned with ginger, cloves, nutmeg, and other aromatic spices. Molasses and brown sugar counteract the spice with sweetness. North Americans have been baking gingerbread in various shapes or forms for more than 200 years, and the recipes even pre-date the American revolution. However, gingerbread dates back even further to the Shakespearean era, with The Bard having mentioned it in one of his plays. Gingerbread’s name can be trace to medieval England and once referred to any kind of preserved ginger. The term went on to reference ginger-flavored cakes in the 15th century, and gingerbread eventually became popular throughout the world. Even though gingerbread cakes and cookies have been made for centuries, Germans are often credited with creating gingerbread houses, according to Smithsonian. They were probably modeled after the witch’s candy cottage in the German fairy tale, “Hansel and Gretel.” Even though gingerbread can be made any time of year, it is particularly associated with the Christmas season, with gingerbread men and other fanciful shapes turning up on cookie platters.

The name is “Joiny” and I coined it for my iPhone. There is nobody or nothing else that is always so close to me, and let’s me connect or join the world, but my trusty Phone “Joiny”. “Joiny” provides me with information that I didn’t know on a daily basis. I learn so much from this non-human, and it is with me constantly at my age of 82. I ask myself how I survived without “Joiny”? While I did survive, I was never as well informed nor able to connect with so many people in so little time. Thanks, electronic progress.

Litter Bugs Big Time Months ago hundreds of posters for a lost dog were posted throughout [3 local towns] and probably other towns. That pet is either lost or found by now and yet the posters remain. The posters are now unreadable and turning into trash. One polite phone call to the contact was ignored. These poster-makers were asking for help in finding their pet, and yet violating the landscape for thousands of residents doesn’t bother them at all! Please come back and take out the trash! Selfishness is still selfishness. And littering is still against the law. [Local Hospital] Needs New Weekend Policies I drove my wife, age 81 to [local hospital] ER on a Thursday and I was able to park close by in the ER open parking lot. My wife was admitted later that day. On Friday, I drove to the hospital and was glad to see Valet parking close to the main entrance. I am 82 with a bad knee. Saturday I arrived at the same valet place and was told no valet on the weekend, and to park in the large garage building free. I had to walk that day and the next day, Sunday, a long way to the front entrance. I was in pain, with nobody to help as I also carried a heavy bag. I also found out from the front desk that two main restaurants were closed as well as the gift shop. Now I call what [local hospital] does on weekends not good. A grade C-. BRICK HOMES FIGHT FIRES THE LONGEST (NAPSI)—Firefighters report that it takes about an hour and a half for a fire to breach a brick home-as compared to fiber cement in under an hour and vinyl siding in just minutes. Choosing brick exteriors to protect their own firehouses, firefighters say brick homes help slow the spread, offering the extra few minutes to help save lives and property as this brief video shows. While the International Residential Code (IRC) does not require cladding on singlefamily homes to have a fire rating, the International Building Code (IBC) acknowledges that fired-clay brick has tested to provide a minimum one-hour fire resistance rating alone, regardless of backing material. This is something that synthetic materials—such as fiber cement—cannot claim. Primarily made of clay, brick is classified as a noncombustible material that will not burn, melt or combust. In a one-hour severe fire test conducted independently for the Brick Industry Association (BIA), vinyl siding burned after only 18 minutes, fiber cement failed within one hour and fired-clay brick withstood the flames after one hour. The test was conducted in accordance with ASTM E119, the Standard Test Methods for Fire Tests of Building Construction and Materials.

Yet, for many who rely on Social Security disability benefits for income and Medicare or Medicaid, work seems like a gamble. What most people don’t know is that there are free services and supports available for those who qualify. Social Security’s Ticket to Work (Ticket) program and other Work Incentives can help take the guesswork out of finding or returning to work. More than 20 Work Incentives are designed to help individuals who receive Social Security Disability Insurance (SSDI) or Supplemental Security Income (SSI) due to a disability, transition to the workplace without immediately losing those benefits. Because each person’s circumstances are different, job seekers are encouraged to consult a certified Benefits Counselor, who can help them make informed decisions about employment and benefits. Through the Ticket program, people ages 18 through 64 who receive SSDI or SSI can receive free job-related services and supports. Whether they work with their state’s Vocational Rehabilitation (VR) agency or with authorized service providers called Employment Networks (EN), people can find the resources they need to prepare for, find and maintain employment.

For individuals such as Shirley, this can mean exploring work with confidence. When Shirley was diagnosed with narcolepsy, her doctors advised her stop working. “It was distressing to lose that sense of control over my life,” she recalls. “…[and] stressful making ends meet on an SSDI check.” It took several years to find effective treatment, but Shirley was determined to regain her well-being and that feeling of self-determination she had lost. “Narcolepsy is not something that just goes away,” she says. “But I’ve learned to make adjustments… [and] work around the disability.” Once she felt ready, Shirley attended a job fair where she learned about the Ticket program and connected with an EN. With their help and encouragement, Shirley found work in her State’s General Services Administration, where she helps ensure small businesses are represented on state contracts. “I’m grateful for the help I received through Ticket to Work,” she reflects. “It feels wonderful to have my independence back! I

n the heart of Rochester, the Dr. Martin Luther King Jr. Park on Court Street undergoes a magical transformation every December, thanks to the tireless efforts of Kelli Marsh, Jenna Knauf, and Sean McCarthy. Their collective brainchild, Roc Holiday Village, has become a cherished tradition, filling the city with the warmth of Christmas cheer. However, behind the festive spectacle lies a deeply personal connection for Kelli Marsh, a Rochester native with a profound love for her community and a passion for creating lasting holiday memories. For Marsh, the roots of Roc Holiday Village trace back to her own childhood, where visits with family to Santa left an indelible mark. Her subsequent travels around the world exposed her to the grandeur of Christmas markets in France, Germany, and New York City, planting the seed for her desire to bring that same enchantment back to her hometown. For Marsh, Roc Holiday Village is not just an event; it’s a reflection of nostalgia and commitment to infuse the holiday spirit into the heart of Rochester. As a mother, Marsh hopes to create for her son the same magical experiences she treasured as a child. Her vision extends beyond personal nostalgia; she says she, Knauf, and McCarthy wanted to revitalize downtown Rochester during the winter season, filling the void left by the closure of Midtown Plaza. “Winter in Rochester is a special time of year when the community comes together to celebrate,” Marsh says. When not working on the annual Roc Holiday Village event, she and her family actively embrace the winter spirit, hitting the slopes for skiing and snowboarding. She explains, “We make a point of embracing all the seasons Rochester has to offer. The festive season in December is particularly magical. Rochester has something for everyone, from its renowned museums to exceptional performance arts experiences, making it an ideal winter destination.”

Among festival highlights, Marsh says her personal favorite is Santa’s Workshop. Transforming it into a magical and inclusive space, the workshop caters to visitors of all ages. Marsh emphasizes the significance of creating an event where elements are free, accessible, and diverse. “It’s a place where everyone feels welcome and happy,” she says, underlining the importance of representation accessibility, including a Black Santa and a Santa who communicates using American Sign Language. Marsh says, “What I love most is seeing the children’s faces light up with joy while they visit us. It’s a place where everyone feels welcome and happy!” As the coordinator of Roc Holiday Village, Marsh’s role extends far beyond the festive season. Describing the year-round planning process, she notes the challenges of scheduling, booking special events, ordering supplies, and creating bespoke keepsakes. However, with a dedicated team of staff, volunteers, and crucial sponsor support, the event comes to life, year after year. Roc Holiday Village coordinators aim to continue providing the same magical experiences visitors have come to love over the years. In its fifth year, the event now includes The Giving Cup: Hot Cocoa for a Cause, where representatives from local non-profits serve cocoa and coffee to raise money for their charities. Also featured this year is a private Igloo Inn that offers guests an exclusive space to overlook the ice rink. Roc Holiday Village partnered with Rohrbach Brewing Company this year for an exclusive beer flavor called Village Lager. Silent Discos on the outdoor ice rink and an expanded selection of free arcade games add to the activities to keep the family entertained and mesmerized. Houseguests vs. Pets Holiday Edition DID YOU KNOW? Thought they might be most often associated with dogs, ticks can affect cats as well. According to Blue Cross for Pets, cats are most likely to encounter ticks if they live near areas with lots of deer and sheep or in regions where other wildlife, such as hedgehogs and rabbits, are present. While ticks are active throughout the year, cats are most likely to encounter them between spring and autumn. That’s due in part to the climate during these seasons, which tends to be warmer and therefore more inviting to cats, compelling them to spend more time outdoors than they do in winter. Ticks, which are egg-shaped, are big enough to spot, so cat owners should conduct a careful examination of their cats’ fur each time they come into the house after spending time in the yard. Blue Cross for Pets notes that ticks feel like small bumps on a cat’s skin. Ticks are most likely to attach themselves to particular areas of a cat’s body. These areas include the head, neck, ears, and feet. Routine brushing, especially whenever cats come inside after time spent outdoors, can help cat owners spot and remove ticks from their cats. It’s important to recognize that indoor cats are not invulnerable to ticks, as other pets and humans can track ticks indoors. Periodic inspections and brushing of indoor cats’ can protect them from ticks and the diseases ticks carry.

DEAR PAW’S CORNER: My brother is staying with us through the holiday season while he figures out his life. However, he insists on keeping the feeding bowls full for my two dogs, Buster and Charlie. I’m not sure what’s going on, so I won’t judge the situation. However, if you want him to stay, then for your dogs’ sake, you’ll have to take extra steps to stop this. Move the dog food to a cabinet or storage bin that you can lock. Take out just the amount of food for that day and portion it out for your dogs’ scheduled feeding times. Then remind your brother that the way you feed your dogs is non-negotiable. DEAR PAWS: I’m 11 years old and my cousins are staying with us for Christmas. They want to walk my dog, Reed, all the time. But that’s my job, and Reed is my dog. How can I get them to stop? -- Carlos in Dallas, Texas DEAR CARLOS: Talk to your parents about your frustration. Are your cousins not sharing the lead during walks? Or are they mistreating your dog? If it’s a sharing situation, the adults should help negotiate a fair plan for walking Reed. If they’re mistreating him, your parents need to know and put a stop to it. Holiday visits can be annoying for you and your pets, but being diplomatic while holding firm to certain rules, like diet and training schedule, is helpful. Best of luck. DEAR DR. ROACH: My husband was diagnosed with ampullary cancer. He has a tumor the size of a marble. We are told this is an aggressive cancer. My concern is that they are giving him chemotherapy before the Whipple surgery. Is this standard practice? -- P.T. ANSWER: The ampulla of Vater is an opening in the duodenum (the first segment of the small intestine), where the common bile duct releases bile and pancreatic enzymes to aid digestion. A cancer of the ampulla can originate from the pancreas, bile duct or duodenum, and these can all be aggressive cancers. The standard approach in people with the possibility to be cured is called a pan creaticoduodenectomy, otherwise known as the Whipple procedure. Although this is a complex surgery that used to have a high mortality rate, the risk of death from the procedure in specialized centers is now about 1%. Most people are familiar with getting chemotherapy after surgery to help remove any cancer cells that remain, a technique called “adjuvant therapy.” However, giving chemotherapy before surgery (“neoadjuvant chemotherapy”) has increasingly been used in people with ampullary cancer. The idea is to shrink the tumor to make it easier for the surgeon to remove completely. Chemotherapy may also kill any cancer cells that have already spread. The decision of when to use chemotherapy depends on the individual’s situation, so I can’t tell you which would be better in your husband’s case, as I lack both the details of his tumor and the expertise. I can confirm that giving chemotherapy prior to surgery is being used in regards to ampullary cancer. ***

THE DANGERS OF BELLY FAT What’s so bad about belly fat? Seeing belly fat as a merely cosmetic concern overlooks the effects it has on overall health. According to the Mayo Clinic, belly fat is not limited to the extra layer of padding just below the skin known as subcutaneous fat. Belly fat also includes visceral fat, which means it extends to deep inside the abdomen and surrounds internal organs. Johns Hopkins Medicine notes that visceral fat in the belly is very close to the liver, which can turn it into cholesterol. From there, the fat goes through the bloodstream and may collect along the walls of the arteries, potentially contributing to a hardening and narrowing of the arteries known as atherosclerosis. The complications of atherosclerosis depends on which arteries are affected, but they can include an assortment of diseases that affect the arteries and a greater risk for aneurysms and chronic kidney disease. Johns Hopkins Medicine notes that visceral fat is just as harmful for the heart as high blood pressure and smoking. So while efforts to reduce belly fat may initially be embraced to improve appearance, individuals should know that reducing fat in their midsections also can reduce their risk for a host of conditions, some of which are deadly.

PREVENTING ORAL CANCER Oral cancer (mouth cancer) can occur anywhere within the mouth or oral cavity, including the lips, gums, tongue, roof of the mouth, floor of the mouth, and the inside of the cheeks. You have an increased risk of oral cancer if you use any form of tobacco products or drink alcohol heavily. Other risk factors include excessive sun exposure to the lips, a weakened immune system, and human papilloma virus (HPV). The best way to prevent oral cancer is to reduce these risk factors as much as possible. If you have a risk factor you can’t control, frequent checkups with your dentist are the best prevention. A dentist can catch oral cancer early on, sometimes before the onset of symptoms.

INGREDIENTS: 1 cup all purpose flour ½ tsp baking soda ¼ cup cocoa powder ⅓ cup unsalted butter ½ cup white sugar 1 egg 1 tsp vanilla extract ½ cup semi sweet chocolate chips 1 cup chocolate frosting* 12 Werther’s soft caramels 1 Tbsp heavy cream 1 Tbsp Heath English Toffee bits *Any chocolate frosting will work, Duncan Hines Creamy Milk Chocolate frosting suggested DIRECTIONS: 1. Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper. 2. In a stand mixer or a large bowl with an electric mixer, cream together butter and sugar. 3. Add egg and vanilla and continue to mix on low speed. 4. Add dry ingredients to the wet ingredients slowly and combine until a soft dough forms. 5. Fold in the chocolate chips, scraping dough from the sides of the bowl. 6. Drop 8 to 10 large scoops of dough onto the prepared baking sheet. Leave at least 2 inches between each cookie dough ball. 7. Bake at 350 for 12 minutes or until the top is set. Place on a wire rack to allow the cookies to cool. 8. Once cool, cover each cookie with frosting. For a clean look, you can use a 1A decorating tip or frost by cutting a small hole in the corner of a Ziploc-style bag. 9. To make the caramel topping, combine caramels and heavy cream in a small bowl. 10. Melt the caramels in the microwave in 15 second intervals, stirring in between until a smooth caramel sauce is created. 11. Drizzle the caramel sauce over the frosted cookies. 12. Sprinkle toffee bits on top and allow the caramel drizzle to cool and set. Enjoy! This recipe makes 8-10 cookies. Can be stored in a freezer bag or airtight container at room temperature for a week or in the freezer for up to three months.
