STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM

• 8 1-inch-thick bread slices, cut from a country or peasant loaf

• 2 cups half-and-half

• 4 egg yolks

• 3 tablespoons light brown sugar

• 1 tablespoon vanilla extract, plus 1/2 teaspoon

• 1/2 teaspoon cinnamon

• 3 tablespoons unsalted butter

• 1/2 cup sour cream

• 1 tablespoon granulated sugar

• 1/3 cup strawberry jam or preserves (see note 2)

1. Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F.

2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). Add the

3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed.

4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla.

5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream.

Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half.

Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

Today’s digital world has given rise to fast, stinted communications. According to the Pew Research Center, texting is the most widely used smartphone app, with 97 percent of Americans using it at least once a day. Across the globe, 8.3 trillion text messages are sent each year. That translates to roughly 16 million messages per minute.

In addition to text messaging, social media posts are generally concise and short on depth. The written form of communication has changed dramatically in the last decade, as letter-writing and other forms of prose have all but faded away.

But come Valentine’s Day, it can be special to dust off that pen and paper to express oneself via the written word in the name of love. Love letters are cherished keepsakes that can be kept for years. Such couples can illustrate a couple’s present-day love for one another and shed insight on their relationship years later. Here are some steps for writing a romantic love letter or note.

• Jot down ideas and inspiration. Make a list of attributes and qualities in a spouse or romantic interest that you would like to highlight. Write down phrases and terms that come to mind. These words can serve as the foundation for the letter.

• Categorize your thoughts into three areas. Jot down things that you like and love about the person, things that the person may do for you or your family that you appreciate, and various memories from throughout the years.

• Write what you know. Do not feel pressured to make this letter more complicated than it has to be. The words will come when you write from the heart. While you can use other letters to spur ideas, do not lose your voice or try to mimic someone else’s work.

• Make the letter personal and specific. Small details are important and makelovelettersmoremeaningful.Suchdetailsillustratetoasignificant other that this letter was specifically written with them in mind.

• Disregard length. The letter does not have to be a certain length. Whether it is a paragraph or several pages, the letter will be a successs if it says what you want to express. It doesn’t have to be long if that’s not your style.

Banana Chocolate Smoothie

Makes 4 1-cup servings

11/2 cups chocolate soy milk

3 ounces chopped dark chocolate

3 tablespoons cocoa powder, preferably Dutch-processed

2 tablespoons bee pollen

2 tablespoons flaxseed oil

2 cups sliced banana

1 cup chocolate frozen yogurt

2 tablespoons shaved chocolate for garnish (optional)

Combine soy milk, chopped chocolate, cocoa powder, bee pollen, flaxseed oil, and banana in a blender or smoothie maker. Blend on high speed for 45 seconds or until mixture is puréed and smooth. Add frozen yogurt, and blend on high speed again until mixture is smooth. Serve immediately, garnished with chocolate shavings, if desired.

Statistics from U.S. Youth Soccer indicate that millions of children across the country are taking to the sport that was once primarily associated with Europe and other parts of the world beyond the United States. According to U.S. Youth Soccer, more than three million youth players were registered to play soccer in 2014. That marks an amazing increase from just 40 years earlier, when barely more than 100,000 youths registered to play soccer. While the reasons behind the growing popularity of soccer within the United States are not officially known, one might reasonably trace American youths’ embrace of the sport to the U.S. Men’s National Team’s appearance in the 1990 World Cup. Though the team was defeated in each of its three matches in the 1990 World Cup, the appearance marked the United States’ first since 1950. In fact, participation in youth soccer in the United States in 2014 marked an 89 percent increase since 1990. In addition, the United States hosted the 1994 World Cup, likely generating even more interest in soccer, which many American youths now consider their favorite sport.

Crying in the Car Is Never a Good ing

DEAR PAW’S CORNER: My Border Collie, Sugar, gets very anxious during car rides. She is not one of those dogs who likes to stick their head out of the window! Instead, she whimpers, cries, drools and paces around on the back seat. I’m very worried that she’ll try to jump into my lap. How can I stop her crying? -- Wendy G., Atlanta

DEAR WENDY: Poor Sugar! Anxiety in pets is o en tied to a distressing experience in their past. And her uncontrolled movement around the car is a safety issue.

Talk to Sugar’s veterinarian about her behavior. ey can provide advice and help determine if and when anti-anxiety medication should be given.

Adding a pet restraint system (like a doggie seat or seat belt) or kennel cage will keep Sugar from sliding around in the car and may help her feel more secure.

PET OBESITY IS A GROWING PROBLEM

Many pet owners would never intentionallyharmtheircompanion animals. In fact, pet owners often go above and beyond to ensure their animals are well cared for and content. However, many well-meaning people may be inadvertently harming their pets with something they provide each and every day: food. Obesity is on the rise among pets. The Association for Pet Obesity Prevention says that 54 percent of dogs and 59 percent of cats in the United States were categorized as overweight or obese in 2016. That marks an increase from 52.5 percent and 58.3 percent, respectively, from four years ago. The majority of veterinarians think that pet obesity is a significant problem and nearly half of pet owners admit that their vets have discussed a pet’s ideal weight with them during pet health visits.

Next, help reduce Sugar’s anxiety by helping her associate car rides with good things. is will take a little extra time and e ort each day, but it’s worth it.

-- With the car parked in the driveway, sit in the back seat with Sugar (in her seat or cage) for about ve minutes. Give her a small treat and lots of praise when she does. Do this daily, without driving anywhere.

-- When Sugar regularly stays calm, shi to the driver’s seat a er sitting with her in the back seat.

-- Step up to the next level: Turn on the car, giving Sugar a treat when you do so. Put soothing music on the radio.

A trainer can be a good investment, as well. ey’ll work with Sugar (and o en the vet) to make her car rides bearable, and maybe even enjoyable.

A venting system draws the radon gas from the soil beneath the foundation and exhausts it outside of the building - far away from windows and other home openings. A continuously operating fan draws and discharges the radon outdoors.

Radon that has infiltrated water supplies may require other removal methods. Such methods may require spraying water into a contained air space, introducing air bubbles into the water or storing water in a tank until the radon has decayed. Another method employs granular activated carbon (GAC) to remove radon from the water. The GAC method has been more widely tested and is more commonly used in individual homes, according to the EPA.

Updating Your Home’s Electrical System

When it comes time to update the electrical system, it is always best to work with licensed and bonded electricians who have the expertise to work with electrical wiring without getting injured. This is not a do-it-yourself type of job since it requires specialized training.

Electricians likely will recommend upgrading the electrical panel to bring more power from the utility poles into the home. This can include replacing the existing meter and circuit breaker box to allow it to handle more power or replacing items that are obsolete or dangerous.

Many older homes are only capable of handling a minimum number of amps, utilizing just a few circuits. But nowadays, when homeowners have far more electronics in their homes than they once did, increased demand on electricity can overload a circuit. Tripping a circuit breaker is a safety measure to prevent the wire from becoming overheated and causing a fire. However, in some old systems, the circuit breaker will not trip, and this can be problematic.

Rewiring a home is another step. Wire insulation can deteriorate over time, and new wires may be needed. This can be messy and time-consuming, but it’s a small price to pay for safety. When rewiring an electrician also may suggest new outlets. Many home building codes now require outlets with ground fault interruptors, or GFIs, in kitchens, bathrooms and other rooms exposed to moisture. Some older homes may not even have three-pronged outlets, so this will necessitate an update as well.

One of the benefits to becoming a skilled do-it-yourselfer is the chance to embrace projects that can breathe new life into objects that others might designate for the trash or donation pile. Renovating such items can save money and provide an entirely different purpose for the object. After upgrading design styles or moving, there’s a good chance the average homeowner has a spare dresser or chest of drawers he or she may no longer use. Repurposing such furniture can make for an enjoyable weekend DIY project.

With a change of color, removal of drawers or a few minor modifications, dressers can be transformed in many different ways. Before discarding an old dresser, think of all the ways it can be transformed into another useful piece of furniture.

And you can design your own program. eir goals are to help you think faster, focus better and remember more. As for me, I’ve found books that don’t cost much and are good at putting my brain through its paces on a daily basis. e New York Times series of puzzle books begins with the Monday editions, which are the easiest of the week. ( e crossword puzzles get increasingly di cult as the week progresses.) I found the whole series of spiral-bound puzzle books (50 to a book) on Amazon.

Periodontal disease is advanced gum disease caused by bacterial and fungal infections. It causes infection in the gums and connective tissue due to inflamed pits and pockets in the gums. Case of Hot Flashes Yet to Be Resolved Despite Therapy

DEAR DR. ROACH: I am 78; I had a hysterectomy in 1976 due to excessive vaginal bleeding, but I still have my ovaries. I have had hot flashes since undergoing menopause -- they usually last three to five minutes, and I have them about every two hours around the clock (which obviously interferes with my sleep).

Over the last 28 years, I have tried Premarin (which gave me bad headaches), gabapentin, venlafaxine, Bellergal, melatonin, black cohosh, clonidine, DHEA, Pro-Gest cream (chamomile, hops and valerian root), progesterone and estrogen (together), avoiding caffeine, and eliminating dairy products. None of these have helped. I would appreciate it if you could offer any suggestions.

ANSWER: I’m sorry to hear of your difficulties. You have certainly tried about all the available therapies. There are two additional ones you might want to consider: Megesterol is a hormonal therapy that is helpful for some women, but the fact that you haven’t responded to estrogens and progestins is not promising. The other is called a stellate ganglion block. You can ask your physician about it.

DEAR DR. ROACH: After a patient has had megadoses of IV and oral antibiotics, is there anything they should do to restore the balance in their body, such as eating probiotics or yogurt? Or is that all nonsense? -- N.W.

ANSWER: The idea makes perfect sense: Antibiotics not only kill the bad bacteria that is infecting us, they also kill many of the healthy bacteria that help us with digestion and other functions. (The whole suite of healthy bacteria living in our gut is termed the “microbiome.”) Why not help the gut return to normal by giving it some healthy bacteria, such as those found in yogurt with live cultures, or specific probiotics, which are just the healthy bacteria?

The answer is that it has been very hard to prove that there is any benefit in doing so. In people with no symptoms after finishing an antibiotic course, there probably aren’t any benefits.

At least one study showed what researchers called a “very severe disturbance” in the person’s microbiome and actually slowed the return to a person’s normal microbiome, which they had prior to antibiotics. Worse still, very rarely, infections have been transmitted through probiotics.

Symptoms after antibiotic therapy, especially diarrhea and fever, could indicate a very severe infection called Clostridioides difficile (“C. diff”), which does not respond to probiotics and usually needs powerful antibiotics to treat.

Probiotics have not been found to prevent C. diff.

PET PRIDE CAT SANCTUARY & ADOPTION CENTER EXPANDS

Pet Pride Cat Sanctuary & Adoption Center, a no-kill sanctuary for cats on Route 251 in Victor, opened its expanded facility on January 21, 2023, with lots of space for cats to roam, play, and socialize with feline and human friends. Pet Pride is always open for visitors to socialize the cats, playing with them throughout the space and giving them lots of love and attention.

As human visitors enter the new space, the large vestibule allows for secure check-ins. Sta is friendly and welcoming, giving visitors space to casually meet and greet the cats throughout the facility, answering questions and giving anecdotal information about each cat.

Immediately inside the shelter is the Kitten Kingdom, a large room with lots of climbing structures and stimulating adventures for the littlest ones. Marlies Sullivan, Vice President of the Pet Pride Board of Directors and director of fundraising, says having a designated kitten space is crucial, as their immune systems are yet developing, so separating from the adult population is valuable.

Down the hall is the Community Room with oodles of cubbies for cats to explore or rest in as well as other climbing and resting spaces. Sullivan is so excited about the new Meet and Greet rooms for personal interactions between individual cats and potential adoptive parents/families. In the old space, people interacted with cats all in the same room, which was especially stressful for a lot of the cats, especially shy ones. With the new Meet and Greet rooms, Sullivan says they can have a proper meeting.

e new expansion includes a large kitchen with loads of cupboard and storage space for supplies. When my family visited on opening day, the kitchen was the centrally located place to be for the cats, as with humans in their homes. e previous outdoor enclosures (catios) allow cats plenty of fresh air and sunshine during nice weather, and the expansion includes additional outdoor space to enhance the cats’ experience.

Available adoptable cats now wear collars with their names, helping visitors bond. My daughters spent lots of time with Leila, who was ready to play even as she lounged, and Snickers, a plump gray cat ready to lay, be pet, and chat with the girls for hours.

Pet Pride currently has ve resident cats: Alli, Marge, Pine, Minnie, and Jonah. e sta says the expanded space makes Alli and other residents less grumpy. Herby, a long-haired with adorable, bright eyes has a spinal issue that impairs his movement, and while

it does not pain him, this impairment makes him sort of a resident cat. Because his brother passed away and they both have the same condition, Pet Pride sta may wait and see with Herby. Herby’s issue does not stop him from bounding a er toys and playing oh so playfully with the other cats and human visitors. We loved playing with Herby on our visit.

While the previous space could care for 30-35 felines at one time, the new 4,500 sq. . space allows a capacity of 75-80. Sullivan said Pet Pride’s goal with the expansion is to expand their impact. Sullivan says they always have a long wait list of cats needing homes, and for every cat adopted, Pet Pride can take in another from that wait list. Sullivan says Pet Pride adopted out 570 cats last year, “so with the expansion, imagine how many we can adopt out and how much of an impact we can have.”

Sullivan said the majority of cats taken in at Pet Pride come from the streets instead of from people’s homes, so a big problem the previous facility had was separating new intakes from the rest of the Pet Pride cats. With the expansion, new cats can enter, be observed for contagious illnesses or other conditions that would otherwise need tending, await surgery safely and securely, and then be introduced into the rest of the sanctuary.

Another bonus to the expansion, Sullivan says, is the designated Healing Paws Medical Center, where Pet Pride vets perform in-house care. She explained that previously, Pet Pride was at the mercy of long wait times for veterinary service appointments such as spay/neutering, essential to adopting cats out to new homes. With the new in-house surgical suite, their own veterinarian can perform these surgeries, minimizing cats’ stress in those situations as well. Less stress means higher adoptability, Sullivan says.

A designated sick room with separate heating and cooling excites Pet Pride sta as well, as they now can mitigate risks of upper respiratory illnesses that otherwise spread quickly from new intakes to the current cat population.

With only ve paid sta at Pet Pride, they are always looking for volunteers and donations. Anyone can come visit the cats. Anyone interested in adopting a cat should stop in and see if they nd a good match. ey also seek additional veterinarians and vet techs interested in volunteering to spay/neuter cats through the Pet Pride Veterinary Alliance.
