Apple Butter

Bacon-Wrapped Shrimp

Servings: 10

3/4 cup Apple Butter

1/2 cup maple syrup

1/2 teaspoon red pepper flakes

1/2 teaspoon salt

1/2 teaspoon smoked paprika

10 pieces bacon

10 extra-large shrimp, cleaned and deveined chopped cilantro, for garnish (optional)

Heat oven to 400 F. Line rimmed bakingsheetwithparchmentpaper.

In medium-sized skillet over medium heat, add apple butter, maple syrup, red pepper flakes, salt and paprika. Whisk until mixture is thick and cooked down by half, about 10 minutes. Set aside.

In large skillet over medium heat, add bacon slices and cook until browned but still flexible. Remove from pan and drain on paper towel-lined plate.

Wraponebaconslicearoundeach shrimp, secure with toothpick and place onto prepared baking sheet. Once all shrimp have been wrapped, baste tops with apple butter mixture.

Bake 5 minutes then flip and baste other side of shrimp. Bake another 5 minutes. Continue to flip and baste shrimp (2 minutes each time) until shrimp is fully cooked. Do not overcook as glaze can burn. Sprinkle with cilantro, if desired.

DEAR PAW’S CORNER: I have so many thoughts a er reading the letter from the woman with the shared driveway whose neighbor leaves her dog’s poop on her side.

I’m of the opinion that life would be more enjoyable if people learned to meet others where they are. e dog owner clearly doesn’t want to pick up her dog’s poop, and I don’t think checking with an HOA or municipal ordinance will change that. Maybe she has mobility issues. e writer says she and her neighbor “get along ne,” and there’s a LOT to be said for that. If I were her, I would simply buy poop bags and clean up a er the dog. If the neighbor sees her and says something, I would say: “I’ve asked that you pick up a er your dog, but I don’t want that to become a big issue between us because we get along so well. Your friendship means more to me than my taking a few minutes to clean up the driveway.” -- Susan W., via email

I have had this issue several times in the past. I have successfully resolved this issue every time it has come up.

I used a new tool to solve it -- the power of social media. My solution was simple: When I observed an individual allowing their canine to defecate on my property, I announced loudly from my front door that if they did not clean it up, I would locate their property and defecate on theirs as well. I made the same announcement on the neighborhood’s Facebook page.

Aside from the occasional beer can thrown out of a vehicle full of teenagers, we have been at peace.

VISIT SENECA PARK ZOO OTTERS

May 31st is World Otter Day. Zoos around the world celebrate their otters. Rochester’s Seneca Park Zoo celebrates the whole weekend, with talks, demos, and videos throughout the days. Enjoy enrichment behind the scenes and check out the fundraiser for the River Otter Ecology Project. Watch as a zookeeper puts a canvas with paint next to it and uses food to incentivize the otters trekking through the paint to create a unique painting as the keeper slides the canvas under them.

Donato DiRenzo, Seneca Park’s Communications Coordinator, coordinated a meeting with General Curator David Hamilton and Zookeeper Catina Wright. Hamilton began as a zookeeper working with primates at the Knoxville Zoo. He then became a carnivore keeper and started working with otters. A er that, he took the position as Studbook Keeper, managing the population and tracking the family tree and locations of North American River Otters for the past 24 years.

Most of Seneca Park’s sta have degrees in life sciences, such as biology or zoology. Zookeeper, Catina Wright, has been at Seneca Park for 18 years, ve years as a volunteerthenjoinedthezookeeper ranks a er she earned her bachelor’s degree in biology. Every two years there is an otter keeper workshop, exploring vet care, diet, enrichment, and enclosure types and exhibits.

Otters are motivated, food driven, and highly intelligent. ere are seven di erent subspecies of otters. Ashkii and Sailor are the two living at Seneca Park Zoo. ey have di erent personalities. Ashkii was born in 2016 and came to Rochester from the National Zoo in March 2020. She is at once skittish, cautious, and very energetic, always swimming and playing.

Sailor was born in 2007. He came to Seneca Park in May 2012 from a private facility in Myrtle Beach, South Carolina. He is more laid back and adventurous. Sailor was named in honor of a previously nauticalnamed otter, Admiral. e average life expectancy of an otter is 12 years, but Admiral lived to age 21, which is comparable to a human living to 100.

Watching Ashkii and Sailor in their element is exciting. Otters need enriching activities. Seneca Park includes a wide variety of enrichment, including hammocks, swinging baskets, and hollow logs. As we chat, Wright tosses sh encased in ice cubes in the water. e otters eat mostly sh, mackerel, herring, and salmon. Occasionally, they get ounder, tilapia, clams, squid, scallops, and so shell crab. ey also eat other meats, fruits, vegetables, and hard-boiled eggs. Otters are carnivores but eat some produce, preferring vegetables over fruit.

is super red compared to other animals that are pinkish. Otters have special kidneys because they’ve been in marine habitats. It helps them deal with salt water.”

Otters don’t have a blubber layer like marine animals. eir coat is double layered, keeping air trapped in the hairs, insulating them from getting wet. eir skin isn’t necessarily wet when they are swimming because they have outer guard hairs and inner u y layers.

Hamilton is involved in otter breeding and transfer plans. ere is a signature Species Survival Plan (SSP) for North American River Otters. is information prevents inbreeding by knowing who is who and where otters are from. Gene diversity is crucial for breeding.

Researchers perform genetic studies of the otters to help otters survive and avoid extinction. North American River Otters in Western New York almost disappeared due to predators and hunters encroaching on their habitat. ankfully, the Department of Environmental Conservation and Seneca Park Zoo supported otter repopulation.

Seneca Park Zoo featured the otters in a viral Earth Day recycling video (youtube.com/watch?v=7DyxQD0oBao), in which they trained to put newspaper and bottles into recycling bins to help show people to recycle and not trash rivers. It helps everyone, including otters, when we clean up the environment and be careful what goes down storm drains.

1 cake compressed yeast, 1 packet active dry yeast or 1 packet quick-rising yeast

A pinch of sugar

1 cup warm water

4 1/4 cups Italian “00” flour or cake flour

2 egg yolks

2 tablespoons olive oil

1/2 teaspoon sea salt

1 tablespoons butter, softened 1/2 cup brown sugar, plus extra to sprinkle

Finely grated peel of 1 unwaxed lemon

3/4 cup walnuts, chopped

8 ounces black grapes, seeded (Sangiovese wine grapes, if possible)

2 cups heavy cream or mascarpone

3 tablespoons confectioners’ sugar

6 tablespoons Vin Santo

1 jelly roll pan, 9 x 13 inches, oiled

Ifyouareusingcompressedyeast, mix it with the sugar in a medium bowl, then beat in the warm water. Leave for 10 minutes until frothy. For other yeasts, follow the manufacturer’s instructions.

Sift the flour into a large bowl and make a well in the center. Pour in the yeast mixture, egg yolks, olive oil, and salt. Mix until the dough comes together. Tip out onto a lightly floured work surface. Wash and dry your hands. Knead the dough for 10 minutes until smooth and elastic. It should be quite soft, but if it’s too soft to handle, add more flour. Place in an oiled bowl, cover with plastic wrap or a damp kitchen towel, and let rise until doubled in size - about 1 hour.

To make the walnut butter, cream the butter and sugar together, then stir in the lemon peel and walnuts. Keep at room temperature.

Uncover the dough, punch out the air, then shape into a ball. Roll or pull the dough into a rectangle to line the prepared jelly roll pan. Spread the walnut butter over the schiacciata crust, add the grapes, and sprinkle with brown sugar. Cover with plastic wrap or a damp kitchen towel and let rise for 1 hour until puffy and doubled in size.

Preheat the oven to 400 F. Uncover thedoughandbakefor15minutes. Turn the oven down to 350 F and bake for 20 minutes more or until risen and golden. Let cool slightly before turning out.

To make the Vin Santo cream, beat the cream, confectioners’ sugar and Vin Santo together in a bowl until the mixture forms soft peaks. Cut the focaccia into wedges and serve with the Vin Santo cream.

Blood pressure: The United States Department of Health and Human Services and the National Institutes of Health urge men between the ages of 18 and 39 to have their blood pressure checked at least once every two years. Many men already have their blood pressure checked during annual wellness visits, which all men should schedule regardless of their fitness levels and overall health. Men with preexisting conditions, including diabetes, heart disease and kidney problems, may need more frequent blood pressure screenings. In addition, annual screenings are recommended if the top number is between 120 and 139 and/or the lower number is between 80 and 89.

$500 for a Month’s Supply

DEAR DR. ROACH: What can you tell me about a prescription of 145 mcg of Linzess, and why a doctor would prescribe a pill over $500? What are the advantages to taking this? Surely, there must be something less expensive that will provide the same results. -- J.P.

ANSWER: Linaclotide (Linzess or Constella) is a medicine used for constipation, either in people with irritable bowel syndrome or in people with constipation for no particular reason. It works by activating a protein to allow chloride and bicarbonate (along with fluid) into the intestine. Since it is not absorbed into the body, it has few side effects. The major side effect is that it can work too well and cause diarrhea. This is enough of a concern that the medicine is not used in children under the age of 2. There are three different strengths: 72, 145 and 290 mcg.

If you are asking me to defend pharmaceutical pricing, I can’t do that. I very seldom use this medicine because there are so many other options for constipation -- starting with a different diet without using any medicine at all. But in people with occasional constipation despite having a good diet, I usually start with fiber supplements.

If those don’t work, I recommend a surfactant such as docusate (Colace), which allows more water to enter the stool. Yet another option would be nonabsorbable substances like polyethylene glycol (MiraLAX and others), lactulose, sorbitol and magnesium. All of these are much less expensive. However, there are still people who don’t do well with any of these less-expensive (and also tried-andtrue) alternatives. Linzess has made a real difference in the lives of several of my patients. It is usually prescribed by an expert (a gastroenterologist) at least in the case of my patients.

Finally, Linzess is roughly $20 a pill or about $500 for a month’s supply in the U.S. without insurance. Some people only need it occasionally and are very willing to pay, even if insurance doesn’t cover it.

Hurricane Sandy (2012): Sandy tore through 24American states before reaching Ontario and Quebec, Canada. While it wasn’t the largest or most powerful storm, it was dubbed a “superstorm” due to unique meteorological events that happened concurrently, resulting in an immense storm surge. It was the fifth costliest hurricane in U.S. history.

DID YOU KNOW? When remodeling a home with the ultimate goal of making it more attractive to prospective buyers, homeowners can benefit from taking stock of current trends, including the style of home that’s most popular. According to a 2020 Homes.com survey of more than 5,000 adults across the United States, modern farmhouse is the most favored house style. The survey asked participants to choose from a selection of styles, including mid-century modern ranch, Spanish colonial/ southwest, bohemian craftsman, Italianate, French chateau, and Tudor. The modern farmhouse style was the most popular choice in 42 of the 50 states, proving that home style preference is not beholden to geography. Respondents gave a host of reasons for favoring the modern farmhouse look, including that the style is “aesthetically appealing but not boring” and that it looks “simple, cozy, and not too busy.”

he loss of a friend or loved one is seldom easy, particularly if a person had been suffering from an illness. Close friends and family honor the memories of their deceased loved ones in different ways. Charitable giving can be a great way to honor a loved one’s memory while helping others. Survivors often find comfort in the knowledge that they can do good in the name of a loved one. Tributes or memorial gifts can be approached in different ways and serve as an ongoing reminder of a deceased loved one. Create a charitable foundation: Those who have the time and resources can establish their own charitable groups in the decedent’s name. This method of charity requires the most time and effort, but can prove to be quite an impactful memorial. Individuals who would like to go this route can consult with financial and tax professionals about the best way to establish a charitable group.

Community foundation: Families can focus on something their loved one cared deeply about, such as animal rescue, children, the arts, or even particular places in a community - such as a local park. According to CarePages, a company that produces free patient websites and offers community support for those coping with illness, families can choose to have their donations funneled to specific charities or nonprofit groups. Otherwise, funds can be allocated to a third party community fund that will distribute money to various organizations no matter where they are located.

Medical tribute: Memorial gifts that assist medical associations or groups working to find cures or offer treatments for diseases are quite popular. If a loved one passed away due to a specific illness, it is common to ask for donations to a specific organization that specializes in information and services pertaining to that illness. Many such groups have a “donate in memory” option on their websites. Oftentimes families are notified regarding who made memorial donations in their loved ones’ names, but the amount of the donation need not be revealed.

Personal intentions: Those who would like to make a donation but cannot think of a charity to associate with their deceased loved one have a host of options at their disposal. Consider donating to a school or library, requesting materials be purchased in the decedent’s name. Otherwise, donate to a general scholarship fund, possibly at the decedent’s alma mater.

Finish their work: If the decedent was engaged in a charitable project prior to their death, volunteer to help complete that project. Giving back after the death of a loved one is a great way to keep the memory of that person alive.

Howard W. Hobin, 85, of Byron, passed away on ursday, March 30, 2023 at Unity Hospital surrounded by his loving family.

Howard was born May 25, 1937 in Rochester, a son of the late Harold and Margaret (Lyons) Hobin.

Surviving are his wife, Shirley (Ivison) Hobin of Byron; daughters, Lynn (Rich) Strzelecki of Bergen and Kim (Greg) Hungerford of Byron; grandchildren, Brad (Carissa) Strzelecki, Alexa Strzelecki and Jorie

Howard was preceded in death by his son, Brad A. Hobin. While reading might not seem like the most social activity, readers who want to use their love of books to grow their social networks can start a book club. People of all ages and backgrounds love to read, so starting a book club can be a great way to meet an array of people.

Readers also can call their local libraries or schools to ask about reading programs for children. Volunteer to read to youngsters, helping the next generation discover the wonders of reading.

How can I keep my plants from being eaten by Japanese beetles? I lost so much over the last 2 years. How can I prepare or prevent Japanese beetles invading our blueberry bushes and one of our trees?

Japanese beetles are not easy to control. Garden centers sell traps that contain a substance attractive to these pests, but often the traps will attract more beetles to your yard. If you decide to try one, place it at least 30 feet away from your attractive plants, and make sure the prevailing wind blows the trap scent away from your plants.

These beetles are large and slowmoving, so they aren’t difficult to remove by hand. I just push them off the leaf into a coffee can of soapy water. Do this every day, or as often as you can, and damage will be reduced. The presence of beetles attracts more beetles, so you can make a big difference, though it’s time-consuming.

I tried covering my plants one year with nylon netting, sold in fabric stores. I used clothes pins to attach it snugly, but they crawled up inside the netting from the bottom.

According to the 2019 “American Time Use Survey” from the United States Bureau of Labor Statistics, women spend an average of 2.16 hours each day on household activities, while men spend an average of 1.39 hours on such pursuits. “The Operational Outlook Handbook” defines a landscape architect as “a person who designs parks, outdoor spaces of campuses, recreational facilities, private homes, and other open areas.” Landscape architects typically must be licensed and many hold degrees in landscape architecture from accredited schools. Architects who work on residential spaces often work with homeowners to design gardens, plantings, stormwater management, and pools. Landscape architects design spaces to do more than merely look good. Designs also are about functionality and meeting the needs of the homeowner. Outdoor spaces are designed after considering what the homeowner wants to experience and how homeowners want to use a given space. Landscape architects often do not plant and maintain these spaces. Rather, architects collaborate with other landscaping professionals to produce the final results.

SHADE-TOLERANT PLANTS HELP TO COMPLETE LANDSCAPES

Plants need sunlight to thrive and grow, but some need less sunlight than others. People who find their landscapes are less supportive to sun-loving plants can choose from a variety of shade-tolerant plants, shrubs and trees.

Shade tolerance refers to a plant’s ability to withstand low levels of light. Certain plants have adapted this feature to survive in the wild. Plants that grow at the base of forest floors, for example, will get less sunlight than others outside of the tree canopy. Such adaptations enable a wide variety of foliage to grow even though they are not exposed to much sunlight. While sun-loving plants often have broad leaves and expend significant energy to capture sunlight for photosynthesis, shade-tolerant plants expend less energy and tend to be more efficient consumers of soil nutrients and sunlight.

Penn State Extension’s Plant and Pests division says the amount of shade a plant is growing under will directly affect the density of the foliage and the plant’s flowering and fruiting characteristics. Last week I took my Tacoma to the new oil change place in [local town]. They offer a free state inspection. The next morning I noticed that one of my hubcaps was missing. I checked the inspection report and this hubcap belonged to one of the wheels they removed, When I checked the other wheel they removed, it was not installed properly. I returned to the location and was told "it sometimes happens" and that they "installed them properly.” If they cannot install hub caps properly I would not trust them to touch my engine. Tacoma hubcaps do not fall off if they are installed properly.

A few days ago our 2 young dogs pushed their way out of the house and took off like a shot. Within seconds they were a few acres away and out of sight. The next thing we knew there were several vehicles stopped on the road including a contractor who was using their lights to alert other drivers. The dogs were with them and came when we called. I was so busy getting the dogs back to the house, I did not even acknowledge those who helped. So, whoever you are, thank you so much for your role in getting the "kids" back to us. Regarding the rant about the maintenance at the local cemtery. Being a caretaker of one, I wondered when the last time they donated was. Most small town cemeteries are struggling to get the funds to mow, weed eat, and for maintenance. People spend big money on flowers. How good are they going to look if you can't see them with the grass taller than the headstones. Please donate to your local cemetery. Your loved ones are there along with veterans.

Annoying Dogs

Living in town can be a challenge during the summer months with loud lawn mowers, weed eaters, power washers, etc. But those sounds are to be expected. My complaint is people who tie their dogs outside for hours on end. The dogs literally bark nonstop. Is there no law against this? It is difficult to enjoy gardening or just simply relaxing and enjoying a conversation with a friend with a dog barking constantly. Why do people do this? 4 EASY WAYS TO CREATE MORE TIME IN YOUR DAY

Managing one’s time can sometimes feel like an uphill battle. As a result, adults with hectic schedules and multiple responsibilities may pine for an extra hour or two in the day. While it’s impossible to extend a day from 24 to 26 hours, there are ways for busy men and women to create more time in their day.

1. Embrace organization tools. Whether it’s day planners, smartphone reminders or more traditional print calendars with meetings and deadlines written on them, organization tools can greatly cut back on time spent trying to remember and/or confirm meeting times, project schedules, deadlines, and other obligations.

2. Assess your productivity. Some people are most productive in the mornings, while others do not hit their strides until after lunch. Identify the time or times of day when you tend to be most productive, and make an effort to focus exclusively on work during these times. Resist any urge to schedule meetings or conference calls during those times of day when you are most productive, as it can be hard to multitask or focus when discussing projects with coworkers or clients.

3. Minimize distractions. Social media, the internet and texting can distract attention away from tasks that must be completed, ultimately affecting howquicklyandefficientlysuch projects are finished. Make a concerted effort to avoid social media and the internet while at work, and turn off smartphone alerts that entice you to go online. In addition, turn off text alerts if they are proving too great a distraction.

4. Reconsider your commute. Professionals who drive to work but find themselves sitting in traffic on their way to and from work can investigate possible alternatives to driving themselves. Public transportation might not get you to work more quickly than driving yourself, but time spent on a bus or train can be used to work on projects and check and answer work-related emails, clearing up time later in the day. Time spent behind the wheel of an automobile cannot be safely spent working.
