Rich and creamy mashed potatoes are always a St. Patrick’s Day favorite. Try these crowd-pleasing variations to create a mashed potato bar or unexpected side dish for this year’s feast!
1. Sub sour cream or Greek yogurt for milk and top with fresh dill or chives for a tangy touch. 2. Add Jack cheese, sliced scallions & minced jalapenos for a Tex-Mex taste. 3. Mix in bacon, cheddar cheese, parsley & chopped scallions with several tbsp. of bacon drippings to taste. 4. Swirl in a helping of pesto sauce, and top off the bowl with a handful of pine nuts.

PATRICK’S DAY Many establishments display the familiar Irish tricolour flag on St. Patrick’s Day, and paradegoers may even wave miniature versions of this significant symbol in support of those marching. This instantly recognizable flag has a rich history. Equal parts green, white and orange, the flag was designed to foster peace in the country that had experienced considerable turmoil due to the divide between the country’s Protestant and Catholic residents. The green in the flag represents the Irish Catholics, while the orange represents the Irish Protestants. The white is a symbol of hope for peace between the two factions. Though Ireland established the tricolour as its national flag in 1921, it first appeared much earlier when Irish national Thomas Francis Meagher unfurled it in 1848.

ANSWER: It’s not always easy to tell what supplements are safe or effective for the condition they are marketed for, and the information available through a web search often is biased. One place I start to get information is Medline Plus (www.nlm.nih.gov/medlineplus/), which has reliable information about many supplements, but you often have to search individually. In this case, alanine, arginine and tyrosine all are amino acids. These are the building blocks for proteins, and are safe in reasonable amounts. Creatine is generally safe for adults, and has been shown modestly effective at helping improve strength in young male weightlifters. One gram is a fairly low dose and is generally considered safe. The 150 mg of caffeine is about the same as a cup of strong coffee. Velvet bean seed extract I had to look up. It has been used both as a food crop and in traditional medicines. It has toxicity at high doses, but at the dose in the supplement, it should be safe. In summary, I think this supplement is not likely to be harmful if taken in recommended doses, and it might have some small benefit. There is nothing in the supplement that cannot be obtained easily and cheaply from food, apart from the velvet bean, which I think has the least proof of benefit of all the components of the supplement. ***
DEAR DR. ROACH: I am 49 years old and in good health. I recently was told by my doctor that what was first diagnosed as a swollen lymph is actually a condition called carotidynia. Can you please publish some information about this condition and what I can expect? Sometimes it is worse than at other times, but it never really goes away. I would not consider it painful; it is just uncomfortable, and when severe, it radiates up into my ear and down into my chest. -- S.W. ANSWER: Carotidynia (literally, “pain in the carotid artery”) can come from several distinct causes, some of which are catastrophic, such as a carotid artery dissection, which is a tearing of the lining of the artery. In some cases, carotidynia may be a form of migraine. After surgery or angioplasty to the carotid artery, one also can get pain that comes from the carotid itself. In the case of no other cause being identified, the condition is sometimes called idiopathic (which simply means “of unknown cause”) carotidynia, and some, but not all, experts think this condition comes from a type of inflammation around the artery, which can sometimes be seen on CT or MRI scan. Idiopathic carotidynia is usually treated with anti-inflammatory medicines -- ibuprofen, or prednisone in more severe cases. Most cases respond quickly, in a few days or up to a few weeks. However, I want to emphasize the need to thoroughly search for other concerning causes of neck pain. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible. Saying thank you is not a hard thing to do! Glasner described early Irish immigrants, like Henry Gibson, as brave, hearty people. “Many came before the steamship was invented; a perilous journey by sailing ship that took months, and they were not always welcome,” a fact epitomized in an American Ballad, ca. 1880. “I’m a decent boy just landed from the town of Ballyfadd. I want a situation; yes, I want it might bad. I seen employment advertised, ‘Tis just the thing, says I. ou may have heard people say that we’re all a little Irish on St. Patrick’s Day. If you live in New York, there is a good chance this is actually true! According to Forbes, Albany, Syracuse and Long Island all rank in the top ten list of America’s Most Irish Metros. Another source reveals the Greater Rochester Area’s most Irish city, using data from the U. S. Census Bureau’s 2013 American Community Survey and only considering places which have populations of 10,000 or more. With approximately 24% of residents claiming Irish heritage, lucky Canandaigua came in first as the local most Irish city. Edward Varno of the Ontario County Historical Society and Museum generously provided information regarding Canandaigua’s Irish heritage. “In 1983, the museum displayed an exhibit entitled, ‘Citizens by Choice: An Ethnic History of Ontario County,’ by Laura Glasner,” stated Varno. Glasner’s research offers unique insight into the history of the Irish population in Canandaigua and across Western New York. “Of the European immigrants, the first to arrive in large numbers were the Irish,” wrote Glasner. She explained that while the building of the Erie Canal and the first railroads brought Irishmen across New York in the 1820’s and 30’s, the large Irish settlements arose after the major emigrations during the 1840’s. “The largest emigration of all came during the years of the potato famine,” she stated. “Between 1845-1850, nearly 1,000,000 people in Ireland died and more than 1,000,000 emigrated to America. In these five years, Ireland lost 1/4 of its population.” According to Glasner, many Irish families lived on property owned by landlords, and they used their crops to pay their rent. When the potato blight left many without income or food, they were evicted by the thousands. “The Irish came to the United States en masse,” Glasner wrote. “Their descendants who remember their grandparents [these first immigrants] only recall that they had no desire to reminisce about their homeland. For most, the memories were bitter.” A pamphlet published by the Irish Emigrant Society of New York confirms that these Irish men and women arrived in impoverished condition, stating, “Thousands continually land entirely penniless and are at once in a state of destitution.” Even so, these Irish immigrants didn’t let this stop them from “becoming responsible and respected community members [who] contributed to the economic, cultural and social fabric of their communities.” According to Glasner, large Irish communities, which were mostly Catholic in a very Protestant country, were also often responsible for the establishment of local Catholic churches, citing the formation of Roman Catholic congregations during the mid-1800s (Canandaigua 1844, Rushville 1853 and Victor 1856). One notable Canandaiguan whom Glasner mentioned, Henry Gibson, was a resident of Irish ancestry. Gibson was a key figure in the development of successful banking in the village and was also important in the early railroad interests. Glasner related that in 1820, he rescued the Ontario Bank by establishing firm banking practices, strict but fair. In 1841, he was elected president of the Rochester and Auburn Railroad and later became Director of the New York Central. He was one
Nevertheless, these Irish men and women persevered. “They worked in factories [and] building roads,” wrote Glasner. “There are numerous accounts of their labor on the Canal as well as the railroads. By the turn of the century, Irish Americans held positions in local government, police departments and fire companies.” A local newspaper, the Ontario County Times, demonstrates their influence, as well, featuring “The Galway Fair” and “History of the Celts” as two articles in one of its February 1852 editions. “Although there is evidence of Irish settlement in many towns, such as Canandaigua, Victor, Honeoye and Geneva... little of their culture or tradition was nurtured or cultivated,” stated Glasner, explaining that it wasn’t until the establishment of the Republic of Ireland in 1937 that a reawakening began of Irish traditions. “Music, art and industry [again flourished] within the country [Ireland] and across the United States,” observed Glasner. “Today there is a greater awareness among the descendants of the Irish immigrants. Irish societies are being formed... for the purpose of teaching and sharing Irish culture.” On this Saint Patrick’s Day, we wish you well with a traditional Irish blessing: “May the road rise up to meet you. May the wind be always at your back. There has been a massive growth in fatherhood involvement over decades—fathers now spend nearly triple the amount of time with their children than fathers did in the 1960s.2 What Dads are Already Doing Recent research suggests fathers are already very involved: • 90 percent consider their role as a dad to be rewarding day in and day out.3 • 78 percent have talked to their child’s teacher about progress in school.4 • 61 percent have attended a PTA or other school meeting.5 • Over half have helped with a class trip, special project or activity.6 • Over a third of fathers have helped with coaching their children’s sports teams.7 Even though fathers are largely more involved than in previous generations, dads today still want to be more engaged.
