Kwanzaa traces its origins to Africa and is celebrated across North America and other nations that have large populations that trace their heritage to Africa. The holiday begins on December 26 and continues until January 1. The main components of the celebration include family, community and culture. Kwanzaa was not designed to replace Christmas. In fact, many Kwanzaa celebrants also celebrate Christmas. The word “kwanzaa” is from the Swahili phrase “Matunda ya kwanza,” which means “first fruits.” Maulana Karenga, the professor who created the holiday in 1966, chose Swahili as the language associated with the holiday because it isn’t affiliated with a particular African region or tribe. At the heart of the holiday are seven principles that celebrants embrace and follow: unity, self-determination, collective responsibility, cooperative economics, purpose, creativity, and faith. Even though the holiday was created for African Americans, many other ethnic groups are inspired by the foundations of Kwanzaa and choose to join in the festivities.

STAY SAFE WHEN STRINGING HOLIDAY LIGHTS Lighting displays are one of the many things that help make the holiday season a special time of year. Often awe-inspiring, holiday lighting displays present a perfect opportunity for communities and individuals to showcase their festive sides. Safety should always be a priority when stringing holiday lights both inside and outside a home. The National Fire Protection Association notes that, between 2009 and 2014, fire departments in the United States responded to an average of 210 home fires that started with Christmas trees per year. Lighting displays strung on home exteriors also can pose safety risks if homeowners do not exercise caution. Following some simple safety procedures when decorating with lights can ensure everyone enjoys a safe and happy holiday season.

Ampullary Cancer Treatment Can Include Chemo Prior to Surgery ---

DEAR DR. ROACH: My husband was diagnosed with ampullary cancer. He has a tumor the size of a marble. We are told this is an aggressive cancer. My concern is that they are giving him chemotherapy before the Whipple surgery. Is this standard practice? -- P.T. ANSWER: The ampulla of Vater is an opening in the duodenum (the first segment of the small intestine), where the common bile duct releases bile and pancreatic enzymes to aid digestion. A cancer of the ampulla can originate from the pancreas, bile duct or duodenum, and these can all be aggressive cancers. The standard approach in people with the possibility to be cured is called a pan creaticoduodenectomy, otherwise known as the Whipple procedure. Although this is a complex surgery that used to have a high mortality rate, the risk of death from the procedure in specialized centers is now about 1%. Most people are familiar with getting chemotherapy after surgery to help remove any cancer cells that remain, a technique called “adjuvant therapy.” However, giving chemotherapy before surgery (“neoadjuvant chemotherapy”) has increasingly been used in people with ampullary cancer. The idea is to shrink the tumor to make it easier for the surgeon to remove completely. Chemotherapy may also kill any cancer cells that have already spread. The decision of when to use chemotherapy depends on the individual’s situation, so I can’t tell you which would be better in your husband’s case, as I lack both the details of his tumor and the expertise. I can confirm that giving chemotherapy prior to surgery is being used in regards to ampullary cancer. ***

Servings: 24 1 sheet puff pastry, thawed 5 ounces Brie cheese 1/2 cup Musselman’s Apple Butter 1/4 cup pecans, chopped Heat oven to 400 F. Grease mini muffin pan. Press seams of puff pastry sheet together. Cut sheet into quarters then each quarter into six pieces. Use rolling pin to flatten each piece of pastry into square shape. I learn so much from this non-human, and it is with me constantly at my age of 82. I ask myself how I survived without “Joiny”? Litter Bugs Big Time Months ago hundreds of posters for a lost dog were posted throughout [3 local towns] and probably other towns. That pet is either lost or found by now and yet the posters remain. The posters are now unreadable and turning into trash. One polite phone call to the contact was ignored. These poster-makers were asking for help in finding their pet, and yet violating the landscape for thousands of residents doesn’t bother them at all! Please come back and take out the trash! Selfishness is still selfishness. And littering is still against the law. [Local Hospital] Needs New Weekend Policies I drove my wife, age 81 to [local hospital] ER on a Thursday and I was able to park close by in the ER open parking lot. My wife was admitted later that day. On Friday, I drove to the hospital and was glad to see Valet parking close to the main entrance. I am 82 with a bad knee. Saturday I arrived at the same valet place and was told no valet on the weekend, and to park in the large garage building free. I had to walk that day and the next day, Sunday, a long way to the front entrance. I was in pain, with nobody to help as I also carried a heavy bag. I also found out from the front desk that two main restaurants were closed as well as the gift shop. Now I call what [local hospital] does on weekends not good. A grade C-. Bruce Raggi Orchestrates Magic on Farmington’s Buckskin Drive BY SUZIE WELLS

A

fter almost 30 years on Buckskin Drive in Farmington, Bruce Raggi loves Christmas. What started as him setting up what he calls a “plug and play” box his children gave him to light up and play music at his own home spread to a few neighbors he could connect to with wires. That evolved to using wireless antennae to bump the signal around the street and neighborhood. This year, the lightshow includes 27 homes in the neighborhood setting their lights to the tunes on 91.1FM, creating a festive holiday atmosphere each evening. Raggi said setting up for the light show becomes a community event, and then the neighbors convene to welcome visitors to their luminous holiday haven. Each year, he rents a boom lift and they go down the street to put things in trees together. Raggi takes pride in his homemade yard decorations, and his personal favorites are the four big snowflakes in his windows. Crafted from PVC pipe and about 800 lights on each, the snowflakes this year feature newly rewired blue LED lights, so they’re very bright, he says. His home also features Santa in an upstairs window; check their Facebook page to see when Santa will make an appearance for eager visitors. Bruce’s children, Jennifer, Nicole, and Bruce Jr., and grandchildren, Madi and LJ help him set up the light show each year. He’s excited to share that granddaughter Jadyn, soon on leave from the Army, may even join in the fun. Raggi laughs, “My children kid with me that I spend more time outside now than I do in the summer.” He loves setting up the decorations and light show and then socializing with the neighborhood and visitors Thanksgiving evening through the holidays.

To Raggi, the holiday season means “getting ready for the light show.” Raggi loves spreading holiday cheer for the community. He says, “There’s a lot of work that goes into the project, but as soon as the first cars go by, it’s all worth it.” Raggi’s children add, “We think our dad has gone above and beyond trying to bring joy to the community and help people while being so selfless. He revolves his whole fall season around planning and setting up for the show. He has turned a small hobby into something that people drive hours to see. And not to mention that has brought in thousands of dollars to donate to people in need. We are so lucky to have him as our dad.” Thanks to Nicole’s map, highlighting participating homes, the event’s reputation has spread organically, attracting visitors from all over the region. Raggi says that more and more of the neighbors who don’t synchronize decorations to the music have been inspired to join the festive fun, expanding the neighborhood unity and joy. This year, 100% of donations at the light show go to the John F. Russo Jr. Memorial Foundation to help people with cancer. In previous years, Raggi says contributions from the light show supported the families of local heroes, including fallen police officers Daryl Pierson and Manuel “Manny” Ortiz. Buckskin Drive warmly invites visitors from Sundays through Thursdays, 4:30-10pm, and Fridays and Saturdays, 4:30-11pm. The community spirit, amplified by weekend gatherings where neighbors distribute candy canes to passing cars, adds an extra layer of warmth to this dazzling seasonal celebration.

He says that it’s just him and his son, Bruce Jr., at the house now, so while the children all urge the elder Bruce to get a Christmas tree for inside the home, he laughs that his “Christmas decorations are all outside.”

CHRISTMAS TREES BRIGHTEN THE SEASON Decked out in tinsel, lights, ornaments, and garland, Christmas trees are enduring symbols of the holiday season that boast a rich history. Evergreen trees have been used to celebrate winter festivals for thousands of years, and eventually became associated with Christianity. Plants and trees that remained green all year held special meaning to ancient peoples, and were purported to keep away illness and evil spirits. Germans were credited with tying evergreen trees to Christmas celebrations. In the sixteenth century, devout Christians brought decorated trees into their homes. Martin Luther, the Protestant reformer, is believed to have first added lighted candles to these trees after he was inspired by twinkling stars in the night sky. While early Americans found Christmas trees an oddity, the tradition, brought over by German settlers, eventually caught on. Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper. 2. In a stand mixer or a large bowl with an electric mixer, cream together butter and sugar. 3. Add egg and vanilla and continue to mix on low speed. 4. Add dry ingredients to the wet ingredients slowly and combine until a soft dough forms. 5. Fold in the chocolate chips, scraping dough from the sides of the bowl. 6. Drop 8 to 10 large scoops of dough onto the prepared baking sheet. Leave at least 2 inches between each cookie dough ball. 7. Bake at 350 for 12 minutes or until the top is set. Place on a wire rack to allow the cookies to cool. 8. Once cool, cover each cookie with frosting. For a clean look, you can use a 1A decorating tip or frost by cutting a small hole in the corner of a Ziploc-style bag. 9. To make the caramel topping, combine caramels and heavy cream in a small bowl. 10. Melt the caramels in the microwave in 15 second intervals, stirring in between until a smooth caramel sauce is created. 11. Drizzle the caramel sauce over the frosted cookies. 12. Sprinkle toffee bits on top and allow the caramel drizzle to cool and set. Enjoy! This recipe makes 8-10 cookies. Can be stored in a freezer bag or airtight container at room temperature for a week or in the freezer for up to three months.

STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM Serves 4 • 8 1-inch-thick bread slices, cut from a country or peasant loaf • 2 cups half-and-half • 4 egg yolks • 3 tablespoons light brown sugar • 1 tablespoon vanilla extract, plus 1/2 teaspoon • 1/2 teaspoon cinnamon • 3 tablespoons unsalted butter • 1/2 cup sour cream • 1 tablespoon granulated sugar • 1/3 cup strawberry jam or preserves (see note 2) 1. Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

cups flour cup unsweetened cocoa powder 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup (1 stick) butter, softened 1 1/4 cups granulated sugar 2 eggs 1 1/2 teaspoons Red Food Color 1 teaspoon Vanilla Extract 1/2 cup confectioners’ sugar nonstick cooking spray In medium bowl, mix flour, cocoa powder, baking powder and salt; set aside. In large bowl, beat butter and granulated sugar with electric mixer on medium speed until light and fluffy. Add eggs, food color and vanilla extract; mix well. Gradually beat in flour mixture on low speed until well mixed. Refrigerate 4 hours. Heat oven to 350 F. Shape dough into 1-inch balls. Roll in confectioners’ sugar to completely coat. Place 2 inches apart on baking sheets sprayed with nonstick cooking spray. Bake 10-12 minutes, or until cookies are puffed. Cool on baking sheets 2 minutes. Remove to wire racks; cool completely.
