Inside Look at Dairy Farming with El-Vi Farms of Newark BY AMANDA DUDEK
A
long Pelis Road in Newark sits the beautiful acreage of El-Vi Farms. Family-owned since its founding, El-Vi Farms, LLC, has been a local leader in dairy farming for nearly 75 years. Kim Skellie, one of four managing partners at El-Vi, shares some of his thoughts on dairy farming. El-Vi Farms was named after founders Elmer and Viola Peck who moved to the area from Waterloo. Originally founded near Phelps, El-Vi relocated to Newark in 1953 and has remained there ever since. From its inception until the present day, El-Vi has continued to be family-run. Joshua Peck, one of Elmer and Viola’s grandchildren, continues to lead as one of the farm’s four partners alongside Kim Skellie, George Andrew, and Allan Ruffalo. Even so, much has changed since the 1950s. “El-Vi Farms was originally a crop farm first and a dairy farm second until about the 1990s,” said Skellie. “Today, we milk about 2,000 cows at two different farms up from the farms’ initial 200, on about 3,500 acres. The crops we grow on these acres feed our herd.” El-Vi also employs just over 50 full and part-time employees. With each cow producing between 80-88 pounds of milk each day, El-Vi and its employees certainly keep very busy milking cows and growing enough feed for them. “We are milking just about around the clock, stopping for about 45 minutes three times a day,” explained Skellie. “The employees that grow the feed for our cows are also very busy doing crop work and maintaining equipment.” The milk flows into milking tanks, each of which hold tens of thousands of pounds of milk. A milk “chiller” instantaneously cools the milk to 37 degrees before it enters these tanks. With higher input costs in just about every industry, peak milk production is essential. “The milk market has gotten tighter with higher milk prices helping to offset steeper production costs,” explained Skellie. While partner Allan Ruffalo grew up working on El-Vi farm, Skellie and fellow partner George Andrew are Eastern New York transplants to the area. It was while driving back and forth to Ithaca during his college years that Skellie first became drawn to Western New York. “The eastern part of New York where I am from contains a lot more hilly, rocky, forested land,” he explained. “We didn’t have enough land to grow feed for our own cows and had to rely on other farms.” It was not simply an abundance of rich farmland that drew Skellie. “Here, there was an optimism about agriculture that was not present in Eastern New York,” he said. Skellie packed up his family and 320 cows and moved to El-Vi Farms where he had been brought on board to help grow the dairy business.. “It was quite the move!” he said. Although the dairy industry continues to face several challenges—one of the most challenging ones right now being availability of machine parts and new equipment—Skellie believes it is worth it. “We all feel growing up on a farm is a pretty good way to be raised, to learn, to gain work ethic and life skills,” he said, noting that while his children, as well as Andrew’s children, are nearly grown, Peck’s children are still young. “I also think we learned during the pandemic how valuable local food can be,” he continued. “In our area, shelves may empty, but food is not far away. We were

able to truck a fair amount of food down to NYC when they were in need, and we have donated thousands of gallons of milk locally.” Not only do dairy farms like El-Vi support their communities with farm products, but they also help drive the local economy. “We created a list of all the places we do business within the area and across Western New York,” said Skellie. “There were about 60 businesses listed which even surprised us.” Those employed by El-Vi are often active in their communities beyond the farm, as well. “Jonathan Taylor is the Mayor of Newark,” said Skellie of an El-Vi Farms member. “He works hard between his two jobs and his teenage kids. George Andrew is the treasurer of the Palmyra Christian School Board, and he is a member of the American Dairy Association North East (ADANE) board. He and his wife are directors on the board of Gideons International in our region.” Andrew’s daughter, Gabby, is this year’s New York State Dairy Ambassador, formerly known as a Dairy Princess. “She does a great job promoting dairy and educating other about the dairy industry,” added Skellie. “She is heading to college in the fall to focus on communication and journalism in agriculture.” Skellie’s community involvement includes positions on the Farm Bureau State Board of Directors, the New York Beef Council, and the New York Agricultural Society Foundation.

As for the future of El-Vi, Skellie seems optimistic. “We are in the process of having a methane digestor built this fall,” he said. “We are also focused on determining the next generation who will run El-Vi, getting them in place, and hearing their vision.” As for the industry, Skellie’s outlook also feels positive. “Dairy has a world market, and the US has been the best at efficiently producing high quality milk. New York State is a good state to dairy farm in thanks to an abundance of water, lots of land, Cornell Cooperative Extension (CCE) support, lots of agribusinesses, and area colleges putting more agriculture programs in place.” Skellie plans to continue his work at El-Vi with a particular focus on the human side of the dairy industry. “I like working with people,” he said. “I enjoy coaching people, watching them learn, grow, and do a good job.” Enjoy this article? Can She Donate Plasma Despite Gene Mutation? ---
DEAR DR. ROACH: When my mother discovered she has a factor V mutation, everyone in the family decided to be tested as a precaution. This is a hereditary item, which I am sure you know. It was determined that I carry the gene. I am 65. I have had no issues, and it probably never would have been discovered if we did not go looking for it. This was discovered over 10 years ago and is listed on all my charts. I would like to donate plasma for extra money. I am not on any type of blood thinners except for a baby aspirin every morning. I take a statin for cholesterol control. Can I donate my plasma? -- S.S. ANSWER: Factor V is a blood clotting factor made in the liver. A common mutation in the gene, called factor V Leiden, confers a small increased risk to developing blood clots. People with factor V Leiden and who have never had a blood clot are generally not started on medication to prevent one; however, they may need more aggressive prophylactic treatment to prevent clot at a time of surgery, for example. Although some experts use aspirin in this situation, there is not good evidence to support it. People with factor V Leiden may donate blood, platelets or plasma safely, as long as they are not on an anticoagulant such as warfarin. Only a very few medicines prevent people from donating blood. In addition to anticoagulants, these include medicines that can cause serious birth defects (such as Accutane, used for acne; finasteride and dutasteride, used for prostate enlargement and baldness; and Aubagio, a treatment for multiple sclerosis) and those which might cause infection risk (human-derived growth hormone).

THE DANGERS OF BELLY FAT What’s so bad about belly fat? Seeing belly fat as a merely cosmetic concern overlooks the effects it has on overall health. According to the Mayo Clinic, belly fat is not limited to the extra layer of padding just below the skin known as subcutaneous fat. Belly fat also includes visceral fat, which means it extends to deep inside the abdomen and surrounds internal organs. Johns Hopkins Medicine notes that visceral fat in the belly is very close to the liver, which can turn it into cholesterol. From there, the fat goes through the bloodstream and may collect along the walls of the arteries, potentially contributing to a hardening and narrowing of the arteries known as atherosclerosis. The complications of atherosclerosis depends on which arteries are affected, but they can include an assortment of diseases that affect the arteries and a greater risk for aneurysms and chronic kidney disease. Johns Hopkins Medicine notes that visceral fat is just as harmful for the heart as high blood pressure and smoking. So while efforts to reduce belly fat may initially be embraced to improve appearance, individuals should know that reducing fat in their midsections also can reduce their risk for a host of conditions, some of which are deadly.

SENIOR NEWS By Matilda Charles How to Defend Against the Newest Scams They’re getting better at what they do, more sophisticated and slick ... scammers, that is. They’ve had lots of practice, and many are truly skilled, but what they all have in common is that they want your money and your information. Scams against seniors get worse by the year, and the pandemic hasn’t helped. Many of the current scams are COVID-related: A scammer will offer to send you a box of at-home test kits -- for a fee. A fake contact tracer will call and claim to need to know your Social Security number for identity purposes. Some will say that your latest doctor bill won’t be paid unless you give them your Medicare number. Others will claim to need your banking information so they can do a direct deposit of the stimulus money the government is sending you. Some are new for this year: Supposed Amazon employees will call or send email to warn you about a large purchase. Fake rental-assistance payment scammers will try to get your personal information. Far too many seniors are scammed each and every day. In 2020, seniors lost over $1 billion to fraud, with an average loss of over $9,000. But you can stop it for yourself and not be a victim. Feel free to be rude. Hang up on people who are likely scammers. Don’t even bother saying goodbye. Just slam the phone down. Delete emails that have any links without clicking on them. Don’t bother opening the door to people you don’t know. Use a black marker to cover the information on old pill bottles. Bonus Tip: Invest in a shredder. Look for one that does confetti cuts (small pieces instead of strips). Shred everything that has your name, address and account or credit card numbers. Even envelopes with your name and address can give clues to scammers. Shred them.

Gardeners Do the milkweed plants in my front perennial bed have any significant impact on monarch butterflies? I am trying to decide if I should keep or remove them. Thanks. I understand your angst. The number of monarchs is declining for several reasons, including habitat loss in central Mexico where they over-winter and summer habitat loss in the Midwest. There is a lot of talk about planting milkweed to help them out. But common field milkweed is not a very attractive plant, spreads invasively underground, and is difficult to remove. I wouldn’t want it in my front garden bed. One person’s milkweed plant probably doesn’t make a difference, but if many people plant it, it could make a difference over time. Common field milkweed, Asclepius syriaca, serves as both a preferred host plant (where these butterflies lay their eggs and larva/caterpillars feed) and a nectar source for adults. That’s why people encourage planting this specific plant.

These two plants are much better suited for home gardens. They are more attractive and will not spread invasively like common milkweed. Is there a way to combat it without killing off the grass we’d like to save? Glechoma hederacea, better known as Creeping Charlie and ground ivy, is one of the most common and unfortunately hard to control lawn and garden weeds. A healthy lawn will help prevent creeping Charlie from getting established. Over-seeding bare spots in a lawn with an appropriate grass seed
will help crowd out the weed. Another strategy is to mow at a height of 3 inches. This allows grass to have healthier roots and blades as well as shade out weed seedlings. Hand weeding can be difficult and frustrating due to the fact that there are roots at many of the leaf nodes. If the soil is moist and you are careful to dig the roots, you will be more successful. Weeding them from garden beds is a lot easier. Removing them as soon as they show up is the key to success. A hoe, rake or dethatching tool can be helpful. If a herbicide is required, studies have shown that spring and fall are the best times to apply. More than a single season application may be needed. During the heat of the summer, plants are not growing as fast and not as susceptible to the effect of herbicides. These herbicides are directed at broadleaf plants, not grass, so are not likely useful in gardens or harmful to the grass. Lawn herbicides with multiple active ingredients are most effective against difficult to control weeds. Products that con-
tain triclopyr, such as Ortho Weed-B-Gon Chickweed, Clover and Oxalis Killer have proven effective. So has Ortho Weed-B-Gon Max plus Crabgrass Control with quinclorac. What is Wrong The United States should stop sending all these billions of dollars to other countries to help their war efforts. Next, it will be troops. We have too many places that need that money here for food, health care, jobs...I could go on and on. The idea is we need our tax dollars here. The government can’t take care of the Veterans we have now. (I know because I am a disabled Veteran.) I see all the time how we are taken care of. We should get rid of all the rich politicians and put middle class Americans in their jobs! Also, I just heard that the shooter from the Buffalo shooting pled not guilty. Come on! Let’s get real and call a murderer a murderer, and stop all the nonsense! Some Things Never Change Some people forget the past. Those who believe that disarming a society makes everyone safer, I believe, are those people. When this country was founded, guns were used against the government at the time, which had become too powerful, and was trampling on the rights of its subjects. The founding of our country was, in part, because the right of the citizens to keep their government in check, was of utmost importance. Through the centuries, history has shown us that when a society is disarmed, they become subjects of the ruling class. The most recent example has been China, where they have subjected the population to the heavy fist of control. Even though our government has more powerful weapons than its citizens, we’ve also seen how a determined population can defend and beat back mighty military forces, as has happened in Afghanistan. I have never had any one of my firearms injure anyone on its own. If inanimate objects are the problem, best to get rid of cars and booze.

With more people working and studying from home, window film allows in abundant natural sunlight while blocking 99 percent of the sun’s harmful UV rays to better protect the skin (from possible cancer) and eyes (from cataract development), while reducing the fading of floors and furnishings. Smith estimates that 40 to 60 percent of color fading is caused by UV exposure. Windows may also be upgraded for safety, as window film helps to hold glass pieces together if the window is impacted and broken. For even a 3,000 square foot home, window film may be installed in a day or less with minimal disruption. Window film installers clean the glass before installation, keep the work space clean and practice safe contact as recommended by the Centers for Disease Control. THE IMPACT REVIEWS HAVE ON BUSINESSES. Search Engine Land, which covers digital advertising technology, reports 88 percent of consumers trust online reviews as much as personal recommendations. Unfortunately for businesses, Inc. magazine and entrepreneur Andrew Thomas found that a customer who has a negative business experience is highly likely to share that experience by leaving a bad review. On the other hand, someone who has had a positive experience is unlikely to leave a good review. Roughly 10 percent of happy customers say they were pleased by a product or service. Furthermore, Thomas indicates it takes roughly 40 positive customer experiences to undo the damage from a single negative review. Customer happiness should be the goal of businesses, with the added benefit of helping to generate more positive reviews and word-of-mouth recommendations. While that is happening, customers can think twice about online reviews.

Speak to product quality, especially when you have a very good experience with an item. Many retailers request feedback via email. Take advantage of this opportunity to offer positive feedback. While directly posting the pets for adoption on social media may not be a good option for all of the reasons you previously listed, I do think there’s an opportunity for Sherrie to harness the reach of those platforms to raise the money she needs to get them rehomed properly and to cover their medical care. I’m continually amazed (and encouraged) by the kindness of strangers on GoFundMe pages for pets. -- Lauren P. DEAR LAUREN: That’s certainly an option to cover the cost of their care. Crowdfunding is an increasingly popular way to quickly raise cash to cover pets’ medical needs and care needs. GoFundMe has dedicated a page with several ideas for pet funding: https://www.gofundme.com/c/fundraising-ideas/ pets, and there is even a pet-specific crowdfunding organization, Waggle: https://www.waggle.org, which helps owners raise money for pets’ medical procedures. To crowdfund a pet’s care and treatment, do plenty of research first. Look at active fundraisers to see what messages are effective and double-check the rules about pet fundraising at each crowdfunding site. To rehome a pet, there is at least one online resource that may be helpful.
