Lawrence Berger Crafts Poetry Built from the Title Out
BY SUZIE WELLSLawrence Berger’s poetic journey began in 1996, evolving into a professional pursuit by September 1999. Berger credits James Everet Jones, his first poetry teacher in Hollywood, CA, as a pivotal influence, his mentorship laying the foundation for Berger’s enduring passion for poetry.
Berger adeptly navigates couplets, free verse, and narrative poetry. Drawing inspiration from everyday encounters, Berger’s creative process is spontaneous and o en audience-driven, cra ing poems within seconds on stage from audience-suggested titles. Berger describes his style as “part stream-of-consciousness, partimprovisation, all Poetry!” He builds poems from the title out and prefers topics that motivate and inspire readers / listeners, aiming to leave a lasting impression on his audience.
Despite occasional self-doubt, his track record of publications and awards attests to his skill and dedication. Engaged in various writing communities, including Just Poets in Rochester, NY, Saturday A ernoon Poets from Alhambra, CA, and the Cobalt Poets global zoom network, Berger finds camaraderie and support among fellow wordsmiths.
Berger’s resilience extends beyond poetry; surviving ten car accidents that should have killed him throughout the years, he is tenacious. With a diverse literary portfolio spanning ten books, five movies, two shorts, a one-act play, seven seminars, and a CD, his impact reverberates far. He even won our 2023 Pen a Poem contest for his “Hungry Hungry Hearing Aids.”
Advocating for the therapeutic benefits of creative expression, Berger says, “Creative writing is an outlet for imagination. Everyone shouldspendtimegettingtheirideasout. Creativewritingisanoutlet for stress at low costs.” He also explains that poetic advertisements have been running for generations, and people o en forget that the lyrics of favorite songs are poetry, and “every time you sing along with the [songs] you are reciting poetry and that is a good thing!”
Berger encourages aspiring writers to find their voice by speaking their work aloud. He says, “When you say your work out loud, it helps you find your ‘voice.’” Upcoming engagements, such as the Literary Partners reading at the Writer’s and Books Foundation this June, highlight Berger’s ongoing commitment to sharing his cra with the world.

DEAR DR. ROACH: Your recent column about treating diabetes left me wondering. Diabetes, as I understand it, is usually a result of too much sugar being consumed. But consuming carbohydrates is not that different because they are quickly converted to sugar through the human chemical processes. So, why are you promoting a plant-based diet that is high in carbohydrates?
Consuming protein, which is easily obtained by eating meat, seems to be the answer to reducing the consumption of simple and complex carbohydrates that are quickly converted to sugar in our body. I’ve switched to a high-protein diet (both plant and animal protein), and my blood sugar has been very well-controlled for a couple of years. -- F.B.
ANSWER: Diabetes is not a result of consuming too much sugar. Type 1 diabetes is an autoimmune disorder where the cells that make insulin are destroyed by the body. Type 2 diabetes is a disease of insulin resistance and a relative inability to secrete insulin in response to a sugar load. In a person with Type 2 diabetes, consuming too much sugar in a short time overloads the body’s ability to respond, so their blood sugar goes up. It is persistent high blood sugar that is responsible for most of the damage to the kidneys, eyes, blood vessels and nerves.
I am careful about what I mean by a plant-based diet. While it’s true that a diet consisting entirely of maple syrup and orange juice would be extremely bad for a person with diabetes because of the concerns about blood sugar that you raised, a plant-based diet that is mostly vegetables, whole grains, legumes, fatty fish and nuts/seeds with moderate amounts of whole fruits does not raise blood sugar more than a standard Western diet.
The high fiber content of the legumes, whole grains and vegetables prevents rapid absorption, and the protein and healthy fat in nuts and fatty fish likewise slow stomachemptying. Finally, there is good evidence that people with diabetes have excellent results with this kind of diet.
You are right that protein is important for a person with diabetes, but many high-protein diets based on meat also have high amounts of saturated fat, which increase the risk for heart blockages. In addition, saturated fat is a major cause of disease and death in people with diabetes. However, it is possible to have a healthy, high-protein diet with care.

Make a household favorite more healthy
Many beloved dishes might be enjoyed more often if they were only a little healthier. Author and former personal chef Michelle Dudash was once asked by a client if the she could make a healthier version of chicken parmesan. The result of that request is the following recipe for “Skinny Chicken Parmesan with Spinach,” which Dudash ultimately included in her book, “Clean Eating For Busy Families” (Fair Winds). The recipe was a hit with Dudash’s client and will surely be a hit at home cooks’ dinner tables as well.
Skinny Chicken Parmesan with Spinach
Makes 6 servings
For the sauce:
2 teaspoons extra-virgin olive oil
2 cloves garlic, sliced
1 28-ounce can whole tomatoes
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
2 pinches salt
2 pinches freshly ground black pepper
1/2 teaspoon honey
For the chicken:
3 tablespoons grated Parmesan cheese
2 tablespoons whole-wheat flour
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried basil
11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch
2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided
4 cups baby spinach
1 teaspoon lemon juice
3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded)
6 cups cooked whole-grain thin spaghetti tossed in 2 teaspoons olive oil
Preheat oven to 375 F and coat the bottom of a 9 x 13-inch pan with olive oil spray.
To make the sauce: Heat a medium saucepan over medium heat. Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed.
To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken. Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti.

BEE SAFE WHILE GARDENING TO PROTECT POLLINATORS
Stinging insects such as bees and wasps play a vital role as pollinators that maintain the national food supply. However, a multitude of factors, including the lack of available natural habitats for foraging pollinators, diseases, harmful mites and improper pesticide usage, have threatened pollinator health in recent years. As a result, many people have realized the importance of protecting pollinators and even developed gardens geared toward providing safe sources of nectar and pollen. The National Pest Management Association (NPMA) wants to remind homeowners that while creating pollinator-friendly habitats is largely beneficial for both people and pollinators, it is important to keep in mind that some stinging insects can pose significant health and safety risks. In fact, stinging insects send an estimated 500,000 people to the hospital everyyear.
People with known allergies to insect stings or with asthma should be especially careful around pollinators, as stings could trigger a potentially lifethreatening reaction. There is also a common myth that bees and wasps can only sting once before they die. This only holds true for some species of stinging insects, and people should always be cautious around hives and nests. If a person comes in close contact with a stinging insect, swatting at it will often provoke it to become more aggressive. The best course of action is to remain calm and slowly walk in one direction until the insect losesinterest.
Maintaining a garden that serves as a welcome oasis for wild bees or community bees that are being raised by local professionals is a great way to protect pollinators. Without proper beekeeping training, however, homeowners should never allow stinging insects to take up residence on their property.
If a hive is spotted in or around the yard, a pest management professional or professional beekeeper should be contacted to safely remove it and, if possible, move it to a safe location where the bees can be allowed to thrive without posing any dangers to the public. If the hive is located in a building, utilizing a professional is also critically important to ensure every part of it is removed; any leftover combs could contain honey that can ferment and cause serious damage,as well as attract peststo the property.

Did You Know? If you have psoriasis, an autoimmune skin condition marked by red, flaky patches on the body, you also could be at risk for a certain type of arthritis. Psoriatic arthritis, which causes stiffness, swelling and pain in and around the joints, affects up to 30 percent of people with psoriasis, says the National Psoriasis Foundation. While psoriatic arthritis can develop at any time, it is most common in people between the ages of 30 and 50. This type of arthritis can develop slowly or come on quickly and be severe. Just like psoriasis itself, psoriatic arthritis tends to go through periods of flare-up and remission. Typically, the skin condition precedes the joint disease in 85 percent of patients. Keep in mind that a severe case of psoriasis will not necessarly translate into a severe case of arthritis. Psoriatic arthritis may be treated like other forms of arthritis. Doctors may prescribe anti-inflammatory drugs, antirheumatic drugs, exercise, and complementary therapies.Those who have psoriasis and have begun to experience joint pain and stiffness should talk to a doctor about potential therapies.
CHOCOLATE CARDAMOM TRUFFLE CAKE
Serves 10 to 12 Amaretti Base
5 ounces amaretti
1/2 stick (4 tablespoons) unsalted butter
5 tablespoons sugar
Cardamom Truffle Filling
2 1/3 cups heavy cream
4 to 6 green cardamom pods, lightly bruised to open them
25 ounces dark chocolate
(60-70% cocoa solids), grated 1/2 stick (4 tablespoons) unsalted butter, cubed
4 tablespoons chocolate liqueur
Cardamom Cocoa Sugar
3 green cardamom pods
1/4 cup sugar
1/2 cup unsweetened cocoa
1 10-inch cake pan with a removable base, base and sides lined with nonstick parchment paper
To make the amaretti base, finely crush the amaretti in a food processor or put them in a plastic bag and crush with a rolling pin. Melt the butter and sugar in a pan over low heat, then stir in the amaretti crumbs. Press the mixture evenly over the base of the prepared cake pan and refrigerate for 20 minutes.
To make the cardamom truffle filling, put the cream and cardamom pods in a pan and heat until almost boiling. Remove from the heat and set aside to infuse for 20 minutes.
Meanwhile, put the chocolate and butter in a saucepan. Strain the infused cream through a fine strainer onto the chocolate (the cream will be warm enough to melt the chocolate). If it doesn’t melt, warm over very low heat, stirring occasionally, but do not allow to boil. Stir in the liqueur, then set aside until almost cold, but not set. With an electric mixer, beat the chocolate mixture for a couple of minutes - this will give the cake a lovely airy texture. Pour onto the amaretti base. Let cool, then cover and refrigerate for at least 6 hours, or up to 48 hours before serving.
To make the cardamom cocoa sugar, remove the black seeds from the papery cardamom pods and put the seeds in a spice grinder with the sugar and cocoa. Grind to a powder. Carefully remove the cake from the pan and peel off the lining paper. Set on a chilled serving plate and sift the cardamom cocoa sugar evenly over the top. Serve immediately, cut into very thin slices.

DEAR PAW’S CORNER: My 7-year-old cat, “Sunbeam,” has a tough time in the spring when the pollen starts to fly. He sneezes frequently, his eyes water and he scratches hot spots on his skin. I’ve tried many things to reduce the allergens in the home: I vacuum every other day, run an air purifier near where he sleeps and I brush his coat daily. TITLE: None of that seems to help. What else can I try? -- Harry in Pittsburgh
DEAR HARRY: You’re doing your best to reduce airborne allergens, and that’s great. However, because it doesn’t seem to be helping, it’s time to enlist the help of your cat’s veterinarian.
e vet can suggest some other ways to reduce allergens in the home, and will consider that Sunbeam is reacting to more than one issue -- not just pollen, but indoor dust or even the food he’s eating. ey will also check for any secondary issues that may be contributing to Sunbeam’s discomfort, like an ear infection or yeast infection.
Short-term treatment with a prescription medication, like a steroid or an antihistamine, may be necessary during the worst part of the season. ese will help reduce the intense itching and eye irritation, and should help clear up hot spots on his skin.
At home, try adding fish oil and probiotics to your cat’s food -- these supplements can help with itchy, flaky skin conditions. (I give my cat a teaspoon of plain yogurt daily to balance his gut bacteria.) Lisa R. Bortle, age 55 of Dansville, passed away unexpectedly at home on Monday, May 6, 2024. Lisa was born on December 15, 1968 in Elyria, Ohio.She met the love of her life,Glenn R.Bortle, on April 7, 1984 and was married on November 6, 1993. Together, Lisa and Glenn celebrated 22 years of marriage and raised two daughters. Glenn predeceased Lisa on September 24, 2016. We take solace in knowing that Lisa has been reunited with her soulmate. In addition to her husband, Lisa is predeceased by her parents, in-laws, and a beloved sister-in-law and brother-in-law.
After graduating high school, Lisa went into the banking industry and worked her way up to a mortgage lending officer at Community Bank in Dansville.Lisaalwayshadasmileonherfaceandmadefriendseverywhere she went. She and Glenn took immense pride in their daughters and loved nothing more than spending time with family. Lisa was especially proud of her new title as “Grandma”and her granddaughter, Quinn. Lisa is survived by her daughters, Rhiannon (Ryan) Stewart & Hannah (Tyler) Hickok; her granddaughter, Quinn Stewart; her siblings, Jamie Stevens, Michael & Terri Bisgrove, Lonzo & Rose Bisgrove, Dorothy Powe-Derrenbacher, and several nieces, nephews, cousins and dear friends.
Family & friends may call from 4 - 7pm on Friday, May 10, 2024 at the Walter E. Baird & Sons Funeral Home in Wayland. Funeral services will be held at 10am on Saturday, May 11 at the funeral home. Burial will take place following the funeral at Erwin Cemetery in Springwater next to Glenn.

Katherine J. Kelsey, age 68 of Dansville, passed away on Saturday, May 4, 2024 at UR Noyes in Dansville.
Katherine was born on November 9, 1955 in Rochester to the late Howard & Marion Francis.
After completing her GED, Katherine also earned her CNA certificate and worked at both Noyes Memorial Hospital and the Livingston County CNR prior to retiring.
In her free time, Katherine loved watching the Golden Girls and I Love on the television. She enjoyed listening to Elvis Presley and her favorite character was Eeyore.
In addition to her parents, Katherine is predeceased by her first husband, John Alvord, Sr.; her second husband, William Kelsey; and her siblings: Beverly, Bonnie & Les.
Katherine is survived by her children, Jonathan, Christopher, Shawn, Tina, Stephen & Crystal and their father, Leroy Folwell, Jr.; dozens of grandchildren & many great-grandchildren; her nieces & nephews, Beverly, Raymond, Howard, Charlotte, Michael, Patrick, Victor; her brother-in-law, Alan “Jody;” and several other nieces, nephews & cousins. Work-related stress is an all too common problem in workplaces across the globe. According to the American Institute of Stress, 80 percent of workers report feeling stress on the job. Perhaps most troubling, nearly half of those people admit they need help in learning how to manage their stress.
The American Psychological Association notes that stressful workenvironmentscancontribute to a host of physical problems, including headache, sleep disturbances and short temper. Chronic stress can produce more serious consequences such as high blood pressure while also weakening sufferers’ immune systems. Stress at the workplace also can make it difficult to concentrate, which in turn can compromise workers’ abilities to perform at the peak of their abilities. That supports the notion that stress is a problem for both employees and employers. As a result,findingwaystoreducethat stressshouldbeateameffort.
Getting a handle on stress can be difficult. Since so many people trace their stress to the jobs they needtogetby,theymightthinkit’s impossible to address that stress without derailing their careers. But there are a handful of ways for professionals to get a handle on their stress without negatively affectingtheircareers.

Vacation is not just a time to get away, but a valuable, effective way for workers to recharge. The APA notes that avoiding the negative effects of chronic stress and burnout requires workers to take time away to replenish and return to their pre-stress level of functioning. Taking time off to disconnect from work and avoid thinking about work can be just what workers need to overcome their work-related stress.
