1 pound farfalle 1⁄2 pound asparagus, trimmed and sliced diagonally, 1⁄4-inch thick 10 extra-large eggs 4 tablespoons unsalted butter 1 garlic clove, minced 1⁄4 cup freshly grated Parmesan cheese, plus more for serving 2 tablespoons heavy cream 1⁄2 pound cooked lump crabmeat, picked over to remove any bits of shell or cartilage 1⁄4 cup finely chopped fresh chives 2 tablespoons finely chopped fresh Italian parsley Freshly ground black pepper

Bring a large pot of water to a boil. Add the farfalle and cook until al dente, following the manufacturer’s suggested cooking time. About 2 minutes before the pasta is done, add the asparagus. Meanwhile, in a mixing bowl, beat the eggs with a fork or whisk until slightly frothy. Set aside. When the pasta and asparagus are done, drain and set aside. Immediately melt the butter in a large skillet over medium heat. Add the garlic and sauté until fragrant, about 1 minute. Add the pasta and asparagus and toss briefly to coat them with the butter mixture. Pour in the eggs, add 1⁄4 cup Parmesan and the cream, and stir and toss the mixture until the eggs just have begun to form moist curds, about 2 minutes. Add the crabmeat, chives and parsley and continue cooking and tossing until the eggs have formed more solid curds that cling to the farfalle, 1 to 2 minutes more. Serve immediately, passing grated Parmesan and black pepper for guests to add to taste.

Habitat for Humanity: Helping Livingston County Families

Achieve Homeownership Dreams BY AMANDA DUDEK

S

ubstandard housing is a reality for many lower income families in Livingston County. Unstable housing due to inadequate space for the number of occupants, properties in significant disrepair, high rental costs, temporary housing and homelessness all challenge the stability of today’s hardworking but less financially well-off families. There are no simple answers, but one organization works hard, together with these families, each year to bring homeownership within reach: Habitat for Humanity of Livingston County. Established in 1998, Habitat for Humanity of Livingston County believes every family deserves a better place to live, and in fact its stated mission is to put God’s love into action by bringing people together to build homes, communities, and hope. “Everyone should have a home,” said local Habitat for Humanity Board of Directors President, David Wallace. “It is so important that children have a stable home in which to grow up. If they do not, it can affect them for generations.” The benefits can be equally long lasting and extend beyond the families involved. “Having a home that is safe and secure does wonders,” said Wallace. “We have already seen how much of an impact that has, on the kids especially. It is also good for the community as it helps to grow the tax base.” Of course, volunteers do not simply build and give away houses. Families in need must meet certain eligibility criteria for Habitat’s homeownership program based on three requirements, including need, willingness to partner, and ability to pay an affordable mortgage. Practically, this also means having steady income, a certain minimum credit score and contributing 200-300 sweat equity hours with the help of their family and friends. “A lot of people believe we give houses away; we do not,” stated Wallace. “We give a hand up, not a handout. You have to qualify for a mortgage, have decent credit, put in sweat equity–there is a process.” He further noted the misconception that Habitat for Humanity was started by Jimmy Carter. It was not, although he did popularize it. Once families have been approved by a selection committee, they are able to partner with their local Habitat for Humanity to build safe, decent, affordable housing. These partnering families are involved in every step of this process, and it is their labor alongside other volunteers which makes their secure housing dream into a homeownership reality. Since its founding, Habitat for Humanity of Livingston County has partnered with 20 such families, and it has just broken ground on its 21st home in Piffard. It is also rehabilitating its 22nd home in Springwater. “I have seen our partner families receive their homes,” shared Wallace. “In one family, their four children were so excited about having bedrooms. Another child was thrilled about no longer needing to share a bedroom. It has a fairly big impact on them! You can certainly see it in the children’s faces and in the new homeowner’s faces when you hand them the key and say, “This is your house; you own it. It’s a big celebration!” Grants and donations also provide much needed support for Habitat for Humanity homes and families. “We have several faithful donors,” Wallace shared. “We also receive gifts in kind. Many national and local companies donate resources such as a stove and a refrigerator, tools, roof shingles and other necessary materials while others give us sizable discounts and still others donate their time and expertise as needed. Several masons also donate their time laying the foundations and working on the cellar. Volunteers are our heart and backbone. We could not do this without them!”

The pursuit of homeownership is not without its struggles. Often families at the lower end of the income guidelines cannot afford the mortgage and taxes on a new home. Enter rehabilitated homes. “The last thing we want to do is to set families up for failure,” explained Wallace. “Rehabilitated homes sell for less than brand-new houses, resulting in lower mortgage payments. We are in a relationship with the Livingston County Land Bank, which allows up to purchase properties at a minimal cost. The home we are working on in Springwater is the first one we have done working with them.” Even as we make our way through COVID-19, Habitat for Humanity looks to a future where they can help even more people find housing stability through homeownership. “We hope to continue on forever,” Wallace stated. “We would like to find ways to serve those on the lower end of our income brackets because everyone should have a home to call their own.” “We definitely need volunteers,” he continued. “We would like to encourage our next generations to join us and help. We not only build houses, but we host “Brush with Kindness, fixing minor things, like a broken window, for those who cannot. I just started a vegetable garden and a few of my lettuces are growing so tall that they started flowering. Should I take them out, cut them in half or leave them? Bolting lettuce - You have some choices here that you can make. Lettuce is one of the cool-season crops, not a good summer season crop. When the weather gets warm and the days get long, lettuce is inclined to bolt or “go to seed”. When this happens, the leaves get very bitter. You can cut them back to the ground, leaving the roots intact, and they should re-sprout when the weather cools a bit if they have

consistent moisture. You can donate the tops to someone who has rabbits, guinea pigs or chickens. They will eat them readily. You can let them go to seed and collect the seed for next year’s crop. This also helps pollinating insects as they visit the flowers for nectar and pollen. Leaving them there, if you have the room. can also serve to act as an insect trap crop to help protect other crops such as broccoli and cabbage. Susan S Burns, born June 30, 1964 in Bremerhaven, Germany and passed away on June 16, 2020 at Strong Memorial Hospital with Hospice support, after an extended illness. She is survived by her parents, Lanny S Burns (Mary L Burns), Lynne S Curtin (Ray Curtin); Beloved son, Zachary D Burns, who was her reason for life. Sister, Amy Burns (Richard M Newman); brother, Christopher J Villarreal-Burns, niece Emma K Stiegel; Aunt, Gail Hirst; step-sisters, Kelly Dempsey Shepard, Kerry Dempsey Macko (Todd) and extended family, Jen Bean, Sara LaCava, and Brian Reagan. Susan graduated from Dansville Central High School and attended LPN training and worked as a Home Health Aide, which she dearly loved. She also was a super fan of the color purple and anything “Cher.” At her request there will be no calling hours and private interment at convenience of family. Orlo G. DeMun, age 75 of Dansville, NY passed away on Tuesday, July 14, 2020 at the Livingston County Center for Nursing and Rehabilitation in Mt. Morris where he had been residing. He was born in Perry, NY on July 17, 1944, a son to the late Rodney DeMun and Clara (Deiter) Green. Orlo worked for Lapp Insulator in LeRoy and retired from Pulsa Feeder in Rochester in 1999. He is survived by 3 sons, Ricky (Darlene) DeMun of Perry, Robin (Genevieve) DeMun of Dansville, Shane (Tammy) DeMun of Nunda; 2 step-children, Veronica Bailey of Batavia, Jerry Slager of Nunda; sister, Linda Chapek of Perry; brother, Carl (Arlene) Calkins of Michigan; 9 grandchildren, 5 greatgrandchildren; along with many nieces and nephews. Along with his parents he is preceded in death by two wifes: Mary Ann (Armstrong) DeMun who passed away in 2004 and Beatrice (Mehlenbacher) DeMun who passed away in 2010; son, Rodney DeMun who passed away in 2016; and brothers, Sherman and Rodney DeMun Jr. A Celebration of Life will be announced at a later date. Moving Won't Solve Social Isolation Our experiences with the coronavirus have changed many of us. We've been locked down, scared to shop, startled at the number of people who refuse to wear a mask in public, and worse, we've been socially isolated. Now we want something new. My email confirms it: Many of us believe we want to live in a different place, one that will surely be better, and retirement communities are the top choice. We have various reasons for feeling this way. Many of us have been hit with serious lockdown depression and believe that it's from being so isolated. Maybe the grandchildren want us closer than the other end of a Zoom conference call, and we certainly can't fly there to visit. Maybe we want to live somewhere we perceive is safer. However, as enticing as that idea is, before packing up, be sure what's on the other end: Check the health stats in your new chosen location. No need to go from one area with a few cases of the virus into a major hotspot. In many places the numbers are just now starting to climb. Check the rules in the new location. Some areas are still locked down more than others. In some places a move doesn't qualify as essential travel.

Neighbor’s Dog Loves To Visit DEAR PAW’S CORNER: I don’t own a dog, but I have a minor problem with one. My neighbor has a Staffordshire terrier named “Hazel.” Almost every day, Hazel is let out into the neighbor’s backyard, and she quickly escapes by jumping over the short gate at the side of the house. Then she walks into my yard to visit me as I work in the garden. Hazel is very nice, so I don’t feel threatened at all. I’ll give her a few pats and then lead her back over to her house. But I worry about her running around the neighborhood, off-leash and unsupervised. How should I approach my neighbor about her roaming? -- Greg in Albany, New York DEAR GREG: You’re right to be concerned. Hazel could be hit by a car; she could be attacked by another dog; or she could frighten other residents who might injure her. If police or animal control officers see her, she will likely be picked up and taken to the local pound. The next time Hazel comes over to visit, head next door and knock on your neighbor’s door. Talk to them calmly about raising the height of the gate so that she can’t leap over it. You’re a good neighbor to bring Hazel back each time, but ultimately it is the responsibility of her owner to make sure she stays in her yard. STEALING FLOWERS FROM A GRAVE SITE A couple weeks ago on a nice Saturday morning I took my family to visit my parents’ grave site in Rush, NY. My wife & I visit throughout the year and have taken care of my parent’s plot since my parents passed away around 2000. This year my oldest (17-year-old) daughter & I cleaned up and planted beautiful flowers around my parent’s headstone. It was a touching memorable moment. We visited their plot today just before Memorial Day to see how the flowers were doing and because my father was a veteran officer in the US Navy. We were shocked to discover someone had stolen the flowers we planted. Honestly, who steals $10 worth of flowers from someone’s grave site? It was awkward trying to explain the circumstance to my 3 young children. How incredibly disappointing, upsetting, and repugnant.

a pleasure to go camping this past weekend, to enjoy nature, breathe the fresh air, have campfires, roast marshmallows, make s’mores, and watch the stars. We have been cooped up for quite a while, so this was a welcome change of pace! PAY IT FORWARD Thank you to the person at Dunkin’ Donuts who paid for my coffee. PLEASE CALM DOWN! I agree with the post about people not respecting the cashiers, etc., who are supplying us with a service we really need. What is it with people? As the Governor put it so concisely weeks ago, “You don’t have the right to infect me or my loved ones.” Get over it already with the masks. You wear seat belts, don’t you? Do you think that isn’t necessary? It is the same with following a simple rule of wearing a mask. How simple can it be? No one is asking you for a kidney. Calm down and smell the flowers! LEARN HOW TO COUGH Cleanliness is the best prevention. I agree with that wholeheartedly. That’s why wearing a mask is so vital. I see people cough, into the open air or into their hands. Yet, we’ve been told time and again that if you cough, do so into your elbow. That is one reason why masks are beneficial!

Blood in the Urine Won’t Just Go Away --DEAR DR. ROACH: I’m a 92-year-old man in better-thanaverage health. I have had two episodes of blood in my urine in the past two months. I know this isn’t normal. At my age, I’d just like to make believe it didn’t happen. What’s my future like? -- Anon. ANSWER: Your future will shortly include, I hope, a visit to your regular doctor. Blood in the urine often is due to a urine infection or a kidney stone, but in older men, there is always a concern about a tumor, whether of the kidney, bladder or prostate. Pretending it didn’t happen is not a good solution, and your doctors will certainly take your age into account when looking at diagnostic possibilities and treatments. Most cases will turn out to be not much to worry about, so the sooner you get in, the sooner you can find out what’s going on and see what steps may be necessary. *** DEAR DR. ROACH: Recently, my acupuncturist suggested that I try hyaluronic acid capsules for the arthritis in my hands, feet, back, neck and hips. I had heard of hyaluronic acid years ago and checked it out. Since it promotes cell growth, I assume it can’t differentiate from good cells or cancer cells, so I avoided trying it. Is this really safe to take? -- C.F. ANSWER: Hyaluronic acid is indicated for use via injection, especially into the knee for arthritis symptoms, but is also used for other purposes, such as a filler in cosmetic surgery. For knee injection, it appears safe and moderately effective. It isn’t thought to work by promoting cell growth but rather by replacing synovial fluid, a fluid that acts as a kind of shock absorber, protecting the cartilage, bone and nerves of the knee. There have been studies evaluating oral hyaluronic acid, and one from Japan in 2012 showed a very modest improvement compared with a placebo. I wouldn’t recommend oral hyaluronic acid based on the studies done so far. There are many reports in basic cancer research on the ability of cancer cells to grow in conditions of high hyaluronic acid; however, this does NOT mean that taking oral hyaluronic acid promotes growth of cancer cells. As far as I can tell, there is no evidence that links oral hyaluronic acid to increased cancer risk. *** DEAR DR. ROACH: I suffered from constipation for years, and after consulting with a gastrointestinal specialist, I was prescribed MiraLAX. I take it every morning and have added fiber to my diet. The program has been successful. How wise is it to continue MiraLAX indefinitely? Should I worry about side effects? It has been quite pleasant to be free of constipation worries. -- Anon. ANSWER: MiraLAX is a non-absorbable chemical called polyethylene glycol. It passes through your system, bringing water with it, which makes stool less hard and easier to pass. It is very safe for short-term use. If used excessively, it can pull sodium and potassium out of a person’s system. If you are taking in enough fiber, it should be possible to decrease the MiraLAX without worrying about constipation again, but it’s OK to use MiraLAX as needed. *** Dr. Roach regrets that he is unable to answer individual questions, but will incorporate them in the column whenever possible.
