Zucchini Sticks FRIED
2 cups all-purpose flour 1 teaspoon paprika 1/2 teaspoon garlic powder 1 tablespoon kosher salt, divided 4 large eggs, lightly beaten 4 cups panko (Japanese breadcrumbs) 4 tablespoons all-purpose flour 1/2 teaspoon dried oregano 1/4 teaspoon black pepper 2 medium zucchini (about 1 lb.), cut into 1/4-inch-thick strips Canola oil 1 cup grated Parmesan cheese Combine 2 cups flour, next 2 ingredients, and 1 tsp. salt in a shallow dish. Whisk together eggs and 3 Tbsp. water in another dish. Process breadcrumbs in a food processor 10 to 15 seconds or until finely ground. Combine breadcrumbs, 4 Tbsp. flour, oregano, pepper, and remaining 2 tsp. salt in a third shallow dish. Dredge zucchini, in batches, in flour mixture; dip in egg mixture, and dredge in breadcrumb mixture. Pour oil to depth of 2 inches into a Dutch oven; heat over medium heat to 325°. Fry zucchini, in batches, 1 to 2 minutes or until golden. Drain on a wire rack over paper towels. Sprinkle with Parmesan cheese.

Potato Salad with Smoked Sausage Cook time: 30 minutes Servings: 6 3⁄4 regular size package Eckrich Smoked Sausage, halved lengthwise, cut into 1/2-inch thick slices 3 small red potatoes (about 2 1/2 pounds), cooked and quartered 1 can (4 ounces) pitted ripe olives, drained and halved 2 cups Italian dressing 1 green onion, sliced (about 1/4 cup) 1 clove garlic, minced 2 teaspoons ground black pepper In large skillet over medium heat, cook sausage 6 minutes, stirring occasionally. Stir in potatoes; cook until heated through, stirring occasionally. Remove from heat. Add olives, dressing, onions, garlic and pepper; mix lightly.

STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM Serves 4 • • • • • • • • • • 1.
8 1-inch-thick bread slices, cut from a country or peasant loaf 2 cups half-and-half 4 egg yolks 3 tablespoons light brown sugar 1 tablespoon vanilla extract, plus 1/2 teaspoon 1/2 teaspoon cinnamon 3 tablespoons unsalted butter 1/2 cup sour cream 1 tablespoon granulated sugar 1/3 cup strawberry jam or preserves (see note 2) Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). Add the
toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

--DEAR DR. ROACH: I would like to know your opinion about whether it is OK to crush up different psychiatric medications and put them in a small container of water to drink. This doesn’t seem very safe to me, but I’d like an expert opinion. -- Anon. ANSWER: I’ll give you my answer, and also tell you where to find an expert opinion. My answer is that many people have trouble swallowing pills, and that most pills can be crushed and taken with water or mixed in with food. Your local pharmacy sells pill crushers, or you can get a mortar and pestle. While you are at the pharmacy, ask your pharmacist. He or she can look at your medications and tell you whether it is safe for you to crush your particular medications. Slow-release medications, of which there are many, should not be crushed. Often, the bottle will tell you, but ask your pharmacist for the expert opinion. *** DEAR DR. ROACH: What are your thoughts about the MiraDRY procedure to get rid of underarm sweat? Is it safe not to have sweat under the arms? -- S.J. ANSWER: MiraDRY is the brand name of a microwave device designed to treat hyperhidrosis (excessive sweating). This is not normal underarm sweating, but a rare condition of abnormal, drenching sweat that greatly interferes with social activities. It is currently used only for underarms -- not hands, feet or face, the other most common places for localized hyperhidrosis. According to several published papers, the microwaves heat up the water in the sweat glands, destroying them, while the skin itself is cooled. The published success rates (at reducing sweating to “never noticeable” or “tolerable”) are very high, as are patient satisfaction results. Side effects included swelling, redness and temporary numbness. This is a new procedure, but it appears to have promise in the treatment of excess sweating. I also found a very helpful website at www.sweathelp.org. *** DEAR DR. ROACH: What causes foot drop? Is there any cure for it? -- B.H. ANSWER: Foot drop is most commonly caused by damage to the peroneal nerve, which wraps around the fibula, one of the two bones of the leg (anatomically, only the lower leg is called the leg, as opposed to the thigh). The nerve can be damaged from trauma, such as during surgery or prolonged hospitalization. Leg casts and prolonged positioning with stress on the nerve, such as squatting, also can damage the nerve. Most people describe numbness but not pain, and the dropped foot can cause people to trip, so people with this condition learn to flex the hip to lift the thigh up higher. The diagnosis can be confirmed by electrical studies of the nerves. Treatment usually is to prevent further damage, with a splint to keep the foot flexed upward. A physical therapist can prescribe helpful exercises. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible. ␣ ␣ ␣ ␣ ␣ Big Springs Museum Serves Up Smorgasbord of Historic Everyday Life: Pt. 1 It is almost impossible to grasp the size of the Big Springs Museum when approaching the Main Street entrance next to the Caledonia Police Station. The building, according to the museum’s website, is the 10,000 sq. ft. addition to the original Caledonia School, and it seems that every square inch of it is filled with history and artifacts. In fact, it is everyday life, throughout the previous century and beyond, in all its minutiae. From clothing to dinnerware to buttons to art to toasters to bellows to dolls, collections and displays run the complete range of all things daily living in the 1900’s, with some pieces dating further back into the 1800’s, as well. There is hardly a topic regarding life during this historic period for which one could not find a collection. Baby carriages and cradles? They’re here. Washing machines? They’re here, too. Farm equipment? Just visit the museum basement. When one enters through the door on Main Street, which is actually the rear entrance with the main entrance being on Pioneer Road facing Tenant Park, display cases immediately appear along either side of the hallway. This hallway leads past the Caledonia Police Station and into the museum building. Displays on herbalism & tonics, Native American history, women’s dresses and coin banks draw visitors to the glass for a closer look. One could spend half an hour between them and not even have reached the museum door! On the first floor stands a model for a new exhibit: “Shaping a Community,” which is to take form with the War Era display upstairs. In a way, this model is symbolic of the entire museum, always growing, always changing, continuing to house and create a history of the Caledonia area as time moves forward. A significant part of the displays reflects the area’s agricultural heritage, especially related to the Seth Green Fish Hatchery, the oldest fish hatchery in North America. Hatchery log books and fish plates as well as other fish art, particularly a pair of trout paintings by local artist, Lillian Annin, fill almost an entire room. A model of a Wells
barn, as well as additional information on the iconic structure, share the room with the hatchery items. A display of sheet music connected to place names stands in the center of the room and is a fascinating glimpse into the musical preferences of the times. Also, tucked behind a door, is the original Caledonia telephone switchboard, a fun piece to examine. There are two staircases leading to the second floor, and knowledgeable and friendly museum curator, Patty Garrett, explains that, as a previous school building addition, one staircase was for the boys and the other was for the girls, as were the rooms on either side below, which were previously coat rooms. On the second floor, enclosed rooms with one, uncluttered, glass wall light up as visitors approach, giving glimpses into a child’s room, a living room and a kitchen, replete with everyday items from the turn of the century and early 20th century.

HELPFUL INSECTS Plants depend on insects to transfer pollen as they forage, and many insects are quite beneficial to have around. While some pollinate, others are predators of other pests. • Antlion: A foe of ants, they’ll help eat and control ant populations and pollinate flowers. They pose no threat to humans, either. • Big dipper firefly: These colorful insects feast on earthworms, slugs and snails during the larval stage. Different generations can learn and benefit from one another In the not-so-distant past, extended families frequently lived in close proximity to one another. Such families shared meals and experiences and essentially grew up together. Nowadays, families separate for various reasons, such as job opportunities and cost of living concerns. While there are advantages to spreading out, there are also some disadvantages, namely that grandparents and grandchildren may not see one another frequently enough. Even though people of different age groups may not entirely have the same interests, the interactions between generations can benefit both young people and their aging relatives. Finding renewed vigor Senior living and active lifestyle communities provide invaluable care and amenities for seniors. While being around like-minded individuals can be handy, it’s also limiting. To the person or people who took my 2 year old little girl's backpack in the parking lot of the [local church] on July 4th, I hope you enjoy my 2 year old's things, her baby blanket, her diapers and her tablet. She was asking for her things the rest of the night and will continue to for weeks. You are disgusting, and it is a shame you could not just turn it in to lost and found. She says you stole it, and even she understands you are disgusting and rotten.

Statistics from U.S. Youth Soccer indicate that millions of children across the country are taking to the sport that was once primarily associated with Europe and other parts of the world beyond the United States. According to U.S. Youth Soccer, more than three million youth players were registered to play soccer in 2014. That marks an amazing increase from just 40 years earlier, when barely more than 100,000 youths registered to play soccer. While the reasons behind the growing popularity of soccer within the United States are not officially known, one might reasonably trace American youths’ embrace of the sport to the U.S. Men’s National Team’s appearance in the 1990 World Cup. Though the team was defeated in each of its three matches in the 1990 World Cup, the appearance marked the United States’ first since 1950. GROWTH OF THE SOLAR EMPLOYMENT SECTOR According to the Solar Foundation’s National Solar Jobs Census 2016, there were 260,077 solar workers working at 8,601 solar companies in the United States in 2016. The census also found that the five states with the most solar jobs in 2016 were California, Massachusetts, Texas, Nevada, and Florida.
