Apples are available year-round, but many apple lovers insist there’s nothing better than plucking an apple directly off the tree in the fall. Apple orchards and pick-your-own farms are visited each autumn by apple lovers anxious for apples’ tart and juicy taste. Many people pick more apples than they can eat in a few days, so it pays to learn how to store apples properly so none of them go to waste. Start by picking a variety of apple that won’t go bad too quickly. Apple growers can make suggestions, but Jonathan, Rome, Fuji, and Granny Smith varieties tend to last longer than other varieties. Choose apples that are free of blemishes or soft spots. The adage that “one bad apple can spoil the whole bunch” bears some truth. Apples give off ethylene gas as they decay, and a rotting apple can quickly affect nearby apples. A good place to store apples in the short-term is in the refrigerator where it is cool. Put the apples in the crisper drawer. Do not store them with vegetables, as the apples may cause the veggies to ripen or rot prematurely. If you plan on long-term storage, a few extra steps are necessary. Apples need to be individually wrapped so they will not come in contact with other apples. Newsprint works great; just be sure to pick the pages that are done in black ink because colored ink may contain heavy metals.

DID YOU KNOW? Halitosis, or bad breath as it’s commonly known, can result from any number of factors. While food can be a culprit, some additional factors may be contributing to mouth odor as well. Poor dental hygiene is a particular concern. According to Colgate and the American Dental Association, failure to brush and floss teeth regularly leads to the accumulation of food particles in the mouth. This food can collect bacteria and begin to break down, causing a bad aroma. Dry mouth is another condition that causes bad breath. Without adequate saliva production, particles of food that may cause odor are not swept away regularly. Bad breath also may be an indication of a medical condition elsewhere in the body. Upper respiratory infections and gastrointestinal disturbances may contribute to halitosis.

Why Do We Have Hair? --DEAR DR. ROACH: There is a question that has intrigued me for years: What is the purpose of underarm and pubic hair? I guess, for that matter, what is the purpose of any body hair and hair on your head? -- B.H. ANSWER: Hair provides protection from the sun and helps regulate body temperature. Many evolutionary biologists believe our distant ancestors began losing most body hair when we began walking upright. Axillary (underarm) and pubic hair are thought to be conserved because they reduce friction, wick moisture away from the skin, provide a small degree of protection and as part of sexual selection, possibly due to pheromones, hormones that act outside the body to attract others.

*** DEAR DR. ROACH: I’m confused. While it may be true that the majority of men having prostate cancer may never be bothered by it, what about the minority whose lives will be threatened by it? If they aren’t screened and treated, many will die. -- G.F. ANSWER: I had a professor in medical school, Dr. Larry Wood, who used to say, “If I have confused you, you’re probably paying attention.” You have identified a major issue with prostate cancer screening (and screening in general): If screening harms some but saves the lives of a few, is it worth doing? That answer may be different if you are coming from a public policy perspective versus an individual perspective. Although we don’t know the exact numbers, it is estimated that about 47 men need to be treated for prostate cancer in order to save one life. Put another way, 46 out of 47 men are treated for prostate cancer, with its attendant risk of side effects, such as loss of sexual function and incontinence, without reducing their likelihood of dying of prostate cancer. We can’t predict with certainty whose prostate cancer is destined to kill them and whose is destined to be more indolent and slow-growing. The Gleason score, a measure of pathologic appearance of the cancer, helps, but is not completely accurate. Ninety percent of men with screening-detected prostate cancer elect to get it treated. Based on the many letters I get, all of them feel like they were the lucky ones to have had their lethal cancer removed -- even if, statistically, most of them were not destined to die from prostate cancer. Because it is likely that the harms of screening outweigh the benefits, the U.S. Preventive Service Task Force has recommended against prostate cancer screening in general. However, there are certainly cases in which I feel prostate cancer screening (remember that “screening” means that there are no symptoms or signs of cancer) is appropriate, which is why it’s important to have an individualized discussion of the risks and benefits of screening. By Amanda Dudek According to Project Stork, “for every 10 teen girls, at least 3 will become pregnant before the age of 20.” While this is a cause for concern across New York State, Project Stork founder, Jenny Staebell, finds it particularly concerning that Orleans County ranked 11th out of 57 counties in New York, not counting those comprising New York City, in terms of pregnancy rates among teens. No stranger to young motherhood herself, she decided to do something about it. Originally from Albion, Jenny Staebell had regarding parenting, school, college, employment. her first child at the age of 19. Your How common is carpal tunnel? Increased hours spent on computer keyboards and digital devices can put people at risk for a relatively common and oftentimes painful condition that affects mobility in the wrist. Carpal tunnel syndrome, or CTS, can cause numbness, pain and tingling in the hand or arm as a result of one of the major nerves of the hand — the median nerve — being compressed in the wrist. The American College of Rheumatology says that CTS may be the most common nerve disorder experienced today, affecting between four and 10 million people in the United States alone. Middle-aged to older individuals are more likely to develop CTS than younger persons, and females are diagnosed three times more frequently than males. What is the carpal tunnel? The carpal tunnel is a passage that forms in the wrist on the palm side of the hand. It is located just beneath the skin surface. The National Institute of Neurological Disorders and Stroke says the carpal tunnel is a narrow, rigid passageway of ligament and bones. Eight small wrist bones form three sides of the tunnel. The width of the tunnel is only about an inch. Injury or inflammation to the tissues inside of the carpal tunnel can shrink the space of the tunnel, eventually pressing on the tendons and the median nerve that runs through this narrow area. The role of the median nerve: When compression occurs in this area of the wrist, a key nerve is affected. The median nerve originates in the neck and runs through the arm. The median nerve passes through the carpal tunnel at the wrist and goes into the hand, providing feeling to the palm side of the thumb and to the index, middle and part of the ring fingers (although not the little finger). It also controls some small muscles at the base of the thumb.

Symptoms of carpal tunnel: Weakness of the hand as well as tingling and numbness are the two most common symptoms of CTS. The numbness particularly affects four of the fingers. It can occur when holding a phone, book, newspaper or steering wheel or engaging in just about any activity that involves the hands. CTS also may wake a person up from sleep. There are a number of other compression issues that can occur in the hand and arms, causing similar pain and tingling in other areas. Ulnar nerve compression in the elbow can cause part of the ring finger and pinky finger to tingle and may be indicative of a different ailment. That’s why a professional diagnosis must be sought when experiencing symptoms related to CTS. When to see a doctor: If pain and tingling are affecting activities and sleeping patterns, individuals should see their doctors. Various nonsurgical remedies and therapies may help. If left untreated, any condition that affects nerve function may lead to permanent nerve and muscle damage.

ELSIE’S STEWED APPLES Serves 6 to 8 2 to 3 tablespoons unsalted butter 2 pounds apples, peeled, cored and cut into thick slices 1/2 cup honey, preferably sage honey 1/2 cup white wine Zest of 1 lemon Juice of 1 lemon Fresh sage sprigs for garnish 1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done. 2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1/2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce. 3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.

DID YOU KNOW? According to the U.S. Department of Energy, well-designed landscapes can save homeowners enough energy to make the projects pay for themselves in less than eight years. The DOE notes that homeowners’ landscaping strategies should be dictated by the climates in which they live. For example, homeowners who live in hot, arid regions should employ landscapes to shade their homes’ walls, windows and roof, while those who live in cool regions should make sure their landscapes are not blocking the winter sun from reaching their homes’ south-facing windows. The DOE also advises that shading is the most cost-effective way to reduce solar heat gain in a home, noting that well-planned landscapes can reduce previously unshaded homes’ air conditioning costs by as much as 50 percent. The DOE also notes that, in treeshaded neighborhoods, summer daytime air temperature can be up to six degrees cooler than the air temperature in treeless areas. Homeowners considering adding trees to their landscapes should know that deciduous trees shed their leaves annually, which means they will block solar heat in the summer but allow sunlight into the home in winter. That’s ideal for homeowners who live in regions where temperatures climb in summertime but drop considerably in winter. Homeowners who want year-round shade might consider evergreen trees and shrubs.

1 cup Angry Orchard Crisp Apple 2 Tbsp. Dijon mustard ¼ cup olive oil Kosher salt, as needed Black pepper, as needed Preheat oven to 325°. Lay pork loin on a cutting board and, using a sharp knife, make small cuts, lengthwise, and butterfly; you want to end up with a rectangle of pork approximately 1” thick. Season both sides with salt and pepper and set aside. In a sauté pan over medium heat, melt butter. Add onions, apples and sage, and cook for 3 minutes until just softened; season with salt and pepper.
