Pulled Pork Soft Tacos Recipe courtesy of Midwest Dairy Assoc. Servings: 6 For pork: 2 pounds boneless pork loin roast 2 tablespoons brown sugar 1 tablespoon ground ginger 2 garlic cloves, smashed 1 small white onion, coarsely chopped 1/2 cup orange juice 2 limes, cut in half For tacos: 1/2 cup nonfat sour cream 1 teaspoon cumin 2 scallions, trimmed and chopped 12 soft corn tortillas (6 inches each) 1 1/2 cups shredded reduced-fat Colby Jack 1 bag (8 oz.) shredded red cabbage 3/4 cup fresh salsa Trim excess fat off roast. In small bowl, combine brown sugar and ginger; rub generously over roast. Place in slow cooker with garlic, onion and orange juice; cook on low heat 8 hours (or high 4-6 hours.) Transfer pork to large bowl and shred with forks. Strain pork liquid from slow cooker and pour over pulled pork to moisten. Squeeze lime juice on top and mix well. Divide into 12 servings. In small bowl, mix together sour cream, cumin and scallions. Cover each corn tortilla with 2 tablespoons cheese; microwave 20 seconds. Top with pulled pork, 2 teaspoons sour cream mix, 1 1/2 tablespoons shredded cabbage and 1 tablespoon salsa. Fold and serve immediately.

Was Son Right to Ignore His Doctor’s Advice? --DEAR DR. ROACH: My son is 40 years old. After a recent stress test, he ended up with five stents in his arteries, and also was diagnosed with diabetes. His doctor ordered him not to go back to work for three or four weeks, but he went back after three days. He told the doctor that he would be more stressed if he stayed home. His job is mostly sitting down. Since he didn’t follow the advice, how will this affect his health? -- V.B. ANSWER: We don’t normally have people stay home for long periods of time after placement of stents, so I was surprised to hear that he was “ordered” (I almost never “order,” only recommend, more or less strongly) to stay home. My experience is that after receiving life-changing diagnoses, such as diabetes or coronary artery disease, it’s best to keep some habits, such as work, the same and change others. For your son, I am sure he will be recommended a proper diet for diabetes and exercise appropriate for a person with a new diagnosis of heart disease. *** DEAR DR. ROACH: I’ve suffered from essential tremor for 16 years. I take 500 mg of primidone and 40 mg of propranolol twice daily. I’ve gradually increased the dose over the years, and the combination works quite well. What is the highest dose of these medications that I can take? Also, are there any new drugs on the market that have been proven to help? -- S.S. ANSWER: Primidone, a medication indicated for seizures, often is used off-label for essential tremor. The normal dose for essential tremor is 250-500 mg at night, but doses up to 750 mg sometimes are used. For seizures, the highest recommended dose is 2,000 mg, so although yours is at the high end of normal for essential tremor (“essential,” by the way, simply means we don’t know what is causing it; it isn’t essential for anything), you still are at a dose that’s well below the safe limit. I suspect that because you have been on it for so long, your body is used to this dose. The usual starting dose is 25 mg. Propranolol is used for many conditions, including high blood pressure and preventing migraines, but its use in essential tremor also is off-label, meaning that the Food and Drug Administration has not approved the drug for use for this condition. “Off-label” doesn’t necessarily mean your prescription is wrong or dangerous, only that it hasn’t been approved by the FDA. In your case, the combination of primidone and propranolol frequently is used and recommended in the medical literature. For essential tremor, experts have recommended doses up to 320 mg per day, but the dose can be limited by slow heart rate or low blood pressure. If you are doing well, there is no reason to change. Other medications frequently used for essential tremor include gabapentin and topiramate. EVERYONE WITH ALS COUNTS (NAPSI)-Amyotrophic lateral sclerosis (ALS) is a fatal neurological disease that attacks the nerve cells. It first gained national attention as Lou Gehrig’s disease, named after the famous baseball player who was diagnosed with ALS in 1939. To date, the cause of ALS is unknown, and there is still no known cure. The disease strikes quickly, usually leading to death within two to five years of diagnosis. But every person with ALS has an individual story, and understanding these stories will help researchers ultimately piece together clues about this disease. Ed Tessaro was diagnosed with ALS in 2009. As he learned to cope with this diagnosis, he reflects, “I’ve never considered myself a victim of the disease because I believe in my heart all of us have a wheelchair. In my case, it’s quite literal, but with everything that goes on in my life, I realize that every family has had a crisis.” One of the things that helps him and others with ALS is reaching out for community support and resources. “The ongoing struggle is to encourage newly diagnosed people to come in and talk about their condition. I want to help people learn about the National ALS Registry, clinical trials, and other resources that can provide support and hope.” The National ALS Registry helps gather information from those who are living with this disease. Researchers from all around the world can access the Registry data to help scientists learn more about what causes this disease. Everyone’s story is different, and everyone’s piece of the puzzle is essential. The Registry has found that almost 16,000 persons with ALS live in the United States, as of 2014. It is important to include as many people as possible living with the disease to get the most accurate information. When patients join, it helps give researchers more information. This could lead to a better understanding of the causes of ALS, because learning more about the disease is one step further in the battle to defeat it. Concludes Ed, “It’s tough, but maybe we can fling open a door or two in the next couple of years of research. Attending the ceremony were Mr. Veeder’s widow, Velma, his daughter Sharon Sebok, grandson, Carson Nelson, and several other family members and friends.

Mr. Veeder grew up in Cohocton and was half way through his senior year at Cohocton High School when he was drafted into the U.S. Army in January of 1944. He served as a rifleman in the 260th Infantry Regiment of the 65th Infantry Division. After arriving in Germany in March of 1945, his regiment endured 55 straight days of combat as the U.S. Army advanced into Germany.

WOOD STAINING TIPS Staining wood can transform the look of everything from fencing to decking. While wood can be beautiful in its natural state, staining can protect the wood and complement landscaping and other home design elements. Staining can seem like a simple project, and that is often true. However, certain woods, such as pine, cherry, maple, and birch, can be difficult to stain. Boards with attractive grain patterns also can absorb stain differently, resulting in blotching and uneven tone. Before beginning a staining project, it is important for homeowners to test the stain chosen on a sample piece of wood to see how the color and absorption turn out. This gives homeowners the chance to understand what they’re dealing with and time to make any necessary accommodations to achieve a more even look. Begin by gathering the necessary supplies. A pair of latex or vinyl gloves will protect your hands. Drop cloths will catch any drips or spills. Safety goggles and a dust mask provide protection if sanding is required prior to staining. If sanding is necessary, homeowners will need an orbital sander, hand sander and sandpaper. Start with the coarsest grit sandpaper and move to a higher grit for a smooth finish. Wood that is covered in paint may need to be stripped prior to sanding. Follow the directions carefully when using chemical strippers. Natural bristle paint brushes are handy for oil-based stain applications. Synthetic paint brushes can apply water-based finishes. Many do-it-yourselfers find that foam brushes or paint pads are the most handy because they provide a smooth finish and there’s no need to clean up the brushes afterward. Many professionals recommend using wood conditioners or pretreaters so that the stain will not leave blotches on the wood. This is especially important for homeowners who determined their wood is prone to uneven color absorption. Allow the conditioner to dry according to product directions. Stain should be applied so that it is evenly coated. Wipe off the excess to get the preferred color. Apply more stain as necessary to get the desired color. Many stains only offer color, so you’ll need to apply a finishing coat to protect the wood. Otherwise, look for a product that combines stain color and a finish to save time. Remember to remove knobs, hinges, and handles from a piece before staining, as the stain may affect the color of any metal hardware and damage it.
