Beef and Chipotle Burritos M akes 6 burritos 11⁄2 pounds boneless beef round steak, cut 3/4-inch thick 1 14.5 ounce can diced tom atoes, undrained 1/3 cup chopped onion 1 to 2 canned chipotle peppers in adobo sauce, chopped 1 teaspoon dried oregano, crushed 1/4 teaspoon ground cum in 1 clove garlic, m inced 6 9- to 10-inch tom ato-flavored or plain flour tortillas, w arm ed 3/4 cup shredded sharp cheddar cheese (3 ounces) 1 recipe Pico de Gallo Salsa (see below ) Shredded jicam a or radishes (optional) Dairy sour cream (optional) 1. Trim fat from m eat. Cut m eat into six pieces. In a 31⁄2- or 4quart slow cooker place m eat, undrained tom atoes, onion, chipotle pepper, oregano, cum in and garlic. 2. Cover and cook on low -heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Rem ove m eat from slow cooker. Using tw o forks, pull m eat apart into shreds. Place shredded m eat in a large bow l. Stir in enough cooking liquid to reach desired consistency. Divide m eat am ong w arm tortillas, spooning it just below the centers. Top w ith cheese, Pico de Gallo Salsa, and, if desired, jicam a and sour cream . Roll up tortillas. Pico de Gallo Salsa: In a sm all bow l, com bine 1 cup finely chopped tom atoes; 2 tablespoons finely chopped onion; 2 tablespoons snipped fresh cilantro; 1 fresh serrano chile pepper, seeded and finely chopped; and dash of sugar. Cover and chill for several hours.

Assistive devices help people remain mobile Disabilities affect people from all walks of life. The Centers for Disease Control and Prevention estimates that around 55 million Americans have a disability of some kind. Of these people, 33 million have a disability that makes it difficult for them to carry out some daily activities. Statistics Canada states that, as of 2012, 13.7 percent of the population age 15 years or older reported having a disability that could impact daily life. People with disabilities may need assistive devices to reclaim some measure of their independence. For example, millions of people rely on wheelchairs or walking aids to get around. These are called assistive technology and rehabilitative devices, which include tools, equipment or products that can help people with disabilities get around more easily. These devices may be as small as magnifying glasses for reading to as large as wheelchairs. The National Institutes of Health state that 2.2 million people in the U.S depend on wheelchairs for day-to-day tasks and mobility. More than six million use canes, walkers or crutches to assist with mobility. The following are some of the common types of mobility devices available for purchase. • Canes: Canes are handheld devices that provide a little extra stability or support to weakened limbs. Canes are easily transported and can assist those who need only a little help. • Standard walkers: Also known as medical walkers, standard walkers offer substantial support and must be lifted to move. That requires upper body strength, which can be difficult for some to maintain on long trips. • Rolling walkers: Rolling walkers are similar to standard walkers. But rolling walkers have wheels, either on the front only or on both sets of legs. They are somewhat less stable than standard walkers. Rolling walkers with wheel-locking devices may offer stability when needed. Some rolling walkers are called “rollators.” • Wheelchairs: Standard wheelchairs must be powered by the

person in the chair or by someone pushing it from behind. This can be difficult for people with minimal upper body strength. Mechanical wheelchairs are powered with a lever or button. Some people may opt for motorized scooters over bulkier wheelchairs when possible. Assistive devices can be highly effective, but only when they are used properly and safely. Assistive devices should be measured for each user. Many walkers are height-adjustable. The width of a device also is important. A walker or another device that is too wide can affect mobility or require modifications to be made around the home. Weight is another consideration. The device should be lightweight so it can be maneuvered, but also weigh enough to provide enough stability to keep users upright. Users should proceed slowly and favor their stronger sides when relying on canes or walkers. Devices should not be used to climb atop other items like step stools. Children should not be allowed to play with or ride on assistive devices. If there are safety belts or locks on any assistive technology, they should be put in place before use to prevent further injury.

The regimen is designed to build strength and endurance through i ntense group exercise intervals. Classes may run 30 minutes to one hour in length. M any classes include some form of fast-paced cardiovascular exercise, along w ith a series of strength-training elements, like using dumbbells or the resistance of one’s ow n body w eight. Keep Your Eyes Open for Antlers! Provided by the New York State Department of Environmental Conservation Every year, starting in late December and continuing into March, male whitetailed deer shed their antlers as their testosterone levels drop in response to the lengthening days. By late winter and early spring, eager shed hunters head out into the woods and fields to look for these hidden treasures. Finding a single shed is a thrill, but finding a matching set, or those of a purely impressive adult buck, is worth more than their weight in gold to many. For the inexperienced, it might seem like looking for a needle in a haystack, but for the avid shed hunter with a trained eye it’s worth the effort. And, if your dog enjoys accompanying you in the woods, you can learn about shed hunting with a dog in the February 2017 issue of the Conservationist, a New York State Department of Conservation publication. Winter deer yards are good places to start. During bouts of extreme cold and snow, deer will congregate in lower elevation areas with good southern exposure and evergreen cover to break the wind. Experienced shed hunters scout
these areas pre-season in hopes of increasing their odds. Shed hunting is a great way to get outside as the weather breaks in late winter/early spring. It can also provide the experienced hunters with clues as to what kinds of bucks will be around in the fall during the next hunting season. Remember, “Let Young Bucks Go and Watch Them Grow” to see bucks with bigger, more impressive antlers -- a treasure worth looking for.

Apple Butter Bacon-Wrapped Shrimp Servings: 10 cup Apple Butter cup maple syrup teaspoon red pepper flakes teaspoon salt teaspoon smoked paprika pieces bacon extra-large shrimp, cleaned and deveined chopped cilantro, for garnish (optional) Heat oven to 400 F. Line rimmed baking sheet with parchment paper. In medium-sized skillet over medium heat, add apple butter, maple syrup, red pepper flakes, salt and paprika. Whisk until mixture is thick and cooked down by half, about 10 minutes. Set aside. In large skillet over medium heat, add bacon slices and cook until browned but still flexible. Remove from pan and drain on paper towel-lined plate. Wrap one bacon slice around each shrimp, secure with toothpick and place onto prepared baking sheet. Once all shrimp have been wrapped, baste tops with apple butter mixture. Bake 5 minutes then flip and baste other side of shrimp. Bake another 5 minutes. Dementia presents itself through various symptoms, and memory loss alone is not enough to lead to a dementia diagnosis. Dementia can affect thinking and social abilities, but the Mayo Clinic notes that some dementias may be reversible. The following are some common symptoms of dementia: • Trouble communicating or finding words. • Difficulty completing complex tasks. • Challenges with planning and organization. • Episodes of confusion and disorientation. • Memory loss, which is often noticed by a third party. • Personality changes that can include agitation, anxiety, inappropriate behavior and even hallucinations. Apart from Alzheimer’s disease, which is a progressive disorder most common in people age 65 and older, there are other types of dementia. The second most common is called “vascular dementia.” This results from damage to vessels that supply blood to the brain. This damage can be the result of stroke, smoking and other blood vessel conditions. Brain imaging can often detect blood vessel problems implicated in vascular dementia. Dementia with Lewy bodies, or DLB, is another dementia that laymen may mistake for Alzheimer’s disease. The Alzheimer’s Association notes that people with DLB often have not only memory loss and cognitive problems common in Alzheimer’s, but they also display initial or early symptoms such as sleep disturbances, well-formed visual hallucinations, slowness, gait imbalance or other Parkinsonian movement features, which can lead to misdiagnosis.

Should Women Still Take Estrogen? --DEAR DR. ROACH: I have a question concerning estradiol. My gynecologist has me taking 1 milligram of estradiol daily. My internist recommends that I not take it. Which recommendation should I follow? I have never had hot flashes, so that is not a problem. My internist says that I need to gradually stop taking the estradiol. He says that this medicine has more problems than benefits. It is hard to choose what to do. What do you recommend? -- H.L. ANSWER: Back in the 1990s, we often recommended that women take estrogen in order to prevent problems, in addition to treating hot flashes. Two important studies came out showing that estrogen appeared to cause problems as well as prevent them. The definitive answer as to whether estrogen causes more problems than it prevents still isn’t known, and it probably depends on many factors. The term “estrogen” as I am using it refers to a group of related compounds. Estradiol is sometimes referred to as “bioidentical,” since it is the same hormone that a woman’s body makes, as opposed to conjugated equine estrogen (Premarin), which was most commonly used in the 1990s and earlier. The type of estrogen may make a difference in terms of risk. Also, estrogen is seldom given without a progesterone compound in women who have not had their uterus removed, and the type of progesterone appears to make a major difference in risk. Briefly, the evidence suggests that estrogen reduces the risk of colon cancer and of osteoporosis and fractures. However, it increases the risk of blood clots. The largest areas of confusion are in breast cancer and heart disease. For conjugated estrogens with medroxyprogesterone, which has the best information, for 1,000 women in 10 years there were seven more heart attacks, eight more strokes, eight more blood clots in the lungs and eight more invasive breast cancers, but six fewer colon cancers and five fewer hip fractures. Recent data suggest that women who start estrogen immediately at menopause have a lower risk of heart disease than those who start five or 10 years after menopause (in fact, they may have an overall lower risk, compared with women who don’t take estrogen). Women who took estrogen alone did not have an increased risk of breast cancer. Because of the known harms of estrogen, at this time neither I nor any expert body recommends taking estrogen just to prevent problems. Until new studies become available, since you have no hot flashes, I agree with your internist. *** DEAR DR. ROACH: I wanted to tell you of the unbelievable relief I’ve gotten from the small, very painful cracks that used to develop at the ends of my fingers next to the nails, usually in the winter. Since I started taking 1,000 mg of fish oil once a day, I have had only one crack. -- R.L.S. ANSWER: I couldn’t find any studies on this, but anecdotal reports say fish oil may be helpful and is unlikely to harm. It’s reasonable to give it a try. I would recommend a supplement that contains both EPA and DHA. WOOD STAINING TIPS Staining wood can transform the look of everything from fencing to decking. While wood can be beautiful in its natural state, staining can protect the wood and complement landscaping and other home design elements. Staining can seem like a simple project, and that is often true. However, certain woods, such as pine, cherry, maple, and birch, can be difficult to stain. Boards with attractive grain patterns also can absorb stain differently, resulting in blotching and uneven tone. Before beginning a staining project, it is important for homeowners to test the stain chosen on a sample piece of wood to see how the color and absorption turn out. This gives homeowners the chance to understand what they’re dealing with and time to make any necessary accommodations to achieve a more even look. Begin by gathering the necessary supplies. A pair of latex or vinyl gloves will protect your hands. Drop cloths will catch any drips or spills. Safety goggles and a dust mask provide protection if sanding is required prior to staining. If sanding is necessary, homeowners will need an orbital sander, hand sander and sandpaper. Start with the coarsest grit sandpaper and move to a higher grit for a smooth finish. Wood that is covered in paint may need to be stripped prior to sanding. Follow the directions carefully when using chemical strippers. Natural bristle paint brushes are handy for oil-based stain applications. Synthetic paint brushes can apply water-based finishes. Many do-it-yourselfers find that foam brushes or paint pads are the most handy because they provide a smooth finish and there’s no need to clean up the brushes afterward. Many professionals recommend using wood conditioners or pretreaters so that the stain will not leave blotches on the wood. This is especially important for homeowners who determined their wood is prone to uneven color absorption. Allow the conditioner to dry according to product directions. Stain should be applied so that it is evenly coated. Wipe off the excess to get the preferred color. Apply more stain as necessary to get the desired color. Many stains only offer color, so you’ll need to apply a finishing coat to protect the wood. Otherwise, look for a product that combines stain color and a finish to save time. Remember to remove knobs, hinges, and handles from a piece before staining, as the stain may affect the color of any metal hardware and damage it.
