Heat a charcoal or gas grill to medium-hot (you can hold your hand 1 to 2 in. above cooking grate only 3 to 4 seconds). Combine chiles, butter, honey, garlic, and salt in a blender and whirl until smooth. Put unhusked corn on grill and cook, turning occasionally, 15 minutes. Husks will blacken. Transfer to a work surface, remove husks, brush ears generously with butter mixture, and return ears to grill. Grill until lightly browned, about 5 minutes. Serve warm, with remaining butter.

STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM Serves 4 • • • • • • • • • • 1.
8 1-inch-thick bread slices, cut from a country or peasant loaf 2 cups half-and-half 4 egg yolks 3 tablespoons light brown sugar 1 tablespoon vanilla extract, plus 1/2 teaspoon 1/2 teaspoon cinnamon 3 tablespoons unsalted butter 1/2 cup sour cream 1 tablespoon granulated sugar 1/3 cup strawberry jam or preserves (see note 2) Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). Add the
toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

Your Behaviors that may help you reduce your risk for colorectal cancer Colorectal cancer is a formidable foe. According to the U.S. Centers for Disease Control and Prevention, colorectal cancer is the second leading cancer killer in the United States. Colorectal cancer is similarly lethal in Canada, where the Canadian Cancer Society reports it is the second leading cause of cancer death in men and the third leading among women. Some risks for colorectal cancer are beyond an individual’s control. For example, the CCS notes that a personal or family history of polyps in the colon, rectum or both significantly increases a person’s risk of developing colorectal cancer. Lynch syndrome, a condition caused by gene mutations, causes polyps to develop in the lining of the colon, rectum or both. Since Lynch syndrome is inherited, there is nothing men and women can do to reduce their risk of developing it. Research into colorectal cancer is ongoing, making it difficult for doctors to say certain behaviors or approaches are certain to reduce a person’s risk of developing the disease. But there are certain things individuals can do that might help save them from falling victim to colorectal cancer. • Get screened. The CDC notes that colorectal cancer usually begins when polyps form in the colon or rectum. If they go undetected, these polyps may turn into cancer. Screening can detect polyps early so they are found before they develop into cancer. The U.S. Preventive Services Task Force recommends colorectal cancer screening using high-sensitivity fecal occult blood testing, or FOBT; sigmoidoscopy; or colonoscopy for men and women between the ages of 50 and 75. • Embrace physical activity. While men and women who are physically active can still get colorectal cancer, the CCS notes

According to the CCS, people who are overweight or obese have greater incidence rates of colorectal cancer than those who maintain healthy weights. The CCS also notes that men with a high body mass index, or BMI, seem to be most at risk of developing colorectal cancer. • Limit alcohol consumption. The CDC notes that some studies have shown that limiting alcohol consumption may reduce a person’s risk of developing colorectal cancer. Colorectal cancer is a devastating disease, but men and women who embrace healthy behaviors may be able to lower their risks.

Mouth-Watering Stuffed Mushrooms Prep Time: 45 min Servings: 6
Large Cheese & Pepperoni Pizza 20 Wings & 2 Liter Pepsi
12 whole fresh mushrooms, washed 1 T. vegetable oil 1 T. garlic, minced 1 (8 oz.) pkg. cream cheese, softened 1/4 c. grated Parmesan cheese 1/4 t. ground black pepper 1/4 t. onion powder 1/4 t. ground cayenne pepper Preheat oven to 350 degrees F. Carefully break off mushroom stems and chop until extremely fine. Heat oil in a large skillet over medium heat. Add mushroom stems and garlic and fry until no moisture remains, taking care not to burn garlic. Set aside to cool. Combine cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Stuff each mushroom cap with cheese mixture and arrange on a greased cookie sheet. Bake for 20 minutes, or until mushrooms are piping hot and liquid starts to form under caps.

We never have a plan when we leave our house except to stop for lunch somewhere different. Some of our stops have been the Glenn Iris Inn in Letchworth Park and Bristol Harbor Golf Course. The views we have seen are amazing. I love to see all the different homes and the gardens and landscaping people take pride in. Letchworth is a beautiful park that has so much to offer. The hills and valleys around us are beautiful. We are

In my opinion, a healthy diet makes a deficiency of a vitamin or mineral severe enough to weaken the immune system unlikely. Stress reduction (through many techniques) and good sleep are more important than supplements. People think that a daily vitamin and mineral supplement is like an insurance policy against a good diet. However, many studies have shown that taking vitamins does not, in general, lead to improvements in prevention of disease, including heart disease, cancer or infections. So I would be much more likely to recommend a better diet (especially in the fresh fruits and vegetables) than I would a supplement. Many adults have not gotten all the vaccines that are recommended, and these are a huge benefit to your immune system for those specific bacteria and viruses. *** DEAR DR. ROACH: I am an 81-year-old male in generally good health. I am maybe 10 pounds overweight. I have had no heart attacks or cardiac symptoms. I walk on the treadmill for exercise. I have controlled hypertension, and have been taking simvastatin, 10 mg. My LDL is 71, very favorable. My HDL is also good, at 73. Several years back, when I started the statin, my doctor added Zetia, 10 mg. At the time, I wondered why this would be OK, and he said, “Well, there is a certain synergy there.” While I have continued taking the Zetia and suppose it might be helpful, I wonder if I need it. I say this because it is rather expensive (about $500 a year with my part D coverage). It is the only thing I take that costs me this much. My reading of the literature suggests that while Zetia might help the LDL level, there is no evidence that it improves longevity (i.e. cardiovascular). -- J.P. ANSWER: This is a confusing subject, because the theory (that lowering cholesterol protects your heart) and the evidence (that it actually works) don’t exactly align. High cholesterol certainly is associated with a higher likelihood of heart blockages, which can lead to heart attack and death. However, not all treatments that lower cholesterol reduce risk of heart attack. On the one hand, there are treatments that lower cholesterol that do help your heart. The Mediterranean diet clearly reduces risk of heart attack. Dr. Dean Ornish’s plant-based diet of very little fat and little or no meat, in combination with stress reduction and smoking cessation, actually reverses blockages in arteries in some people. Statin drugs reduce cholesterol and help prevent heart attacks, at least in people at high risk for them. On the other hand, ezetimibe (Zetia) reduces cholesterol, but like most nonstatin drugs to treat high cholesterol, it has not been proven to reduce heart disease risk. It tends to have few side effects and probably is not harmful. But you are correct that it is expensive, and like all medications, it can possibly cause harm. Being conservative about medication, I very rarely prescribe it. RIDESHARING SAFETY TIPS Ridesharing is a growing trend among travelers from all walks of life. Some proponents of ridesharing support the concept because they feel it’s an eco-friendly means of traveling, while others find it’s a great way to save money. Still others employ third-party ridesharing services as a responsible, affordable way to travel when going out for a night on the town. With a greater number of people sharing rides and interacting with strangers than ever before, safety while ridesharing is an issue to take seriously. While ridesharing trips often occur without incident, there have been some instances of violent altercations involving drivers and passengers. According to the Taxicab, Limousine and Paratransit Association, ridesharing companies use a background check service to confirm criminal convictions and to make sure drivers are legally able to drive. However, these services may not perform FBI fingerprinting checks conducted by law enforcement officials, whereas taxi drivers are subjected fingerprinting. So some ridesharing drivers who have committed crimes in the past but have never been caught may pass ridesharing background checks, but they might not pass tests that taxi companies would insist they submit to, such as fingerprinting tests. While ridesharing, whether it entails carpooling or using an established ridesharing service, can be convenient, passengers must take steps to ensure their own safety when sharing rides.

768.4570 DID YOU KNOW? The Ford Motor Company’s Model T was offered in several styles, not unlike how vehicles of today are offered in various models. Among the Model T styles available was a two-seat runabout, which can be considered a precursor to the coupe style popular today, and a seven-seat town car, which might be considered an ancestor of today’s SUV, at least with regard to passenger capacity. While prospective Model T drivers had some options when choosing which Model T they wanted to purchase, between 1913 and 1925 the car was produced only in black. The Model T engine was a 4-cylinder engine that generated 20 horsepower. To put that latter figure into perspective, many of today’s riding lawn mowers are 20 horsepower, and some commercial lawn riding mowers provide as much as 40 horsepower. While car dealers might not sell too many cars featuring 4-cylinder, 20 horsepower engines today, historical estimates suggest that more than 15 million Model T’s were built and sold between 1908 and 1927, the last year the car was produced.

The Inaugural Teen Sheriff’s Academy Kicks Off at Byron-Bergen High School
ENJOYING THRILLS AT AMUSEMENT PARKS One of the more beloved ways for thrill-seekers to spend a day off is to visit an amusement park. Amusement parks take many shapes. Some may be small, traveling carnivals, while others are large parks that draw visitors from all over the country. Amusement parks typically feature hair-raising rides, games of skill, tasty food, and gift shops. That means there’s something for everyone. Although they may seem like a relatively modern concept, amusement parks, fairs and carnivals actually have storied histories. In fact, historians say that carnivals and local fairs have been around since the Middle Ages. According to History.com, amusement parks, once dubbed “pleasure gardens” and “trolly parks,” sprung up across the United States and Europe in the 19th century.
Story and Photos By: Gretchen Spittler Did you ever wonder what it would be like to work in law enforcement? Eighteen Genesee County high schoolers are finding out. The 2018 Teen Sheriff’s Academy is a collaboration between the Sheriff’s Office and Byron-Bergen School Resource Officer (SRO) Matt Butler. Butler, who is in his fourth year as SRO for the district, sees the academy as a natural progression for the community. In his role as SRO, he works to build ties between the Sheriff’s Office and the Byron-Bergen community. He feels this camp contributes to that goal. Training takes place this week at Byron-Bergen High School where students work closely with several representatives from the Sheriff’s Office. The academy is geared towards students in grades 10 through 12 who are already considering a career in law enforcement.␣ Each participant passed an application screening process, an interview, and completed eight hours of Sheriff vehicle ride-along experience prior to attending. In planning the Teen Sheriff’s Academy, Butler tried to condense his own police academy experience into five days. “The goal is realistic exposure,” he said. “A scaled down version of a true police academy. It’s five months squeezed into five days, but it should give the students a good idea if the real police academy is the right place for them.” Participants undertake classroom work, physical training, tours of the county jail and communications center, emergency response instruction, and traffic stop simulations. Butler’s fellow instructors, Deputy Deb Snyder and Deputy Chad Cummings, reinforced the message of realistic exposure. “It can take years to get a job in the Sheriff’s Office and then it can take
just as long to be scheduled during the day,” said Snyder. “We work late nights, afternoons and holidays. We are open 24/7. We never close.” “It’s not like TV,” added Cummings. “This experience will offer a different perspective. The communications, the follow-up, the paperwork – people don’t think of those when they think of police work. It’s not about flashing lights and making arrests. That is why we required the ridealong for this program. During classroom discussion, we want the students to be able to reference their real-life experience. It’s a whole other side. It’s not␣COPS, it’s helping people with their problems.” Cummings did not begin work with the Sheriff’s Department until 35, choosing first to build a foundation in the military. Ultimately, he knew he wanted to work in law enforcement. He encourages participants to keep working toward their goals, even if it takes until they are 35. In his welcoming remarks, Byron-Bergen Superintendent Mickey Edwards encouraged the participants to “take advantage of every opportunity this academy puts in front of you and all the people who are here to help you be your best.” “Law enforcement is a noble career,” said Edwards. “My eldest son is a Police Officer and I couldn’t be more proud of him. There is no greater calling than to protect and serve others.” ␣ ␣ ␣ ␣ ␣ The 2018 Teen Sheriff’s Academy concluded Friday, July 27 with a graduation ceremony and cookout.
