DID YOU KNOW? According to the National Autism Association, autism is a bio-neurological developmental disability that affects the normal development of the brain in various areas. Those areas include social interaction, communication skills and cognitive function. Autism generally appears before a child reaches his or her third birthday, and the NAA notes it is diagnosed four times as often in boys than it is in girls. Roughly 40 percent of children with autism do not speak, but parents whose children speak between the ages of 12 and 18 months should know that such youngsters can still ultimately be diagnosed with autism. In such instances, the NAA notes that children lose the words they previously learned. Incidences of autism appear to be on the rise, though the reasons for that remain unclear. According to a report from the Centers for Disease Control and Prevention, the prevalence of autism had risen to one in every 59 children by 2018. That’s twice as great as the rate in 2004, when the CDC reported one in 125 children were diagnosed with autism.

According to the World Health Organization, tobacco kills up to half its users, annually killing roughly six million people each year. The WHO notes that more thanfivemillionofthosedeathsare the result of direct tobacco use, while more than 600,000 deaths can be attributed to non-smokers being exposed to secondhand smoke. While many in the United States may understand the threat that smoking poses to their overall health, the WHO notes that studies indicate knowledge about the specifichealthrisksoftobaccouse is not widespread. A 2009 survey of smokers in China found that less than 40 percent of smokers knew that smoking tobacco causes coronary heart disease, while only 27 percent were aware of the link between smoking and stroke. It’s also important that smokers recognize that cigarettes once characterized as “light” or “low tar” are not healthier than more traditional cigarettes. While the US Food and Drug Administration has banned the use of such terms in cigarette sales within the United States, smokers traveling or living overseas should be mindful that other countries may not operate under such restrictions. In addition, the American Cancer Society notes that there is no proof that cigarettes sold as “all natural” and marketed as having no chemicals or additives are any safer than traditional cigarettes and that the best way for men, women and children to avoid the dangers of tobacco is to never smoke or to quit immediately.

Diabetics Receive Great Results From a Plant-Based Diet
DEAR DR. ROACH: Your recent column about treating diabetes left me wondering. Diabetes, as I understand it, is usually a result of too much sugar being consumed. But consuming carbohydrates is not that different because they are quickly converted to sugar through the human chemical processes. So, why are you promoting a plant-based diet that is high in carbohydrates?
Consuming protein, which is easily obtained by eating meat, seems to be the answer to reducing the consumption of simple and complex carbohydrates that are quickly converted to sugar in our body. I’ve switched to a high-protein diet (both plant and animal protein), and my blood sugar has been very well-controlled for a couple of years. -- F.B.
ANSWER: Diabetes is not a result of consuming too much sugar. Type 1 diabetes is an autoimmune disorder where the cells that make insulin are destroyed by the body. Type 2 diabetes is a disease of insulin resistance and a relative inability to secrete insulin in response to a sugar load.
In a person with Type 2 diabetes, consuming too much sugar in a short time overloads the body’s ability to respond, so their blood sugar goes up. It is persistent high blood sugar that is responsible for most of the damage to the kidneys, eyes, blood vessels and nerves.
I am careful about what I mean by a plant-based diet. While it’s true that a diet consisting entirely of maple syrup and orange juice would be extremely bad for a person with diabetes because of the concerns about blood sugar that you raised, a plant-based diet that is mostly vegetables, whole grains, legumes, fatty fish and nuts/seeds with moderate amounts of whole fruits does not raise blood sugar more than a standard Western diet.
The high fiber content of the legumes, whole grains and vegetables prevents rapid absorption, and the protein and healthy fat in nuts and fatty fish likewise slow stomachemptying. Finally, there is good evidence that people with diabetes have excellent results with this kind of diet.
You are right that protein is important for a person with diabetes, but many high-protein diets based on meat also have high amounts of saturated fat, which increase the risk for heart blockages. In addition, saturated fat is a major cause of disease and death in people with diabetes. However, it is possible to have a healthy, high-protein diet with care.

Lawrence Berger Crafts Poetry Built from the Title Out
BY SUZIE WELLSLawrence Berger’s poetic journey began in 1996, evolving into a professional pursuit by September 1999. Berger credits James Everet Jones, his first poetry teacher in Hollywood, CA, as a pivotal influence, his mentorship laying the foundation for Berger’s enduring passion for poetry.
Berger adeptly navigates couplets, free verse, and narrative poetry. Drawing inspiration from everyday encounters, Berger’s creative process is spontaneous and o en audience-driven, cra ing poems within seconds on stage from audience-suggested titles. Berger describes his style as “part stream-of-consciousness, partimprovisation, all Poetry!” He builds poems from the title out and prefers topics that motivate and inspire readers / listeners, aiming to leave a lasting impression on his audience.
Despite occasional self-doubt, his track record of publications and awards attests to his skill and dedication. Drafty windows make homes less comfortable by allowing cold air in during the winter and warm air in when temperatures rise. But comfort is not the only concern associated with leaky windows, as such fixtures also can have a negative impact on the environment.
Leaky windows require heating and cooling systems to work harder to keep home interiors comfortable during times of the year when temperatures can be extreme. In the dead of winter, a leaky window will force a home’s inhabitants to turn up the thermostat, which only increases energy consumption and energy bills. The same scenario plays out in summer, when leaky windows allow hot air in, leading homeowners to lower the temperature of air conditioning units so everyone inside is cool and comfortable.

The U.S. Department of Energy recommends that eco-conscious consumers looking to reduce their energy consumption install lowflow shower heads with flow rates less than 2.5 gallons per minute. SPICY STEAK TAMPICO
4 beef tenderloin medallions (each 6 ounces and 3/4-inch thick)
2 tablespoons olive oil
Seasoned salt and freshly ground black pepper
1 cup roasted green chile peppers (see below)
1 cup shredded Monterey Jack cheese
1. Brush steaks thoroughly with olive oil. Season with salt and pepper.
2. Place medallions on preheated grill, close lid and grill, turning once, until an instant-read thermometer registers 145 F for medium rare, 5 to 8 minutes per side. Transfer to a plate, tent with foil and let stand for 10 minutes.
3. Preheat broiler with rack 3 to 4 inches away from heat. Place steaks on individual ovenproof plates. Top each steak with equal amounts of chile and cheese. Broil until cheese melts, about 2 minutes. Serve immediately.
To roast chiles: Preheat greased outdoor grill to medium or preheat an oven broiler. Place fresh chiles on outdoor grill or gas stovetop over medium heat or arrange on a baking sheet and place 2 to 3 inches away from heat under broiler. Grill or broil, turning often with tongs, until surfaces of skin are lightly charred and blistered. Immediately place peppers in a paper bag or an airtight container and close tightly. Let peppers cool for 12 to 15 minutes. Peel off charred skin and remove stems and seeds. Tear into strips or chop as needed according to the recipe. Wash your hands thoroughly after handling chiles. Refrigerate peppers for up to 3 days or freeze in airtight container for up to 6 months.

Makes about 2 dozen
6 medium-size red potatoes, peeled and quartered
1/2 cup (1 stick) butter
1 cup finely chopped yellow onions
1/4 cup chopped celery
1/2 cup seeded and chopped red bell peppers
1/2 cup seeded and chopped green bell peppers
1/2 cup seeded and chopped yellow bell peppers
3/4 teaspoon salt
1/4 teaspoon cayenne
1/4 teaspoon freshly ground black pepper
1/4 teaspoon Tabasco brand pepper sauce
2 pounds medium-size shrimp, peeled, deveined and coarsely ground in a food processor
2 large eggs, well beaten
1/4 cup chopped freshly parsley leaves
1/2 cup peanut oil
1/2 cup all-purpose flour
1. In a large saucepan, boil the potatoes in lightly salted water to cover until fork tender. Remove from the heat and drain. Transfer them to a large mixing bowl and mash with a fork. Let cool.
2. Melt the butter over medium heat in a medium-size skillet. Add the onions, celery, bell peppers, salt, cayenne, black pepper, and Tabasco, and cook, stirring, until soft, about 5 minutes. Add the shrimp and cook, stirring until they turn pink, about 3 minutes. Remove from the heat and let cool for about 5 minutes.
3. Combine the shrimp mixture with the potato mixture. Add the eggs and parsley and mix well. Let cool for 10 minutes.

5. Form the shrimp mixture into patties, using 1/4 to 1/2 cup of the mixture, depending on what size you desire, and pat lightly with the flour. Cook two to three at a time in the hot oil until golden brown, about 3 minutes on each side. Drain on paper towels. Serve hot.

Serves 6 to 8 people
2 Spanish onions, chopped
3 garlic cloves, chopped
1/4 cup olive oil, plus more for drizzling
2 28-ounce cans crushed tomatoes
2 bay leaves
1 pound fresh squid, sliced
1 pound cuttlefish, cut into pieces
1 pound lobster tail meat, cut into pieces
Salt, to taste
3 cups chicken stock
1 cup dry white wine
2 cups Arborio rice
2 dozen fresh mussels
2 to 3 dozen fresh clams
1 tablespoon saffron
1. In a large paella pan, sauté the onion and garlic in the olive oil over medium heat. Add the tomatoes and bay leaves, and simmer for 5 minutes. Add the squid, cuttlefish, lobster, and a pinch of salt, and cook, stirring, for a minute or so more.
2. In a saucepan, bring the chicken stock and wine to a boil. As it boils, add the rice to the fish mixture in the paella pan and blend thoroughly. Ladle three-fourths of the boiling stock over the rice and bring to a boil. Season the rice with more salt to taste. Reduce the heat to low and mix well, distributing rice evenly in the paella pan. Continue to cook the rice for 18 to 20 minutes, stirring occasionally.
3. While the rice is cooking, heat about 1 inch of water and a drizzle of olive oil in a separate sauté pan, then add the mussels. Steam until the mussels open, then transfer to the paella pan with a slotted spoon. Steam and transfer the clams in the same way. Take 1 cup of the clam water and whisk together with the saffron in a small bowl. Add to the paella pan, and simmer the mixture for 5 minutes more. Serve the paella directly from the paella pan.

The Grief Room
by Erin HarrisWhen you first lose someone who was your world, A flood and explosion of grief consumes your whole house. Grief is splattered everywhere, and it covers everything Every room of your house, covering the floor, splattering the walls and even the ceiling.
You stumble from one room into the next and the grief is everywhere. Overwhelming you.
You can never imagine that your home could be cleaned up; the house is now uninhabitable you think. You have no strength to pick up a sponge and start cleaning. Or take the large bricks and chunks of grief and pick them up.
But in time you slowly get to work. Some grief can be wiped up and it’s gone, but a lot of it gets picked up and put into one room in your house. One room becomes the designated place to put the grief. On some days as you organize the grief into this room, you get stuck there. Life calls you from the outside but you’ve closed yourself into the Grief Room and you just can’t turn the handle of the door and walk out.
And you scrub and you clean, and you lug the heavy pieces of grief oneby-one into the Grief Room. It is hard work.
One day, when life calls you from the outside, you are startled that you can easily walk out of the Grief Room. Because you know that in your next quiet moment you can go back. You realize that you can choose to come and go from the Grief Room, the knob of the door turns easily and sticks less o en. e Grief Room becomes more comfortable. It is a quiet space and it becomes a peaceful place to go.
But you spend most of your day outside of that room. e rest of the house becomes livable again; the mess you thought you could never clean up, is greatly diminished.
ere will always be a few stains of the grief around the house. ere is that one stain that you scrubbed and scrubbed but it’s never going to come out. But you can live in a house with a few stains here and there.

John “Jack” A. Illes May 3, 2024
Conesus Lake: At age 77, almost 78, John “Jack” passed away with his family by his side on Friday, May 3, 2024, at St. John’s Home in Rochester, NY.
“Jack” was born on July 14, 1946, in Rochester, NY to the late John E. Illes and Margaret Nelson (Wendelgass). In addition to his parents, he was predeceased by his brother, omas Illes. Survived by his beloved wife of 50 years, Catherine (Rogers) Illes; his sister, Kathy (Illes) Windhauser; brothers-in-law, John (Joyce) Rogers, Lawrence (Mary Jane) Rogers, Paul (Susan) Rogers, and sister-in-law, Deborah Illes as well as nieces and nephews, omas Windhauser, Sheri Blackmore (Windhauser), Ian Rogers, Justin Illes, Keith Illes, Alex Illes, Christian Illes, Erin Rogers, Shaun Rogers, Lindsay Magro (Rogers), Lisa Rogers, Emily Rogers, and Sophia Rogers. Also survived by several great-nieces, nephews, and friends.
John was affectionately known to his family and friends as “Jack.” He worked as a machinist at Kayex Corporation for over 40 years. He lived in West Irondequoit for over 25 years and retired to Conesus Lake, NY in 2000.
HeservedasanactivefirefighterwiththeSt.PaulBlvd.FireDepartmentin West Irondequoit, NY from 1977-1993. He served as a Fire Commissioner for the Lakeville Fire District from 2008-2024 and he served as Chair, Head, and Board of Commissioners from 2014-2024. John joined the Lakeville Volunteer Fire Department as a social member in 2012.
For several years he served as a representative for the Conesus Lake Association.
John enjoyed spending time with his wife, family, and close friends. He volunteered at Bingo at the Lakeville Fire Department every ursday for several years.
He loved Conesus Lake from the time he was a young child, when his uncle lived on East Lake Rd., till the time of his death where he shared his home on Conesus Lake with the love of his life, his wife, Cathy. He enjoyed hunting, fishing, boating, and was a master of many cra s. Numerous people came to him for assistance with welding projects or for the handyman skills he possessed.
John, along with his wife, Cathy, was was a devout Catholic and a Parishioner of St. Matthew Catholic Church in Livonia, NY for many years.
Friends and family are invited to call from 4-7 PM on ursday, May 9, 2024, at the Kevin W. Dougherty Funeral Home, 21 Big Tree Street in Livonia. A Funeral Mass will take place at 11 AM on Friday, May 10, 2024, at St. Matthew Catholic Church, 6591 Richmond Mills Road in Livonia. DEAR PAW’S CORNER: My 7-year-old cat, “Sunbeam,” has a tough time in the spring when the pollen starts to fly. He sneezes frequently, his eyes water and he scratches hot spots on his skin. I’ve tried many things to reduce the allergens in the home: I vacuum every other day, run an air purifier near where he sleeps and I brush his coat daily. TITLE: None of that seems to help. What else can I try? -- Harry in Pittsburgh
DEAR HARRY: You’re doing your best to reduce airborne allergens, and that’s great. However, because it doesn’t seem to be helping, it’s time to enlist the help of your cat’s veterinarian.
e vet can suggest some other ways to reduce allergens in the home, and will consider that Sunbeam is reacting to more than one issue -- not just pollen, but indoor dust or even the food he’s eating. ey will also check for any secondary issues that may be contributing to Sunbeam’s discomfort, like an ear infection or yeast infection.
Short-term treatment with a prescription medication, like a steroid or an antihistamine, may be necessary during the worst part of the season. ese will help reduce the intense itching and eye irritation, and should help clear up hot spots on his skin.
At home, try adding fish oil and probiotics to your cat’s food -- these supplements can help with itchy, flaky skin conditions. (I give my cat a teaspoon of plain yogurt daily to balance his gut bacteria.) An occasional bath, twice a month or so, using a pet shampoo that contains oatmeal will soothe his skin and wash away any lingering allergens on his coat. (c) 2024 King Features Synd., Inc.
