Celebrating ALL MOMS
The Crafter
MOTHER’S DAY CELEBRATION IDEAS
Mothers who are avid crafters may enjoy a craft-themed Mother’s Day. A family crafting project can make for a fun afternoon and produce mementos that Mom will cherish for years to come. Dads and kids can plan the project in advance without Mom’s knowledge, arranging all of the materials ahead of time and setting up the crafting station the night before or while Mom is relaxing on Mother’s Day morning. Kids can even get a head start on the day by making their own craft for Mom and giving it to her as a Mother’s Day present. Dads can keep the craft theme going at dinner and get a laugh out of Mom by pouring her a craft beer when dinner is served.

Recipe for Success: Mahmood Mamdoh’s Journey with Salvatore’s in Avon
BY SUZIE WELLSAself-proclaimed “family man,” Mahmood Mamdoh, and his wife, Canandaigua native, Deanna Robinson, live in Greece with their two children, commuting to Avon to run the East Main Street business. Mamdoh says he loves the more rural community with open areas and farms and hopes to someday move in favor of the smalltown life he treasures in his business life. Running the business and running around with their children leaves them busy but loving life, Mamdoh says. He philosophizes that life is made of stages, and right now, he prioritizes his business and his family.
Originally from Iraq, Mamdoh immigrated in 2008 and has lived in Rochester and Greece ever since. In 2014, Mamdoh startedworkingasadriverattheBuffaloRd.Salvatore’slocation, working for two years while attending nursing school. Upon graduation, Mamdoh worked as a registered nurse at U of R for 6 years.
Mamdoh always loved Salvatore’s food and cooking, so when his friend purchased and opened the Canandaigua Salvatore’s location in 2021, Mamdoh was inspired to pursue his own location. Learning about the Salvatore’s franchise foundations that help owners thrive, Mamdoh felt confident he’d be able to successfully run the business, so he purchased the Avon location in July 2022. While he currentlyworksinnursing per diem to maintain his certifications, thebusiness and his family life keep Mamdoh hopping.
Mamdoh started the business openeyed and realistic, with post-COVID labor and materials challenges as well as rising inflation ever since, he knew challenges were inevitable. But he also understood economics. He knows it goes in circles, explaining that although the economy is low right now, with soaring prices, it will settle down and rebound.
Operating the Avon Salvatore’s location has been a success, he says, and he loves what he does. Mamdoh says his proudest momentwaswheninhisfirstyearofownership, theAvonlocation experienced a 35% increase in sales, a record for that location and the highest increase of all locations, which he’s proud of. He attributes his success to sheer discipline and loving what he does, believing in what he does.
He thanks his employees, and specifically credits lifelong Avon resident and longtime Salvatore’s employee, Michelle
Cassidan, who helped him orient himself within the community, connect with people, and has been integral to helping the business be successful overall.
Mamdoh is excited for the future and hopes to a) expand the Avon location to include a bar andmoreofadestination atmosphere, and b) open a second location when he finds the right opportunity.
Mamdoh says the pizza and subs are the location’s hot sellers, of course, with their rolls and pizza dough made by hand on site. Especially popular are steak subs, and at the Avon location, ursdays are hot sub days, with the daily special featuring $10 large cold sub and soda ($12 for hot sub and soda). Mamdoh says customers o en come in raving about how good the sub rolls are, so that’s satisfying.
Also key to the Avon location is its Arthur Treacher’s component, included within the location since 2014. As one of only a few locations across the area, Mamdoh says people o en make special trips to Avon for the nostalgic piscine specialties.
e Avon Salvatore’s caters for organizations, schools, and businesses all around the area. ey contribute regularly to community organizations, participate in myriad community events, and maintain arrangements with various local organizations. Avon and the surrounding area are full of businesses who collaborate to succeed.
To the Avon community, Mamdoh says thank you for the support each year! He says, “It’s a nice, small town with great people. We hope we meet their standards. We hope they like the food we make. We love serving them.”

PITCH IN AND SAVE MONEY
Home improvement projects can be expensive. While the size and complexity of a project will affect how expensive the project is, homeownerscanexpecttoshelloutaprettypennywhentheyrenovateor remodel areas of their home.
According to HomeAdvisor, an online resource for homeowners looking to connect with home improvement, maintenance and repair professionals, the average bathroom remodeling project costs $9,348, while the average home addition costs slightly less than $41,000. But renovation-minded homeowners need not reconsider their commitment to remodeling, as there are various ways to cut the costs associated with home improvement projects.
One such way is for homeowners to pitch in and do some of the work themselves.Calculatinglaborcostscanbedifficult, assuchcostscanvary greatly depending on the project, the contractor and the amount of hired help that contractor intends to employ. However, some estimates suggest labor will account for anywhere from 25 to 50 percent of the overall cost of the project. So it’s no surprise that homeowners can save themselves substantial amounts of money by doing some of the work themselves. Homeowners who intend to do some of the labor themselves should discuss this plan with contractors during the vetting process. Before hiring a contractor, make sure homeowners’ expected labor contributions are clearly defined in the contract. It’s best to leave the most complicated parts of a project to the professionals.

DID YOU KNOW? According to the Environmental Protection Agency, air currents can carry pesticides that were applied to nearby properties. That means even people who do not apply pesticides in their lawns and gardens can still be at risk of exposure to these potentially harmful chemicals. People concerned by the prospect of being exposed to the pesticides being applied by their neighbors can stay indoors with their children and pets while the substances are being applied. Those who live near fields and parks where pesticides are routinely applied can plant hardy, thick-branched trees to reduce their risk of airborne exposure. The EPA notes that such plants and shrubs can serve as buffers against airborne pesticides, essentially acting as walls around a property that prevent gusty winds from blowing pesticides into yards and gardens.

DID YOU KNOW? Without pollinators, more than 100 crops grown in the United States would not be able to thrive. Plants, including various fruits, vegetables, nuts and more, rely on pollinators to ensure to transport pollen. Though many plants are self-pollinating and others are pollinated by the wind or water, many others rely on insects and animals to become pollinated. The U.S. Department of Agriculture says birds, bees, bats, butterflies, moths, flies, beetles, and small mammals all can work as pollinators. Examples of crops pollinated by pollinators include apples, squash and almonds. Animals and insects help pollinate more than 75 percent of the world’s flowering plants, and nearly 75 percent of all crops, according to the U.S. Fish & Wildlife Service. Unfortunately, pesticide use can diminish the number of natural pollinators. Natural gardening and pest-control can help protect the habitats of pollinators.
HOW TO STAY SAFE ON DIY PROJECTS
Be especially careful with power tools. Power tools can do a lot and they’re fun to use. But it’s important that DIYers do not let fun distract them from safety. The Power Tool Institute urges power tool users to wear personal protective equipment, including eye and hearing protection and a dust mask, whenever using power tools. The PTI also advises users to make sure tools are powered down before plugging them in and to inspect the tool before using it. Inspections can confirm that all guards are in place and that tools are up to the task at hand. Much like it’s unsafe to overreach on a ladder, overreaching when using power tools increase the risk for mistakes, accidents and injuries.

WHAT TO LOOK FOR DURING ROOF INSPECTIONS
Curled, cracked or missing shingles may prove troublesome. Inclement weather can test the strength of even the most durable roofs. Even though many roofs are designed to last up to 30 years, some may need to be replaced early, particularly when they have been exposed to harsh weather over a period of years. Individual shingles can be replaced as spot treatments, but if the damage is widespread, a new roof may be necessary.

Access: Access is another aspect that must adhere to local safety guidelines. Many attics are accessible only through pulldown ladders, but that will have to change if homeowners repurpose their attic spaces. A staircase that complies with local laws will need to be installed, and contractors can work with homeowners to build that and estimate the cost. Homeowners who simply want to put desks in their attics without going with full-fledged conversions are urged to adhere to local access requirements anyway, as they’re intended to ensure residents can safely escape attics in the case of a fire or another emergency.

THE CHALLENGES CLIMATE CHANGE POSES TO AGRICULTURE
Economics: The effects of climate change on crops and livestock may force farmers to change the nature of their farms. The UCS notes that farmers may be forced to choose crop varieties and animal breeds that are suited to the new conditions sparked by climate change. Going in a new direction could force farmers to make potentially costly investments in machinery and other changes as they make the transition.

DID YOU KNOW?
According to the American Osteopathic Association, one in five teenagers will now experience some form of hearing loss. That rate is roughly 30 percent higher than it was 20 years ago.Though various factors have contributed to that increase, the AOA notes that many experts believe an increased use of headphones among teenagers is partly to blame. Listening to headphones at high volumes for extended periods of time can lead to lifelong hearing loss for children and teens. Parents can encourage children and teenagers to listen to music at reasonable levels when using their headphones, and one effective way to control volume without sacrificing sound is to use over-the-ear headphones instead of earbuds. The Cleveland Clinic notes that over-theear headphones are generally more effective than earbuds at cancelling outside noise. That allows over-the-ear headphone users to listen to music at lower volumes, which can significantly reduce their risk for noise-induced hearing loss.

Traffic circle in [local town]
The traffic circle is annoying. What’s even more frustrating is that people don’t use blinkers when they’re exiting. It causes traffic to back up unnecessarily & makes delays for people to enter the circle. It’s annoying and rude. When you learned to drive, didn’t you learn to use your blinkers?
A good deed
Garbage filled park
I want to thank the kind and honest person who found my credit card at the Webster Post Office a few weeks ago and returned it to staff. It just proves that there are good, honest people who do the right thing. I appreciate it very much and thank you.
My husband and I noticed piles of garbage at our local Town Park. We both decided to pick it up, since there is a constant flow of people. We filled 2 garbage bags with shoes, soup containers, broken glass, clothes, coffee cups and doggy poo bags! Nasty!
Delicious Pizza!
Last Friday, I thought I ordered a pizza from a local pizza shop, but the order never made it through. I contacted the restaurant and the person who picked up the phone said that he would give me a free pizza, size large, including a brownie! If more people could be this kind I think that the community would be so much better! Thank you again!
When we brought this to the attention at the Town office across the street, the lady in charge of the parks department said that “The Park is closed but when it’s open they pick up.” When asked if we could throw the trash in their dumpster, she rolled her eyes and called someone else, while laughing at my husband. Pick up after yourselves so that others do not have to- clearly the Town could care less about the safety of others!
Whether you know her as Elnora, Pipe or Moosie Teed please join us for her 90th Birthday celebration on Saturday, May 11th from 2:00pm to 4:00pm at the Conesus Legion.
All are welcome!

Here’s a Tip
* Need to save money grocery shopping? Studies show that if you shop when the store is least busy, you’ll make smarter decisions. Try shopping at off-peak hours, such as later in the evening or early in the morning. Or try your store on Wednesday, traditionally the least busy day of the week.
* “I was making cookies last week and needed to roll out the dough. I couldn’t find my rolling pin anywhere. In a pinch, I pulled a bottle of wine off my wine rack and wrapped it tightly in plastic. It did the trick. I’m thinking I might just save the next empty bottle and clean the label off of it to use. I can store it right there in my rack!” -- O.V. in Oregon
* Add shredded veggies to tomato sauce to up the veggie quotient. Many vegetables can be added without adding many calories and will not change the taste that much. Try carrots, squash or sweet potatoes. You can even add a tablespoon or two of canned, pureed pumpkin.

DIFFERENT GENERATIONS CAN LEARN AND BENEFIT FROM ONE ANOTHER
Practicing interpersonal skills: All the technological savviness in the world cannot compensate for the power of strong interpersonal skills. Being able to address a group of people or speak one-on-one is essential in the workplace and in life. When younger generations speak to older adults, they may become stronger at verbal discourse and have greater perspective of different points of conversation.
Q
How do I prepare my soil for planting?
Properly preparing your soil before planting is essential for creating a thriving garden bed. To embark on this journey, begin by meticulously removing any pesky weeds or grass that may have taken root in the area. This will help ensure that your plants have ample space to flourish without any unnecessary competition for nutrients and resources. Once you have cleared the canvas, it’s time to indulge in the art of soil cultivation. Gently till or dig the soil to loosen its texture, allowing for improved aeration and drainage. As you delve into this task, consider adding a touch of magic in the form of organic matter. Compost, a delightful concoction of decayed organic materials, can work wonders for your soil structure and serve
as a nutrient-rich feast for your soon-tobe-planted garden gems. Generously incorporatethispreciousresourceintothe soil, allowing it to weave its enchantment and transform the landscape. Finally, as you put the finishing touches on your soil masterpiece, gently smooth the surface and offer it a refreshing drink of water, quenching its thirst and creating an inviting environment for your seeds or seedlings.

HOW TO STAY MENTALLY SHARP AFTER RETIREMENT
Make exercise part of your retirement routine. A lack of structure may seem enticing to individuals who have spent decades working. However, many retirees find that little structure loses it appeal quickly after calling it quits. When creating a new routine in retirement, include regular exercise. According to the Mayo Clinic, studies indicate that people who are physically active are less likely to experience a decline in their mental function. While providing ample hydration is crucial, drowning your garden in excess water can lead to soggy roots and a lack of oxygen, stifling the potential for growth. Instead, aim for a gentle and nourishing approach. Seek to deliver approximately 1 inch of water per week, a golden rule that provides ample moisture without overwhelming the delicate ecosystem beneath the surface.

Observe the moisture level of the soil, and let it guide your hand as you adjust your watering routine. Remember, deep and infrequent watering encourages the development of robust root systems, anchoring your plants firmly in the ground and preparing them for a flourishing future.
~ Ken Estes, Ag Program Manager, CCE Livingston CountyInsist that a mechanic be allowed to examine the car. One of the biggest risks of buying from private sellers is that such vehicles are rarely under warranty when put up for sale, and sellers likely won’t guarantee parts. That underscores the importance of having a vehicle thoroughly examined by a certified mechanic before buying it. Private sellers should have no issue allowing this, especially when buyers pay for the inspections. If sellers are unwilling to let mechanics inspect the car, look elsewhere for your next car or truck.

NOW HERE’S A TIP
How to pack a suitcase: Roll pants and tops, adding to suitcase first, toward the handle side. Then add heavy items (shoes, boots) toward the wheel end. Make sure you choose the right size case for the trip; too much room will cause items to shift around.

HAVE KIDS; WILL TRAVEL: MASTER VACATIONING WITH YOUNG CHILDREN
Travel early morning or late at night. Morning flights tend to be less crowded and are less likely to have takeoff delays that can push kids into meltdown mode. Kids are apt to be tired in the wee hours of the morning or later in the evening, so traveling, whether by road or sky, when they’re likely to sleep can be advantageous.

INTERESTING FACTS ABOUT GREYHOUNDS
Some retired racing greyhounds may exhibit behaviors typical of puppies. The Greyhound Project notes that, thanks to their early training, retired racing greyhounds have never been without the company of other greyhounds. As a result, when spending time alone for the first time in their lives, retired greyhounds may make up for lost time as a puppy by exhibiting puppy-like behaviors such as chewing. This need not cause alarm in new greyhound parents, as the dogs typically outgrow the behavior very quickly.
PAW’S CORNER
By Sam MazzottaHome Renovations and Pets Just
Don’t Mix
DEAR PAW’S CORNER: We have a contractor coming soon to renovate our kitchen. I plan to keep my cat, “Freya,” out of the way and in a separate room during the day. But at night, she’ll want to wander the house. How do I keep her out of the kitchen? -- Jim in Portland, Maine
DEAR JIM: Cats are pretty wily, and I’m sure Freya will try to find a way around any barriers you set up to keep her out of the kitchen.
e best way to dissuade her from exploring the construction area, therefore, is to tempt her away with better distractions. at means moving her food and water to a new location far from the construction area (but out of heavy foot traffic) and giving her treats and attention whenever she opts to stay in the living room with you or near her bedding and food.
At night, tighten the barriers around the kitchen -- if there’s a door, close it. If there is plastic sheeting up, tack it to surrounding walls and tape it to the floor. Put a sheet of plywood across the entrance if necessary.
Inside the work area, make sure that the contractors put away all sharp tools and cover any containers tightly. ey should clean up any debris at the end of each day and use a wet-dry vacuum to pick up sawdust and dirt. Any spills need to be cleaned completely. is will reduce the risk to Freya if she manages to get into the kitchen, and it’s just good practice.
Readers, how did you keep your pets safe during home renovations? Tell me at ask@pawscorner.com.

TO YOUR GOOD HEALTH
By Keith Roach, M.D.Apple Cider Vinegar Is a Surprising Help for Blood in Urine
DEAR DR. ROACH: Recently, I had anal cancer and was treated with chemo and radiation. The radiation burned my insides and severely damaged most of my internal organs. One of the aftereffects was occasional blood and small clots in my urine. A few months ago, both the frequency and amount of blood, especially the clots, increased dramatically. The size and number of the clots got so large that they blocked my urethra. During a visit to my urologist, he looked into my bladder and declared it “angry.” Then he told me the same thing every doctor has told me about every problem caused by my treatment: “It was caused by the radiation, and there is nothing that can be done.”
Shortly after this, I began to take unfiltered apple cider vinegar in hopes that it would improve my digestive problems. It helped a little, but the big difference was that I have not had a single recurrence of either blood or clots in my urine. Can you tell me if this is due to the vinegar or if it is just a coincidence? -- A.G.
ANSWER: No, I can’t definitively tell you whether the vinegar helped. It was probably by chance, but let me explain a little about it.
Rectal cancer is often treated with radiation, or combined chemotherapy and radiation, either prior to or after surgery. The dose of radiation is quite high compared to some other cancers, and the complications can be significant.
In addition to damage to the bowel and bladder, radiation treatment can damage the bones and bone marrow, leading to poor blood-cell production, infertility, premature menopause, and more cancer years later. On the other hand, radiation is used when it is expected to improve the cure rate of cancer. Still, the side effects can be challenging.
Hemorrhagic cystitis (bleeding from the bladder) can be caused by chemotherapy or radiation. It may start within a few months or as long as 20 years after radiation.
I am surprised your urologist did not offer any treatments, as there are certainly ones available. Although none of the currently available systemic drugs are proven to be very effective, hyperbaric oxygen is one treatment that is, at least, moderately effective. Medicines placed into the bladder and laser bladder treatments are sometimes tried as well.
I was unable to find any study that evaluated the effectiveness of apple cider vinegar. I am skeptical, but reports like yours of apparent improvement associated with its use might convince a researcher to conduct a study to determine whether it really is effective.

SPRING CLEANING TIPS TO DETOX YOUR BODY
Curb the caffeine. Too much caffeine can have a toxic effect on the body. Cut down on caffeinated beverages, and replace them with water, especially enhanced, alkaline, ionized water, which has been shown to promote energy and overall health by allowing the body to absorb the water more quickly.
DO I NEED BUNION SURGERY?
Brett Sachs, DPM, FACFAS • Foot & Ankle Surgeon practicing in Denver, CO • Fellow of the American College of Foot and Ankle Surgeons (NAPSI)—One in five Americans suffers from bunions. A bunion, or hallux valgus, starts out as redness and a bump on the side of the foot near the big toe. Over time, bunions can cause chronic pain and restrict movement.
Bunions are progressive and don’t go away on their own, so it’s important for people with bunions to see a foot and ankle surgeon who will evaluate the severity of the deformity and develop a treatment plan. Nonsurgical treatmentsmayreducethechance ofdamagetothejointandeasethe pain of bunions. However, these treatments will not reverse the deformity itself. If the pain begins interfering with normal daily activities, surgical intervention will typically be the next step.
Until recently, the procedure had been very painful and the recovery difficult. However, foot and ankle surgeons have made several advancements in surgical techniques and patients return to normalactivitiessooner.Recovery typically takes four to six weeks. Foot and ankle surgeons implement pain management techniques following bunion surgery, including using nerve blocks, postsurgical pain pumps, and vitamin C and calcium supplements. These let patients recover fully with minimal pain. Formoreinformationortofindafoot andanklesurgeonnearby,visitwww. Getting out and about is a vital component of many seniors’ daily lives, but it’s important that aging men and women recognize how much exercise is healthy for them. The Department of Health & Human Services notes that adults need a mix of physical activity to stay healthy. That mix should be a combination of moderate-intensity aerobic activities, which can include golfing, swimming and even gardening, and muscle strengthening activities like weightlifting that make the muscles work harder than usual. The DHHS recommends adults combine 150 minutes of moderate-intensity aerobic activity per week with at least two days of muscle-strengthening activities. The Centers for Disease Control and Prevention notes that these guidelines are safe for individuals who are 65 and older, generally fit and have no limiting health conditions. Individuals who do not fit that criteria should consult with their physicians before beginning a new exercise regimen, as it’s possible that they could be putting their health at considerable risk if they attempt to follow guidelines designed for people who are generally fit. It’s also important that healthy seniors avoid overdoing it in regard to exercise.Though the DHHS suggestions are the minimum recommendations, going too far beyond those guidelines without first consulting a physician could increase seniors’ risk for injury, illness or even death.

EFFICIENCY AT WORK
People with multiple hobbies recognize there are many great ways to spend one’s time. But even people with plenty of ways to pass their time may find themselves wasting time each day, a phenomenon that seems to be growing.
In its 2014 “Wasting Time at Work” survey, Salary.com found that 89 percent of participants acknowledged wasting time at work each day. That marked a sharp increase from a year prior, when 69 percent of workers surveyed reported wasting time at work. Thirty-one percent of workers surveyed admitted wasting roughly 30 minutes per day, while another 31 percent estimated they waste around one hour each day. Perhaps the most surprising finding from the survey was that 4 percent of participants admitted they waste four or more hours, or at least half a typically eight-hour workday, at work each day. Some people might be wasting time out of sheer boredom, but many may be able to trace all those squandered minutes and hours to inefficiency.

HOW WOMEN CAN KEEP THEIR CAREERS GOING FORWARD
Define career expectations. Defining career expectations early on can be beneficial in various ways. Such expectations can guide career choices and provide a road map that women can utilize to stay the professional course. This can help women make decisions about their careers when they come to forks in the road. For example, if a path to promotion seems blocked, women can examine their established career expectations to help them decide if it’s time to seek new employment. Defining career expectations also can help women effectively communicate with mentors about their goals, and mentors can then use that information when offering guidance. Expectations need not be concrete, and it’s likely they will change over time. But they can serve as an important foundation for anyone from young female professionals to experienced executives looking to make changes or determine the next step in their careers.

QUALITIES TO LOOK FOR IN A POST-RETIREMENT JOB
Socialization: Though the ability to work from home can make it easier for retirees to earn some extra money, some seniors aren’t concerned about their finances but want to work so they can get out of the house. In that case, look for a job that offers the opportunity to socialize and meet new people. Socializing as an older adult is a great way to fend off loneliness. In addition, one study published in 2007 in the journal of the American Public Health Association found that social support networks have a positive effect on cognition among older adults. So a post-retirement job that enables retirees to socialize could delay or reduce the severity of age-related cognitive decline.

Brief breaks during the work day can dramatically improve one’s ability to focus on a task. A 2011 study published in the journal Cognition found that brief mental breaks can improve focus on a prolonged task. The study’s authors tested participants’ ability to focus on a repetitive computerized task for 50 minutes under various conditions. The control group performed the task without breaks or diversions. The switch group and non-switch group memorized four digits before performing the task and were directed to respond if they saw one of the digits on the screen while performing the task. The switch group was the only group to be presented with the digits twice during the experiment, and both groups were tested on their memory of the digits at the end of the task. Most participants’ performance declined considerably over the course of the 50-minute task. However, the performance of those in the switch group did not decline at all, as the two brief breaks to respond to the digits allowed them to maintain their focus throughout the experiment. The researchers behind the study concluded that the switch group’s performance was steady because the brain is built to detect and respond to change, and its performance will actually suffer if it must maintain prolonged attention on a single task without taking a break. Professionals with a lot on their plates may see their performance improve by taking frequent mental breaks throughout the workday.

GET A HANDLE ON WORK-RELATED STRESS
Take more time off. According to the “State of American Vacation 2016” report from Project: Time Off, American workers failed to use 658 million vacation days in 2015. Vacation is not just a time to get away, but a valuable, effective way for workers to recharge. The APA notes that avoiding the negative effects of chronic stress and burnout requires workers to take time away to replenish and return to their pre-stress level of functioning. Taking time off to disconnect from work and avoid thinking about work can be just what workers need to overcome their work-related stress. And plenty of workers have the time to take off; they just need to take it.
Résumés continue to evolve, and it is crucial for applicants - especially established workers - to familiarize themselves with the changes and market themselves accordingly.

MORCILLA CON SETAS (BLOOD SAUSAGE WITH MUSHROOMS, SPRING PEAS AND MINT OIL)
Serves 4
1 pound morcilla blood sausage
1 pound mushrooms, sliced
2 tablespoons olive oil
4 cloves garlic, slivered
Salt and pepper to taste
2 tablespoons white wine
1 cup shelled spring peas
1 tablespoon chopped fresh mint
2 tablespoons mint oil
Mint Oil
1/2 cup extra-virgin olive oil
1/2 cup chopped mint
Pinch of salt
Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas.
In a cast-iron skillet, sear the morcilla in a dry pan for 2 minutes per side. Arrange the slices of morcilla down the middle of a platter. Surround with mushroom/pea mixture and drizzle the plate with the mint oil. For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve. Reserve extra mint oil for other uses, such as vinaigrette.
