ELSIE’S STEWED APPLES

Serves 6 to 8

2 to 3 tablespoons unsalted butter

2 pounds apples, peeled, cored and cut into thick slices

1/2 cup honey, preferably sage honey

1/2 cup white wine

Zest of 1 lemon

Juice of 1 lemon

Fresh sage sprigs for garnish

1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done.

2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1/2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce.

3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.

HOW TO INVOLVE MORE YOUNG PEOPLE IN AGRICULTURE

Encourage agriculture-based curriculum. After recognizing that the majority of Kenyan students had no access to farming training and education, the organization Farm Africa initiated a program to make agriculture more accessible to students. Students who participated learned about everything from keeping livestock to marketing produce for global markets. Similar programs can be encouraged in developed countries where opportunities in the field of agriculture figure to increase in the years to come.

HOW TO FIX THAT STICKING DOOR

Nearly everyone has experienced a sticking door that just will not close properly. This problem may become more noticeable when temperatures rise and humidity contributes to the swelling of wood doors and frames.

According to The Family Handyman, a home improvement resource, the standard remedy for alleviating a sticking door is to remove the door and pare down the edges that are rubbing so that the door will once again swing freely. While this can solve the problem, it can be a hassle, as it requires refinishing the pareddown edge and rehanging the door. Try these shortcuts first before creating more work than might be necessary.

• Identify the problem area and rub it with a dry bar of soap. This should reduce friction and allow the door to close more easily.

• Remove humidity with a dehumidifier or by running an air conditioning unit.

• Check for loose hinges or sagging around the hinge. Tighten the fasteners to sure up the door and create better alignment.

• Spray the hinges with lubricant if you suspect sticking is originating because of squeaky hinges.

• Look for obstructions at the bottom of the door. Is the door dragging on carpeting or being caught on something on the floor? It may be a matter of simply clearing away the obstruction.

I like to use my compost for gardening but I have no idea how much to mix with my soil.

Compost is an excellent garden soil amendment to use every gardening season and should be added starting early before planting. It also can be added as a mulch as your plants begin to grow and produce. Compost improves the tilth (workability) of the soil and acts like a slow-release fertilizer for your plants.

Most good garden soil has around

4% compost. I like to use about 10% in my gardening, which works out to adding about 1 inch of compost worked into the top 9 inches of soil.

Mature, finished compost acts like a buffer to soil pH.Unfinished compost produces amino (organic) acids as the low-temperature bacteria break down the compost. Mature compost becomes more neutral (between 6-8 pH) as mesophile bacteria take over.

Most garden plants require a soil pH of between 6 and 7. You can get soil

SIGNS OF WINTER LAWN DAMAGE

Wilted grass: Many things can cause grass to wilt over the course of winter, so homeowners may have to put on their sleuth’s cap to determine why grass that was healthy as recently as late fall is now wilted as the spring bloom begins. Grass that’s adjacent to walkways and driveways might have wilted due to the application of deicing solutions. Such products can prevent the formation of ice on driveways and walkways. However, when they’re tracked onto the grass by people or animals or blown there by winter winds, grass can wilt. A deep watering in spring can flush any lingering solution from the lawn. In future winters, homeowners can be as careful as possible when applying de-icing solutions, making a concerted effort to avoid spreading any onto the grass and limited applications to areas of the driveway and walkways that are not close to the grass.

Keep Your Dog Safe From Tick-Borne Infections

DEAR PAW’S CORNER: I’m afraid to take my 1-year-old Lab, Shiner, on hikes in the woods because he might be bitten by a tick and get ill. What’s your take on the tick situation? -- Brian in Concord, New Hampshire

DEAR BRIAN: Even though ticks carrying diseases like Lyme are a concern, do not let the risk put you o of bringing your dog along on hiking adventures. Yes, ticks are numerous, and you live in a hotspot for tick-borne diseases. But there are precautions that you can take to keep both Shiner and yourself healthy.

A Lyme vaccine is available for dogs, so talk to your vet about getting Shiner this shot. But ticks carry other diseases too. So be sure that Shiner wears a ea-and-tickrepellent collar or takes a ea-andtick (and heartworm) preventative medication.

Keep ticks o of your own skin by treating clothing and gear with permethrin and letting it dry completely before wearing the gear (permethrin should never be applied to your skin). Just before setting out on your hike, spray insect repellent that works on numerous bugs, including ticks and eas, onto your skin.

A er your hike, before getting into the car, check Shiner’s coat for ticks and other bugs. Run your hand along his fur from head to tail to dislodge any critters or debris from the top of his coat. Check under his tail and between the pads of his paws. Shake your gear out and do a tick check on yourself as much as possible.

At home, do a more thorough check of Shiner by running your hands into his coat and visually checking his fur and skin. Remove any embedded ticks using a tick removal tool.

HOW COMMUNITIES CAN RECOGNIZE NURSES

Encourage residents to lend a helping hand. The work frontline medical workers have done during the pandemic has been endless and exhausting. In recognition of that, community organizers can promote volunteer programs designed to lift some of the burden off local health care workers’ shoulders. Local hospitals, blood banks and health centers may need volunteers, and this is a great way for local residents to show health care workers their efforts are appreciated.

People who get COVID-19 vaccine less likely to die from any cause

DEAR DR. ROACH: In a recent column, you referred to a U.K. source that stated “all-cause mortality is very significantly reduced in people who have had the COVID-19 vaccine, compared to unvaccinated people.” I wasn’t sure what you meant by all-cause? Does this mean any and all deaths, with or without COVID-19, for any reason, have been very significantly reduced just by getting the COVID-19 shot? Or does it mean that any and all deaths associated with COVID-19 have been reduced in those who have been vaccinated? If it is the first, then fewer people should be dying, people should be living longer, and we should not see a decrease in life expectancy (except for the addition of those dying from COVID-19, which brings the age down). Anyway, if the first is true, then I will definitely continue getting the COVID-19 shot just to live longer, with or without getting COVID-19! -- C.P. ANSWER: The U.K. study looked at all-cause mortality, which means anyone who dies from any reason. The study found that getting the COVID-19 vaccine reduced the likelihood of dying from COVID-19 and non-COVID-19 causes. One potential problem studies face is assigning cause of death. If a person with a very serious cancer who is expected to pass away within a few months gets COVID-19 and dies, did the cancer kill them, or did COVID-19? If you have to choose just one cause, the answer could be misleading. That’s why the results of the U.K. study (and a Florida study that showed similar results) were so important. People who get the COVID-19 vaccine are less likely to die from any cause.

In the last few years in the U.S., the longstanding trend of improved mortality has reversed, and death rates are going up, partially due to COVID-19.

GLUTEN-FREE IS MORE THAN A TREND

When someone with celiac disease eats gluten the body mounts an immune system response that attacks the villi, which are small fingerlike projections that line the small intestine. The villi, when damaged, cannot properly absorb nutrients from food. Untreated celiac disease also may lead to the development of other autoimmune disorders like type 1 diabetes and multiple sclerosis.

The intestinal damage from eating gluten often causes diarrhea, fatigue, weight loss, bloating, and anemia, and can lead to serious complications. Following a strict gluten-free diet can help manage symptoms and promote intestinal healing.

More companies are producing glutenfree foods and stores are carrying them in greater numbers. In addition, there are a number of new baking flours available that provide alternatives to traditional wheat-based formulas. People with celiac disease or gluten intolerances can use these specially designed flours to make homemade items. Certain flours also may be billed as one-to-one alternatives, meaning they can be substituted for traditional flour in recipes without adjusting the measurements.

SEAFOOD PAELLA

Serves 6 to 8 people

2 Spanish onions, chopped

3 garlic cloves, chopped

1/4 cup olive oil, plus more for drizzling

2 28-ounce cans crushed tomatoes

2 bay leaves

1 pound fresh squid, sliced

1 pound cuttlefish, cut into pieces

1 pound lobster tail meat, cut into pieces

Salt, to taste

3 cups chicken stock

1 cup dry white wine

2 cups Arborio rice

2 dozen fresh mussels

2 to 3 dozen fresh clams

1 tablespoon saffron

1. In a large paella pan, sauté the onion and garlic in the olive oil over medium heat. Add the tomatoes and bay leaves, and simmer for 5 minutes. Add the squid, cuttlefish, lobster, and a pinch of salt, and cook, stirring, for a minute or so more.

2. In a saucepan, bring the chicken stock and wine to a boil. As it boils, add the rice to the fish mixture in the paella pan and blend thoroughly. Ladle three-fourths of the boiling stock over the rice and bring to a boil. Season the rice with more salt to taste. Reduce the heat to low and mix well, distributing rice evenly in the paella pan. Continue to cook the rice for 18 to 20 minutes, stirring occasionally.

3. While the rice is cooking, heat about 1 inch of water and a drizzle of olive oil in a separate sauté pan, then add the mussels. Steam until the mussels open, then transfer to the paella pan with a slotted spoon. Steam and transfer the clams in the same way. Take 1 cup of the clam water and whisk together with the saffron in a small bowl. Add to the paella pan, and simmer the mixture for 5 minutes more. Serve the paella directly from the paella pan.

Did you know that May 20th was National Bee Day? at’s right, the United Nations created this holiday to recognize bees for their crucial role in our everyday lives. Bees are pollinators that help maintain and protect our agriculture and allow our food crops to ourish. Without them, we would face extreme food insecurity, among other concerns.

While there are many di erent types of bees, an organization here in Rochester focuses on honeybees. NY Bee Wellness is a nonpro t that educates beekeepers to raise and promote healthy honeybee colonies in the New York region. Founded by Pat Bono a er receiving an impressive USDA National Institute of Food and Agriculture (NIFA) Beginning Farmers and Ranchers Development grant, this nonpro t helps educate beekeepers and the public about the importance of honeybee health.

I was fortunate to speak with Pat recently, and she shared the fascinating work that her organization has done so far and hopes to do in the future. According to Pat, honeybees are managed livestock that can be bred and transported. ey are considered “generalist pollinators,” meaning they can pollinate almost anything. It is easy to forget that the honey in our tea comes from such fantastic creatures, but our lives would certainly be less sweet without these bees.

Pat explained that the act of beekeeping used to be fairly easy 40 or so years ago, but then the varroa mite – a tick-like parasite – became an extremely invasive pest and changed beekeeping forever. e varroa mites have the potential to contaminate the honey and wax, so it is essential that every colony receives the upmost care.

rough education and research, Pat and NY Bee Wellness hope to inform beekeepers of the potential threats to honeybee health. A healthy honeybee colony means healthy honey quality.

Whether you are a seasoned beekeeper or are just starting to practice, NY Bee Wellness is full of resources to guide you. e best way to access NY Bee Wellness resources is through their YouTube channel (@ NYBeeWellness). With close to forty videos on honeybee health and beekeeping, these videos are readily available to the public. As evidenced by the near 600,000 views on their channel –along with nearly seven thousand subscribers –they clearly have a large impact in the New York beekeeping world.

“Our goal is to reach as many beekeepers in the public as possible,” Pat shared. One way they reach beekeepers directly is through a survey they send out twice a year to non-migratory beekeepers. is survey focuses on the critical issue of maintaining honeybee colonies during the winter months here in New York State. By collecting data from these surveys, NY Bee Wellness can provide beekeepers with the most up-to-date information on honeybee health and wellness. e survey is particularly important in gauging trends in beekeeping.

NY Bee Wellness also hosts immense bee information on their website, nybeewellness.org. You can nd information on how to manage/maintain queen bees, ward o bear harvests, prevent and treat varroa mite infestations, even what trees and plants to locate around beehives for best bee health and productivity. e organization is an open book of resources, helping novice and veteran beekeepers across the state ensure healthy hives.

Last August, NY Bee Wellness held a three-day workshopatCornellUniversitytoshareinformation and ideas for best practices. LEGO teams around the Rochester area have been investigating and problem-solving ideas surrounding bees, and NY Bee Wellness shares information on those as well. CRAB SALADSTUFFED TOMATOES

Serves 2

1/3 cup orzo

2 large tomatoes

1 cup crabmeat, picked over for pieces of shell

1/3 cup chopped black or green olives

2 tablespoons crumbled reducedfat feta cheese

2 tablespoons chopped fresh dill

2 teaspoons balsamic vinegar

1/8 teaspoon salt

1/8 teaspoon black pepper

1. Cook orzo according to package directions, omitting salt if desired. Drain and rinse under cold water; drain again.

2. Meanwhile, cut thin slice off tops of tomatoes; reserve tops. Using spoon, carefully scoop out seeds and pulp; reserve for another use.

3. Gently toss together crabmeat, olives, feta, dill, vinegar, salt, and pepper in medium bowl. Spoon crabmeat mixture evenly into tomato shells and cover with reserved tomato tops.

Cook’s note: Scoop the seeds and pulp from the tomatoes into a storage container. Cover and freeze up to 4 months and toss them into a soup or stew.

Couple that with an existing nursing shortage, and the BLS projects a need for 1.1 million registered nurses in the near future. A shortage also figures to affect Canada, where the Canadian Nurses Association recently estimated that the country would be forced to confront a nursing shortage of roughly 60,000 nurses by 2022. Various factors are contributing to the nursing shortage in both countries, including an increasingly large aging population that will require more and more nurses to meet its health care needs. In the United States, the Affordable Care Act, which was passed in 2010, increased access to health care for millions of people across the country, thereby creating a greater need for nurses and other health care professionals. In addition, a greater emphasis on preventive care in many countries across the globe figures to compel more people to visit their physicians even when they’re otherwise feeling healthy. As more people prioritize preventive care, the need for more nurses will likely increase.

I moved to Batavia just about a year and a half ago, but it did not take me long to fall in love with this place. As I lived most of my life in the Northtowns, this area has been such a breath of fresh air. I have the pleasure of working in customer service, and the vast majority of people I interact with are kind and decent people. The small businesses around here are supported and mostly thriving, the neighborhoods are mostly clean, the parks are many, charming, and also well-kept. All of the people I have personally met in this school district and even municipal system are at worst decent, if not warm and helpful.

Gratitude for all of my wonderful neighbors and those who contribute to the abundance of joy there is to be found here in Batavia. I’m glad to have made it my home.

Small Vent

Although the intent is great, some people don’t understand Memorial Day. It’s to acknowledge and remember those who DIED for our country. Veterans have their own day of recognition. One thing most don’t realize is that Active Duty military are not Veterans. After they’re off active duty, unless dishonorably discharged, they’re Veterans.

No loud muffler law in [local town]

I live in [local town] and have 2 neighbors with loud mufflers. I have called the police 3 times but we have no law about loud mufflers. They come and go at all hours and run their car right under my bedroom window. I have asked them to fix their car but no luck. I’m tired of getting woken up and so is my better half. Had to vent… mufflered out.

Really?

What’s wrong with this: a pickup truck passing cars driving 65 in a 55 zone. The tailgate is down. The bed loaded with multiple rakes, gardening equipment, tree branches and a gas can. Nothing tied down. I would put money down that if anything bad happened after hitting a pot hole or bump, the driver would continue on like nothing happened. Where has intelligence gone?

Conesus: At the age of 69, our brother, uncle, great-uncle, best friend, and companion passed away on ursday, April 20, 2023 at home.

John was born in Rochester NY to the late Connell and Rita (Burcke) Habecker. He is also predeceased by his siblings, Sister Rita Marie Habecker, Lawrence, and Mary Boesch. He is survived by his sisters Judith (Robert) Neary, Marcia Habecker; brother Richard (Emily) Habecker, nephews Kevin Neary, Brian (Shasha) Boesch, Tanner ( ancee Kelsey) Boesch, Jason (Jenn) Habecker, Shawn Habecker; nieces Colleen (Joe) Mastro, Sophie Habecker, Heidi Boesch (Mike Henderson), Jamie Boesch; great-nieces and nephews Chelsea, Chase (Ashleigh Carey), Ryan Mastro Cairo, Autumn, Meadow Henderson, and Lily Boesch; sister-in-law Karen Habecker; very special companion “Ginger,” along with many cousins and close friends.

Honeoye/Avon: At age 93, Harold passed away peacefully on Sunday, May 28, 2023 at the Avon Nursing Home in Avon. He was born in Rochester, NY to the late Leo and Grace (Blake) Allen. In addition to his parents he was predeceased by his wife of 65 years, Jean (Ashley) Allen in 2019. Survived by children, Cindy Wagner and her husband Bob of Honeoye, NY, Blane Allen and his wife Nadia of Montgomery, NY, and Dale Allen and his wife Judy of Pen eld, NY; grandchildren, Christopher Allen and his wife Hilary, Stephanie Gum and her husband William, Michael Allen and his wife EJ, Kristyn Kominovski and her husband Andy, Je ery Allen, Brian Wagner and Trevor Wagner; great-grandchildren, Charlotte “Charlie,” Luke and Gri n; nephew, Robin Allen, along with his dog, “Bailey.” Harold took great pride in serving customers across New York State as a Manufacturer’s Sales Representative. He was active in Avon Little League, and the Avon Historical Society. In addition, he was a member of the Avon United Methodist Church and the American Legion Post 294. roughout his retirement, he enjoyed camping and traveling with Jean as well as spending quality time with his grandchildren.

Service and provide technical support in the con guration, maintenance, and restoration of light and heavy equipment as delegated by service manager. Knowledge of diesel/gasoline engines and hydraulic/electrical systems is required.

Essential Functions:

1. Service Equipment from manufacturers including Giant Loaders, Ventrac Tractors, Cushman Vehicles, Jacobsen, Smithco and more.

a.) Diagnose, quote necessary parts/labor requirements and repair customer owned equipment.

b.) Set up new equipment.

c.) Diagnose, quote necessary parts/labor and restore pre-owned equipment.

2. Paperwork

a.) Fill out all company documents (quote sheets, pre-delivery inspection sheets, etc.) required to be lled out in accordance with company procedure while serving equipment. Provide proper documents to the service writer when necessary.

3. Customer interaction

a.) e ability to speak directly with speci c customers when necessary regarding scope of work for their equipment is preferred, but not required.

4. Quality Assurance

a.) e technician is responsible for ensuring top quality for all of his work.

b.) Ensure that all items on the pre-delivery inspection sheet have been checked and veri ed for quality insurance on new deliverys. (Grease points, tire pressure, belt tensions, hydraulic lines, etc.)

c.) Ensure that all work on any work order has been completed to the highest standard.

d.) e technician is required by MTE to refuse return of any equipment they deem to be unsafe due to modi cations or part failure. All issues must be resolved before MTE is willing to return the unit to the customer.

e.) Notify supervisor when the technician feels he/she is in need of training or additional assistance with any equipment beyond his/her expertise.
