White Chocolate Almond Raspberry Cake

is is a u y almond cake with raspberry lling & a white chocolate amaretto buttercream frosting.

INGREDIENTS

Almond Cake:

- 2 and 1/2 cups of cake our, si ed

- 3 teaspoons baking powder

- 1/2 teaspoon baking soda

- 3/4 teaspoon salt

- 1 cup unsalted butter (room temperature)

- 1 and 1/2 cups granulated sugar

- 6 lg.egg whites (room temp), lightly beaten ‘til foamy - 1 teaspoon vanilla extract

- 2 teaspoons almond extract

- 3/4 cup whole milk, room temperature - 2/3 cup sour cream, room temperature

White Chocolate Amaretto Buttercream Frosting:

- 1 cup unsalted butter (room temperature)

- 2 and 1/2 cups confectioners' sugar, si ed

- 1/4 teaspoon salt

- 1 tablespoon heavy cream

- 1 and 1/2 tablespoons amaretto liqueur

- 1 teaspoon almond extract

- 6 oz. white chocolate, melted and cooled for 10 min.

INSTRUCTIONS:

For the cake:

1. Preheat oven to 350 degrees (F). Generously grease the bottom and sides of two 9-inch round cake pans; line with parchment paper rounds and set aside until needed.

2. In a large mixing bowl, si together the cake our, baking powder, baking soda, and salt; set aside.

3. In a large bowl using a handheld electric mixer, beat the butter on medium-high speed until smooth and creamy, about 1 minute.

4. Gradually add in the sugar. Once all of the sugar has been added, beat on high speed for 2 minutes.

5. Reduce the speed to low and add in the egg whites, a little bit at a time, beating well a er each addition, and scraping down the sides and bottom of the bowl as needed.

6. In a separate small dish, combine the vanilla extract, almond extract, milk, and sour cream. Mix until evenly combined.

7. On low speed, add the our mixture in three additions, alternating it with the liquid milk/sour cream mixture, beginning and ending with the our, and mixing until combined.

8. Divide the batter evenly among the prepared pans and smooth the tops.

9. Bake for 25 to 30 minutes, or until lightly brown around the edges and a toothpick inserted in the center of the cakes comes out clean.

10. Cool the cakes in the pans, places on a wire rack for 15 minutes. en invert the cake layers onto cooling racks and cool completely.

For the frosting:

1. In the bowl of a stand mixer tted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the butter on medium-speed until completely smooth. Reduce the speed to low and gradually add in the confectioners' sugar, beating until all of the sugar is completely combined.

2. Add in the salt, cream, amaretto, and almond extract and beat smooth

3. Add in the white chocolate and beat smooth. Once all of the ingredients have been incorporated, increase the speed to medium-high and beat for a minute.

Assembly and Garnish:

1. Using a long, serrated knife, slice each cake in half horizontally, so that you have 4 even layers.

2. Place one cake layer on a large plate or cake stand. Spread 1/2 cup of the frosting on top of the cake, covering it completely, then spread a 1/4 cup of raspberry preserves on top of the frosting.

3. Top with another cake layer, and repeat the layering process, ending with the last cake layer on top. Spread all remaining frosting over the top and sides of the cake.

4. Using your hands, gently press the sliced almonds all around the sides of the cake. en top with fresh raspberries!

5. Allow the cake to set for 20 minutes before slicing. en serve, or store, in the refrigerator, for up to 2 days. Bring to room temperature before serving.

Get a Grip

One of the most important aspects of winterization is ensuring you have a safe grip on the road. Like the soles of shoes that prevent us from slipping, quality tires help keep your vehicle securely on the road, especially in slippery rain or snowy conditions. Checking tire tread and pressure is important to ensure you have optimal traction. If you live in a particularly snow-prone or rural area, you might also consider buying snow tires and/or chains.

5. Keep Up on Maintenance. Routine work on your auto, like oil changes, fluid refills and tire rotations, can make all the difference in your car’s drivability.

Follow-up Colonoscopy Necessary After Result of Eight Polyps

DEAR DR. ROACH: I am a 73-year-old male. This year, I had a colonoscopy. They found some small polyps and one larger polyp. All polyps tested negative for cancer. I have had two previous colonoscopies in the past 10 years. Polyps were found in each one. My gastroenterologist said I should have another colonoscopy in one year. There has been no colon cancer in my family. As you age, is it safe to continue with a colonoscopy? I don’t feel safe having one every year. At what age should seniors stop having a colonoscopy? My previous gastroenterologist told me to have one in five years. I do a stool test yearly, given by my primary doctor. -- F.Q.

ANSWER: I read your reports, which showed a total of nine polyps, all “sessile” (flat, which is higher risk for development into cancer than those with a stalk), the largest being 8 mm. The pathology report confirmed these as tubular adenomas, none of which had the worrisome finding of high-grade dysplasia.

The official guidelines of the American College of Gastroenterology recommend a follow-up colonoscopy in three years. I definitely agree with that in people who are otherwise healthy. Colon cancer does definitely run in families, but at least 80% of colon cancer occurs in people with no known family history, meaning you can’t be complacent even if there isn’t any history in your family.

There is no absolute age cut-off for screening colonoscopies: Age 75 might be reasonable in someone who really doesn’t want to have another and whose previous results have all been normal, but I would be unlikely to recommend a screening exam in a person older than 85. People who have serious medical conditions outside the intestinal tract get less benefit from screening.

Age 73 is not so old that I would recommend against screening in otherwise healthy people, and given that you have had eight polyps, I definitely recommend a three-year follow-up. I don’t know why the gastroenterologist said one year, based on the reports you sent me.

Combine milk, cloves, 1/2 t. vanilla and cinnamon in a saucepan. Heat over lowest setting for 5 minutes. Slowly bring mixture to a boil. In a large bowl combine egg yolks and sugar. Whisk until fluffy. Slowly whisk hot milk mixture into the eggs. Pour it all back into the pan and cook over medium heat, stirring constantly for 3 minutes or until thick. Do not allow mixture to boil. Strain and allow to cool for about an hour. Stir in rum, cream, 2 t. vanilla and nutmeg. Refrigerate overnight before serving.

Recently, my tomcat, Jessup, went to the vet to get xed, to stop my neighbors from complaining about his aggressiveness. I used herbal tinctures and supplements to prevent infection and reduce Jessup’s pain so that he wouldn’t have to take antibiotics and other medications that might harm his health long-term. When I told this to the vet at Jessup’s follow-up, she got really upset and said that if I did that again, she would no longer accept Jessup for treatment. I don’t understand why. DEAR SHERRY: While herbal supplements can be helpful for pets, it’s very important that you share with the veterinarian any current or intended use of these supplements.

For example, some prescribed drugs can interact with supplements and prevent a pet’s liver from properly metabolizing those supplements, causing a dangerous buildup of toxicity.

Vets today will work with pet owners to make sure that prescribed medications don’t interfere with, or interact with, herbal or vitamin supplements. But you have to be upfront and list any and all remedies that you’re giving to your pet. is is especially important with higher-risk procedures and surgeries of any kind, including neutering and spaying. A small pet’s body is especially reactive to pain and infection, and it’s important to keep them comfortable and avoid hampering their body’s ability to heal.

Work with the vet. Follow their advice. Ask questions before a procedure and disclose the supplemental treatment that you’d like to give your pet. Veterinarians will work with you on an e ective treatment plan because, just like you, they want your cat to be healthy and happy.

e Bristol Hills Historical Society registered the two sites as o cial Wreaths Across America participants – Bristol Center Cemetery in the town of Bristol, and Coye Cemetery in South Bristol – and researched the names of the 52 veterans buried in the two cemeteries. e historical society then asked local residents to sponsor the purchase of holiday wreaths, which will be placed on the graves in ceremonies honoring each veteran individually.

e ceremonies, timed to coincide with the national event, will take place at noon on Dec. 17 at Bristol Center Cemetery, 4471 State Route 64, and at 2 p.m. at Coye Cemetery, at the corner of State Route 21 and Bopple Hill Road. e public is encouraged to attend.

e local organizer of the Historical Society’s events, A.J. Magnan, Commander, U.S. Navy (Retired), said the designation of the two cemeteries was a test of the local enthusiasm for the Wreaths Across America program. Local sponsors far exceeded the goal of 52 wreaths, allowing the Historical Society to place wreaths at a third cemetery – Wilder Cemetery, where town co-founder Gamaliel Wilder, a Revolutionary War veteran, is buried.

“We were grati ed by the support local sponsors showed for this project,” Magnan said. “ is will help us expand to more local cemeteries in future years.”

Avoiding Holiday Shopping Scams

It’s that time of year again when we do holiday shopping, much of it online. It’s also the time when more scammers come out.

And what is it scammers want most? ey want your personal information so they can turn it into cash and fraudulent purchases.

Here are a few ways to avoid getting scammed online this holiday season:

Beware sales emails that include links, even if the email is from a store you usually use. ieves are very good at making their scam pages look genuine. Instead of clicking a link, open a web browser and go directly to the website itself. Sometimes the email will request that you update your account information. Instead, call the store and ask if they’ve sent out that request.

Beware the tracking emails you get with updates about packages that you’re expecting. Remember that genuine FedEx and UPS emails won’t ask for any personal information from you. Don’t click links. Go directly to the website.

Be careful where you shop online. Check reviews to see what others have to say. Avoid those with few or low ratings.

Consider using Amazon for most of your online purchases and having a Prime membership. Amazon is good at protecting customers when it comes to you receiving damaged items or not receiving any items at all. A Prime membership now costs $139 a year, but it includes free shipping, free movies and videos, and more.

If you are scammed, report it. Call your bank and the police, and then notify the Elder Fraud Hotline at 833-372-8311.

A goal for 2023: Go inside your bank to do your transaction now and then. Yes, it’s easier to just use the drive-up window for deposits and cash withdrawals, but there is a lot to be said for letting them put a face to a name. Once they know you and your banking habits, they’re more able to quickly identify anything that might be wrong.

Super Care at Highland

On 11/11, I was at Highland (6W) for an ailing gallbladder and a drain insertion. After the procedure, an excruciating pain overcame me, with pain so severe I could not sit down, my breathing became labored, and sweat poured from my body. Nurse Kari realized I was in trouble and stayed with me for 2 different meds to be put in my IV until the pain was brought under control. It took a while, but she stayed to ensure that the pain issue was resolved. Justin patiently helped me learn the procedures for caring for the drain system at home and rehearsing with me to be successful. There were many fine nurses who are working diligently to ensure their patients get wonderful care! Many thanks to you all!

It’s Stealing

This is to the people who got far more change back when paying for their meal. The check was around $50. You gave the waitress/server $100. They returned and gave back almost the same as the food bill. Sure the waitress/ server gave the wrong change, mistakes happen, but keeping that money is nothing less than STEALING. The waitress/server had to pay that back from their own money. Keep in mind all the security cameras. Do the right thing and return the money. Then if you return again you would be welcomed for doing the RIGHT THING.

Helium is Limited

Do you know that helium is an element? That means it cannot be manufactured. When the world's supply of helium is depleted, there is no replacement. Did you know MRI machines require helium? Despite this crucial medical need and other industrial needs, people persist in buying helium balloons, thereby promoting the waste of this element. Once introduced into the air, helium cannot be reclaimed. Recently, a local memorial event was publicized on TV news where people released hundreds of helium filled balloons. Not only is this a waste of helium, but the balloons eventually come down, causing litter and a danger to wildlife. There are dozens of respectful ways to honor a death that are not polluting and wasteful.

Please take the time to observe your elderly parent’s capability of safe driving. If you are aware that they are no longer a safe driver, please be responsible and take the necessary steps to keep them off the road. It is YOUR responsibility as their adult children to keep them AND others safe. Their hurt feelings can be mended, a tragic car crash that kills them or others can't!
