PAW’S CORNER By Sam Mazzotta
New Dog Has Appetite for Doggie Door Flap DEAR PAWS CORNER: Help! Our recently adopted dog “Mollie,” a medium-sized mixed breed, thinks the doggie door flap leading outside to the backyard is delicious. Rather than using it to go in and out, she grabs the edge, chews and tugs on it. She growls when she does this. And she insists that we open the back door for her to go out. How do we fix this? -- Mary T., San Antonio DEAR MARY: You’ll need to address this in two steps. First, you need to figure out if Mollie is chewing due to boredom or attention-seeking, or if she has separation anxiety due to trauma in her past. If she’s only chewing on the door flap and nothing else in the house, maybe there’s an old memory surfacing. Second, you’ll need to repair or replace the damaged flap and train Mollie to go in and out of it confidently. Here are a few methods: 1. Divert and distract: As soon as Mollie starts trying to chew the door, call her name to stop her and then distract her away from the door with something else that interests her, like a favorite toy or a treat. 2. Behavior training at the same time each day: Note when Mollie is most likely to start chewing on the door. Then, conduct 10 minutes of behavior training in basic commands. 3. Train Mollie to use the flap correctly: Once she’s responding well to basic commands, add “going thru the flap” to her training. The AKC has a great tutorial here: www. akc.org/expert-advice/training/ dog-not-using-dog-door/ and this trainer’s video shows the clicker-treat method: www.youtube. com/watch?v=-R_k4_UHDeA If these methods don’t work, consider a professional trainer to help identify and work through Mollie’s fears or bad habits.

Turkey is often overshadow ed by other meats in refrigerated display cases, but it remains an excellent source of protein in a low -fat package. A typical 3.4- to four-ounce serving of skinless turkey breast (about the size of a deck of cards) contains around 30 grams of protein, providing about 65 percent of the average person’s recommended daily allotment of protein. Protein helps the body feel full and serves many essential functions in the body. Proteins regulate the entry of nutrients through cell w alls, help the body grow and help it to generate antibodies that fight against illness.

HIKING: Hiking is a fun activity that can be enjoyed nearly year-round, but it’s especially enjoyable in the fall. That’s because few things in nature are as captivating as a park or forest w hen the fall foliage is in full bloom. Early fall also boasts ideal temperatures for hiking, as the mercury likely w on’t rise enough or sink low enough to produce the kind of extreme temperatures that can compromise a hiker’s afternoon. Instead, fall temperatures tend to be mild and comfortable, allow ing hikers to fully enjoy their often beautiful surroundings. GENESEE VALLEY PENNY SAVER

RESILIENCE: A TIMELY THANKSGIVING TRADITION BY AMANDA DUDEK
T
he days have grown shorter. Browning leaves of red, orange, an gold rustle as they are and bl blown by breezes that bite, an the palest of frosts and appear overnight only to ap melt away at sunrise. me Throughout the country, families are preparing to fa gather over tables full of turkey, squash and stuffing, carrots and cranberry jelly, mashed potatoes and marshmallowed yams, plump biscuits, and pumpkin pies. Thanksgiving Day has arrived, wafting in on mouthwatering [turkey] wings. Amid an ongoing pandemic, it is time to find gratitude once again. This Thanksgiving, after “two weeks to flatten the curve” became nearly two years of riding the rollercoaster, there is a strain which can be felt. Almost two years of pandemic pressures, economic challenges, political conflicts, and semi-isolation have left their mark. Pandemic realities continue to shape our everyday lives; whether long-term or short-term remains to be seen. As the Thanksgiving holiday approaches, perhaps it is time to expand our focus from simple survival to include how we will survive. Thanksgiving Day itself is a holiday born and baptized in adversity. Its inception took place among those Pilgrims who survived their first year upon New England shores: only 51 of the Mayflower’s 102 passengers and about half the crew. It was proclaimed and celebrated on the heels of the American Revolution, when President George Washington declared Thursday, November 26th, 1789, to be “a Day of Publick Thanksgivin.” It rang out over the fierce battles of the American Civil War in 1863 when President Abraham Lincoln issued a declaration asking that all citizens observe “a day for National thanksgiving, praise, and prayer.” Finally, in 1941 as World War II raged on, Thanksgiving Day was established by the Congress of the United States as a national holiday to take place each year on the fourth Thursday of November.
During the Spanish Flu pandemic, New York City Health Commissioner Dr. Royal S. Copeland was faced with many difficult—and at times controversial—decisions while working in the interests of public health. In one of his letters, he wrote, “When the history of the influenza in America is written, you will not be ashamed of the care afforded to this metropolis.” Dr. Copeland’s ability to imagine a point after the pandemic in which the pandemic itself was in the past is both striking and key. Dr. Copeland understood that the Spanish Flu pandemic would become a chapter in American history…and it has. One day, whether one month, one year, or five years into the future, the Covid-19 pandemic will be a chapter in American history. Will we be able to look back and say that we are not ashamed of how we cared for each other, of how we treated others in restaurants and grocery stores, on “It is time to social media and within our families? The fact that this pandemic, which now expand our focus touches every aspect of our lives, will from simple ultimately be a part of our nation’s past survival to include can put so much into perspective.
how we will survive.”
Meanwhile, how can one “vaccinate” the spirit against current stresses? Gratitude. Giving thanks for the many blessings we still enjoy redirects our focus from the negative to the positive. A gratitude lifestyle has been found to reduce stress and anxiety, lower blood pressure and blood cortisol levels, increase feelings of well-being, and strengthen one’s ability to cope with challenging situations. This Thanksgiving season, consider taking some extra time to reflect on those blessings which mean the most to you. As you gather with family and friends, whether in person or virtually, share these blessings with each other and experience resilience through gratitude. After all, it’s a Thanksgiving tradition.
A common thread even more meaningful in the light of our present pandemic is the human resilience at each of these points in time as well as the decision to give thanks. Merriam-Webster has defined “resilience” as “the ability to become strong, healthy, or successful again after something bad happens.” If that doesn’t sound like a post-pandemic prescription, I don’t know what does! Merriam-Webster also defines “resilience” as “the ability of something to return to its original shape after it has been pulled, stretched, pressed, bent, etc.” For many, the last two years have left us feeling all of the above! Yet, it is this elasticity we so desperately need right now. It is one’s ability to endure extraordinary difficulties and challenges and yet remain the same sort of person they were before. Surviving this pandemic has been our necessary focus for so long; however, what can we do to ensure the “us” that survives is who we want to be?

SENIOR NEWS By Matilda Charles
CHECK OUT OUR FALL MOVE-IN SPECIALS!
Foreign Radio Stations and Language Lessons Here we are, still stuck mostly at home for another winter. Looking for ways to get out, even if it’s only mentally, I’ve discovered internet radio. It’s easy to get started. I went to Radio.net (with 33,000 stations around the world) and on a whim I typed in Ireland for a search function. That got me 15 stations in Ireland. I tried Canada, and that netted me 44 stations. Searching for France, I found 798 stations. I went with a French talk show aimed at seniors and have been able to test the free French lessons I’ve been taking online with Duolingo. If you get hooked on listening to the radio on your computer, you might consider investing in a good pair of speakers. I prefer the wired speakers, as opposed to struggling with Bluetooth connections, and a decent set can be had for less than $25. I’m still using a pair of 3-inch cube speakers with a very handy volume button that I purchased seven years ago. As for the free French lessons on Duolingo (duolingo.com), I’ve decided to start again at the beginning. There are four goal levels: casual, regular, serious and intense, meaning 5, 10, 15 or 20 minutes per day of instruction. Now that I’ve found that French talk show, not to mention all the other 797 French stations, I’m going to get more serious about learning French. On Radio.net there was an offer to get a free phone app at the App store or on Google Play, but you can just click the green arrow for connection. One thing to keep in mind about radio apps for phones or tablets -- they do use data. If you’re on a cellphone plan, make sure you are using Wi-Fi, or be aware of how much data you are using. You can always listen on the computer.

DEAR DR. ROACH: My wife has been diagnosed with atrial fibrillation. Doctors tried an electrical cardioversion, but it came back after a few days. She is taking metoprolol and Eliquis. We have read about the supplements red clover, turmeric, omega-3 and hawthorn. Should she discontinue the pharmaceuticals and take supplements instead? -- J.C. ANSWER: Please don’t do that, and let me explain why. Atrial fibrillation is an abnormal heart rhythm. The goal of treating it is first to relieve symptoms, such as fast heart rate and dizziness, and second, to reduce the risk of stroke. Blood clots can form inside the heart when the atria are fibrillating (a chaotic, non-coordinated muscle movement). Those clots can break off and go into the blood vessels of the brain, causing cell death and loss of function in that part of the brain. That’s a stroke. Your wife is taking metoprolol to slow the heart rate. Atrial fibrillation causes the ventricles to go too fast, causing a sensation of fast heart rate and palpitations. Metoprolol, a beta blocker, protects the heart from damage from a too-fast heart rate, in addition to relieving symptoms. Apixaban (Eliquis) is a powerful anticoagulant, reducing the risk of clot formation. Red clover is usually used in herbal medicine for its estrogen-like activities. Unfortunately, estrogens INCREASE clot risk, so this herbal medicine absolutely should not be used by someone at risk for clots. Sweet clover hay is the source of warfarin (Coumadin), another often-used anticoagulant in people with atrial fibrillation: This may be the source of confusion. However, warfarin needs to be dosed precisely, with frequent blood-level checks. Turmeric is an antioxidant that does have some mild anticoagulant properties. However, it is not remotely powerful enough to do the job of protecting your wife adequately from stroke. Omega-3 fish oils were once thought to reduce risk of atrial fibrillation; unfortunately, a 2013 study showed no benefit. Hawthorn has two potential benefits: To a slight extent, it acts as a beta blocker (like metoprolol) as well as an anticoagulant. However, no trials have proven its effectiveness. It may interfere with both her medicines. The metoprolol and Eliquis have much more safety data. ***

ORAL HYGIENE HABITS TO IMPROVE OVERALL HEALTH Practicing good oral hygiene is essential to keep teeth and gums healthy. Good home-care habits such as brushing and flossing twice a day and avoiding smoking and sugary drinks, as well as regular dental checkups and getting fluoride treatments will help sustain the overall health and structure of strong, natural teeth. However, oral health is about more than cavities and gum disease. Research shows there is an association between the health of a person’s mouth and overall health. Without timely treatment, tooth decay or gum problems lead to pain, selfconfidence issues, and tooth loss. These issues can then lead to malnutrition, speech problems, and other challenges socially and in work and school.

Your fungal toenails before SUMMER 2022 • Were you embarrassed this summer to wear sandals or go barefoot because of thick, yellow nails? • Now’s the time to get treatment. If left untreated, fungal toenails can: affect your immune system, cause recurring athlete’s foot, infected ingrown toenails (requiring surgery) and discomort wearing shoes, not to mention their unsightly appearance! • Patients with diabetes, poor circulation and numbness to their feet can develop more serious problems. • There are also safer new topical medications available to help cure fungal toenails. • A simple one-a-day pill for 3 months will usually cure fungal toenails within 6-9 months from the start of treatment. • Treatment now may result in clear, thinner nails for the year 2022. • Call now for an appointment to determine if you’re a candidate for this newer treatment.
We wish all of our customers a very Happy Thanksgiving! The Staff of Shanks Enterprises

GENERAL CONTRACTING
SERVE POTATO PANCAKES FOR HOLIDAY CELEBRATIONS
BENEFITS OF HIRING PROFESSIONAL CONTRACTORS Cost: Conventional wisdom suggests it’s less expensive to do something yourself than to hire someone else to do it for you, but that’s not necessarily true of home improvement projects. Labor costs typically account for a substantial amount of professionally contracted projects, but homeowners can cut those costs by volunteering to do some of the simpler tasks themselves. In addition, contractors often purchase materials at a much lower cost than individual homeowners because contractors buy in bulk. So while labor costs might be lower on DIY projects, the cost of materials can offset those savings.

HOME IMPROVEMENT
Refrigerators that inform their owners when it’s time to buy more eggs and thermostats that learn homeowners’ heating and cooling preferences may once have seemed like futuristic ideas straight out of a sci-fi movie. However, such products are no longer a dream but a reality. The term “smart home” refers to a residence that has appliances, HVAC, lighting, entertainment systems, security, and many more devices that communicate with one another. Such devices can be controlled remotely, according to SmartHomeUSA, an automation product retailer. Proponents of smart home technology say features can help people save money on utilities and conserve natural resources, all the while providing peace of mind to homeowners. In 2016, 80 million smart home devices were delivered worldwide. That marks a 64 percent increase from 2015, according to the research data firm IHS Markit. The smart home trend is only expected to grow in coming years. Although there’s interest in smart home technology, the industry remains fragmented. Consumers are trying to figure out which devices are simply fun and which provide practical benefits. Furthermore, the range of smart devices is expanding rapidly, making potential compatability issues a concern. Companies that plan to educate consumers further about the advantages of smart home features and are open to standardization may have the best chances of survival. Smart technology is taking over and is likely to continue changing the way people live and work.

THE HISTORY OF BLACK FRIDAY
Breakfast with
Shopping weekend evolves While Black Friday may have been the catalyst, in recent years shoppers have made the entire weekend of Black Friday a lucrative one for retailers. Many stores now open on Thanksgiving and extend sales through the entire weekend. Small Business Saturday and Sunday promote patronizing mom-and-pop stores. Cyber Monday emerged when online shopping became a popular way to grab deals, and it marks the close of the opening weekend of the holiday shopping season. In 2017, Black Friday weekend attracted 174 million shoppers who spent an average of $335.47, according to the NRF.

PEOPLE TO TIP AND GIFT THIS HOLIDAY SEASON Are you making a list and checking it twice? If so, don’t forget to add a few extra people to that list who are worthy of a gift this holiday season. Certainly friends and family are in mind for presents, but what about the service providers in your life? After a challenging year, people in the service industry might benefit from a holiday boost this year more than ever. Here’s who you may want to spread some cheer to this holiday season. Hairdressers and nail techs: It takes a lot of effort to look one’s best, and these individuals help people put their best selves forward. Consider tipping the amount you would normally spend on one visit. If you get your hair or nails done frequently and consider this person a friend, opt for a gift instead, such as a gift card to a nice restaurant or a pampering service for him or her. Babysitter or caregiver: This person is likely close with the family and may be deserving of more than a tip. Pick an age-appropriate gift you know this person will love. What about a coveted pair of Bluetooth-enabled earbuds or headphones? A gift card to a store you know this person frequents also can be fitting, or a year-long subscription to a streaming music or movie service. Landscapers: If the same person or crew services the lawn most of the time, a tip of $20 each is an appropriate amount. Teachers: Class parents may take up a collection for the teacher and offer one class gift. If your student is educated by multiple teachers and the school staff is top-notch, consider stocking the staff lounge with snacks and beverages or cater a lunch. Mail carrier: The mail is delivered six days of the week in any and all weather. Treat your mail carrier to a nice gift, but stick to the rules of the U.S. Postal Service. Mail carriers are not allowed to accept cash, checks or gift cards that can be used like credit cards. Stick to a gift of no more than $25. Cleaning person: You rely on this person to keep your home tidy and clean. He or she is deserving of the cost of one visit, according to Roseanne Thomas, author of “Excuse Me: The Survival Guide to Modern Business Etiquette.” Individuals can use their discretion concerning service providers in their lives who may be worthy of some extra cheer this holiday season.

DID YOU KNOW? Data from the United States Department of Justice indicates that partner violence accounted for 20 percent of all violent crime in the U.S. in 2018. The World Health Organization defines intimate partner violence as behavior within an intimate relationship that causes physical, sexual or psychological harm. Such violence can include acts of physical aggression, sexual coercion, psychological abuse, and controlling behaviors. Violence perpetrated by both current and former spouses and partners falls under the umbrella of intimate partner violence. Domestic violence is so prevalent that the National Network to End Domestic Violence reports that it fields more than 19,000 calls on a typical day. Anyone who is a victim of domestic violence or suspects a loved one or acquaintance is being abused is urged to call the National Domestic Violence Hotline at 1-800-799-7233 (SAFE) or 1-800-7873224 (TTY) right away. SMALL BUSINESS SATURDAY Shopping local is more important than ever this year! Unique, local goods await in deliberately uncrowded shops, which give you the space and time you need to browse. Shoppers can also choose the convenience of curbside pick-up for their community-friendly purchases, often with a “touchless” option. So, move over, Amazon! Local business owners, our friends and neighbors, are once again open and more convenient than ever.
community, compared to the zero to $0.01 returned with an online retailer.
Need a little more convincing? Check out these stats!
• Finally, local businesses are much more likely to be customers of local service providers, including accountants, wholesalers, farmers, lawyers, contractors, grocers, printers, plumbers, welders, electricians, and more!
• Each dollar you spend purchasing from a local, independent business returns at least $0.65 to your local
• Online big-box retailers sometimes force local companies out of business. In return, with fewer businesses to offset community costs, local tax burdens fall increasingly on community residents. • Displaced corporate businesses donate less than half as much per sales dollar to local non-profits, events and teams compared to small businesses.

Shopping local shops, farms and fairs is a great w ay to enjoy the fresh autumn air w hile supporting local businesses.
Shopping locally is a great w ay to benefit your community and, in many instances, your bottom line. W hen consumers shop locally, they help stimulate their local economies, creating jobs for their neighbors by helping local businesses grow and thrive. Shopping locally also saves shoppers long trips to the mall that can w aste expensive fuel, especially if consumers don’t find w hat they’re looking for. Shopping locally is especially important w hen the economy is struggling, as smaller businesses are not alw ays as capable of bearing the brunt of a recession as larger ones.

DID YOU KNOW? The demand for qualified, talented nurses figures to grow in the years to come. According to the U.S. Bureau of Labor Statistics, more than half a million nurses are expected to retire by 2022. Couple that with an existing nursing shortage, and the BLS projects a need for 1.1 million registered nurses in the near future. A shortage also figures to affect Canada, where the Canadian Nurses Association recently estimated that the country would be forced to confront a nursing shortage of roughly 60,000 nurses by 2022. Various factors are contributing to the nursing shortage in both countries, including an increasingly large aging population that will require more and more nurses to meet its health care needs. In the United States, the Affordable Care Act, which was passed in 2010, increased access to health care for millions of people across the country, thereby creating a greater need for nurses and other health care professionals. In addition, a greater emphasis on preventive care in many countries across the globe figures to compel more people to visit their physicians even when they’re otherwise feeling healthy. As more people prioritize preventive care, the need for more nurses will likely increase.
STATISTICS SHOW JUST HOW BIG SMALL BUSINESS IS No business is too small to be a small business. In fact, the U.S. Bureau of Labor Statistics noted that microbusinesses, which are defined as firms that employ between one and nine employees, accounted for 75 percent of all private-sector employers as recently as 2013.

SIMPLIFY COOKING FOR A CROWD THIS HOLIDAY SEASON Start early. If the big party is on Christmas Day, that does not mean hosts have to start cooking while everyone unwraps their presents. Hosts who are uncertain about what to cook can look for meals that can be prepared in advance so come the big day all they need to do is turn on the oven and let meals cook while the family spends time together.
The breath of autumn had already passed along the foliage, and a coming death had spread over its hues golden, brown and crimson—a strange gaiety of decay, which, with all its beauty, carries an idea of sadness into one’s heart. ~T.H.E., “The German’s Daughter,” 1840
SERVE UP WARMTH FOR THE HOLIDAYS People often associate holiday imbibing with eggnog, but many other beverages can be enjoyed this time of year. Wassail is a hot, mulled cider that was traditionally consumed while wassailing, a ritual of Medieval English Christmas and Twelfth Night celebrations. A warm beverage and caroling go hand-in-hand. Wassail can be made in many different ways, depending on one’s tastes. But cider is an integral ingredient in most wassail recipes. Home cocktail creators can use this basic recipe and modify as they see fit.

S E V RA Farmers Farmers are dealing with muddy conditions this year. That may mean more grain wagons and trucks being loaded on the road. Farmers try hard to work quickly and keep traffic moving but please, be patient and safe around farm equipment! Thank a farmer today. Good news! In response to “Where are we headed” here is some good news. The unemployment rate dropped to 4.6% and 531,000 jobs were added in October! The infrastructure bill passed by both Democrats and Republicans last week will be adding millions of new jobs, and we will all benefit from repaired roads and bridges, lead free water lines, increased broadband and improved train travel. All those new jobs are certainly good news! I’m not sure where you shop, but I’ve found everything I need at all the main grocery stores in our area, both national chains and local grocers. If you’re finding bare shelves, perhaps you should try a different store or try purchasing online. There is little anyone can do about gas prices which fluctuate up and down based on the price of crude oil which is controlled by the global market. We all received help from our federal government during the COVID-19 shutdown, and we are still receiving it. I see much to celebrate! Also, it’s 61 degrees with sunshine in mid-November! Smile! Kindness I would like to thank the lady who left money for my groceries at the Batavia Aldi on November 8th. Bless you for your kindness.
Our government; our republic A recent 60 Minutes interview with an Andrew Sullivan spotlighted a terrible trend that is so prevalent in our politics today. Absolutely no dialogue, no discussion, no discourse, just “You’re wrong because you don’t think like me (or worse, my party).” Republican leader Mitch McConnell vowed that everything the Democrats do, his party would be against. Wow! That is not what our democracy or this country was built on. We had one of the greatest nations on earth because of our republic and the open exchange of ideas and ideologies, but we should all be extremely concerned as to where our United States of America is heading. Our politicians could use a vaccine that would cure their cruel and bitter criticism! Tipping your server To the table of six that went out to eat last Wednesday after a day of fishing at [local spot]: Nice of you to eat, drink and have excellent service and leave nothing for a tip. Servers do not make minimum wage and depend on their tips. Times are tough, and often establishments can’t find enough help, so the servers are working their tails off to give their customers a good dining experience. Please remember that when you are going out to eat. If you can’t afford to leave a tip, then eat at home! Holding the country hostage To “What An Idiot:” Actually, it’s not Joe Manchin holding our country hostage. It’s those who want to bankrupt the USA who are holding us hostage. If you’re so worried about the children, let’s not leave generations to pay for this legislation which is full of “pork.” As I recall, Joe Biden took naps during the all-important COP26 meeting. As for which Joe should be impeached, look no further than the top dog.
What a blessing! Thank to the gentleman who paid for my oil change at the Monroe Muffler in Geneseo. I don't know your name, but your act of generosity brightened a tough day. I will be sure to pay it forward when I can!

TOP ROOFING TRENDS (NAPSI)—While replacing your roof can be expensive, it may pay to know more about increasingly popular stone-coated metal. There are five good reasons: 1. Durability: Combining the strength of steel with the design versatility of crushed stone, stone-coated metal roofing offers a better-looking way to protect your investment. Thanks to its engineering, stone-coated metal stands up to harsh conditions, including fire, wind, hail, hurricanes, seismic activity, and extreme cold and heat. 2. Curb Appeal: Stone-coated metal comes in a collection of eye-catching contours and colors. Panels can resemble Mediterranean tile, hand-split wood shake, heavyweight shingle or even old-world Italian tile. 3. Long-Term Value: Stone-coated metal offers greater longevity— three—plus times more—and lower maintenance needs than most other roofing products. “In an average lifetime, a homeowner will need to replace an asphalt roof at least three times as often for the same cost of one stonecoated metal roof,” explained Mark Gallant, Vice President of New Product Development at DECRA Metal Roofing, the original stone-coated steel roofing system, with over 60 years of research and practical experience. 4. Keep It Cool: Metal roofing can help cool your home through air space between the panels and the roof deck, reducing heat transfer. Some roofing colors can also reflect unwanted solar heat. 5. Save Money: A stone-coated metal roof could net you a discount on your homeowners insurance. Check with your insurance agent. Overall, a stone-coated metal roof can help your home look better, feel more comfortable while you live in it and be easier to sell when you want to. AUTOMOTIVE

By JoAnn Derson * Thanksgiving Tip: “Let one person be responsible for putting prep dishes, pots and pans in the dishwasher while another prepares the bird and side dishes for the table. You will be halfway done with dishes by the time the meal is over.” -- M.A. in Washington * “Bake stuffing in muffin tins for individual servings. Also, if your family is anything like mine, we love the crispy parts, and everyone will get some this way!” -- W.G. in Mississippi * “If you host a large family holiday gathering and serve a lot of side dishes, try this trick to them hot while waiting for other items to finish in the oven. Simply cover the bottom of a clean ice chest with a few trivets or a couple kitchen towels, and set casseroles and oven-cooked meats inside. Most people use a cooler to keep things cold, but the insulation works just as well to keep hot things hot ... at least for a little while.” -- M.E. in West Virginia
We are currently hiring various Day/Evening positions for St. Ann's Community at The Greens in LeRoy!
We Offer:
NOW HERE’S A TIP
* “An oldie but a goodie, and certainly considerate of dear old Mom: In my family, you come to Thanksgiving dinner with your own plastic containers for leftovers. If you don’t bring your own, you don’t go home with tomorrow’s lunch. Mom instituted this rule after the first Thanksgiving when all the kids had moved out. We practically cleaned her out of Tupperware!” -- E.Y. in New Mexico * Recipe substitution: If you need 1 teaspoon of pumpkin pie spice, use 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon nutmeg and 1/8 teaspoon ground cloves.

1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done. 2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1/2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce. 3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.
