In large pot over medium-high heat, heat oil. Add beef and garlic. Cook, gently stirring until meat is evenly browned. Season with salt and pepper. Add onion, carrots and parsnips. Cook 3-4 minutes. Stir in broth and bring to a boil. Reduce heat to low and simmer about 75 minutes, or until meat is tender. Stir in potatoes and simmer another 30 minutes. Add rosemary and leeks. Continue to simmer, uncovered, until potatoes are tender. To avoid potatoes falling apart, do not overcook. Serve hot and garnish with parsley, if desired. STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM Serves 4 • • • • • • • • • • 1.

8 1-inch-thick bread slices, cut from a country or peasant loaf 2 cups half-and-half 4 egg yolks 3 tablespoons light brown sugar 1 tablespoon vanilla extract, plus 1/2 teaspoon 1/2 teaspoon cinnamon 3 tablespoons unsalted butter 1/2 cup sour cream 1 tablespoon granulated sugar 1/3 cup strawberry jam or preserves (see note 2) Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). Add the

toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

Lentils with Spinach Serves 4 3/4 cup yellow lentils (toor dal), washed 3 large handfuls spinach, chopped 2 tablespoons sunflower oil, divided 1 teaspoon coriander seeds 3 dried red chiles 1/4 cup freshly grated coconut 1 teaspoon tamarind concentrate, diluted in 1/4 cup water 1/2 teaspoon turmeric Salt, to taste 1 medium onion, sliced

Put the lentils and 11/2 cups of hot water into a saucepan and bring to a boil. Reduce the heat and simmer until the lentils are mushy, about 35 minutes.

In the meantime, place the spinach in a pot along with a little hot water and heat it for a couple of minutes. Add it to the lentils.

In a separate pan, heat half the oil and fry the coriander seeds until they turn dark, then add the chiles and coconut. Reduce the heat and stir for a couple of minutes. Remove from the heat, let it cool slightly, then tip it into a blender along with the tamarind and a few tablespoons of water and blend until you get a fine paste.

Add this to the lentils, along with the turmeric and the salt.

Heat the remaining oil in a small saucepan and fry the onions until golden, then add them to the lentils. Reheat thoroughly and serve hot with rice.

CHRISTMAS TREES BRIGHTEN THE SEASON Decked out in tinsel, lights, ornaments, and garland, Christmas trees are enduring symbols of the holiday season that boast a rich history. Evergreen trees have been used to celebrate winter festivals for thousands of years, and eventually became associated with Christianity. Plants and trees that remained green all year held special meaning to ancient peoples, and were purported to keep away illness and evil spirits. Germans were credited with tying evergreen trees to Christmas celebrations. In the sixteenth century, devout Christians brought decorated trees into their homes. Martin Luther, the Protestant reformer, is believed to have first added lighted candles to these trees after he was inspired by twinkling stars in the night sky. While early Americans found Christmas trees an oddity, the tradition, brought over by German settlers, eventually caught on. Today, between 25 and 30 million natural Christmas trees are sold in the United States each year, states the National Christmas Tree Association. Trees are grown in all 50 states and Canada.

Steak and Egg Soft Shell Tacos (Family Features) 1 cup medium or mild Salsa 1 pound skirt steak Salt, to taste Pepper, to taste 4 tablespoons olive oil 6 eggs, beaten 1 (14.5-ounce) can diced new potatoes, drained w ell 1 1⁄2 cups shredded cheddar cheese 9 (6-inch) flour tortillas Cook steak on grill or saute pan. GREEK SALAD IN JARS Courtesy of Simply Recipes • Makes: 4 salads Salad Dressing: Salads: 3 tablespoons red wine vinegar 1/4 medium red onion, thinly sliced 1/4 teaspoon salt, plus additional, to taste 1 cup cherry tomatoes, halved pinch of black pepper, plus additional, to taste 1/2 large English cucumber, sliced 1/4 teaspoon dried oregano 1 yellow or orange bell pepper, cut into 1/2-inch pieces 1 teaspoon honey 3/4 cup California black ripe olives 5 tablespoons olive oil 1/2 cup (4 ounces) crumbled feta cheese 4 pint-size canning jars with lids 4 small handfuls fresh baby spinach or other dark, leafy greens 4 pita bread rounds, halved (optional) To prepare dressing: In small bowl, whisk together vinegar, salt, pepper, oregano and honey. Gradually whisk in oil. Taste. Add additional salt and pepper, if desired. Divide dressing between four pint jars. To assemble salads: Divide onion between four jars. Divide tomatoes, cucumbers, peppers, olives and feta cheese between jars. Pack remaining space with spinach, compressing leaves slightly. Secure lids and refrigerate up to two days. To serve: Empty salads into bowls and toss with dressing. Serve with pita bread.

It’s Lights, Camera, Action from Rochester to Buffalo By Amanda Dudek ost-Spider-man, a camera crew is once more filming in Western New York, but this time, it’s a little closer to home for some. Yesterday is Gone, featuring UFC Hall of Famer Ken Shamrock and Christopher Bihrle, and directed by Joe Black, is a sequel to Grace is Gone, which filmed in 2016 and starred Shamrock, by a local cast and crew throughout Western New York.

the script and the improv. “He is very flexible with what works best, even if it goes off script,” shared Brown. “Everyone feels comfortable working under his direction.” Christopher Bihrle who acts and is even a collaborating writer, is no exception: “Bihrle is attached to his character, Jericho,” observed Brown. “He can relate to Jericho’s motivation because he, too, has children. If he feels Jericho would do something differently, he does it.” Brown clarified that although the film centers around themes of family connections and loyalty, its setting of a dystopian, gang-ruled future following a globally devastating plague, some violence and gore and its revenge-driven narrative is likely unsuitable for younger viewers. Nevertheless, Brown stated the film’s overwhelming theme is about family.

“We are all out of Rochester,” said Co-Producer Ashley Brown. “We want to create exposure for the Rochester area. Our producers, Brad Vollmer, JB, and Christopher Bihrle, have done several movies here locally, and we just started getting a cast and crew together for Yesterday is Gone six months ago.” The team, who casts many local actors and uses local talent on the crew, is looking currently looking to hire additional cast and crew. “There are so many talented people locally, and we hope to collaborate with all of them,” shared Brown. “We were out in Brockport filming Grace is Gone. We have also filmed in Downtown Buffalo and some of its warehouses, on a farm outside of Rochester and recently, at Corcoran Soybean Farms in Caledonia. “The soybean farm was one of my favorite locations,” Brown said. “It was such an interesting atmosphere. There were sheep and a dog, and we had to work with this live location, sometimes incorporating these things into the movie itself ”. While some may find this challenging, Brown enjoys it. “It is actually a very fun process,” she stated. “We were at the soybean farm for two weekends. We just started filming in the beginning of October, and we can be on set for 10-12 days. Each time, we have to set up the scene and make sure the camera angles are perfect for the way we want to shoot.” Still, Brown claims it is when the actors arrive that all the magic happens. “They know their characters so well they are able to think like they do and know how each would react,” she explained. “If they feel something is more natural for their character in a given moment, they will go off script and improvise; that’s the fun part!” Behind the scenes of Sometimes, the improvisation Taylor Day, who plays works best, and it takes a keen eye Ellie, in Buffalo, NY with to know when that is. We are also offering sponsorships for screen, IMDB and social media credit.” As of now, the cameras are still rolling. “We are looking for additional local actors, actresses, extras, local businesses, a local junkyard and a local church in which to film movie scenes, and additional film crew, including audio help,” Brown stated. Does A-Fib Diagnosis Mean No More Steak? ---

DEAR DR. ROACH: I was diagnosed with atrial fibrillation a year ago. A week after that, I had an MRI that showed I’d had a ministroke and probably several others in the past. I love ribeye steak, and eat it maybe two or three times a year. Is this safe? -- R.A. ANSWER: Atrial fibrillation is a rhythm problem of the heart. The natural rhythm is lost, so the heartbeat becomes irregular. Because of the lack of normal movement in the heart, the blood can pool and form clots in the left atrium; these clots can travel downstream to lodge in a blood vessel. Clots can cut off the blood supply to the area where they lodge. It’s most critical when it happens in the brain, since if brain cells die, function is lost. A stroke is just a focal area of cell death in the brain. The size and location of the area in the brain where cell death occurs determines how significant the stroke is. Strokes can range from unnoticeable to devastating to fatal. Most people with atrial fibrillation take medication to reduce the risk of stroke. Eating poorly can increase the risk of heart disease and stroke as well, but most commonly this happens via a different mechanism. High amounts of saturated fat -- such as in ribeye steak, which is fattier than many cuts of beef -- increase the risk of damage to blood vessels through buildup of cholesterol plaques. These plaques cut off blood supply, and this causes a heart attack if the plaques are lodged in the arteries of the heart, a stroke if in the brain, and various problems if in other parts of the body. In people who have a history of stroke, it’s particularly important to take steps to reduce further risk. That means a discussion with your doctor about whether you are on the best treatment for atrial fibrillation and whether you have evidence of cholesterol plaques. Even if you don’t have any evidence of plaques, a healthy diet of mostly plants, with whole grains, nuts and seeds, some fatty fish (if you enjoy that) and sparse amounts of meats reduces many health risks. However, two or three steaks a year is not going to cause harm. The best data available shows that people who have 100 grams (just over 3 ounces) of red meat a week are at the lowest risk of developing blood vessel problems. It’s not clear that zero is better than that small amount. In any event, I am a firm believer that enjoying life is the goal. If having a steak a few times a year is truly enjoyable, the risk is small, and you should enjoy those meals without guilt. ***

DEAR DR. ROACH: What is the body’s rate of absorption for calcium? -- A. ANSWER: The textbook answer is 20% to 40%, but in reality, the answer is very complicated, as it depends on total body and intracellular calcium, vitamin D levels, presence of phosphates in food and other factors. The short answer is that it’s usually exactly what it needs to be when things work properly. If the body is deficient in calcium, then absorption is maximal, but still most calcium in food is not absorbed. ***

Make a household favorite more healthy Many beloved dishes might be enjoyed more often if they were only a little healthier. Author and former personal chef Michelle Dudash was once asked by a client if the she could make a healthier version of chicken parmesan. The result of that request is the following recipe for “Skinny Chicken Parmesan with Spinach,” which Dudash ultimately included in her book, “Clean Eating For Busy Families” (Fair Winds). The recipe was a hit with Dudash’s client and will surely be a hit at home cooks’ dinner tables as well.

Skinny Chicken Parmesan with Spinach Makes 6 servings For the sauce: 2 teaspoons extra-virgin olive oil 2 cloves garlic, sliced 1 28-ounce can whole tomatoes 1/4 teaspoon dried basil 1/4 teaspoon dried oregano 2 pinches salt 2 pinches freshly ground black pepper 1/2 teaspoon honey For the chicken: 3 tablespoons grated Parmesan cheese 2 tablespoons whole-wheat flour 1/2 teaspoon salt, divided 1/4 teaspoon freshly ground black pepper 1/4 teaspoon dried basil 11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch 2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided 4 cups baby spinach 1 teaspoon lemon juice 3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded) 6 cups cooked whole-grain thin spaghetti tossed in 2 teaspoons olive oil Preheat oven to 375 F and coat the bottom of a 9 x 13-inch pan with olive oil spray. To make the sauce: Heat a medium saucepan over medium heat. Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed. To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken. Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti.

Morris, daughters, Debra Barber of Florida and Teri Hodges of Kansas, brother, Dan (Gladys) Broadwell of Ionia, NY, 10 grandchildren and many great- and great-great grandchildren. There has been a massive growth in fatherhood involvement over decades—fathers now spend nearly triple the amount of time with their children than fathers did in the 1960s.2 What Dads are Already Doing Recent research suggests fathers are already very involved: • 90 percent consider their role as a dad to be rewarding day in and day out.3 • 78 percent have talked to their child’s teacher about progress in school.4 • 61 percent have attended a PTA or other school meeting.5 • Over half have helped with a class trip, special project or activity.6 • Over a third of fathers have helped with coaching their children’s sports teams.7 Even though fathers are largely more involved than in previous generations, dads today still want to be more engaged. Nearly half say they don’t spend enough time with their kids and want to do a better job at parenting.8 To help more fathers understand the importance of their role in their children’s lives, the U.S. Department of Health and Human Services’ Administration for Children and Families, the National Responsible Fatherhood Clearinghouse (@fatherhoodgov), and the Ad Council (@ adcouncil) have partnered on a national Responsible Fatherhood Campaign. “All dads should be supported and celebrated for their efforts on Father’s Day and year-round because we know how the story ends for the kids whose fathers show up for them consistently—these children and families thrive,” says Kenneth Braswell (@braswellkenneth), Director, National Responsible Fatherhood Clearinghouse and Fathers Incorporated. These impairments cannot be corrected by surgery or glasses. What’s more, too many are blind to the realization that much can be done to improve their quality of life. What Can Be Done In fact, low vision rehabilitation services help people make the most of the vision they have. The first step is to get an eye exam by an ophthalmologist, a physician who specializes in medical and surgical eye care. Who Can Help An ophthalmologist can determine the full extent of vision loss and exact location of blind spots. Either the ophthalmologist or a low vision specialist can then determine the best techniques and devices that can help you get around your individual challenges. Where EyeCare America Comes In If you’re concerned about the cost of the exam, the American Academy of Ophthalmology’s EyeCare America program may be able to help. This national public service program provides eye care through volunteer ophthalmologists for eligible seniors 65 and older; and those at increased risk for eye disease. As one EyeCare America patient said, “I’m a senior living on a low income. It had been 30 years since I’d had an eye exam. It was a true blessing to receive this service.” Low Vision Services Offer Hope The field of vision rehabilitation has advanced significantly over the years, offering more effective technologies and strategies. Today, ophthalmologists’ solutions range from simple, portable video magnifiers to enlarge text and objects to high-tech glasses with cameras that let people read text and see faces. In addition, there are many simple changes people can make on their own to help them live better: • Improve contrast. Contrasting colors can make it easier to accomplish household tasks and improve safety. Put dark place mats under white place settings, get area rugs that are a contrasting color with the floor and kitchen towels and cutting boards that contrast with the counter top. Use contrasting colored tape along the edges of rugs, stair steps and lamp shades. • Improve lighting. Every year, about three million older Americans are treated for injuries from falls, according to the Centers for Disease Control and Prevention. Many of these falls are caused by low vision. Add lighting to staircases and dark hallways. Remove rugs from hallways to prevent tripping. Task lighting in the kitchen can make food preparation safer and easier. • Reduce clutter and organize. A cluttered house is more difficult to navigate and can contribute to falls and frustration. When each item has a specific place and is identified with a high-contrast label, it’s easier to locate items needed for everyday living. • Embrace technology. Books on tape and personal voice-activated assistants, such as Google Home or Amazon’s Alexa, can be enormously helpful for people who can no longer see well enough to read, dial a phone or set a thermostat. With a simple voice command, these can phone dial a friend for you while the thermostat dials up the heat. While there isn’t one strategy or tool that works for every person, vision rehabilitation offers hope for many and can help people stay in their homes and continue doing the things they love. People don’t like to let others in front of them because they feel they should wait their turn patiently. Lately, I have been letting sometimes two people behind me, people with separate carts or with one or two items in their hands go first. It doesn’t hurt to be kind to someone. I have had

I had a gift card and wasn’t sure how to do it in self-checkout, so went through the regular line. I have decided to do unto others as I would have them do unto me. Remember the Golden Rule. Even if people don’t let me ahead of them, I continue to do so, knowing I did the right thing, and it is more commendable to do a kindness and something for someone that did not do the same.

HOW TO NEGOTIATE (AND GET) A SALARY INCREASE Salaries in the workplace have long been a hot-button issue for women. The differences in compensation for males and females continues to draw the attention of politicians and gender equality advocates alike. The United States Department of Labor noted that, in 2015, the median weekly earnings for fulltime male workers increased by 2.2 percent from the year prior. During that same period, female earnings increased by just 0.8 percent. That latest data marks the third consecutive quarter that the increase in males’ earnings doubled that of females. On average, women who work fulltime earn 81.1 cents for every dollar men earn. Women aware of that unfair gap in pay may feel helpless to address it with their bosses out of fear of being seen as unappreciative or selfish. In fact, addressing compensation makes many workers uncomfortable, regardless of their gender. According to a salary survey from PayScale, almost 60 percent of male and female workers do not ask for a raise. Negotiating salary increases requires finesse, timing and being informed. It also requires a certain measure of gumption.

ELSIE’S STEWED APPLES Serves 6 to 8 2 to 3 tablespoons unsalted butter 2 pounds apples, peeled, cored and cut into thick slices 1/2 cup honey, preferably sage honey 1/2 cup white wine Zest of 1 lemon Juice of 1 lemon Fresh sage sprigs for garnish 1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done. 2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1/2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce. 3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.
