DID YOU KNOW? Kwanzaa traces its origins to Africa and is celebrated across North America and other nations that have large populations that trace their heritage to Africa. The holiday begins on December 26 and continues until January 1. The main components of the celebration include family, community and culture. Kwanzaa was not designed to replace Christmas. In fact, many Kwanzaa celebrants also celebrate Christmas. The word “kwanzaa” is from the Swahili phrase “Matunda ya kwanza,” which means “first fruits.” Maulana Karenga, the professor who created the holiday in 1966, chose Swahili as the language associated with the holiday because it isn’t affiliated with a particular African region or tribe. At the heart of the holiday are seven principles that celebrants embrace and follow: unity, self-determination, collective responsibility, cooperative economics, purpose, creativity, and faith. Even though the holiday was created for African Americans, many other ethnic groups are inspired by the foundations of Kwanzaa and choose to join in the festivities.

Try something bold at brunch Popovers make a great addition to any brunch menu. Home cooks who want to get a little creative with their popovers can whip up a batch of “Popovers With Goat Cheese & Chile” from Linda Collister’s “Quick Breads” (Ryland, Peters & Small). Popovers With Goat Cheese & Chile Serves 4 to 6 1 cup milk (not fat-free) 1 cup unbleached all-purpose flour 1/4 teaspoon salt 1 tablespoon wheat germ 3 extra-large eggs 2 tablespoons unsalted butter, melted 5 to 6 ounces goat cheese 1 medium-hot chile (or to taste), finely chopped 12-cup muffin tin, or flexible molds set on a baking sheet, well buttered - Preheat the oven to 425 F. - Put the milk, flour, salt, wheat germ, eggs, and melted butter in a food processor and run the machine until you get a smooth batter. - Cut the goat cheese into 12 fairly even pieces. - Pour the batter into the cups in the muffin tin so each cup is about half full. Add a piece of cheese to each and a little of the chopped chile. - Bake immediately for 25 minutes. Then, without opening the door, turn down the heat to 350 F and bake for an additional 15 minutes. Lighting displays are one of the many things that help make the holiday season a special time of year. Often awe-inspiring, holiday lighting displays present a perfect opportunity for communities and individuals to showcase their festive sides. Safety should always be a priority when stringing holiday lights both inside and outside a home. The National Fire Protection Association notes that, between 2009 and 2014, fire departments in the United States responded to an average of 210 home fires that started with Christmas trees per year. Lighting displays strung on home exteriors also can pose safety risks if homeowners do not exercise caution. Following some simple safety procedures when decorating with lights can ensure everyone enjoys a safe and happy holiday season.

SHRIMP POTATO PATTIES Makes about 2 dozen 6 medium-size red potatoes, peeled and quartered 1/2 cup (1 stick) butter 1 cup finely chopped yellow onions 1/4 cup chopped celery 1/2 cup seeded and chopped red bell peppers 1/2 cup seeded and chopped green bell peppers 1/2 cup seeded and chopped yellow bell peppers 3/4 teaspoon salt 1/4 teaspoon cayenne 1/4 teaspoon freshly ground black pepper 1/4 teaspoon Tabasco brand pepper sauce 2 pounds medium-size shrimp, peeled, deveined and coarsely ground in a food processor 2 large eggs, well beaten 1/4 cup chopped freshly parsley leaves 1/2 cup peanut oil 1/2 cup all-purpose flour 1. In a large saucepan, boil the potatoes in lightly salted water to cover until fork tender. Remove from the heat and drain. Transfer them to a large mixing bowl and mash with a fork. Let cool. 2. Melt the butter over medium heat in a medium-size skillet. Add the onions, celery, bell peppers, salt, cayenne, black pepper, and Tabasco, and cook, stirring, until soft, about 5 minutes. Add the shrimp and cook, stirring until they turn pink, about 3 minutes. Remove from the heat and let cool for about 5 minutes. 3. Combine the shrimp mixture with the potato mixture. Add the eggs and parsley and mix well. Let cool for 10 minutes. 4. Heat the oil in a large skillet over medium heat. 5. Form the shrimp mixture into patties, using 1/4 to 1/2 cup of the mixture, depending on what size you desire, and pat lightly with the flour. One area drivers should pay particular attention to is their vehicles’ air filters. When operating at optimal capacity, an air filter improves fuel efficiency while ensuring vehicles accelerate smoothly without taxing the engine. But when air filters are clogged, fuel efficiency is reduced and emissions are increased, a 1-2 punch that costs motorists money and hurts the planet at the same time. Drivers can check their owners’ manuals to determine the recommended intervals to replace air filters, but the following are a handful of indicators that suggest it’s time to change them. Gas mileage: Unless you just purchased your vehicle, you likely know how many miles you can drive on a full tank of gas. If that gas mileage is suddenly slipping and you find yourself visiting the filling station more frequently, then it might be time to replace your air filter. Engine light: Drivers may be alerted to engine issues when the “Check engine” lights up on the vehicle’s dashboard. This light may come on to indicate a problem with the air filter, as clogged air filters reduce air flow to the engine, resulting in an imbalanced air-fuel mixture that adversely affects the engine. Starting and idling problems: Vehicles sometimes don’t start up as smoothly as they once did, and drivers may also notice vehicles are not idling smoothly. These symptoms may indicate misfiring spark plugs that are being polluted (and made less effective) by a dirty air filter that is reducing the flow of air to the engine. Acceleration difficulties: Automobiles that are operating at peak capacity accelerate quickly. But dirty, worn out air filters adversely affect acceleration. Drivers who notice that their cars are struggling to accelerate when stoplights turn green or on highways may need to replace their vehicles’ air filters. Dirty air filter: Perhaps the biggest indicator that an air filter needs to be replaced is the filter itself. If you cannot find the air filter on your own, consult your vehicle owner’s manual to determine where it is. Once you find the air filter, examine it in broad daylight. n the heart of Rochester, the Dr. Martin Luther King Jr. Park on Court Street undergoes a magical transformation every December, thanks to the tireless efforts of Kelli Marsh, Jenna Knauf, and Sean McCarthy. Their collective brainchild, Roc Holiday Village, has become a cherished tradition, filling the city with the warmth of Christmas cheer. However, behind the festive spectacle lies a deeply personal connection for Kelli Marsh, a Rochester native with a profound love for her community and a passion for creating lasting holiday memories. For Marsh, the roots of Roc Holiday Village trace back to her own childhood, where visits with family to Santa left an indelible mark. Her subsequent travels around the world exposed her to the grandeur of Christmas markets in France, Germany, and New York City, planting the seed for her desire to bring that same enchantment back to her hometown. For Marsh, Roc Holiday Village is not just an event; it’s a reflection of nostalgia and commitment to infuse the holiday spirit into the heart of Rochester. As a mother, Marsh hopes to create for her son the same magical experiences she treasured as a child. Her vision extends beyond personal nostalgia; she says she, Knauf, and McCarthy wanted to revitalize downtown Rochester during the winter season, filling the void left by the closure of Midtown Plaza. “Winter in Rochester is a special time of year when the community comes together to celebrate,” Marsh says. When not working on the annual Roc Holiday Village event, she and her family actively embrace the winter spirit, hitting the slopes for skiing and snowboarding. She explains, “We make a point of embracing all the seasons Rochester has to offer. The festive season in December is particularly magical. Rochester has something for everyone, from its renowned museums to exceptional performance arts experiences, making it an ideal winter destination.”

Among festival highlights, Marsh says her personal favorite is Santa’s Workshop. Transforming it into a magical and inclusive space, the workshop caters to visitors of all ages. Marsh emphasizes the significance of creating an event where elements are free, accessible, and diverse. “It’s a place where everyone feels welcome and happy,” she says, underlining the importance of representation accessibility, including a Black Santa and a Santa who communicates using American Sign Language. Marsh says, “What I love most is seeing the children’s faces light up with joy while they visit us. It’s a place where everyone feels welcome and happy!” As the coordinator of Roc Holiday Village, Marsh’s role extends far beyond the festive season. Describing the year-round planning process, she notes the challenges of scheduling, booking special events, ordering supplies, and creating bespoke keepsakes. However, with a dedicated team of staff, volunteers, and crucial sponsor support, the event comes to life, year after year. Roc Holiday Village coordinators aim to continue providing the same magical experiences visitors have come to love over the years. In its fifth year, the event now includes The Giving Cup: Hot Cocoa for a Cause, where representatives from local non-profits serve cocoa and coffee to raise money for their charities. Also featured this year is a private Igloo Inn that offers guests an exclusive space to overlook the ice rink. Roc Holiday Village partnered with Rohrbach Brewing Company this year for an exclusive beer flavor called Village Lager. Silent Discos on the outdoor ice rink and an expanded selection of free arcade games add to the activities to keep the family entertained and mesmerized. Ampullary Cancer Treatment Can Include Chemo Prior to Surgery ---

DEAR DR. ROACH: My husband was diagnosed with ampullary cancer. He has a tumor the size of a marble. We are told this is an aggressive cancer. My concern is that they are giving him chemotherapy before the Whipple surgery. Is this standard practice? -- P.T. ANSWER: The ampulla of Vater is an opening in the duodenum (the first segment of the small intestine), where the common bile duct releases bile and pancreatic enzymes to aid digestion. A cancer of the ampulla can originate from the pancreas, bile duct or duodenum, and these can all be aggressive cancers. The standard approach in people with the possibility to be cured is called a pan creaticoduodenectomy, otherwise known as the Whipple procedure. Although this is a complex surgery that used to have a high mortality rate, the risk of death from the procedure in specialized centers is now about 1%. Most people are familiar with getting chemotherapy after surgery to help remove any cancer cells that remain, a technique called “adjuvant therapy.” However, giving chemotherapy before surgery (“neoadjuvant chemotherapy”) has increasingly been used in people with ampullary cancer. The idea is to shrink the tumor to make it easier for the surgeon to remove completely. Chemotherapy may also kill any cancer cells that have already spread. The decision of when to use chemotherapy depends on the individual’s situation, so I can’t tell you which would be better in your husband’s case, as I lack both the details of his tumor and the expertise. I can confirm that giving chemotherapy prior to surgery is being used in regards to ampullary cancer. ***

Finding the right fitness facility is not necessarily as simple as signing up at the one nearest your home or office. Finding a facility that best suits you and your goals may require consideration of a host of factors. Personal goals: Fitness facilities are not all one and the same. Before shopping around for a facility, men and women should make a list of their fitness goals and what they’re looking for in a gym. Aspiring bodybuilders may want a facility with an array of free weights and strength training machines, while men and women whose ultimate goal is to lose weight may prefer facilities geared more toward cardiovascular training. The U.S. Department of Health and Human Services recommends adults participate in both strength and cardiovascular training, so facilities should provide both options. But some gyms may focus more heavily on strength training, while others may offer an extensive selection of cardiovascular equipment. Choose the facility that best aligns with your workout. Amenities: Amenities are another important factor to consider when choosing a fitness facility. Facilities that offer a host of amenities like steam rooms, hot tubs and saunas might provide more motivation to visit the gym for adults accustomed to inactive lifestyles. In addition, such amenities might aid in adults’ recoveries. Workout alternatives: Men and women who have never been very enthusiastic about traditional workouts may want to look for facilities that offer more options than weightlifting and cardiovascular training. Many gyms host classes like yoga, Zumba® and Pilates. Each of these are effective alternatives to more traditional workouts. When shopping around, look for facilities that offer classes for people of various skill levels, as exercises such as yoga can be very difficult for novices. Swimming is another effective alternative to traditional workouts, and many facilities have their own pools. Adults are more likely to exercise if they enjoy their workouts, so people who love to swim may want to limit their searches to facilities with swimming pools. Hours of operation: Hours of operation is another important factor that should not be overlooked. Working adults, especially those with families, may have very small windows of free time in which to exercise. Even if the most pristine and inviting facility won’t do men and women much good if it’s not open when they’re available to workout. Before shopping for a facility, men and women should write out a weekly schedule, making note of when they’ll be working out and making sure to find a facility that accommodates that schedule. Adults looking for a new fitness facility should consider a host of factors to ensure they find one that best suits their needs. Page 17

We continue to be amazed by all the individual donors who quietly fill our donation box, provide gifts and reach out, and our volunteers who serve our guests. The Lakeville Community Pantry is overwhelmed by your generosity. Thank you! My Closest Friend - “Joiny” Yep! My closet friend is not Johnny, Jimmy or Joey. In fact it is not human at all. The name is “Joiny” and I coined it for my iPhone. There is nobody or nothing else that is always so close to me, and let’s me connect or join the world, but my trusty Phone “Joiny”. “Joiny” provides me with information that I didn’t know on a daily basis. I learn so much from this non-human, and it is with me constantly at my age of 82. I ask myself how I survived without “Joiny”? While I did survive, I was never as well informed nor able to connect with so many people in so little time. Thanks, electronic progress.

Litter Bugs Big Time Months ago hundreds of posters for a lost dog were posted throughout [3 local towns] and probably other towns. That pet is either lost or found by now and yet the posters remain. The posters are now unreadable and turning into trash. One polite phone call to the contact was ignored. These poster-makers were asking for help in finding their pet, and yet violating the landscape for thousands of residents doesn’t bother them at all! Please come back and take out the trash! Selfishness is still selfishness. And littering is still against the law. [Local Hospital] Needs New Weekend Policies I drove my wife, age 81 to [local hospital] ER on a Thursday and I was able to park close by in the ER open parking lot. My wife was admitted later that day. On Friday, I drove to the hospital and was glad to see Valet parking close to the main entrance. I am 82 with a bad knee. Saturday I arrived at the same valet place and was told no valet on the weekend, and to park in the large garage building free. I had to walk that day and the next day, Sunday, a long way to the front entrance. I was in pain, with nobody to help as I also carried a heavy bag. I also found out from the front desk that two main restaurants were closed as well as the gift shop. Now I call what [local hospital] does on weekends not good. A grade C-. Finding the right time for the transition is equally important.

VOCATIONAL SCHOOLING CAN PAVE THE WAY TO HIGH-PAYING JOBS Many students believe that the next natural step after graduating from high school is to go off to college. Secondary education has become such a common transition that many parents begin saving for college tuition as soon as their children are born. Although college can be the next chapter in a student’s education, many teenagers still choose to attend trade school. Television personality Mike Rowe says the country is in the midst of a skilled labor shortage because workers lack the necessary training to fill the hundreds of thousands of available jobs. Lack of information may drive the notion that trade jobs are nothing more than a backup plan if college doesn’t pan out. However, by realizing that trade jobs, along with short-term vocational training, is a smart investment - and eventually a lucrative career choice - attitudes about trade schools and laborintensive jobs may shift. A great number of college graduates enter the workforce with degrees that may not help them land jobs. And these students typically carry thousands of dollars in tuition debt. Many college grads are underemployed and working in jobs that aren’t even in their fields of study. Career and technical schools help students develop specialized skills that make graduates immediately marketable in their chosen fields, and trade salaries can be very competitive.

I’m not sure what’s going on, so I won’t judge the situation. However, if you want him to stay, then for your dogs’ sake, you’ll have to take extra steps to stop this. Move the dog food to a cabinet or storage bin that you can lock. Take out just the amount of food for that day and portion it out for your dogs’ scheduled feeding times. Then remind your brother that the way you feed your dogs is non-negotiable. DEAR PAWS: I’m 11 years old and my cousins are staying with us for Christmas. They want to walk my dog, Reed, all the time.
