Build a charcoal fire with charcoal for indirect cooking by situating coals on only one side of grill, leaving other side void.
Cover entire brisket with beef bouillon base. In small bowl, mix dry rub ingredients and coat brisket with rub. When cooker reaches 225°F, place brisket on void side of grill and close lid. Cook for 4 hours, until internal temperature reaches 160-170°F.
Remove brisket from grill and place in shallow baking dish or disposable aluminum pan. Pour beef broth over brisket and cover pan with aluminum foil. Place baking dish in cooker for an additional 1-2 hours, until internal temperature reaches 185°F.
Remove baking dish from grill and let meat rest undisturbed for 20-30 minutes. Slice brisket across grain and serve.

APPLE PIE POPCORN
Yield: 10 cups
3 tablespoons melted butter
1 teaspoon vanilla extract
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
8 cups popped popcorn
1 cup dried apple chips, broken into large pieces
1/4 cup toffee bits
Heat oven to 300 F. Whisk melted butter with vanilla. Toss brown sugar with cinnamon, allspice and nutmeg.
Toss popcorn with butter mixture. Sprinkle evenly with brown sugar mixture. Stir. Transfer to baking sheet lined with parchment paper. Sprinkle apple chips and toffee bits over top. Bake 15 minutes, or until toffee bits start to melt. Cool before serving.

Medicines Usually Maintain Efficacy Past Their Expiration Dates
DEAR DR. ROACH: I recently tested positive for COVID using an expired home test, and I selfisolated for five days. I also realized every Tylenol, antihistamine, DayQuil, NyQuil and allergy pill that I had was past its expiration date. Some were only expired by a few months, but most were expired by two to four years. I guess I don’t get sick often. My question is: Before I dispose of these, how effective are they, and are any of them dangerous to use? -- K.L.
ANSWER: Drug manufacturers are required to make expiration dates, and they guarantee that the drugs are what they say they are and are effective until a certain date (at least if they are properly stored in a cool and dark area). This does not necessarily mean that they become ineffective or dangerous after expiring, and many drugs have been proven to maintain efficacy for years or decades after the printed expiration date.
A military study found that 90% of drugs are still effective 15 years after expiration. It is rare for a drug to become dangerous; however, the tetracycline class of antibiotics is one where toxicity has been found. In general, if a drug is a few months to a year past its expiration date, it is probably OK. (Liquid drugs, nitroglycerin and insulin are notable exceptions.)
But at some point, you have to ask yourself whether it is worth the small risk of the medicine being less effective, especially for inexpensive over-the-counter (OTC) drugs.

DID YOU KNOW? The first International Special Olympics Summer Games were held at Soldier Field in Chicago on July 20, 1968. The games were the brainchild of Eunice Kennedy Shriver, who first proposed the idea of nationwide sports contests for young people with intellectual disabilities in November of 1966. Kennedy Shriver had spent years advocating for young people with intellectual disabilities, even opening a summer camp for such youngsters at her home in suburban Washington, D.C. in June of 1962. 3/4 cups powdered sugar
1 teaspoon baking soda
3/4 cups butter or margarine, melted

3 cups pecan halves, divided
2 cups packed brown sugar
3 eggs
4 tablespoons butter or margarine, melted
2 teaspoons vanilla extract
1/4 teaspoon salt

We’ve all heard the old expression, “laughter is the best medicine.” Now the medical profession has confirmed the wisdom of this adage. We now know that anger, which increases the heartbeat and blood pressure, injures only the person who is angered.
Conversely, the ability to relax and to laugh easily does much to improve one’s health. So, let’s all learn to smile more. Let’s not let petty annoyances get us down. We may increase our life expectancy while making life for ourselves and those around us much more enjoyable.
Preheat oven to 350 F. For crust, combine flour, powdered sugar and baking soda in a batter bowl. Add butter; mix until crumbly. Lightly press crumb mixture over bottom of stoneware bar pan; roll lightly. Bake 15 minutes; remove from oven to a cooling rack.
Meanwhile for filling, reserve 1 cup of the pecans for garnish; chop remaining pecans. Combine chopped pecans, brown sugar, eggs, butter, vanilla, and salt; mix well. Pour filling over warm crust, spreading to edges of pan. Arrange remaining pecan halves over filling. Bake 17 to 19 minutes, or until filling is set in center. Remove from oven; cool completely.
Sprinkle with additional powdered sugar, if desired. Cut into 32 squares using a utility knife; cut each square in half diagonally.

Growing up in Sedona, Arizona, Robin Flanigan might have been surrounded by the breathtaking vistas and spiritual vortices that attract tourists from around the globe, but her childhood was far from idyllic. “Sedona is a gorgeous place to be from,” she reminisces, “but I disliked growing up there because there was nothing to do but get in trouble, and I definitely got in a lot of trouble. Makes for good stories, though!”

A couple of motorcyclers went out of their way to make a man, who was sitting alone, comfortable and happy by simply insisting on sitting with him to have conversation and a meal together.
