Many pet owners would never intentionally harm their companion animals. In fact, pet owners often go above and beyond to ensure their animals are well cared for and content. However, many well-meaning people may be inadvertently harming their pets with something they provide each and every day: food. Obesity is on the rise among pets. The Association for Pet Obesity Prevention says that 54 percent of dogs and 59 percent of cats in the United States were categorized as overweight or obese in 2016. That marks an increase from 52.5 percent and 58.3 percent, respectively, from four years ago. The majority of veterinarians think that pet obesity is a significant problem and nearly half of pet owners admit that their vets have discussed a pet’s ideal weight with them during pet health visits.

Although marijuana and hemp come from the same cannabis family, the plants are completely different in function, cultivation and application. Hemp is grown specifically for agricultural purposes and has been used for hundreds of years in textiles, body care products, paper products, industrial products and building materials. Most importantly, hemp is nonpsychoactive and cannot get your pet high.

A poem about saying goodbye to your four-legged friend
GRYFFIN That border collie stare, peering into my soul, crossing the lines of communication where no words are necessary-how well you knew me, tolerated me, like a besotted lover but ever more faithful. Over the years, as the house emptied, we formed an alliance you and I syncing our gaits, comfortable in our routine. We watched each other’s hair turn gray, more amused than alarmed, each night holding the inevitable at bay with our playtime antics: hide and go seek (you never did learn to check the front coat closet) and running the inside track in the living room-catch me if you can! --an amusing sight, I’m sure, for anyone passing by the picture window. Immortal youngsters we, puppies at heart, until that Monday morning when you and my world suddenly collapsed.
At the vets, you lay quietly, obediently, still the gentleman you always were, chin resting heavily on white paws (four, like socks), a tired sphinx awaiting the quick needle prick-too quick!-me, caressing and crooning, tears flowing, your betrayer, Judas with a kiss. Four quick huffs, your familiar warm breath gracing my hand, then nothing. I wait, unsure. Those eyes--still liquid, still warm, still lingering on my face. Border collie stare, piercing my soul. Did you know? DID YOU KNOW? That I did it for love?

What a wild winter sound,— wild and weird, up among the ghostly hills.... I get up in the middle of the night to hear it. It is refreshing to the ear, and one delights to know that such wild creatures are among us. At this season Nature makes the most of every throb of life that can withstand her severity. ~ John Burroughs, “The Snow-Walkers,” 1866
HELPING HEROES (NAPSI)—The Department of Defense reports that 1.3 million Americans serve in the military. If you or someone you care about is ever among them and sent overseas, you may be glad to learn about an organization that’s been assisting members of the U.S. armed forces, veterans and their families since the early 1900s: the American Red Cross. It provides emergency communication services, resiliency programs and morale activities. “We are committed to delivering critical services with a caring touch wherever and whenever they’re needed—24 hours a day, seven days a week, 365 days a year—for military members and their families at home and around the world,” said Koby Langley, senior vice president for Service to the Armed Forces at the Red Cross. Now, the organization is expanding support for U.S. military personnel in Eastern Europe with a new office in Romania. In addition to aiding military members and their families, the American Red Cross shelters, feeds and provides emotional support to disaster victims; supplies about 40 percent of the nation’s blood; teaches lifesaving skills; and provides humanitarian aid. A not-for-profit organization, it depends on volunteers and the generosity of the American public. Learn More: The free Hero Care App helps members of the military and veteran communities access emergency and other Red Cross services anywhere in the world. If You’re Feeling Down, You’re Not Alone. It’s That Time of Year
A Look Back…
(NAPS)—You may have heard the terms—winter blues, Seasonal Affective Disorder (SAD), Depressive Disorder with a Seasonal Pattern. No matter what you call it, with approximately 17.3 million adults in the U.S. experiencing seasonal depression, according to the National Institute of Mental Health, feeling gloomy this time of year isn’t uncommon—but it can be overcome.
MOMENTS IN TIME The History Channel
The Problem - Depressive Disorder with a Seasonal Pattern (formerly called SAD) can affect anyone of any age. While January and February are the typical peak months for the disorder, symptoms can persist through April, according to Mental Health America.
* On Feb. 21, 1970, national security adviser Henry Kissinger begins secret peace talks with North Vietnamese representative Le Duc Tho at a villa outside Paris. The North Vietnamese were demanding an unconditional U.S. withdrawal on a fixed date.
Doctor’s Advice - When that feeling of sadness persists for several weeks, it’s time to take action, according to Dr. Desreen Dudley, a licensed Clinical Psychologist and Behavioral Health Provider of Therapeutic Services for Teladoc Health. “If someone has a few days of feeling low, that’s normal and typically nothing to worry about. It’s when the feeling lingers for weeks and people lose interest in daily activities and suffer persistent negative thoughts, that lend a stronger basis for Depressive Disorder with a Seasonal Affective Pattern diagnosis,” she says. What To Watch For - Other symptoms she warns about are: • Change in appetite • Change in sleep pattern • Decreased energy • Decreased concentration • Feelings of worthlessness or guilt • An inability to think, concentrate, or finish tasks at work or school • Thinking about suicide, self-harm, or death
* On Feb. 20, 1998, American Tara Lipinski wins the gold medal in women’s figure skating at the Olympic Winter Games in Nagano, Japan, becoming the sport’s youngest gold medalist at age 15. * On Feb. 23, 1958, Formula One champion Juan Manuel Fangio of Argentina is kidnapped in Cuba by a group of Fidel Castro’s rebels. Fangio was taken from his Havana hotel the day before the Cuba Grand Prix and was released unharmed after the race ended.
Dr. Dudley contends individuals already struggling with depressive disorders are susceptible to SAD patterns. For older Americans, a Vitamin D deficiency can exacerbate low moods. On the other end of the spectrum, she has worked with newly independent college students who find SAD a heavy burden and say their new responsibilities of classes, exams and jobs can compound their depression. For some, they may be sleeping in more and further limiting their exposure to sunlight. What To Do - In addition to considering therapy, such as virtual care, which is available on your terms and from any location you choose, Dr. Dudley recommends: • Avoiding or cutting back on alcohol and other addictive substances • Eating healthfully—more lean proteins, fruits and vegetables, and eliminating sugar • Daily exercise at least 30 minute a day (walking counts) • Yoga or meditation • Learning about and trying light therapy • Regularly surrounding yourself with those you enjoy being around. When To Seek Help - According to a recent global study conducted by Ipsos MORI for Teladoc Health, individuals often recognize when they’re struggling, but even so, over a third of the respondents who have had one mental health episode admitted to not seeking professional help. The reason? For many, it’s often the difficulty in finding mental health care. “Thankfully, virtual care is becoming increasingly available as a source of convenient mental health care,” Dr. Dudley says. “It eliminates the traditional obstacles of in-person visits and has opened up access for anyone with a busy schedule, individuals who may have difficulty getting out of the house and students who may fear the stigma of walking into the campus mental health clinic.” GENESEE VALLEY PENNY SAVER

LIVING YOUR BEST LIFE AFTER 50 (NAPSI)—For many people, navigating life and love as they get older can be challenging. Adjusting to change, seeking a new partner, or simply breaking out of a rut may feel overwhelming. In the hilarious hit comedy “Book Club,” four mature women in different circumstances discover that you’re never too old to enjoy life or pursue love. That’s a message author and newspaper columnist Tom Blake agrees with wholeheartedly. Blake has written more than 4,000 articles and newsletters on the topic and offers this advice, which is reflected in the movie: 1. Give love a chance in later years: Put yourself out there; everyone deserves love. 2. Don’t worry about what others think: Do what’s right for you. 3. Loosen up: Don’t be too set in your ways. 4. Change your routine: Be open to new experiences. 5. Don’t let your children make decisions for you: No one knows you better than you. 6. Have fun: Don’t stop living before you stop living! In “Book Club,” legendary actresses Diane Keaton, Jane Fonda, Candice Bergen and Mary Steenburgen star respectively as a widow, single, divorcée and long-married woman who hilariously shake up their lives by diving into the infamous book “Fifty Shades of Grey.” From discovering new romance to rekindling old flames, the lifelong friends inspire each other to make their next chapter the best chapter. “’Book Club’ has wonderful messages about never giving up on life or love no matter how old you are,” said Blake. “Good things can happen when you venture out and meet new people.” To liven up your life, check out “Book Club” on DVD, Blu-ray or iTunes and go to www.FindingLoveAfter50.com for more tips from Blake. UPGRADE ATTIC INSULATION TO SAVE ON ENERGY EXPENSES (NAPSI)—One of the most cost-effective ways to make your home more comfortable year-round is to add insulation to your attic, including the attic trap or access door. By sealing uncontrolled air leaks, points out the U.S. Department of Energy, you can save 10 percent to 20 percent on your heating and cooling bills. Fortunately, this can be a relatively easy task. Why Improve Your Insulation An improperly insulated attic can be a preventable source of energy loss and unnecessary expense. Over time, insulation can settle or compact, which reduces its R-value. An insulating material’s resistance to conductive heat flow is measured or rated in terms of its thermal resistance or R-value— the higher the R-value, the greater the insulating effectiveness. A breezy attic may also result in drifts or shifts in your original insulation, leaving gaps where heat can escape. By topping up your attic insulation, you’ll increase the thermal level, reducing your overall energy usage and saving you money. How To Do It A simple way to do this is to topup the existing insulation in your attic. This is one project that homeowners can often tackle for themselves. Look for timesaving, easy-to-install products, such as stone wool batts, that are easy to work with and don’t require costly blower rentals, protective clothing or an investment in expensive equipment. You can easily add Rockwool ComfortBatt insulation on top of most existing insulation to increase R-value in an attic without having to do any remediation or removal first. The batts will remain stable and won’t shift after they are put in place, ensuring upgraded thermal protection. They’re also: • Easily cut • Noncombustible • Excellent for sound absorbency • Not likely to rot or promote growth of fungi or mildew • Water and moisture resistant. To apply the insulation, simply begin in one corner of the attic, open the bag and place the stone wool batts as needed to get a consistent layer throughout the attic. Make sure to cover spaces around ducts, wiring and piping, converting these awkward spaces into energy-saving areas. One of the advantages of stone wool batts is their compatibility with other insulation types, eliminating any need to remove existing product. Learn More: For further facts and tips on insulation, go to www.rockwool.com/products/comfortbatt. REAL ESTATE

Climate Smart Canandaigua: The First Year By Suzette van der Sterre, Climate Smart Canandaigua Chair
A
lthough well into the new year, looking back at 2019, Climate Smart Canandaigua has accomplished much in its first year.
Climate Smart Communities is a New York State program that helps local governments take action to reduce greenhouse gas emissions and adapt to a changing climate. Just over a year ago, City Council approved the formation of the Climate Smart Canandaigua Task Force to provide ongoing implementation of actions related to climate change and increase efforts to reduce our carbon footprint and achieve cost savings in the process; assess baseline conditions, establish goals, and develop plans and suggest policies to achieve goals; and educate the community and stakeholders on the value of the goals and plans. On April 23, 2019, the City of Canandaigua became the 23rd Climate Smart Certified Community, achieving a Bronze designation from a host of initiatives the City accomplished over the last ten years. These projects include the solar-power array, an electric vehicle charging station, and the backyard composting program. One substantial component of Climate Smart Canandaigua’s mission is to develop strong public outreach. To communicate directly with the community, Climate Smart Canandaigua maintains a webpage on the City’s website and has an active Facebook page. In April, Climate Smart Canandaigua and Wood Library co-hosted Earthapolooza, an all day, all-ages event promoting sustainability and environmental stewardship. In addition, the Task Force has hosted a table at the Canandaigua Farmers Market, marched in the 4th of July Parade, and participated in the Downtown Arts and Music Festival.
Climate Smart Canandaigua promotes environmental stewardship with the design of its 4th of July Parade float.
needed for us to set realistic goals and track our progress,” said Suzette van der Sterre, Climate Smart Canandaigua Chair. “Over the next several years, our job is to build on our successes and expand the initiatives necessary to ensure the City of Canandaigua is a leader in sustainability. We appreciate all of the support we have received from the community and look forward to many future successes.” On March 28th from 10:00am-1:00pm, Climate Smart Canandaigua will be hosting a Green Vendor Fair at the Primary/ Elementary School LINK Gym, where residents can learn more about the green products and services that are available locally.
The City of Canandaigu receives bronze-level Climate Smart Certified Community certification for past projects such as the solar-power array, an electric vehicle charging station, and the backyard composting program.
In October, Climate Smart Canandaigua partnered with Impact Earth to conduct a Municipal Solid Waste Audit on all seven municipal facilities. “With this data, we will work with City staff to identify educational opportunities and policy changes that will help increase the City’s landfill diversion rate,” said Rob Richardson, Assistant City Manager and Climate Smart Canandaigua Coordinator. “Overall, 2019 was an incredibly successful year for our Task Force and the City, and Climate Smart Canandaigua is eager to continue our work to ensure Canandaigua remains ‘The Chosen Spot.’” At the end of 2019, Climate Smart Canandaigua received a grant from the New York State Department of Environmental Conservation to complete a Municipal Operations Greenhouse Gas Inventory, a Community Greenhouse Gas Inventory, a Climate Vulnerability Assessment, and a Natural Resources Inventory. “With help from the NYSDEC grant, the Task Force will partner with Impact Earth to complete these foundational steps toward effective climate action. These assessments will provide the data

DEAR DR. ROACH: I have a relative with cancer who is about to begin multiple therapeutic interventions. My friends tell me that all cancer treatments are toxic and kill people instead of curing them, and that I should tell my relative to look into other forms of treatment. What do you suggest I do? -- K.C. ANSWER: There are hundreds of different types of cancer, and they vary widely in their capacity to grow and damage the individual, and in their response to treatment. For decades, this has meant mostly surgery, chemotherapy and radiation, but now includes newer treatments, including immune therapy. While not all cancers are curable in everybody, every year brings sometimes incremental, sometimes dramatic improvements in life expectancy for individual cancers. Some cancers that were rapidly fatal even a few years ago are now curable in most cases. Getting the right diagnosis quickly and getting to an expert in treating that cancer are critical to having the best chance of a good outcome. Treating some cancers remains difficult, and in many cases the treatments have significant side effects. Surgery scars may impair function, and chemotherapy can cause severe symptoms and may permanently affect body systems, as can radiation. It can be very hard on a family member observing these treatments, and if his or her loved one nevertheless succumbs eventually to the cancer, it is understandable to think the suffering the person went through was in vain. So, while I understand where your friends may be coming from, their well-meaning advice, based on bad experiences possibly a long time ago, might cause your relative with cancer to delay the potentially lifesaving treatments that are available now. A study published in July 2018 showed that people who use alternative medical treatments for cancer are less likely to be cured and have a shorter life expectancy. My advice is that you encourage your relative to find the most expert cancer treatment available. It’s up to your relative to accept the recommendations of the expert, but delaying the best available treatment in order to consider unproven therapies is likely to result in harm. ***

understand why buttermilk coffee creamer seems to get outdated faster than regular creamer. Does the butter in it have anything to do with this? -- C.H. ANSWER: Buttermilk doesn’t have butter in it. It was so named because it was originally made with what was left after separating butter from the unhomogenized cream that had been allowed to ferment with airborne bacteria, making it slightly acidic. Modern cultured buttermilk is made from pasteurized, homogenized milk, usually 1% to 2% fat, and inoculated with healthy bacteria, which makes lactic acid from the sugars in the milk. This acid makes buttermilk resistant to the unhealthy bacteria that causes spoilage. It also causes a slight sour taste, which some people like and others don’t. Commercial heavy cream, and coffee creamers made from heavy cream, have a very long shelf life largely because they are pasteurized at ultra-high temperatures, so they last even longer than buttermilk. The high fat content also retards bacteria growth. Both buttermilk-based and cream-based creamers will stay good longer than their expiration date. Your nose is very good for telling when it has gone bad. *** Dr. Roach regrets that he is unable to answer individual questions, but will incorporate them in the column whenever possible. TRY A TASTE OF HISPANIC HERITAGE (NAPSI)—National Hispanic Heritage Month is an opportunity to acknowledge the history, culture and contributions of the people of Mexico, the Caribbean, Central and South America, and Spain. One of the best ways to celebrate, many say, is with food. Making that easy is one restaurant chain that’s having a year-round love affair with Latin and Hispanic cuisine. Long known for its authentic Tex-Mex roots, Church’s Chicken®/Texas Chicken® has spent years championing the commemorative period—which runs from September15 to October 15th—on a global stage. The first Hispanic influence on the company’s menu was the jalapeño pepper—the very first side item ever offered at the restaurant chain. The peppers were added to the menu due to a San Antonio tradition of squeezing their juice over various foods to give them a south-of-theborder style “kick” of heat and spice. The restaurant’s sister brand, Texas Chicken, features the Mexicana Burger on menus worldwide. This tasty chicken burger is a fiesta of tastes and textures, with a juicy hand-battered chicken breast fillet that’s topped “taco style” with cheese, fresh lettuce, tomato, spicy mayo, crunchy tortilla chips and chopped onions. Tree lot owners beware, there is a local firewood “entrepreneur” who will clean up your tree lot after it has been logged. Make sure you go through and mark every tree to be culled (cut) before you let him cut. If you do not, he will cut up young prime log potential trees! FYI - Do not trust this local firewood entrepreneur!
In response to what about your son: It’s easy to try and shift the blame on the son, but let me tell you from experience, a woman, especially a wife, can pull a lot of weight in the household. I raised a very hardworking, respectful son, who loves us, his parents, very much. His wife caused so many problems between us that for a while, we didn’t see our son or

I looked at him like, “Are you really going to do this?” If he had manners, he would have seen that I don’t have a handicap sticker to hang up. I have permanent handicap plates. I am also a senior citizen but with manners, so I didn’t say anything. If they would have watched, they would have seen that I must use a cane or walker to get around or grab a cart if one is close by. I have had two major back surgeries and 18 shots so far in my back. For example, homeowners may want to give their yards an eastern feel, complete with a koi pond and decorative bridge or trellis. A formal English garden, however, may include manicured paths with stepping stones and ornate topiaries. Mixing too many styles together can take away from the overall appeal. The pros suggest looking at the overall plan of the design, even if all of the work can’t be completed at once. This way the eventual finished project wil be cohesive. Page 21

HOROSCOPE ARIES (March 21 to April 19) There could be some negative reaction to your tough stance when making a recent decision. But overall, your efforts result in well-earned recognition and all that can follow from that. TAURUS (April 20 to May 20) Your financial situation seems confusing, even for the fiscally savvy Bovine. Maybe it’s the conflicting advice you’re getting. Check it out before things get too tangled to unknot. GEMINI (May 21 to June 20) A relaxed attitude goes a long way in helping you deal with any of life’s irritants that might be popping up this week. You’re also a reassuring role model for others in the same situation. CANCER (June 21 to July 22) Your aspect favors creativity, which should persuade you to work on your artistic projects. If time is a problem, prioritize your commitments so that your work isn’t compromised. LEO (July 23 to August 22) Scrutinize all the job offers that interest you. Most are honest and worth considering. But a few might not be completely forthcoming about what the job is and what the salary and benefits are. VIRGO (August 23 to September 22) An unexpected snafu could delay the completion of a project you’re eager to finish. Find out what’s causing it, fix it, and if you need help, don’t be shy about asking for it. Good luck. LIBRA (September 23 to October 22) An idea that could be helpful to you comes from an unlikely source. Listen to it. Discuss it. If necessary, adjust it. If it looks as if it might work out quite well, go ahead and use it. SCORPIO (October 23 to November 21) Be careful about allowing someone to share a very personal secret with you. This could cause problems down the line with others who are involved in that person’s private life. SAGITTARIUS (November 22 to December 21) A cooling down of a relationship could be the result of neglect, unintended or not. To save it from icing over, you need to warm it up with a large dose of hot Sagittarius passion. CAPRICORN (December 22 to January 19) This is a good time to get involved with a number of family matters that involve money and other issues that might jeopardize the closeness between and among family members. AQUARIUS (January 20 to February 18) Cheer up. That difficult person who appears to be deliberately stalling your project might just need to be reassured of the value she or he brings to it. PISCES (February 19 to March 20) Good news! Expect to feel re-energized now that you’ve gone through that stressful energydepleting period involving a lot of changes. Now, go out there and show them what you can do. BORN THIS WEEK: You have a warm, giving nature that inspires many to follow your example. (c) 2020 King Features Synd., Inc.

(NAPSI)—With unemployment at a 50-year low, companies are eager to draw talent from a diverse pool of job seekers, and organizations have recognized the inherent value in a diverse workforce that includes qualified employees with disabilities. Yet, for many who rely on Social Security disability benefits for income and Medicare or Medicaid, work seems like a gamble. What most people don’t know is that there are free services and supports available for those who qualify. Social Security’s Ticket to Work (Ticket) program and other Work Incentives can help take the guesswork out of finding or returning to work. More than 20 Work Incentives are designed to help individuals who receive Social Security Disability Insurance (SSDI) or Supplemental Security Income (SSI) due to a disability, transition to the workplace without immediately losing those benefits. Because each person’s circumstances are different, job seekers are encouraged to consult a certified Benefits Counselor, who can help them make informed decisions about employment and benefits. Through the Ticket program, people ages 18 through 64 who receive SSDI or SSI can receive free job-related services and supports. Whether they work with their state’s Vocational Rehabilitation (VR) agency or with authorized service providers called Employment Networks (EN), people can find the resources they need to prepare for, find and maintain employment. For individuals such as Shirley, this can mean exploring work with confidence. When Shirley was diagnosed with narcolepsy, her doctors advised her stop working. “It was distressing to lose that sense of control over my life,” she recalls. “…[and] stressful making ends meet on an SSDI check.” It took several years to find effective treatment, but Shirley was determined to regain her well-being and that feeling of self-determination she had lost. “Narcolepsy is not something that just goes away,” she says. “But I’ve learned to make adjustments… [and] work around the disability.” Once she felt ready, Shirley attended a job fair where she learned about the Ticket program and connected with an EN. With their help and encouragement, Shirley found work in her State’s General Services Administration, where she helps ensure small businesses are represented on state contracts. “I’m grateful for the help I received through Ticket to Work,” she reflects. “It feels wonderful to have my independence back! I feel like I can rely on myself again.” To learn more, call the Ticket to Work Help Line at 1-866-968-7842 or 1-866-833-2967 (TTY). Or visit www.choosework.ssa.gov. Page 23

WORKING PARENTS CAN CREATE BETTER WORK-LIFE BALANCE
Administrative – Sales Administrator Transaction Analyst Advance your professional career and become part of The Dorschel Automotive Group. We would like to talk to you about joining our Sales Support Office. Our best employees have outstanding customer service skills from their retail work experience. They also have a desire to further their career by learning new skills in the areas of administrative tasks, duties and responsibilities.
Many working parents struggle to maintain a healthy balance between their responsibilities at work and their obligations to their families. An inability to maintain that healthy balance can have adverse effects on men and women’s careers as well as the relationships they have with their families. A 2015 survey of more than 2,000 adults commissioned by the workplace solution provider Workfront found that 38 percent of survey participants have missed life events because of a bad work-life balance. Access to technology that means work is never too far away might contribute to poor work-life balance, as 57 percent of respondents also acknowledged feeling that technology has ruined the definition of a family dinner. Finding a healthy balance between work and life at home may require a concerted effort on the part of working parents, but there are ways to successfully juggle a career and family.
Successful candidates should be able to work efficiently as part of a team in a fast paced and busy office setting. This position includes evening and weekends. HOW COUPLES CAN BENEFIT FROM HIRING LOCAL WEDDING VENDORS: Local vendors will be familiar with the area and possibly even the location where the wedding will be held. That can help couples avoid having to give directions, discuss venue protocols, and handle other tasks that must be worked out with non-local vendors. For example, local photographers familiar with a particular venue will know all of the best places to get shots, and some vendors may have preexisting relationships with venue representatives that could ensure wedding day operations go smoothly.
MORCILLA CON SETAS (BLOOD SAUSAGE WITH MUSHROOMS, SPRING PEAS AND MINT OIL) Serves 4 1 pound morcilla blood sausage 1 pound mushrooms, sliced 2 tablespoons olive oil 4 cloves garlic, slivered Salt and pepper to taste 2 tablespoons white wine 1 cup shelled spring peas 1 tablespoon chopped fresh mint 2 tablespoons mint oil Mint Oil 1/2 cup extra-virgin olive oil 1/2 cup chopped mint Pinch of salt Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas. In a cast-iron skillet, sear the morcilla in a dry pan for 2 minutes per side. Arrange the slices of morcilla down the middle of a platter. Surround with mushroom/pea mixture and drizzle the plate with the mint oil. For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve. Reserve extra mint oil for other uses, such as vinaigrette.
