8 oz gingersnap cookies 4 tbsp butter, melted, plus more for pan 3 8-oz packages cream cheese 1 ¼ c sugar 2 tsp ground ginger ½ tsp Chinese five-spice or pumpkin pie spice blend ¾ tsp salt 3 large eggs 3 c orange-fleshed sweetpotato puree ½ c sour cream 1 tsp vanilla extract 2 c whipped cream ¼ c chopped candied ginger Preheat oven to 350° F. Butter bottom and sides of 9-in springform pan. In food processor, pulse cookies until finely ground. Add butter and pulse until blended. Transfer to prepared pan and press into bottom. Bake 10 minutes. Set aside to cool. Use an electric mixer to combine cream cheese, sugar, ground ginger, spice blend and salt, beating until smooth. Beat in eggs. Add sweet potato puree, sour cream and vanilla, beating just until smooth. Pour mixture into cooled crust. Place springform pan inside larger pan and pour very hot tap water into larger pan, to reach 1 inch up springform pan. Bake until edges are set and center is slightly wobbly, 45 to 50 minutes. Remove springform pan from larger pan and cool to room temperature. Cover and refrigerate until thoroughly chilled. Fold candied ginger into whipped cream. Serve cheesecake with gingered whipped cream.

8 1-inch-thick bread slices, cut from a country or peasant loaf 2 cups half-and-half 4 egg yolks 3 tablespoons light brown sugar 1 tablespoon vanilla extract, plus 1/2 teaspoon 1/2 teaspoon cinnamon 3 tablespoons unsalted butter 1/2 cup sour cream 1 tablespoon granulated sugar 1/3 cup strawberry jam or preserves (see note 2) Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). Add the

toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

No Screening Test for Bile Duct Cancer

DEAR DR. ROACH: A family friend has just been diagnosed with bile duct cancer. She is a breast cancer survivor and is 75 years old. The tumor is said to be the size of a quarter, and it was discovered after she complained of heartburn symptoms. Are there screening tests that could have detected the condition before the heartburn symptoms? Are there things that she could have done to avoid the cancer? My family members are frightened and want to avoid her condition. -- Anon. ANSWER: Cholangiocarcinoma, cancer of the bile ducts, is a rare cancer that is, unfortunately, associated with a high mortality rate. There are no symptoms in most people until it is advanced. Since the cancer is in the bile ducts, the most common symptoms are caused by obstruction of the bile ducts: jaundice (yellow in skin/ eyes), generalized itching, dark urine and light-colored stools. Abdominal pain, fever and weight loss are other symptoms. Cholangiocarcinoma is not a disease that’s amenable for screening; it is rare in North America (it is more common in East Asia, where there are screening programs). Further, the available screening tests, such as blood tests and imaging studies, are not very sensitive, meaning the tests will miss cases. And they are not very specific -- a positive result on the screening test does not necessarily mean cancer. For these reasons, screening is not currently recommended for people at average risk, although it may be considered in people at high risk, such as people with primary sclerosing cholangitis, a chronic liver disease that puts people at high risk for cholangiocarcinoma. Other risk factors for cholangiocarcinoma are mostly beyond a person’s control: other liver diseases, parasites and genetic conditions. There is some evidence that obesity and diabetes increase the risk of this cancer; however, it does no good for you or your friend to look backward. Never blame the victim. She should concentrate on getting treated. I don’t have enough information to comment on her prognosis, but the fact that it was diagnosed early -- apparently before obstruction of the bile ducts -- and with a tumor only the size of a quarter, are favorable. Treatment may include surgery and chemotherapy (before or after surgery). ***

DEAR DR. ROACH: My 22-year-old daughter was diagnosed with overactive bladder at the end of June. She tried medications, but they made her sick. She was given a prescription for a physical therapist to work with her for her condition. Unfortunately, she has hit dead ends. How can she find a physical therapist to work with her? -- A.F. ANSWER: Physical therapists, like most other health care professionals, have individual skill sets. Pelvic-floor physical therapy requires a level of expertise that not all physical therapists have. I suspect she may have just been calling physical therapist offices near her and not finding a therapist with that expertise. A quick internet search found a good number of specially trained therapists in the area where she lives. There are many online reviews of physical therapists, just as there are reviews of doctors and dentists. IT’S NEVER TOO LATE TO ACHIEVE A HEALTHY WEIGHT (NAPSI)—People often think of the New Year as a time to set new goals for healthy eating and physical activity. But weight management requires ongoing effort, during the holidays and every day. That’s why the National Institute of Diabetes and Digestive and Kidney Diseases (NIDDK), part of the National Institutes of Health, is promoting simple tips and tools to help Americans start and maintain healthy habits. “Why wait to start improving your health when you can start today?” NIDDK Director Dr. Griffin P. Rodgers said in a statement. “It’s never too soon or too late to achieve a healthy weight.” Reaching and maintaining a healthy weight through healthy food choices and regular physical activity may help lower the risk of developing health problems associated with obesity, such as heart disease, kidney disease and Type 2 diabetes. About 40 percent of adults and 19 percent of children and teens in the United States have obesity, according to recent data from the Centers for Disease Control and Prevention. Continue or establish healthier eating habits, such as reducing the overall calories you consume and limiting your intake of foods and beverages with added sugars, fats and salt. Bringing healthier versions of your favorite dishes to holiday gatherings, and choosing smaller portions of holiday treats and alcohol, may help with managing weight during this time of year. The NIDDK recommends making physical activity a priority for the whole family. Choosing a set time for physical activity and sticking to it may help you manage stress, improve your mood, and give you the energy to tackle your busy schedule. If it’s too cold to walk or run outdoors, take your workout to your favorite mall or indoor sports field. Even if you’re pressed for time, doing some physical activity is better than skipping your workout and doing nothing. Another tip to consider during the holiday season and every day to improve health and manage weight is to reduce screen time and time spent sitting. Watching TV for more than two hours a day has been linked to overweight and obesity. Try creating a holiday-themed playlist and having a dance party. You can have fun dancing alone or with family or friends. To further encourage adults and youth to be active, the U.S. Department of Health and Human Services also recently released new Physical Activity Guidelines for Americans. The new Guidelines recommend that adults aim for at least 150 minutes of moderate-intensity activity each week, such as brisk walking or dancing. Youth ages six through 17 need one hour each day, and children ages three through six should be active throughout the day. By establishing and sticking to healthy habits, parents, caregivers and youth may achieve better health together during the holiday season and beyond. Protect Yourself From Social Security Scams (NAPS)—Calls and e-mails from scammers pretending to be government employees are widespread. Social Security phone scams are the #1 scam reported to the Federal Trade Commission. Chances are you, a friend, or a family member have received a call like this. You don’t have to be receiving benefits to become a victim. You may get a call saying there is a problem with your Social Security number or account. Everyone, regardless of age, income, and geography, is at risk. Scammers will try to scare and trick you into giving them your personal information or money. Is It A Scam? The best way to protect yourself and your money is to recognize a scam. Scammers use intimidating language and often offer a “solution” to fix what they say is a serious problem with your Social Security number or account. How can you tell when it’s a scam? Social Security will not: •

Say your Social Security number has been suspended.

• Promise a Social Security benefit approval or increase in exchange for information. •

Call to demand an immediate payment.

• Insist you pay a debt without the ability to appeal the amount you owe. • Require payment by retail gift card, pre-paid debit card, Internet currency, wire transfer, or by mailing cash. •

Scammers prey on your fears. The stories they tell you would scare anyone. No matter how horrible the story, if they do any of the above, it’s a scam. What Should You Do? If you receive a suspicious call, the safest thing for you to do is: 1.

3. Report the scam to the Social Security Administration’s Office of the Inspector General at https://oig.ssa.gov. And, if you receive such threats via e-mail, delete the e-mail and do not click on any links or download any attachments. Even if the e-mail or an attachment contains Social Security’s seal or names of real people, ignore it. Then, report the scam. Other Tips How about if Social Security needs to contact you? Generally, they will mail you a letter and only contact you by phone if you have requested a call or have ongoing business with them. Usually, Social Security will mail you a letter that contains telephone numbers for contacting them. You can also contact Social Security by calling 1-800-772-1213 or visiting SSA.gov. Scammers are always looking for the next way to trick someone. No matter how someone might try to scam you, learning the warning signs shared here can go a long way to protecting yourself and someone you care about from identify theft and financial loss. If you think you have been scammed, don’t be embarrassed. Upcycling: Transforming the ‘Old’ into a Better ‘New’ Turn old or discarded furniture, cabinets and doors into fresh new creations through “upcycling” -- high-end “recycling” that reduces trash at landfills by refurbishing or repurposing existing pieces, often enhancing the value. Furniture or “yard sale finds”: These can be stabilized and given a new look through stain/paint or distressing, but some may also lend themselves to transformation for other uses, such as turning a chest of drawers into bookshelves, a chair into a swing, a dresser into a seat, and more.

SPICY STEAK TAMPICO Makes 4 servings 4 beef tenderloin medallions (each 6 ounces and 3/4-inch thick) 2 tablespoons olive oil Seasoned salt and freshly ground black pepper 1 cup roasted green chile peppers (see below) 1 cup shredded Monterey Jack cheese 1. Brush steaks thoroughly with olive oil. Season with salt and pepper. 2. Place medallions on preheated grill, close lid and grill, turning once, until an instant-read thermometer registers 145 F for medium rare, 5 to 8 minutes per side. Transfer to a plate, tent with foil and let stand for 10 minutes. 3. Preheat broiler with rack 3 to 4 inches away from heat. Place steaks on individual ovenproof plates. Top each steak with equal amounts of chile and cheese. Broil until cheese melts, about 2 minutes. Serve immediately. To roast chiles: Preheat greased outdoor grill to medium or preheat an oven broiler. Place fresh chiles on outdoor grill or gas stovetop over medium heat or arrange on a baking sheet and place 2 to 3 inches away from heat under broiler. Grill or broil, turning often with tongs, until surfaces of skin are lightly charred and blistered. Immediately place peppers in a paper bag or an airtight container and close tightly. Let peppers cool for 12 to 15 minutes. Peel off charred skin and remove stems and seeds. Tear into strips or chop as needed according to the recipe. Wash your hands thoroughly after handling chiles. ast month, the FairportChamber of Perinton Commerce named the Genesee Valley Penny Saver as its very first Business of the Month in 2020. The Fairport-Perinton Chamber of Commerce, which serves businesses well beyond Fairport Village, into Perinton, Bushnell’s Basin and Egypt, exists to help businesses succeed in today’s fast-paced world. Just as the Chamber connects member and business acquaintances within these communities, the Genesee Valley Penny Saver helps to keep our communities connected. In 1948, our Penny Saver was founded in a garage by Roger and Jane Harrison, in Avon, New York. Their children have become active in the business with Steve Harrison as Publisher, and Kim Dougherty as Vice President. The business outgrew the garage space and now occupies four locations; however, Avon is still the hub and home to the largest of the four. It is in Avon that the papers are printed. Throughout the history of commerce, many a deal has been made at the dinner table. Business dinners are a great opportunity to lay a foundation for long, potentially lucrative professional relationships. Etiquette is important when hosting business dinners, as a breach of decorum can derail a relationship before it even begins. Professionals tasked with hosting business dinners can take the following tips to heart before sitting down to break bread with their colleagues. Choose a restaurant that can cater to various diets. Hosting a business dinner can be similar to hosting family during the holiday season, when hosts must cater to guests with various food allergies and dietary restrictions. Asking for such information in advance of a business dinner may seem intrusive to guests, so try to find a restaurant that offers a flexible menu capable of accommodating vegetarians, vegans and guests who might be gluten-free. Avoid restaurants that specialize in styles of cuisine that might be unhealthy or so extraordinary that guests might be hesitant to order anything from the menu. Confirm the reservation. Make the reservation well in advance of the date of the dinner, and don’t forget to confirm the reservation a week beforehand. Confirming a week beforehand gives hosts time to book another reservation should theirs have been canceled by mistake. Arrive at the restaurant before your guests. Hosts should arrive at the restaurant before their guests so they can address any potential issues in advance of the beginning of the dinner. Arriving early gives hosts time to ensure the table set aside for their party is not in a heavily trafficked area of the restaurant, such as adjacent to the kitchen or restroom. Hosts who arrive later than their guests may also give guests the mistaken impression that they are unimportant. Let guests order first. Once everyone has sat down at the table, hosts should allow guests to order first. Doing so saves guests who don’t want to eat that much the potential discomfort of sitting there while their hosts eat an appetizer and/or large entrée. If guests choose to abstain from alcohol, follow suit. If guests want to have a drink, hosts can limit their consumption to a single beverage. Don’t eat too quickly or too slowly. Hosts should try to keep pace with their guests in regard to how quickly or slowly they eat. Guests might feel uncomfortable if they finish first or feel pressured to eat quickly if their hosts finish first. Pay in advance. Business dinner guests do not expect to pay for their meals. While it’s widely accepted that hosts will pay, it can feel awkward to have the bill brought to the table. Upon arriving early, hosts can give their credit cards to the wait staff and ask that they be charged without having the bill brought to the table. If necessary, step away from the table during the meal to sign the bill and address any discrepancies. Business dinners have sparked many successful professional relationships, oftentimes thanks to hosts who took the time to ensure the dinners went off without a hitch.
