Turkey is a holiday dinner staple in many families. While many might scoff at the idea of altering their holiday turkey traditions, others may embrace changing things up, feeling that the joy of cooking often lies in experimentation. Those unafraid to try something new might want to cook up a new recipe this year.

community, compared to the zero to $0.01 returned with an online retailer.

Need a little more convincing? Check out these stats!

• Finally, local businesses are much more likely to be customers of local service providers, including accountants, wholesalers, farmers, lawyers, contractors, grocers, printers, plumbers, welders, electricians, and more!

• Each dollar you spend purchasing from a local, independent business returns at least $0.65 to your local

• Online big-box retailers sometimes force local companies out of business. In return, with fewer businesses to offset community costs, local tax burdens fall increasingly on community residents. • Displaced corporate businesses donate less than half as much per sales dollar to local non-profits, events and teams compared to small businesses.

SMALL BUSINESS SATURDAY + CYBER MONDAY DID YOU KNOW? According to the American Osteopathic Association, one in five teenagers will now experience some form of hearing loss. That rate is roughly 30 percent higher than it was 20 years ago. Though various factors have contributed to that increase, the AOA notes that many experts believe an increased use of headphones among teenagers is partly to blame. Listening to headphones at high volumes for extended periods of time can lead to lifelong hearing loss for children and teens. Parents can encourage children and teenagers to listen to music at reasonable levels when using their headphones, and one effective way to control volume without sacrificing sound is to use over-the-ear headphones instead of earbuds. The Cleveland Clinic notes that over-theear headphones are generally more effective than earbuds at cancelling outside noise. That allows over-the-ear headphone users to listen to music at lower volumes, which can significantly reduce their risk for noise-induced hearing loss.

SIMPLIFY COOKING FOR A CROWD THIS HOLIDAY SEASON Share some cooking duties. Another way to simplify cooking for a crowd is to invite guests to bring along a side dish or dessert. Guests who live nearby can make something in advance of the big meal, while hosts can hand over their kitchens to overnight guests who express a willingness to contribute their own homecooked dish to the party. Sharing the cooking duties gives hosts more time to connect with friends and family and serves as a great way to plan the menu in advance.

CREATIVE WAYS FOR SMALL TOWN RESIDENTS TO GIVE BACK Giving back to one’s community is a great way for men and women to make use of their talents and foster strong towns and cities. Volunteering opportunities abound in big cities, but small town residents may not have as many options as they look for ways to give back. Small town residents looking to give back may need to create their own opportunities if the options available to them do not suit their fancies. Contact local schools. Teachers, afterschool caregivers and coaches can always use some helping hands. Contact local schools to determine if there is any way to help out. Prospective volunteers might be able to read to young children, serve as assistant coaches for youngsters’ sports teams or even help tend to playing fields. Small town school budgets tend to be stretched thin, so chances are local educators will welcome citizens looking to pitch in with open arms. Start a program through your place of employment. Another way for small town residents to give back to their communities is to begin a mentoring or internship program through their places of employment. Once their employers give the go-ahead, men and women can begin working with local high schools and/or colleges to develop programs that encourage youngsters to gain professional experience that can benefit them as they apply to college or graduate school or prepare to begin their own careers. Start a volunteering group. Small town residents without much access to volunteering programs can organize groups through their offices or neighborhoods. Organize groups willing to pitch in with charities such as Habitat for Humanity®. Group leaders can arrange transportation to work sites for members of the group while working as liaisons between their community groups and the organizations they choose to work with. Work with area hospitals. Similar to school districts, many hospitals would struggle to meet their missions of providing compassionate care if not for the contributions of volunteers. Contact area hospitals to learn about volunteering. Some may need volunteers to read to sick children, while others may need help keeping elderly patients company. Small town residents may not have a wealth of volunteering opportunities at their disposal. But with a little creativity, such men and women can still give back to their communities. The World Health Organization defines intimate partner violence as behavior within an intimate relationship that causes physical, sexual or psychological harm. Such violence can include acts of physical aggression, sexual coercion, psychological abuse, and controlling behaviors. Violence perpetrated by both current and former spouses and partners falls under the umbrella of intimate partner violence. Domestic violence is so prevalent that the National Network to End Domestic Violence reports that it fields more than 19,000 calls on a typical day. Anyone who is a victim of domestic violence or suspects a loved one or acquaintance is being abused is urged to call the National Domestic Violence Hotline at 1-800-799-7233 (SAFE) or 1-800-7873224 (TTY) right away.

* “If you host a large family holiday gathering and serve a lot of side dishes, try this trick to them hot while waiting for other items to finish in the oven. Simply cover the bottom of a clean ice chest with a few trivets or a couple kitchen towels, and set casseroles and oven-cooked meats inside. Most people use a cooler to keep things cold, but the insulation works just as well to keep hot things hot ... at least for a little while.” -- M.E. in West Virginia * “An oldie but a goodie, and certainly considerate of dear old Mom: In my family, you come to Thanksgiving dinner with your own plastic containers for leftovers. If you don’t bring your own, you don’t go home with tomorrow’s lunch. Mom instituted this rule after the first Thanksgiving when all the kids had moved out. We practically cleaned her out of Tupperware!” -- E.Y. in New Mexico * Recipe substitution: If you need 1 teaspoon of pumpkin pie spice, use 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon nutmeg and 1/8 teaspoon ground cloves.

PAW’S CORNER By Sam Mazzotta

New Dog Has Appetite for Doggie Door Flap DEAR PAWS CORNER: Help! Our recently adopted dog “Mollie,” a medium-sized mixed breed, thinks the doggie door flap leading outside to the backyard is delicious. Rather than using it to go in and out, she grabs the edge, chews and tugs on it. She growls when she does this. And she insists that we open the back door for her to go out. How do we fix this? -- Mary T., San Antonio DEAR MARY: You’ll need to address this in two steps. First, you need to figure out if Mollie is chewing due to boredom or attention-seeking, or if she has separation anxiety due to trauma in her past. If she’s only chewing on the door flap and nothing else in the house, maybe there’s an old memory surfacing. Second, you’ll need to repair or replace the damaged flap and train Mollie to go in and out of it confidently. Here are a few methods: 1. Divert and distract: As soon as Mollie starts trying to chew the door, call her name to stop her and then distract her away from the door with something else that interests her, like a favorite toy or a treat. 2. Behavior training at the same time each day: Note when Mollie is most likely to start chewing on the door. Then, conduct 10 minutes of behavior training in basic commands. 3. Train Mollie to use the flap correctly: Once she’s responding well to basic commands, add “going thru the flap” to her training. The AKC has a great tutorial here: www. akc.org/expert-advice/training/ dog-not-using-dog-door/ and this trainer’s video shows the clicker-treat method: www.youtube. com/watch?v=-R_k4_UHDeA If these methods don’t work, consider a professional trainer to help identify and work through Mollie’s fears or bad habits. DID YOU KNOW? According to the National Autism Association, autism is a bio-neurological developmental disability that

Vice President

affects the normal development of the brain in various areas. Those areas include social interaction, communication skills and cognitive function. Autism generally appears before a child reaches his or her third birthday, and the NAA notes it is diagnosed four times as often in boys than it is in girls. Roughly 40 percent of children with autism do not speak, but parents whose children speak between the ages of 12 and 18 months should know that such youngsters can still ultimately be diagnosed with autism. In such instances, the NAA notes that children lose the words they previously learned. Incidences of autism appear to be on the rise, though the reasons for that remain unclear. According to a report from the Centers for Disease Control and Prevention, the prevalence of autism had risen to one in every 59 children by 2018. That’s twice as great as the rate in 2004, when the CDC reported one in 125 children were diagnosed with autism.

Season the chicken generously with salt and pepper to taste. In a large, deep skillet (big enough to hold all chicken fairly close together; or use two skillets), melt 3 tablespoons of the butter in 1 tablespoon of the olive oil over medium-high heat. Brown the chicken for about 8 minutes, turning so both sides get nicely browned. Transfer the chicken to a deep, broad, ovenproof casserole that can go from the oven to the table. Remove the skillet from the heat and pour off most of the fat.

GVPENNYSAVER.COM 1-866-812-8111

Preheat the oven to 375 F. Place the skillet back over medium heat and add the remaining 1 tablespoon butter and 1 tablespoon olive oil. Add the shallots and garlic and cook for about 1 minute, or until they become translucent. Add the vinegar and wine, and stir up the crispy bits that have stuck to the bottom of the pan. Allow the liquids to cook down a bit, stirring occasionally, for about 8 minutes. Whisk in the tomato paste and let the sauce simmer and condense, about 5 minutes more. Then add the chicken stock, a little at a time. Keep stirring to mix well. Pour the sauce over the chicken. Bake for 35 to 45 minutes until the chicken is very tender, turning the chicken pieces halfway through, so that both sides are infused with the sauce. Remove one thigh and cut into it to make sure it is done and no red juices flow from the cut.

RESILIENCE: A TIMELY THANKSGIVING TRADITION BY AMANDA DUDEK

T

he days have grown shorter. Browning leaves of red, orange, and an gold rustle as they are bl blown by breezes that bite, and an the palest of frosts appear ap overnight only to melt away at sunrise. me Throughout the country, families are preparing to fa gather over tables full of turkey, squash and stuffing, carrots and cranberry jelly, mashed potatoes and marshmallowed yams, plump biscuits, and pumpkin pies. Thanksgiving Day has arrived, wafting in on mouthwatering [turkey] wings. Amid an ongoing pandemic, it is time to find gratitude once again. This Thanksgiving, after “two weeks to flatten the curve” became nearly two years of riding the rollercoaster, there is a strain which can be felt. Almost two years of pandemic pressures, economic challenges, political conflicts, and semi-isolation have left their mark. Pandemic realities continue to shape our everyday lives; whether long-term or short-term remains to be seen. As the Thanksgiving holiday approaches, perhaps it is time to expand our focus from simple survival to include how we will survive. Thanksgiving Day itself is a holiday born and baptized in adversity. Its inception took place among those Pilgrims who survived their first year upon New England shores: only 51 of the Mayflower’s 102 passengers and about half the crew. It was proclaimed and celebrated on the heels of the American Revolution, when President George Washington declared Thursday, November 26th, 1789, to be “a Day of Publick Thanksgivin.” It rang out over the fierce battles of the American Civil War in 1863 when President Abraham Lincoln issued a declaration asking that all citizens observe “a day for National thanksgiving, praise, and prayer.” Finally, in 1941 as World War II raged on, Thanksgiving Day was established by the Congress of the United States as a national holiday to take place each year on the fourth Thursday of November.

During the Spanish Flu pandemic, New York City Health Commissioner Dr. Royal S. Copeland was faced with many difficult—and at times controversial—decisions while working in the interests of public health. In one of his letters, he wrote, “When the history of the influenza in America is written, you will not be ashamed of the care afforded to this metropolis.” Dr. Copeland’s ability to imagine a point after the pandemic in which the pandemic itself was in the past is both striking and key. Dr. Copeland understood that the Spanish Flu pandemic would become a chapter in American history…and it has. One day, whether one month, one year, or five years into the future, the Covid-19 pandemic will be a chapter in American history. Will we be able to look back and say that we are not ashamed of how we cared for each other, of how we treated others in restaurants and grocery stores, on “It is time to social media and within our families? The fact that this pandemic, which now expand our focus touches every aspect of our lives, will from simple ultimately be a part of our nation’s past survival to include can put so much into perspective.

how we will survive.”

Meanwhile, how can one “vaccinate” the spirit against current stresses? Gratitude. Giving thanks for the many blessings we still enjoy redirects our focus from the negative to the positive. A gratitude lifestyle has been found to reduce stress and anxiety, lower blood pressure and blood cortisol levels, increase feelings of well-being, and strengthen one’s ability to cope with challenging situations. This Thanksgiving season, consider taking some extra time to reflect on those blessings which mean the most to you. As you gather with family and friends, whether in person or virtually, share these blessings with each other and experience resilience through gratitude. After all, it’s a Thanksgiving tradition.

A common thread even more meaningful in the light of our present pandemic is the human resilience at each of these points in time as well as the decision to give thanks. Merriam-Webster has defined “resilience” as “the ability to become strong, healthy, or successful again after something bad happens.” If that doesn’t sound like a post-pandemic prescription, I don’t know what does! Merriam-Webster also defines “resilience” as “the ability of something to return to its original shape after it has been pulled, stretched, pressed, bent, etc.” For many, the last two years have left us feeling all of the above! Yet, it is this elasticity we so desperately need right now. It is one’s ability to endure extraordinary difficulties and challenges and yet remain the same sort of person they were before. Surviving this pandemic has been our necessary focus for so long; however, what can we do to ensure the “us” that survives is who we want to be?

The Problem With Playing Pharmacist

Discover the Human Touch in Hearing Technology

Sue DeBruyne, Au.D. Doctor of Audiology

---

Lakeville

DEAR DR. ROACH: My wife has been diagnosed with atrial fibrillation. Doctors tried an electrical cardioversion, but it came back after a few days. She is taking metoprolol and Eliquis. We have read about the supplements red clover, turmeric, omega-3 and hawthorn. Should she discontinue the pharmaceuticals and take supplements instead? -- J.C. ANSWER: Please don’t do that, and let me explain why. Atrial fibrillation is an abnormal heart rhythm. The goal of treating it is first to relieve symptoms, such as fast heart rate and dizziness, and second, to reduce the risk of stroke. Blood clots can form inside the heart when the atria are fibrillating (a chaotic, non-coordinated muscle movement). Those clots can break off and go into the blood vessels of the brain, causing cell death and loss of function in that part of the brain. That’s a stroke. Your wife is taking metoprolol to slow the heart rate. Atrial fibrillation causes the ventricles to go too fast, causing a sensation of fast heart rate and palpitations. Metoprolol, a beta blocker, protects the heart from damage from a too-fast heart rate, in addition to relieving symptoms. Apixaban (Eliquis) is a powerful anticoagulant, reducing the risk of clot formation. Red clover is usually used in herbal medicine for its estrogen-like activities. Unfortunately, estrogens INCREASE clot risk, so this herbal medicine absolutely should not be used by someone at risk for clots. Sweet clover hay is the source of warfarin (Coumadin), another often-used anticoagulant in people with atrial fibrillation: This may be the source of confusion. However, warfarin needs to be dosed precisely, with frequent blood-level checks. Turmeric is an antioxidant that does have some mild anticoagulant properties. However, it is not remotely powerful enough to do the job of protecting your wife adequately from stroke. Omega-3 fish oils were once thought to reduce risk of atrial fibrillation; unfortunately, a 2013 study showed no benefit. Hawthorn has two potential benefits: To a slight extent, it acts as a beta blocker (like metoprolol) as well as an anticoagulant. However, no trials have proven its effectiveness. It may interfere with both her medicines. The metoprolol and Eliquis have much more safety data.

Inflammation can affect anyone, and those who have battled it likely have nothing positive to say. But while few people may associate inflammation with something good, inflammation is actually a process by which the body’s white blood cells and the substances those cells produce protect the body from infection at the hands of bacteria, viruses and other foreign organisms. While inflammation is protective by nature, sometimes an inflammatory response is triggered by mistake. When that happens, the body’s immune system, which is designed to protect the body, begins to damage its own tissues. The resulting symptoms of this faulty immune system response may include joint pain, joint stiffness, loss of function in the joints, and swelling of the joints. None of those symptoms are comfortable, and people suffering from them may be on the lookout for ways to alleviate their pain and suffering. While anyone battling persistent inflammation should speak with their physicians to explore their treatment options, a preliminary search of how to best treat inflammation will no doubt turn up information about heat therapy and cold therapy.

HOW TO AVOID THE COLD COMFORT OF A DRAFTY HOUSE For those who live in older homes, the transition to colder weather can be extra disheartening, as the vision of expensive heating bills, chilly rooms and drafty windows dance in their heads. However, it’s easy to change the outlook from cold to cozy with a few simple DIY solutions. The most effective way to improve the comfort level in your home is to properly insulate. Insulation can be inadequate in older homes. Over time, it can settle and compact, creating gaps. Topping up attic insulation will help keep the warm air in, reducing heating bills and preventing stress on your furnace. For easy installation, homeowners and professionals alike recommend a stone wool batt insulation. For attics, aim for an r-value of R-50 or a depth of 16 inches. A little preparation can go a long way to keep the cold at bay. Seal out drafts by replacing worn weatherstripping and caulking along windows, doors, baseboards, and trim. For other ways to beat the cold, consider inexpensive window insulation kits along with thicker drapes, and don’t forget to reverse ceiling fans to push warm air back down.

ROOMS CAN SERVE DOUBLE DUTY In 2015, 24 percent of employed people in the United States did some or all of their work at home, says the Bureau of Labor Statistics. Bringing work home means men and women will need a space to work. In tight quarters, bedrooms may be the only available area. An armoirestyle desk will blend in with the decor and can hide paperwork and electronics behind doors. Otherwise, a makeup vanity can serve the dual purpose of providing a place to get ready for a night out and a ready space to house a laptop during the day. Page 17

HOW TO CONSERVE WATER AT HOME Wash your car at a commercial car wash. Some vehicle owners may enjoy washing their cars at home in their driveways. But getting a car washed at a professional car wash can conserve substantial amounts of water. That’s because many new car wash facilities employ water reclamation systems that reuse water. According to San Diego Car Care, a professional car wash that employs water reclamation technology, each car washed at their facility consumes just nine to 15 gallons of water per wash. That’s a considerable savings compared to washing at home, as the State of Maryland’s Department of the Environment estimates that 100 gallons of water are consumed during a single 10-minute car wash at home using a garden hose.

STRANGE BUT TRUE By Lucie Winborne * The maddening but addictive Rubik’s Cube was created by accident. Professor of architecture Erno Rubik built a twistable box with colorful rows of labels on each side in an attempt to design blocks that could move without collapsing the entire structure. After rotating a few rows and mixing up the colors, the real challenge began: realigning the hues! It took Rubik about a month to restore his cube to its original condition.

STRANGE BUT TRUE By Lucie Winborne * In the early 1800s, a railroad marketer set up a head-on collision between two trains as a publicity stunt. Some 40,000 people came to watch, and the resulting boiler explosion killed three spectators. But ticket sales soared, and railways everywhere staged train crashes right up until the Great Depression. * One of the weirdest scandals in sports history occurred in 1973 when New York Yankees players Fritz Peterson and Mike Kekich decided to trade families -- wives, children, even dogs! After the couples became close friends, Peterson fell in love with Kekich’s wife and vice versa. “It’s a love story. It wasn’t anything dirty,” Peterson told a reporter in 2013. Peterson is still married to the former Mrs. Kekich, but Kekich and the former Mrs. Peterson later split up. * Pepper spray and tear gas are technically classified as chemical weapons and thus are forbidden in warfare. * The human body gives off enough heat in 30 minutes to bring a gallon of water to a boil. SENIOR NEWS By Matilda Charles

Foreign Radio Stations and Language Lessons Here we are, still stuck mostly at home for another winter. Looking for ways to get out, even if it’s only mentally, I’ve discovered internet radio. It’s easy to get started. I went to Radio.net (with 33,000 stations around the world) and on a whim I typed in Ireland for a search function. That got me 15 stations in Ireland. I tried Canada, and that netted me 44 stations. Searching for France, I found 798 stations. I went with a French talk show aimed at seniors and have been able to test the free French lessons I’ve been taking online with Duolingo. If you get hooked on listening to the radio on your computer, you might consider investing in a good pair of speakers. I prefer the wired speakers, as opposed to struggling with Bluetooth connections, and a decent set can be had for less than $25. I’m still using a pair of 3-inch cube speakers with a very handy volume button that I purchased seven years ago. As for the free French lessons on Duolingo (duolingo.com), I’ve decided to start again at the beginning. There are four goal levels: casual, regular, serious and intense, meaning 5, 10, 15 or 20 minutes per day of instruction. Now that I’ve found that French talk show, not to mention all the other 797 French stations, I’m going to get more serious about learning French. On Radio.net there was an offer to get a free phone app at the App store or on Google Play, but you can just click the green arrow for connection. One thing to keep in mind about radio apps for phones or tablets -- they do use data. If you’re on a cellphone plan, make sure you are using Wi-Fi, or be aware of how much data you are using. You can always listen on the computer. (c) 2021 King Features Synd., Inc.

S E V RA Farmers Farmers are dealing with muddy conditions this year. That may mean more grain wagons and trucks being loaded on the road. Farmers try hard to work quickly and keep traffic moving but please, be patient and safe around farm equipment! Thank a farmer today. Good news! In response to “Where are we headed” here is some good news. The unemployment rate dropped to 4.6% and 531,000 jobs were added in October! The infrastructure bill passed by both Democrats and Republicans last week will be adding millions of new jobs, and we will all benefit from repaired roads and bridges, lead free water lines, increased broadband and improved train travel. All those new jobs are certainly good news! I’m not sure where you shop, but I’ve found everything I need at all the main grocery stores in our area, both national chains and local grocers. If you’re finding bare shelves, perhaps you should try a different store or try purchasing online. There is little anyone can do about gas prices which fluctuate up and down based on the price of crude oil which is controlled by the global market. We all received help from our federal government during the COVID-19 shutdown, and we are still receiving it. I see much to celebrate! Also, it’s 61 degrees with sunshine in mid-November! Smile! Kindness I would like to thank the lady who left money for my groceries at the Batavia Aldi on November 8th. Bless you for your kindness.

Our government; our republic A recent 60 Minutes interview with an Andrew Sullivan spotlighted a terrible trend that is so prevalent in our politics today. Absolutely no dialogue, no discussion, no discourse, just “You’re wrong because you don’t think like me (or worse, my party).” Republican leader Mitch McConnell vowed that everything the Democrats do, his party would be against. Wow! That is not what our democracy or this country was built on. We had one of the greatest nations on earth because of our republic and the open exchange of ideas and ideologies, but we should all be extremely concerned as to where our United States of America is heading. Our politicians could use a vaccine that would cure their cruel and bitter criticism! Tipping your server To the table of six that went out to eat last Wednesday after a day of fishing at [local spot]: Nice of you to eat, drink and have excellent service and leave nothing for a tip. Servers do not make minimum wage and depend on their tips. Times are tough, and often establishments can’t find enough help, so the servers are working their tails off to give their customers a good dining experience. Please remember that when you are going out to eat. If you can’t afford to leave a tip, then eat at home! Holding the country hostage To “What An Idiot:” Actually, it’s not Joe Manchin holding our country hostage. It’s those who want to bankrupt the USA who are holding us hostage. If you’re so worried about the children, let’s not leave generations to pay for this legislation which is full of “pork.” As I recall, Joe Biden took naps during the all-important COP26 meeting. As for which Joe should be impeached, look no further than the top dog.

What a blessing! Thank to the gentleman who paid for my oil change at the Monroe Muffler in Geneseo. I don't know your name, but your act of generosity brightened a tough day. I will be sure to pay it forward when I can!

Information is now seemingly always at our fingertips thanks to mobile devices like smartphones and tablets. While these devices may theoretically allow workers to become more productive, research suggests otherwise. Professor, researcher and author Gloria Mark with the University of California, Irvine says that activity switching and being frequently interrupted, including self-interruptions like checking social media and email, can lead people to develop short attention spans. That inability to focus for extended periods of time can adversely affect efficiency.

Salary: Of course everyone would love to earn more money when changing jobs, but there is more to changing jobs than just improving your bottom line. As you begin your job search, consider how much you currently earn and if that allows you to live a life you love. If so, don’t overemphasize finding a new job that pays considerably more than your currently earn. On the flip side, young professionals who want to start a family in the years ahead should consider the costs associated with such a decision and how the salaries they earn at their next jobs may affect what they want down the road.

Turkey is often overshadow ed by other meats in refrigerated display cases, but it remains an excellent source of protein in a low -fat package. A typical 3.4- to four-ounce serving of skinless turkey breast (about the size of a deck of cards) contains around 30 grams of protein, providing about 65 percent of the average person’s recommended daily allotment of protein. Protein helps the body feel full and serves many essential functions in the body. Proteins regulate the entry of nutrients through cell w alls, help the body grow and help it to generate antibodies that fight against illness.
