• Flaky sea salt Pour off any juice that has gathered around the watermelon. Toss gently with the rice vinegar. Toss with the feta cheese crumbles, just until the watermelon begins to look lightly coated. Chop the mint leaves very, very finely, into tiny ribbons. Toss with the watermelon and spread in a serving bowl. Garnish generously with black pepper. Taste. If desired, add a sprinkle of flaky sea salt. Serve immediately.

COMMON GRILLING MISTAKES Playing with food: Grilling does not require much intervention. Repeatedly flipping and squeezing meat and poultry can cause flavorful juices to leak out. Then you’re left with dried-out food. Resist any urges to prod and poke food. And minimize how many times you lift the grill cover to take a peek, as that can cause temperatures to fluctuate. Use a thermometer to determine when food is done. And don’t forget that meat will still cook a bit after it’s taken off the grill.

IDEAS FOR FAST AND EASY ENTERTAINING Get creative with serving dishes. Muffin tins can be put to use in different ways as handy serving dishes. Use them to keep several filled beverages upright and manageable when serving guests. Or try a tin for condiments at a barbecue. Place pickles, relish, ketchup, mustard, and onions in each section for easy burger fixings.

STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM Serves 4 • • • • • • • • • • 1.

8 1-inch-thick bread slices, cut from a country or peasant loaf 2 cups half-and-half 4 egg yolks 3 tablespoons light brown sugar 1 tablespoon vanilla extract, plus 1/2 teaspoon 1/2 teaspoon cinnamon 3 tablespoons unsalted butter 1/2 cup sour cream 1 tablespoon granulated sugar 1/3 cup strawberry jam or preserves (see note 2) Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). Add the

toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

EVERYONE WITH ALS COUNTS (NAPSI)-Amyotrophic lateral sclerosis (ALS) is a fatal neurological disease that attacks the nerve cells. It first gained national attention as Lou Gehrig’s disease, named after the famous baseball player who was diagnosed with ALS in 1939. To date, the cause of ALS is unknown, and there is still no known cure. The disease strikes quickly, usually leading to death within two to five years of diagnosis. But every person with ALS has an individual story, and understanding these stories will help researchers ultimately piece together clues about this disease. Ed Tessaro was diagnosed with ALS in 2009. As he learned to cope with this diagnosis, he reflects, “I’ve never considered myself a victim of the disease because I believe in my heart all of us have a wheelchair. In my case, it’s quite literal, but with everything that goes on in my life, I realize that every family has had a crisis.” One of the things that helps him and others with ALS is reaching out for community support and resources. “The ongoing struggle is to encourage newly diagnosed people to come in and talk about their condition. I want to help people learn about the National ALS Registry, clinical trials, and other resources that can provide support and hope.” The National ALS Registry helps gather information from those who are living with this disease. Researchers from all around the world can access the Registry data to help scientists learn more about what causes this disease. Everyone’s story is different, and everyone’s piece of the puzzle is essential. The Registry has found that almost 16,000 persons with ALS live in the United States, as of 2014. It is important to include as many people as possible living with the disease to get the most accurate information. When patients join, it helps give researchers more information. This could lead to a better understanding of the causes of ALS, because learning more about the disease is one step further in the battle to defeat it. Concludes Ed, “It’s tough, but maybe we can fling open a door or two in the next couple of years of research. --DEAR DR. ROACH: I am 71. I’m overweight at 300 pounds and have had Type 2 diabetes for 15 years. I haven’t had any chest pain or heart problems, but a recent nuclear stress test led my doctor to suspect buildup in one of my arteries, and he wants to do a cardiac catheterization. I do not want to do this, partly because I feel that once you let doctors start messing with your body, you will only experience more problems (like a stent or something) and your life will never be the same. I don’t want to offend the cardiologist, but I really do not want to do this. Am I completely wrong? -- P.R. ANSWER: Making a decision after knowing all the pertinent information isn’t wrong, even if it isn’t the decision the doctor recommends. I’d like to be sure you have all the right information. A nuclear stress test uses a radioactive dye to look at blood flow to the heart. Although they are very accurate, like almost every test, they can be mistaken. This is why your cardiologist ordered the cardiac catheterization -- the best test we have to look for blockages in the arteries. The risk in a cardiac catheterization, also called an angiogram, is low. If there are no blockages, that information is helpful and might allow your cardiologist to have you stop some medications. If you do have blockages, you have a choice of medical treatment (such as a statin, beta blocker and aspirin), catheter treatment (such as angioplasty with or without a stent) and surgical treatment. Knowing more about the location and severity of any blockage can allow you to make a more informed decision about what treatment is better. Stents and surgery would be less commonly used in someone without symptoms, unless the blockage were very severe or in a critical artery. It’s not unreasonable, given your medical history, to assume that there is a blockage that might need medical treatment. In addition to the medications I mentioned, taking excellent care of your diabetes, losing some weight, making sure your diet is proper for someone with suspected heart disease, and participating in a monitored exercise program all can reduce your risk of a heart attack. In fact, these are important even if you do get a stent or surgery. Leaving the legwork in their accomplished hands means all you have to do is show up with your reservations instead of pouring over the minutiae of planning.

1. Following the instructions on the package, thaw the puff pastry. This will take 30 to 45 minutes, depending on the type of pastry. You should be able to unfold it without it breaking. Set aside. 2. Pulse the turkey in a food processor until it is the consistency of ground beef. Add 2 of the eggs, the chicken stock, the Marsala, and the butter. Pulse again briefly, until just combined. 3. Roll out the puff pastry on a floured surface until it is a 12- or 13-inch square. Cover a baking sheet with parchment paper and place the pastry on top. 4. Form the minced turkey mixture into a log and position it down the center of the prepared puff pastry. Make an indentation down the length of the turkey and place the celery, mushrooms, and cranberry chutney along the indentation. Cover the indentation with the meat, forming a log once again. 5. Wrap the puff pastry around the turkey, neatly folding the ends and top together, rolling or tucking the edges together, and pinching to seal any gaps. Make the pastrycovered log as round as possible, like a Yule log — try to avoid a flattened version, like a strudel. 6. Preheat the oven to 450 F. 7. Combine the remaining egg with 1 tablespoon water in a small bowl or cup. Stir well until completely mixed. Brush the roulade with the egg wash, being careful to brush every bit of the exposed pastry. 8. Bake for 10 minutes at 450 F, then reduce the heat to 375 F. Continue to bake for 30 to 45 minutes longer, until the pastry has risen and is a toasty, golden color and the turkey has reached an internal temperature of 165 F. Generally speaking, once the pastry has cooked, the meat will be cooked, too. Remove the roulade from the oven. Transfer it to a serving platter, using the parchment paper to help you. Allow to rest for about 10 minutes. 9. Slice and serve, garnishing with the parsley and served with a bowl of extra cranberry chutney.

Your Seniors’ senses of smell and taste change with age Aging comes with several sensory changes, many of which people expect. Loss of hearing or diminishing vision are widely associated with aging. But one’s senses of smell and taste may diminish with aging as well. The senses of taste and smell work in concert. The sense of smell is vital to personal health, not only because inhaling pleasant aromas can provide comfort and stress relief through aromatherapy and help trigger important memories, but also because smell enables a person to detect the dangers of smoke, gas, spoiled food, and more. The National Institute on Aging says that, as a person gets older, his or her sense of smell may fade, and that will also affect taste. The Mayo Clinic says some loss of taste and smell is natural and can begin as early as age 60. Adults have about 9,000 taste buds sensing sweet, salty, sour, bitter, and umami flavors, or those corresponding to the flavor of glutamates. Many tastes are linked to odors that begin at the nerve endings in the lining of the nose. Medline says the number of taste buds decreases as one ages, and that remaining taste buds may begin to shrink. Sensitivity to the five tastes also begins to decline. This can make it more difficult to distinguish between flavors. Similarly, especially after age 70, smell can diminish due to a loss of nerve endings and less mucus in the nose. With the combination of the reduction of these important sensory nerves in the nose and on the tongue, loss of smell and taste can greatly affect daily life. Changes in these senses can contribute to feelings of depression, diminish one’s enjoyment of food and cause harmful conditions, such as extreme weight loss from disinterest in food to problems associated with overusing salt or sugar.

Receiving a diploma is something to take seriously, even for those students w ho are somew hat older than their fellow graduates. In 2003, Gustava Bennett Burrus graduated from Richmond High School outside of San Fransisco, Calif., at the age of 97. Ruth Hayes Green graduated from the Adult High School of the Perth Amboy, New Jersey Adult Education Center in 2010 at age 98. Although aging is often to blame, loss of smell and taste also may be tied to early symptoms of Parkinson’s disease or Alzheimer’s disease. Cancer treatments, medications, lack of saliva, colds, flu, and other factors may contribute to sensory loss. Changing medications or treatments may help. It’s important to bring up diminished flavors or smells with a doctor to rule out something more serious and to determine what might help restore pleasure from smells and flavors. An otolaryngologist, or a doctor who specializes in diseases of the ears, nose and throat, may be able to help fix the problem, though some people may be referred to a neurologist or another specialist. Continuing to use one’s sense of smell and taste by cooking, gardening, trying new flavors, and experimenting with different aromas may help slow down the decline these senses. Although age-related loss of taste and smell cannot be reversed, some such cases may be treatable.

A shout out to Edgar at Cameron Community Ministries!! This organization is an urban outreach community center in the Lyell-Otis Neighborhood of Rochester, NY where 98% of residents in the neighborhood live in poverty. My husband and I had bicycles that we no longer rode and wanted to donate. We contacted Edgar who indicated that he knew of people who could use them. We set up a drop off time and were met by two guys who unloaded them from our vehicle.
