1 Tbsp oil 4 English muffins 1/2 lb ground breakfast sausage from our Butcher Shop (Country Breakfast Sausage with Blueberries or Country Valley Apple Sausage) Avocado, sliced Arugula Butter (optional)

Our beans are sourced from South America which lends the chocolatey flavor for which the Latin terroir is known. Each batch is roasted right in Bellingham, Washington ensuring every bag is fresh and flavorful.
Heat oil in skillet over medium-high heat. Remove ground sausage from paper and separate into four equal parts. Shape each portion into a 2-1/2" disk. Fry the sausage on both sides until cooked through and golden brown, about 4 minutes per side. Set aside and let drain on a paper towel. Add more oil to skillet if necessary. Cook egg sunny-side-up (directions below). Toast and butter English muffin. Place sausage patty on bottom half of each muffin. Layer with sliced avocado, cooked egg and arugula. Add top half of English muffin and enjoy.
How to Fry the Perfect Sunny-Side-Up Egg Heat skillet over low heat and add oil. Allow skillet to heat for about 5 minutes. Crack an egg into a ramekin or small bowl and slowly add to skillet. Cover skillet and cook, uninterrupted, until whites are completely set but yolk is still runny, about 2-3 minutes. Carefully slide the egg out of the skillet and enjoy.

This year, create earth-toned eggs with simply beautiful dyes made from nature. With just a handful of ingredients you can create a work of art.
Creating Natural Dyes 2 cups raw beets, chopped; or 2 cups blueberries, crushed; or 2 cups spinach, chopped; or 1 Tbsp ground turmeric 1 Tbsp distilled white vinegar 1 dozen hard-boiled eggs Tip: Hard-boil eggs and make the dyes the day before to save time.

In a small pot with 2 cups water, add your coloring ingredient of choice and bring to a boil. Cover and reduce to a simmer for 10 minutes. Add vinegar and let cool to warm or room temperature.
Patterns: You can add patterns to your eggs by wrapping them with rubber bands prior to dyeing. You can also press real flowers and leaves onto eggs and tightly wrap eggs with a cheese cloth or stocking.
When ready to dye, place each dye in its own bowl. Submerge hard-boiled egg in dye, turning consistently until coated evenly. Leaving eggs in the dye longer will create a darker color.
Feel free to play around with more patterns and colors by submerging eggs in multiple colors (just wipe eggs dry between dye bowls).

Hard-Boiled Eggs Aplenty?
Put those leftover hard-boiled eggs to good use with this Northwest-inspired egg salad. Use Boston Smoked Fish Co.’s salmon bacon, a 2017 Good Food Awards recipient, to transform your ordinary egg salad. Made with salmon belly, it’s dried, cured in natural spiced then hot smoked over pecan wood. The result is an intense, smoky salmon bacon that’s naturally rich in Omega-3s.
Smoked Salmon Egg Salad Sandwich
3/4 cup mayonnaise 1 tsp fresh dill Salt and pepper to taste 6 hard-boiled eggs, chopped 4 oz Boston Smoked Fish Co. salmon bacon, chopped 6 Haggen bakery croissants, split 1 cup microgreens In a large bowl combine mayonnaise, dill, salt and pepper. Stir in eggs and salmon bacon. Place egg salad on the bottom half of croissant and top with microgreens. Put top of croissant on and enjoy.

The art of making
Enchiladas
E nchiladas check all the boxes: delicious,
simple, versatile, quick to prepare and can be made ahead. You have just one important decision to make before you roll up your sleeves to assemble this dish: green or red? You can make green sauce with green chiles and tomatillos, or red sauce that gets its color from red chiles and maybe some tomato. The color of the sauce doesn’t necessarily indicate how spicy your sauce will be, it all depends on your choice of chile peppers and seasonings. A cooked rotisserie chicken from the Haggen Delicatessen is a great way to jump-start your meal prep, and if you’re really tight on time, just swing by the deli and pick up a prepared enchilada meal. Easy!
Any way you roll them • Dip 8 tortillas in your favorite enchilada sauce • Fill each tortilla with a little cheese, meat and your favorite veggies (corn, peppers, onion) • Roll and place them in a dish • Pour sauce over enchiladas • Top with some grated cheese • Bake in a 450°F oven for 15–20 minutes Photo credit: Katheryn Moran Photography

Green Tomatillo Sauce
3 Tbsp olive oil 1 white onion, chopped 4 cloves garlic, minced 2 Anaheim peppers, chopped 2 jalapeño peppers, seeded 10 tomatillos, husked and cut in half
1/2 bunch cilantro, chopped 1 tsp salt 1/2 tsp pepper 1 tsp cumin 4 cups chicken stock
Place all ingredients in blender and process until smooth. Add the mixture to a large pot. Bring mixture to a simmer and cook for about 30 minutes.
Red Chili Sauce
4 cups chicken stock 2 oz dried guajillo chiles 1 oz dried New Mexico chiles 2 Tbsp vegetable oil 1 white onion, chopped 2 Roma tomatoes, chopped
2 cloves garlic, minced 1 tsp salt 1/2 tsp Mexican oregano 1/2 tsp smoked paprika 1/2 tsp cumin
In a large saucepan, bring stock and chiles to a boil. Reduce heat, cover and simmer for about 30 minutes. Drain the chiles and reserve the liquid. Remove stems, seeds and membranes from chiles. Heat oil in a medium sauté pan. Add onions, tomatoes, garlic, salt, oregano, paprika and cumin and cook for about 5 minutes. Transfer mixture to a blender. Add the chilies, reserved liquid and blend until smooth. Return mixture to large saucepan. Simmer uncovered for about 30 minutes.

Matiz Seafood Paella
2 Tbsp Spanish olive oil 1 bell pepper, diced 5 Matiz artichokes, sliced in half 1 jar Matiz sofrito 1-1/2 cups Matiz paella rice 1/2 tsp saffron 4 cups Aneto Spanish fish or chicken broth 1 lb fresh seafood (mussels, shrimp, clams) 5 Matiz organic piquillo peppers, sliced into strips Peas for garnish Lemon wedges for garnish

In a paella pan, heat the olive oil and sauté the bell pepper. Add artichokes and sofrito and simmer for 5 minutes. Add paella rice and distribute evenly. In the palm of your hand crush the saffron lightly and add. Slowly add the broth. Do not stir rice at this point. After 10 minutes place fresh seafood and piquillo peppers into the mixture. Once liquid is absorbed (about 10 minutes) remove from heat, cover with foil and let sit 10 minutes. Garnish with peas and lemons.

If you’ve never made your own bread from scratch, there’s no time like the present to knead, roll and bake your own fresh rolls or savory bialys. Fill your home with the scent of fresh-baked breads and thank your ancestors who milled, leavened and perfected the craft for us.

Bialys (Onion Rolls)
Pull-Apart Rolls 1-1/8 tsp instant yeast 3/4 cup warm water (110°F) 2 cups unbleached flour
1 tsp salt 6 Tbsp unsalted butter, melted
Preheat oven to 450°F. Dissolve yeast in warm water and 1 Tbsp melted butter in standmixer bowl. Combine flour and salt in a separate bowl. Using the dough hook with mixer on low speed, slowly add the flour to yeast mixture. Mix until dough comes together, about 2 minutes. Increase the speed to medium and continue to mix for about 5 minutes. Transfer dough onto a lightly floured work surface. Knead for about 5 minutes until smooth. Form a round dough ball and place in a lightly greased bowl. Cover and let rise in a warm place away from drafts, about 1 hour. Cut dough into 12 equal portions. Working with one piece at a time (cover remaining pieces to avoid drying) form round smooth balls. Place rolls in a 9" springform pan coated with grease. Cover and let rise for about 1 hour until almost doubled in size. Brush with half of the remaining butter. Bake until golden, about 12 minutes. Remove from oven and brush rolls with remaining butter and allow to cool for about 5 minutes. VARIATIONS: You can add more flavor by adding honey, rosemary, Parmesan cheese or orange zest.
FILLING: 2 Tbsp olive oil 1 small sweet onion, minced 2 Tbsp bread crumbs 2 Tbsp Parmesan cheese 3 Tbsp poppy seeds

Add a spoonful of onion mixture to each roll. Sprinkle with bread crumbs, cheese and poppy seeds. Bake until bialys are golden-brown, about 6 to 8 minutes.

Chives:
The mild onion flavor makes these great as a garnish, or for a little subtle flavor burst in salads, potato dishes and omelets.
Cilantro:
Adds a lemony-bright flavor to guacamole, salsa, and tacos, or blend with sour cream and lime for a fresh crema-style topping.
Mint:
The unmistakable refreshing flavor is a lovely addition to desserts, makes marvelous teas and mojitos, and is delightful chopped and mixed into your favorite dressing.
Oregano:
A staple of Mexican and Italian cooking, mix it into tomato-based sauces and ground meats, whip up a pesto, or infuse into honey or butter.
Parsley:
Versatile and delicious, it’s most familiar as a garnish, but adds flavor to dressings and can be a pleasant surprise chopped and added to a leafy green salad.
Rosemary:
Easy to grow outdoors year-round, it lends an aromatic, woodsy depth to roasted meats and vegetables, and is easy to dry and keep.
Sage:
A favorite with roasted squash, eggs, poultry and lamb, it’s also delicious infused into butter and melted atop gnocchi, ravioli or fish.
Thyme:
Important for many traditional soups and stews, this fresh, strong herb is best added early in the cooking process so it can release its oils.
