Lavender
fields forever
With uses therapeutic, decorative and culinary, lavender’s lovely blooms and delicate fragrance can’t help but enhance everything it touches. The scent is often touted as a natural insect repellent, in addition to its soothing, relaxing aromatherapy properties. And a sprinkle of crushed flowers can add delicate floral notes to your favorite lemon desserts and drinks. With so many varieties of lavender, it can be overwhelming to find the one that’s best for your needs. As French lavender is native to Spain, English lavender is native to France, and Spanish lavender is native to North Africa, it’s easy to get confused! Your Haggen Garden Shop* offers an assortment of beautiful blooms that are Northwest-grown and ready to bring a spot of cheery color to your garden.
English Lavender
When you envision the waving purple fields of Provence, you’re picturing a hybrid of English lavender, or lavandin, particularly aromatic with buds that are easily removed for potpourri making. Favored in culinary concoctions, this type is fragrant when brushed against or crushed, and comes in a range of colors, including shades of purple, blue, pink and white.
Spanish Lavender
Hardy in harsh, hot climates, this lavender has a bit of a different appearance from the tidy little buds found in other varieties. Each flowering stem has a large head with petals popping out of the top like rabbit ears. This variety is typically available in shades of violet and only rarely in pink. The oils are often extracted and bottled.
French Lavender
The lighter fragrance is popular in cosmetics and for decorative use, and the blooms of this type are especially vivid in a garden. Even the leaves have a lavender-rosemary scent, making it a good choice for dried bouquets and potpourri. *At all stores except Fairhaven

How to make
Simple Sachets
Processing the lavender:
1. Harvest lavender spikes when buds just start to open by grabbing a bunch of stems and cutting them near the body of the plant (not into the woody area). Secure the base of the bunch with a rubber band. 2. Hang bunches upside down to dry in a dark, wellventilated space. 3. When completely dried, work the buds with your fingers to dislodge them into a large bowl. Tip: An easy way to knock off most buds is to put the secured bunch into a plastic bag and shake vigorously. 4. To add weight to the sachet and extend your supply of lavender buds, mix in uncooked rice grains at a 1:1 ratio. 5. Add a few drops of lavender oil to intensify and prolong the scent (optional) and mix well.
Creating the sachet:
1. Cut two 5" squares of fabric. With right sides together sew shut on all sides, leaving a gap on one side to fill with lavender buds. 2. Turn inside out and press. 3. Fill with the lavender/rice mixture (creating a paper cone makes filling easier). 4. Sew the opening shut.

Blueberry Peach Crisp Filling: 3 cups blueberries 3 cups peaches, chopped 1/4 cup sugar 1/4 cup all-purpose flour 1/4 tsp cinnamon Crisp Topping: 1 cup rolled oats 1/2 cup all-purpose flour 1/2 cup brown sugar 1/2 cup sugar Pinch of salt 1/2 cup coconut oil or butter Whipped cream or ice cream, for serving

Pineapple Relish Makes 4–6 cups
1 pineapple, peeled and finely diced 1/2 red onion, small diced 1/2 bunch cilantro, chopped 1 small jalapeño, seeded and finely diced 1/4 cup rice wine vinegar 1/4 cup canola oil 1 tsp salt 1/2 tsp ground pepper Combine all ingredients, adjusting jalapeño amount for your preferred spice level, and refrigerate covered for at least 6 hours.
Pickled Corn Relish Makes 3–4 cups
4 ears of corn, husk and silk removed 1 cup apple cider vinegar 3/4 cup sugar chili flakes, pinch 1 Tbsp fresh ginger, chopped 1 Tbsp fresh garlic, chopped 1 tsp yellow mustard seed 1 tsp salt Cut kernels of corn off cob using a sharp knife. Combine all ingredients except corn in a pot and bring to a boil. Pour over top of fresh cut corn. Cool and refrigerate covered, overnight.

Sweet summer gold Sweet, juicy corn is a summertime flavor we can all agree on. At Haggen, corn season starts in early summer with fresh ears from our California farming partners, then we ramp it up with local corn in late July as the Yakima Valley crop ripens. Our favorite ears of the year are the Amaize sweet corn, fresh from Inaba Farms. Amaize corn is non-GMO, hybridized over the course of more than two decades to produce the sweetest, juiciest, pop-in-your-mouth kernels you’ll find anywhere. If you’re new to Amaize, try a few ears to grill and taste for yourself what makes them so…well, amazing! Then, if you’re like us, you’ll grab a supply to freeze for fall and winter chili, soups and stews.
Corn Bisque
This sweet and creamy soup will satisfy your craving for summertime flavors and warm your belly on cooler late-summer evenings. 3 Tbsp olive oil 1 potato, peeled and cubed 1 small onion, chopped 1 jalapeño, diced 2 cloves garlic, chopped 4 ears corn, husked and kernels cut from cob 2 Tbsp fresh thyme 1 tsp smoked paprika 1 tsp cumin 4 cups vegetable stock 1/2 cup cream Salt and freshly ground pepper to taste Garnish: thinly sliced scallions, fresh parsley, radishes and diced bacon Heat oil in skillet over medium heat. Cook potato, onion, jalapeño and garlic until vegetables begin to soften, about 4 to 6 minutes. Add the corn, thyme, paprika and cumin. Cook until corn is tender, about 2 minutes. Add in the vegetable stock and cream. Bring to a boil and simmer for about 10 minutes. Transfer half the mixture to a food processor and purée until smooth. Return to pot and season with salt and pepper. 8

Grilled Bacon-Wrapped Corn
The classic sweet-and-savory flavor blend gets revitalized for summer with this combination of smoky bacon and lightly charred corn on the cob.
6 ears sweet corn, shucked 1/2 tsp paprika 1/2 tsp fresh parsley, chopped Salt and pepper to taste 6 slices bacon, slightly cooked Scallions, thinly sliced
Sprinkle seasonings on corn. Wrap each cob with bacon, securing with toothpicks. Wrap each cob with foil. Grill over medium heat, about 20 minutes. Garnish with scallions.

Simply delicious fish

Grilling a whole fish is one of the simplest methods for preparing your favorite fresh catch. Whether it’s trout, salmon, rockfish, sablefish or any of the other varieties we offer, you’ll find that it’s a delicious and cost-effective way to feed your family a truly tasty meal. Just load it up with fresh aromatics like herbs and lemon slices then let your grill’s hot coals work their magic. If this method simply isn’t for you, don’t fret! Haggen’s Seafood Department will gladly fillet, steak, skin and custom package your whole fish purchase for free. Pro tip: keep the bones to create a savory soup stock or as a nitrogen-rich fertilizer.
Whole Roasted RockFish
2-3lb whole rockfish, scales removed and cross-stitched* 4 lemon slices Haggen Chef Bryan Weener 4 parsley sprigs 4 slices of yellow onion 1 Tbsp kosher salt 1/2 tsp fresh ground pepper 2 Tbsp canola oil 1/2 cup virgin olive oil 1 lemon cut in half Preheat a baking tray in a 400°F oven for 15 minutes. Brush both sides of fish with canola oil and season with salt and pepper. Stuff the parsley, lemon and onion slices in the belly cavity of the fish. Brush the hot baking tray with a little of the canola oil and place fish on the hot tray. Cook for about 15 to 20 minutes until the fish easily flakes away from the bones. Transfer fish to a serving tray and drizzle olive oil and lemon juice over fish. *Your friendly Haggen Seafood Specialist can remove the scales and cross-stitch your fish. 16
