the next best thing to fresh

We Pacific Northwesterners are lucky to benefit from the bounty of premium produce that grows right here. But sometimes, fresh fruits and veggies aren’t at their peak. The next best thing to fresh is right in your Haggen freezer section, from Stahlbush Island Farms. Washed, chopped and ready for cooking, these frozen foods are not only delicious, but convenient, too. The Chambers family has been growing produce in the Willamette Valley for more than 30 years. Because they grow the crops themselves, they can wait until the fruit is absolutely, perfectly ripe before harvesting and quick-freezing. The company’s commitment to sustainability is evident in their habitat conservation, waste handling, soil health and social responsibility, making these products something that you can feel good about from start to finish!

Dark Chocolate Detox Bites

Sometimes a little luxury is just what the doctor ordered. The gift of chocolate doesn’t just fill your heart with love, it’s also good for your mind, body and soul. Chocolate comes from cacao beans, which are the fruit seeds that come from the cacao tree, and are full of natural plant nutrients and packed with antioxidants (just as green tea and blueberries are). To get the biggest health benefits opt for dark chocolate (65% or higher content) which has far more antioxidants than milk or white chocolate.

Almond-Oat Berry Bake This warming mix of old-fashioned oats and protein-rich quinoa is baked to crispy perfection and topped with a dollop of probiotic-full yogurt. 2-3/4 cup milk 1/4 cup butter, melted 1 Tbsp vanilla 1 cup old-fashioned oats 1/2 cup Bob’s Red Mill quinoa 1/2 cup roasted salted almonds, chopped 1/2 cup brown sugar 3 Tbsp chia seeds 1 tsp baking powder 1/2 tsp salt 1 cup blueberries 1 cup raspberries Greek yogurt (optional) Preheat oven to 375°. Coat 2 quart baking dish with nonstick cooking spray. In medium bowl, whisk milk, butter and vanilla. In prepared baking dish, combine oats, quinoa, almonds, brown sugar, chia seeds, baking powder and salt. Pour milk mixture over dry ingredients. Top with berries. Bake 45 minutes or until almost all liquid has been absorbed. Let stand 5 minutes before serving. Garnish with a dollop of Greek yogurt (optional).

Spiced Apple-Cranberry amaranth Cereal with Maple Syrup Antioxidant-rich amaranth is a powerhouse of a grain filled with protein, and packed with key vitamins and minerals like calcium, vitamin C and iron to help you feel fuller longer so you can conquer your day. 1 cup Bob’s Red Mill amaranth 2 cups water 1 cups apple cider 1/4 tsp kosher salt 1 Tbsp unsalted butter 2 firm apples, cored and chopped 1/8 tsp ground cinnamon 1/3 cup dried cranberries 1/3 cup toasted walnuts, chopped 1/2 cup Greek yogurt 2 tsp pure maple syrup

Breakfast Quinoa

with Chai-Spiced Almond Milk & Cinnamon Hailing from South America as the “mother of all grains,” quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. 1 cup Bob’s Red Mill quinoa, rinsed 2 cups almond milk 1 chai tea bag 1 Tbsp sugar (optional) Pecans Coconut Cinnamon

Combine water, apple cider, amaranth and salt in medium saucepan. Bring to low boil, cover, and reduce heat to low. Simmer until tender (about 55-60 minutes). Drain any excess liquid.

Rinse quinoa well to remove the saponin (its natural coating can make quinoa bitter). In small saucepan, combine almond milk, quinoa and tea bag. Bring to boil. Remove tea bag when boiling. Add sugar (optional) and stir. Reduce heat and simmer for 15-20 minutes.

In medium skillet over medium heat, warm butter and fold in the apple chunks. Sauté until apples become slightly browned (about 5 minutes). Add cinnamon and fold in dried cranberries and walnuts.

When done, remove from heat and cover for 15-20 minutes to allow liquid to fully absorb. Serve in a bowl and garnish with pecans, coconut and cinnamon.

In small bowl, stir together yogurt and maple syrup. Scoop a heaping ladle-full of amaranth into a bowl and top with spiced apple-cranberry mixture and a dollop of maple yogurt.

Seedy secrets

FLAX These tiny, flat seeds are packed with Omega-3 fatty acids and loads of soluble fiber, but you’ll miss out on their benefits unless you grind them before adding to smoothies, oatmeal and casseroles.

CELERY

Full of phytonutrients that may help lower blood pressure and cholesterol, the strong flavor of these little seeds makes it easy to go overboard. Sprinkle lightly on savory entrées for a touch of celery flavor and a ton of nutrition.

Don’t be fooled by their diminutive size—tiny seeds can pack a serious nutritional punch! In order to flourish into full-sized plants, seeds have to carry all the necessary nutrition to sprout and get growing. When we get our hands on them before that happens, we can take advantage of all the benefits packed into each tiny package. Most seeds are rich in heart-healthy monounsaturated and polyunsaturated fats, as well as protein, amino acids, vitamins and minerals that are important to every diet—and especially vegetarian and vegan diets. Small enough to sneak into just about any meal, it’s time to give seeds a shot!

Highly concentrated in vitamins A, C, and E, plus minerals like copper, iron, calcium, and zinc, these fiber-rich seeds add a sweet, anise flavor to breads, vegetable dishes and tea.

FENNEL

ER W O L F SUN An excellent source of B vitamins, vitamin E, protein and heart-healthy fats. Eat them by the handful, mix into your favorite baked goods, and sprinkle on toast or in stir fry recipes. 8

Haggen Northwest Fresh | Winter 2017

Anti-inflammatory selenium and magnesium are the stars of this potent seed, which is delicious toasted and sprinkled on your favorite dish, or ground up and used as a spread in a variety of entrĂŠes.

PUMPKIN

D R A T MUS

Along with B vitamins, iron, magnesium, zinc and protein, these also contain tryptophan, which may have a calming effect. Eat them raw or roasted, in granola bars, as a garnish or just by the handful.

POPPY SEED Tiny, crunchy and loaded with iron, calcium, protein and fiber. Delicious in any baked good, or sprinkled over your cereal, or mixed in your favorite yogurt.

SESAME

Linoleic acid, an Omega-6 fatty acid that may help control cholesterol, is in great supply in sesame. Toasting the seeds brings out a stronger flavor and additional crunch that’s great in salads and stir fry dishes.

Chia is where to go for iron, folate, calcium, magnesium, soluble fiber and Omega-3 fatty acids. They absorb water, thickening juices, smoothies and oatmeal while keeping a delightful crunch.

Spice

up your life

Moroccan Vegetable Soup

Spices have been sought after for centuries, and the variety of flavors and colors that they lend to modern cooking is unmatched. Our early ancestors also knew that spices could be beneficial to health, with records of spices used as medicine as far back as ancient Egypt. Improve your well-being and tickle your taste buds with some of these delicious flavors!

Bright, beautiful and bursting with flavor, this colorful Moroccan soup is perfect for winter. 2 Tbsp olive oil 2 tsp paprika 1 onion, finely chopped 2 tsp ground cumin 1 red bell pepper, cored and diced 1-1/2 tsp ground coriander 3 cloves garlic, minced 1/2 tsp ground cinnamon 1 lb Double R Ranch beef stew meat 1 pinch cayenne 1 (14 oz) can crushed tomatoes 1 pinch of saffron threads, (optional) 6 cups reduced-sodium chicken broth 1 can chickpeas, drained 2 large carrots, peeled and diced 1 small bunch cilantro, chopped 2 stalks celery, thinly sliced 3 scallions, sliced 1 turnip, peeled and diced kosher salt and fresh ground pepper

14

Haggen Northwest Fresh | Winter 2017

Heat oil in a Dutch oven over medium-high heat. Add onion, pepper, garlic and meat and cook, stirring occasionally, until onion and peppers are tender. Stir in the crushed tomatoes, broth, carrots, celery, turnip and spices. Bring the soup to a boil. Cover with a lid and cook over a slightly reduced heat at a gentle simmer for 30 to 40 minutes until the meat is tender; add the chickpeas after 15 minutes. Season soup with salt and pepper. Serve sprinkled with cilantro and scallions.

Garlic: A potent immune-booster, it can help combat the common cold. Delicious in pretty much any savory preparation, in dips, meats, pasta dishes and casseroles.

Ginger Powder: Often used to treat nausea, it’s a powerful

digestive aid and also useful in reducing muscle pain and soreness. The warm, spiced flavor is delicious in smoothies and baked goods.

Nutmeg: A good source of minerals like iron, copper and potassium, but should only be consumed in small

amounts. Adds a rich flavor to sweet or savory dishes. Great in mashed potatoes, squash, and vegetable purèes.

Coriander: The seed of the cilantro plant, used as an

coriander

anti-inflammatory herb, to treat digestive issues and as a seasoning for sausages, rye bread, pickling and stews.

Cumin: Rich in minerals and vitamins A, C, E, and all the Bs, the peppery flavor works well in savory dishes and mixed with ground meats.

Curry: Recent research has shown that curry may boost your immune system, reduce the risk of Alzheimer’s and ease arthritis. A fragrant yellow curry is great in soups, sauces and rice.

Cinnamon: With the highest antioxidant strength of all the food sources in nature, cinnamon should have a place in everyone’s diet. Sprinkle it anywhere you need a little spice, like meat marinades, yogurt or in iced coffee.

Turmeric: Antioxidant and anti-inflammatory properties are found in the active ingredient, curcumin. Its intense, warm flavors and bright yellow color are a welcome addition to stews, curries, and smoothies.

Cayenne Pepper: Along with capsaicin, cayenne is packed with vitamins A and C and loaded with essential

minerals. Use it to season meat dishes, or add a dash to honey, lemon and warm water for a detoxifying drink.

Paprika: Rich in anti-inflammatory capsaicin, paprika adds

bright color and peppery flavor to stews, curries and casseroles. Photo credit: Katheryn Moran Photography
