Gearing up for a fun Summer
It is with much hope that the opening of borders will return us to a new normal allowing us to have our old lives back. How fortunate we have been at Halcyon Landing in Bli Bli (QLD), where small interest groups and social events have been able to continue and homeowners have continued to look out for one another. My weekly rides with our cycling group is often the highlight of my week and our cycling trip in New Zealand was a most memorable holiday. I believe I have the perfect balance. I have a lovely home, I get to feed the chooks in our Cane Train Cutting (thus revelling in childhood memories), I have friendships, support, security, diversity and opportunities to continue to learn. Living at Halcyon Landing offers more than I expected and that has to be a good thing! Here’s to a great 2022!

AS WE HEAD INTO ANOTHER WARM AND POSSIBLY WET SUMMER, ONE COUPLE FROM HALCYON LAKESIDE (QLD) REFLECT ON HOW THEIR LIVES HAVE CHANGED SINCE SURVIVING ONE OF AUSTRALIA’S WORST BUSHFIRES.

fter living with the risk of A bushfires for more than two decades, Robyn and Graeme McLaughlin’s home was engulfed by the ferocious flames of the Black Summer bushfires which ravaged Australia in 2019-2020.
Their 7-acre property was located at Kiah, a picturesque and remote town surrounded by national park on the NSWVictorian border, which was swallowed up by the fires. “We had 600 olive trees ready to be harvested as well as walnuts,
hazelnuts, citrus fruits and vegetables and a vineyard,” Robyn said. “We were totally self-sufficient as we could fish out of the river, serve it with our own homegrown produce and drink our own wine.” Almost all of the community’s 73 homes were totally destroyed with the McLaughlin’s home being one of them, the couple evacuating with not much more than the clothes on their back. Graeme said they had lived with that threat for 20 years, so they had a “firebox” near the front door which contained important treasures and trinkets from their life. “We had to evacuate on New Year’s Eve because there had been wild winds and we’d been showered by embers,” he said. Robyn added: “We were having friends around so there was all this food, so we had to put it away as best we could and evacuate.” On 1 January, the threat had passed so the couple returned to their home and had a delayed celebration. “Lots of people came back and we had a big whoop-up dinner,” Robyn said. A few days later, their property was once again under threat and the couple were advised to evacuate. Graeme said: “We had a couple of
hours to pack up and Robyn kept bringing more and more things to put in the car while I attended to stock and farm equipment.” “I never thought the fire would get to us but I’m glad that Robyn kept putting everything into the car that she could. ”While most of their belongings were destroyed, the incredibly positive couple are grateful they escaped the inferno. “We are very lucky that we survived, they were the worst fires we’ve ever seen,” Graeme said. Ironically, they had made the decision to sell their beloved property in order to make the move closer to their children, who live in Queensland. “We had put the house on the market and were planning to move, so it was looking at its absolute best,” Robyn said. The couple joked that the fire meant “they saved money on a removalist” but they did lose some tapestries Graeme’s mother had made as well as other sentimental heirlooms.

oving to Halcyon Lakeside M has been a fantastic move for the couple, despite Robyn’s
initial skepticism about Graeme’s suitability for community living.
“I’ve never been back,” Robyn said. “I haven’t even looked at all of the photographs of what happened.”
“He’s a country boy and he’s used to having lots of land and space,” Robyn said.
“We’re very grateful for the time we had there and we’re very grateful for our life today.”
“Which is why we were so lucky to get this home as it’s bigger and it’s elevated, you can see all the way to the mountains.” Robyn said the pair have embraced community life and joked that she is known by one good friend as “Eddie Everything” because she likes to try all the activities and events on offer. “Don’t get me wrong, what we went through was a disaster, we were devastated,” she said. “But we have moved on and the first step was coming here and having our family around has been the saving grace, particularly as not long after we arrived COVID hit.”

This was evidenced at one of the first Halcyon events I had the privilege to attend - the Friends of Halcyon Referral Luncheon held in Brisbane in September. It was wonderful to connect with so many Halcyon homeowners and home buyers as well as hear from a few of the charities the program has supported so generously over the years. 6
I thoroughly enjoyed meeting and talking to many of you, and I look forward to doing more of that as I visit all of our communities in the new year. Over the past few months since Stockland and Halcyon joined forces, it has been incredibly exciting to get to know the Halcyon team and learn more about the business and how they have created such a valuable and well-respected brand. Together we are focused on retaining the close relationship we have with all homeowners and will keep doing this incredible work as we create more communities across the country.
Having worked for Stockland for the past 16 years, it’s important to note the many similar values both companies share. The reason we acquired Halcyon is simple – they are the leading lifestyle community creator in Australia and as such, we see enormous value in retaining the Halcyon brand. fter several attempts at A retirement, Judy White finally took the plunge and finished up her last day working in a medical practice in Gladstone (QLD).
“They kept asking me back and I found it hard to say ‘no’,” she said. Of course this time it worked as she made the decision to move south, closer to two of her children who live in Brisbane. “I’ve always wanted to move to the Sunny Coast and when I retired last year, I thought it was time to start looking,” she laughed. “And I obviously can’t work on reception from here.” Judy is one of the first homeowners to move into Stockland’s Halcyon Nirimba, which is part of the masterplanned community of Aura near Caloundra (QLD). “There were a few married couples who moved in before me, but the lady next door is on her own and we have become really good friends,” she said. Judy said has become involved in lots of activities such as craft, movie groups and community drinks but is excited about the facilities opening next year. “Everyone is joining in really well and when The Clubhouse opens, I’m sure that will take off.”

“I love the beach and walking down at Caloundra, it’s been amazing and I hope to get myself a bike soon so I can take advantage of all the bike tracks around here.” Judy said her life had changed since making the move. “I used to be more of a shy person, but now I seem to have really come out of my shell,” she said. “I’m really enjoying the company, everyone has just been great.”

fter experiencing an interesting A and eclectic working life, Steve and Gaynor Tapscott are looking forward to life at Stockland’s Halcyon Berwick (VIC).
“We’ve been self-employed, owned a coffee shop, a concrete manufacturing business and I’ve been in the police force, the army and the fire brigade,” Steve said. “We’ve done lots of different things, so we’re looking forward to experiencing community living.” The couple have lived in the same home in Bayswater, in the foothills of the Dandenongs in Melbourne’s east, since marrying 46 years ago. Steve said moving to an over 50s lifestyle community was the way to go as they prepare to transition to retirement. “We were in a situation where we didn’t have as much super as we would have liked, downsizing was the way to go,” he said.
“We looked at every community within 50km of where we live and that included lifestyle resorts as well as retirement villages.” Steve said it was the model and the vision for the community which sealed the deal. “The fact there was no deferred management fee and the plans for the community really attracted us,” he said. “We looked at them all, but this one just had an appeal. I can’t believe how helpful the people have been.” As the community is currently under construction, there is a private Facebook group for those waiting to move into their homes. “It’s a great group because we are all getting to know each other,” he said. “Everyone goes into the group and they’re welcomed and can ask any questions, whether they have downsizing anxiety or finding out who is a walker, who is a bowler etc.” SUMMER 2021/2022 | 11

For many homeowners, the opportunity to spend Christmas with family who have been subjected to lengthy lockdowns due to COVID is now here. Carolyn Rose and Chris Bell, homeowners and good friends from Halcyon Greens, Pimpama (QLD), said their plans for summer and 2022 were probably very similar to many other Australians.

“We are going to have a year of celebration, a year of reconnection with our family, lots of hugs,” Carolyn, who originally comes from New Zealand, said. “We’re really looking forward to the joy of being able to travel again and to have normal interstate holidays to see family.” Carolyn and husband Geoff will be spending Christmas with one daughter and a grandson in Melbourne, before coming back to bring in the New Year at Halcyon Greens. “We are very excited to be getting on a plane to Melbourne to see them as we’re double-vaxxed and by then we’ll be triple-vaxxed.” The couple have booked three cruises, one to New Zealand and one from Singapore to Perth in 2022, and one to the US in 2023. “We have been getting lots of information from the cruise companies about how they’re planning to keep everyone safe and we’re very impressed,” she said. “Our eldest daughter and her two children live in New Zealand, as does my sister so we’re hot to trot to get to Kiwi Land.” For Chris and her husband Rex, she said they had “won the jackpot” as both of their daughters, their husbands and all five grandchildren would be with them for Christmas. “It’s just magic as we will have all of them together and I can’t remember the last time that has happened,” she said. “And then they’ll be back for Rex’s 70th birthday in February, so I really do feel like we’ve won the jackpot.” The couple will then take off in March to sail around the Whitsundays with some friends from Halcyon Communities. “We’re really excited, it’s going to be a great year.”

I’m just enjoying life here.”
The couple’s three children live in Queensland, but with two of them working and the other heading interstate – Robyn and Graeme will spend Christmas with each other. “We are Christmas orphans,” Robyn said. “We usually spend it with our daughter but her husband’s family are in Adelaide and they haven’t seen them for a long time.” “And we don’t have holidays planned, why would we go away when we live in a 5-star resort, we are so happy here.”

labour of love, bringing the many talents of the community together.
Whether it is the green thumbs who put in the hard yakka doing the physical work or those who choose to donate funds, plants or knickknacks or by painting commissioned artworks – it truly is a team effort. The garden, which is located on the old site of the cane train route, has recently undergone a refresh, with a burst of new members taking the lead. A thriving herb garden (its produce free to anyone who might need a sprig of rosemary for their lamb roast or some mint for the sauce), citrus trees, succulents, orchids and an eclectic grop of hand-me-downs repurposed and upcycled to include in the garden. Homeowner Terry Hough has also painted a number of Australian fauna, which are hung along the fences of the gardens. SUMMER 2021/2022 | 15

tockland celebrated the S settlement of the 1500th Halcyon home in September 2021. Graham Stanley, a classic Aussie road warrior who has travelled far and wide before settling into Halcyon Rise at Logan Reserve (QLD). When Graham sold his house on the Tweed Coast, he hit the road with his caravan and began exploring the country to make the most of retirement. “I went caravanning and didn’t know what I was going to do. I was in Melbourne and COVID came along so I had to get back to Queensland,” Graham explained.
He had heard of Halcyon as his former wife lives at Halcyon Greens in Pimpama (QLD), and decided to visit Halcyon Rise to see what was on offer. 16
Intrigued by the lifestyle, which blends country living with big-city conveniences, Graham made a trip from North Queensland and hasn’t looked back since. “I came down for a couple of days to have a look and ended up staying for two weeks,” he laughed. “I signed the contract and paid a deposit on the house; it didn’t take much convincing. That was July last year and since then to now, I’ve never had any doubts about my decision.” Halcyon Rise sits on 100 acres fronting the Logan River and retains the rich agricultural heritage of the Logan region. It’s also conveniently located between the Gold Coast and Brisbane, making it perfect for Graham.

“It’s handy here,” he commented. “I have brothers who live in Brisbane and my adult children live at the Gold Coast, so it’s nicely in between both to go visit. That was one of the reasons for choosing here.” Halcyon Rise offers Graham not just convenience and an idyllic setting but also peace of mind that allows him to live the life he wants. “It gives me an opportunity to close the door, walk out of here, hook the caravan on the 4WD and go away,” he said. “Whether I go away for a week, a month or three months, I know that everything is secure here because it’s a gated community. “It’s a very friendly and welcoming community.”

Great Ocean Road, Victoria Port Douglas, Queensland Bordered by clear, vibrant aquamarine waters and the luxuriant tropical green of World Heritage listed Daintree Rainforest, Port Douglas is located in tropical North Queensland and is only an hour’s drive north of Cairns. The town has a distinctive laid back atmosphere, and a low-rise tropical old world charm.
The spectacular Great Ocean Road hugs the seaside cliffs that snake along the wild and windswept Southern Ocean. The striking vistas along the iconic road evoke awe with craggy cliffs, empty beaches and soaring bluffs flanked by brilliant green countryside. One of the highlights are the 12 Apostles, soaring pillars which have been chiselled out of limestone over 10 to 20 million years.
Winton, Queensland Uluru, Northern Territory Uluru is a massive sandstone monolith in the heart of the Northern Territory’s arid “Red Centre”. Uluru is sacred to indigenous Australians and is thought to have started forming around 550 million years ago. It’s within UluruKata Tjuta National Park, which also includes the 36 red-rock domes of the Kata Tjuta formation.
“Once a jolly swagman camped by a billabong…” You’ll be forgiven for relentlessly whistling this famous tune while you’re in Winton, as it’s the home of Banjo Paterson’s Waltzing Matilda. Winton is also home to magnificent opals and has the world’s only recorded evidence of a dinosaur stampede – the Dinosaur Stampede at Lark Quarry Conservation Park. More than 95 million years old, there are 3,300 stampeding footprints immortalised in stone.
Barossa Valley, South Australia The Barossa was settled by German immigrants and is renowned as one of the world’s great wine growing areas, with more than 150 wineries and 80 cellar doors. Seven generations of grape growers and winemakers have established this fertile land as one of Australia’s top wine regions with consistently outstanding vintages over the past 160 years. Why fly economy when you can fly first class? Y ou may not know Stockland’s B by Halcyon homeowners Peter and Linda Hockin, but you have probably seen their swimwear on some of the world’s biggest celebrities.
“We’ve got our own business in the area close to B by Halcyon in Buderim (QLD),” Peter said. “We’ve got our own brand of swimwear and sun-protective clothing – Stingray – and we also supply book packs and stationery to local primary and junior schools.” Stingray is a family business that Peter and Linda run with one of their sons. They have been researching, designing, testing and manufacturing UV protection activewear since 1986. It’s little wonder then that Stingray is “liked” by some well-known celebrities. “Mark Zuckerberg from Facebook, he has purchased swimwear through us,” Peter revealed. “The other guy who ordered through us last year is Lionel Ritchie. We 18

Still happily running their business, Peter and Linda made the move to B by Halcyon after deciding to downsize as they transitioned into their next stage of life. “There are a lot of similar developments around this area, so it had to be something that made the difference for us,” Peter said. “While the other community ticked some boxes, it was only B by Halcyon that ticked them all. In B’s favour, we were really impressed by the quality finish, the attention to detail, the facilities they had planned and the development layout.”
For Peter and Linda, B by Halcyon offered the best opportunity to live their very best life.

and well-attended events on the community’s social calendar.
Event coordinator Sandie Carnegie said more than 250 people from inside and outside of Halcyon Waters come along each year to find a special Christmas gift. “We had 25 plus market stalls this year,” Sandie said. “I put the call out to all the groups within the community and we
have some very crafty and clever people who came to display their wares.” She said stalls were manned by members of the various craft groups as well as the art group, who set up their display on easels in the foyer of the Recreation Club. “We also had a number of stalls selling homemade sweets, cakes, jams and preserves,” she said. Caretaker Chris Woods and Community Manager Renee Ferguson hosted the
BBQ breakfast with more than $1000 raised from the delicious bacon and egg rolls donated to DV Connect. Sandie has been involved with the Christmas Fair since she moved into the Hope Island (QLD) community nine years ago, eight of those as the organiser. “It’s a lot of work but we have lots of helpers,” she said. “It’s a great event and what I enjoy most about it is the opportunity for all of us to get together to enjoy a morning in the sun.” SUMMER 2021/2022 | 19

A Peruvian odyssey ans Beumer fulfilled two H childhood dreams when he filmed a trip to Peru and then
turned his travels into a movie.
The homeowner from Stockland’s Halcyon Glades debuted the film to his fellow homeowners at a premiere held at the Caboolture (QLD) community’s private cinema in October. “It’s something I have wanted to do since I was a child,” he said. “It left a very interesting and colourful impression on me.”

Hans spent almost six weeks in the South American country in late 2018, visiting many of the sites including Macchu Picchu, Nazca, Lake Titicaca and Lima. “It was a very interesting trip with lovely foodie experiences, comfortable and clean accommodation and in parts it was quite strenuous and one had to have a certain fitness level,” he said. Hans, who has no experience in film, acted as producer, director, cinematographer, sound engineer and narrator of the film.
He said the film was had been well received by his fellow homeowners, particularly during the pandemic as we have not been able to travel. Hans said Macchu Picchu was one of the highlights of the trip, which he said was fascinating to try and understand how the ancient Incans constructed such amazing stone structures. “I also got to meet many different people on the tour, many who have become friends and I am still in contact with today,” he said.

Mo has the Vision to back a winner orris ‘Mo’ Meppem’s passion M for horse racing and his desire to make sure he won more than he lost was the inspiration to become a bookmaker.
The homeowner from Stockland’s only waterfront community Vision by Halcyon, was a country bookmaker for almost 40 years. He worked in areas such as northern NSW and the Gold Coast – but only on weekends. “My wife Robyn will tell you, I worked around 60 race meetings over 52
weeks of the year,” Mo said. “It was a busy time, but it was fantastic being around racing.” The couple moved into Vision by Halcyon in August, having moved from Paradise Point after retiring from his main job with Gold Coast City Council. “We are loving being here, there’s a great community of people and we get involved in lots of activities,” Mo said. Mo ran a Calcutta Auction at the
community on Melbourne Cup Day, which he confessed is not his favourite race meeting. “It’s a handicap, so it’s always hard to pick,” he said. “The best races are the Cox Plate and Derby Day and the Everest has become one of the finest races in the world.”

On a beautiful spring day, 116 golfers including 26 homeowners from nearby Halcyon Rise and Halcyon Greens, teed off in a shotgun start for the inaugural Halcyon Meadowbrook Legends Pro-Am.

Halcyon Rise homeowner, keen golfer and Meadowbrook member Dot Marsh was one of them, and despite not playing her best round, thoroughly enjoyed her experience playing with the professionals. “I have trouble on this course as I always seem to find the water,” Dot said. “It doesn’t really matter how I play as I just love being out there and it was a great day.”
Dot started playing golf 17 years ago and plays at Meadowbrook three times a week. “I started a bit later in life, but it doesn’t matter as I have a wonderful time,” she said. She has only recently moved from Western Australia into Halcyon Rise, joining the golf club was one of her first tasks.

Dot has made quite an impression on Meadowbrook already as local pro Matt Rogers, who was one of the winners from the teams event, had played a round with her before gifting Dot with a golf bag. “I was absolutely stoked and feel very lucky that he would have thought of me as I have only been a member of the club for four weeks,” she said. Golf veteran Glenn Joyner played the 10-27 hole configuration at the
course (which was formerly known as the Logan City Golf Club) in 5-under 67, two strokes clear of Murray Lott, Adam Le Vesconte and former US PGA Tour Player Euan Walters at 3-under 69. Glenn said: “I got off to a rough start with a bogey on my first hole though I followed it up with three birdies in a row.” “Meadowbrook Golf Club has really improved over the last 12 months with additions of the
coaching facility, mini golf and improvements to the driving range. “The course is a pleasure to play.” Regional Project Director Glenn Nugent said sponsoring the event was a great way to support local business. “We’re really focussed on staying local and Meadowbrook Golf Club is a great one to keep the community active and entertained,” he said.

Coming from acreage in a small country town, Pauline was attracted to the locality of Halcyon Rise, which strikes a balance between country lifestyle and big-city conveniences. Pauline is semiretired and works part-time as a social worker. After moving to Halcyon Rise, she enlisted the companionship of Watson, a four-month-old Moodle – a Maltese 26
crossed with a Poodle. “I wanted to get a dog because while you have this beautiful community where you can sit out the front and someone will come join you for a chat, I like the company of a dog,” Pauline said. “He’s just gorgeous and has been so much fun. He loves chasing the ball, always brings
“I take him for a walk; there’s some really nice, grassed areas so I take the ball and he chases that and brings it back to me, so I wear him out that way. There’s plenty of walking and when [the development] opens up, there’s acres of open space here, so I’m hoping we can get lots of walking in.” With the community in its early stages, Pauline said the homeowners have already formed a tight-knit community. “Because there’s not a lot of us here, we’re really forming a nice bond as a group, getting to know each other,” she said. “It’s really good that way. It’s going to get bigger, but I think those initial friendships are important to all of us.” There is no doubt in Pauline’s mind that she has found her and Watson’s forever home at Halcyon Rise as she transitions from semi to full retirement. “Oh absolutely, I’m here for a long time,” she laughed. “They can cart me out of here.”

thought about leaving the area for their new chapter but found it difficult to find something which suited their needs.
“We had thought about moving, but that’s not where our heart is. Our heart is in Logan,” Brian said. 28
“We like the bushland and the outlooks, the river, the mountains in the west and the parks, they’re just everywhere and we love that.” The couple are still working and wanted to find a place where they could transition into retirement, surrounded by a connected community with plenty of facilities and activities on offer.
Their search led them to Stockland’s Halcyon Rise, a luxury over 50s lifestyle community located in the rural setting of Logan Reserve (QLD), and their new home will be ready in June. Shelley said: “Moving here to Halcyon Rise means that when I am ready to give up work, it will be easier for me to make that transition because I’ll
have a lot of connections, a myriad of things to do that I can join – or not join.” Halcyon Regional Project Director Glenn Nugent said a great deal of local working people are making the move into Halcyon Rise, rather than wait until they retire to downsize. “Lots of working people are making the move to Halcyon Rise, purely on the fact they want a different lifestyle and they want to change the way they do things,” he said. “Right now they are tied to the house in maintenance, they’re mowing the lawns, cleaning the pools or doing something within the house. “Here at Halcyon Rise, we do that for you.” Glenn said the community had blossomed since the first sod was turned around 12 months ago. “There’s lots happening at Halcyon Rise,” he said. “Twelve months ago we had no roads, no landscaping, no buildings and now we have a beautiful community really starting to take shape. “We have homes, roads, landscaping and construction on our 5-star recreation and leisure facilities has started.” Glenn said demand had pushed the release of next stage forward, with new buyers being able to time their move into the community when the lifestyle facilities have been constructed. “We have over 35 homes settled with another 60 under construction and we’ve got more than 100 homes sold at present,” he said. For the Casserly’s, their journey to find their new chapter ended up being an easy choice. “For us it was a no-brainer because it offers us absolutely everything we could want for the next part of our life,” Shelley said. WORK BEGINS ON HALCYON RISE FACILITIES
onstruction on the recreation and leisure facilities at Halcyon C Rise has begun and to mark the occasion, a sod-turning ceremony as held onsite at the Logan Reserve community. The honour was carried out by Kingsley Andrew, EGM of Stockland Halcyon, Scott Ng, GM of Stockland Halcyon QLD and Glenn Nugent, Regional Project Director. Also in attendance were Isaac Hanger and Phil Hadziahmetovic, representatives from Total Construction, the firm who will build the $8m facilities. The community facilities will be the most luxurious in the Logan region and will feature many different activities for the community. The first part of the precinct to be completed will be ‘The Playing Field’, which includes floodlit pickleball courts, floodlit lawn bowls green and a covered barbecue pavilion will be ready by April next year. Completion of ‘The Homestead’ is scheduled for the end of 2022.

Hello summer SWEET, SUCCULENT AND PLUMP, NOT ONLY ARE STRAWBERRIES DELICIOUS, THEY ARE ALSO AN EXCELLENT SOURCE OF VITAMIN C
Strawberry and walnut salad Ingredients 320g strawberries, washed, hulled, quarter lengthways 1 tbsp balsamic vinegar 80g baby spinach leaves 2 tsp extra virgin olive oil 120g feta cheese, crumbled 50g walnuts
Method
1. P lace the strawberries in a bowl. Drizzle with balsamic vinegar and toss gently until well coated. 2. P lace spinach in a large bowl. Drizzle with oil, and toss gently. Divide spinach and strawberries among serving plates. 3. D rizzle with the balsamic vinegar remaining in the bowl. Scatter with feta cheese and walnuts to serve.
Easy strawberry jam Ingredients I kg strawberries hulled, washed and cut into halves (or quarters if they are large) 250gm jam sugar Juice of one lemon (lemon is a natural setting agent and will also keep bacteria away)

Method
1. In a heavy bottom saucepan, mix strawberries, sugar, and lemon juice. 2. Stir over med-low heat until the sugar is dissolved. 3. Increase heat to med-high and bring mixture to a rolling boil. 4. Stir frequently mashing the strawberries as you stir, continuing to boil, until jam is thickened and bubbles completely cover the surface of the jam. (about 10 minutes.) 5. Transfer jam to a jar and let cool to room temperature. 6. Seal jars and store in the refrigerator.
Strawberry cheesecake (no bake) Ingredients 250g biscuits (such as Arnotts Marie) 100g butter, melted 1 vanilla pod 600g full fat soft cream cheese 100g icing sugar 284ml pot of double cream
For the topping 400g punnet of strawberries, halved 25g icing sugar
Method 1. P ut the biscuits into a food processor until they form small crumbs (if you have one), or put them into a plastic bag and crush with a rolling pin. 2. Melt the butter. 3. T ransfer the crumbs to a mixing bowl then pour over the melted
butter. Mix thoroughly until the crumbs are completely coated. 4. T ip them into a lined springform tin with baking paper and press firmly down into the base to create an even layer. Chill in the fridge for 1-hour to set firmly. 5. S lice the vanilla pod in half lengthways, leaving the tip intact, so that the two halves are still joined. Holding onto the tip of the pod, scrape out the seeds using the back of a kitchen knife. 6. P our the double cream into a bowl and whisk with an electric mixer until it’s just starting to thicken to soft peaks. 7. P lace the soft cheese, icing sugar and the vanilla seeds in a separate bowl, then beat for 2 mins with an electric mixer until smooth and starting to thicken, it will get thin and then start to thicken again. 8. T ip in the double cream and fold it into the soft cheese mix. You’re looking for it to be thickened
enough to hold its shape when you tip a spoon of it upside down. If it’s not thick enough, continue to whisk. 9. S poon onto the biscuit base, starting from the edges and working inwards, making sure that there are no air bubbles. 10. Smooth the top of the cheesecake down with the back of a dessert spoon or spatula. Leave to set in the fridge overnight. 11. Bring the cheesecake to room temperature about 30 mins before serving. To remove it from the tin, place the base on top of a can, then gradually pull the sides of the tin down. 12. Slip the cake onto a serving plate, removing the baking paper and base. 13. Purée half the strawberries in a blender or food processor with the icing sugar and 1 tsp water, then sieve. Pile the remaining strawberries onto the cake then pour the purée over the top.
