Welcome to the inaugural issue of Handmade Magazine, a quarterley review of the Handmade Market in Canberra and a show and tell of all that is good in Australian design. Handmade Canberra will present the best in homewares, fashion, accessories, gourmet produce and gifts at Exhibtion Park in Canberra (EPIC) on 26th & 27th September. Two halls of EPIC will be packed with sumptuous displays, artisan products and delicious food, all in a great atmosphere with friendly faces. We have hand-picked designers from locally and around Australia and we challenge you not to find something that catches your eye! In the pages of this magazine, we will showcase the immense talent in the Handmade stable, tell the stories of the market and shout loud about how much we love Canberra. The sound of live music and happy people is at the same time relaxing and stimulating, while the scent of candles, soaps, fresh coffee and delicious gourmet food will whet your appetite.

gourmet day Whether for a gift, or to stock up your pantry, the Handmade gourmet food hall can supply your culinary needs. From chocolate to chilli and barbecue to balsamic, our shelves are stocked.

Preparation time 20 mins, cook time 4.5 hours Dry the skin of the belly completely by dragging over a paper towel to help with crackling. Score the pork belly using a sharp knife cutting into the skin just enough to pierce it about 2-3 ml deep. Slice from side to side, about 1cm apart for each cut. Rub belly down with sea salt flakes. Line baking dish with two foil pieces. (This will help make the cleaning of your baking dish easier.) Place the pork belly skin side up, lift the sides of the foil to surround the belly like a boat, but leave the top completely exposed. This will keep the pork moist by catching the juices, but leave the skin to crisp up. Put in oven at 250° for 10 minutes. After ten minutes turn oven down to 150° and cook for 3-3.5hours until soft to touch using a fork. While the pork is cooking, grab the potatoes, pierce with a fork in about six places, put straight in the oven directly onto the rack and cook for between 60-90 minutes. Cut a deep cross in each potato and place butter in cross mark, putting it back into the resting oven just before serving.

BBQ Sauce, golden jacket potatoes and jalapeno slaw. 1kg pork belly 200g shredded cabbage 100g shredded carrot 100g sliced Spanish onion 50g chopped jalapenos 4 large Sebago potatoes

1 bottle “Smoking Brothers” Maple BBQ Sauce 150ml mayonnaise 50g sea salt flakes 50g butter 100g sour cream

Prepare coleslaw by mixing cabbage, carrot, Spanish onion, jalapenos and mayonnaise together in a large bowl. Do this last thing so the coleslaw stays fresh and crisp. Check the pork and see if it’s ready by sticking a small knife into its side. If the knife slides in easily it’s ready. If not cook for a further 30 minutes. Turn the oven off and leave the pork in for another 30 minutes to rest, making it extra soft and tender. As an option you can pour some Maple BBQ Sauce over the top of the pork while it rests. Cut the pork belly into four pieces and arrange on a plate with potato topped with sour cream and some of the coleslaw mix. Finish by pouring BBQ sauce over the pork and enjoy.

We’re definitely not the first to be saying this, but it doesn’t make it any less true. Canberra is changing. In a place designed for politicians, the every day folk are taking over the most unlikely corners and the result is a unique blend of cool, hipster, active, informed and sustainable. We’re not trying to be Melbourne. We’re Canberra. We’re particular about our coffee, our food and our environment. We’ve been searching for a vibe that is ours, and slowly, we’re finding it. We’re evangelical in the extreme so it won’t be long before the rest of Australia catches on, but in the meantime, we’re happy to have it to ourselves. We love our cafés, cocktail bars and innovative restaurants. We love our trails, outdoor spaces and seasons. We love our archtitecture - the Federation classics, the monolithic blocks, the bus shelters, graffiti and reclaimed wood cladding. We love our produce - wineries, farms and tulips. We love our events - festivals, sports matches and markets. We’re a city of small businesses making big changes and Handmade is thrilled every day to be right in the thick of it. So much so, that we’ll soon be devoting a whole section of our website to how much we LOVE CANBERRA. Jump on the bandwagon and watch Canberra’s petals unfold.
