Project Overview

LOCATED IN THE HEART OF DOWNTOWN ASHEVILLE NORTH CAROLINA, SCOUTS IS A SOUL FOOD RESTAURANT COMBINING THE SOUTHERN CHARM OF THE CAROLINA’S WITH THE FRESH & HIP FEEL OF THIS COLLEGE TOWN. THE COMFORTABLE AND CASUAL SETTING AT SCOUTS WELCOMES PEOPLE OF ALL BACKGROUNDS AND AGES. THIS SPACE PERFECTLY COMBINES SIMPLICITY WITH INTEREST MAKING IT A PERFECT SPOT FOR LUNCH OR DINNER.

Restaurant Space Program A. Setting a. Building - Existing Structure b. Areas - Waiting Area, Kitchen, Host Stand, Dining, Bar, Restrooms, Office. c. Identity/Description - Use of mid century modern design style to create a functional soul food restaurant. B. Users a. Estimated Number of Users - 250 Users (250 Max. Capacity) b. Rolls of Users - All users should be able to flow between spaces while working, cooking, or dining. c. Locations of Users- Waiting, Kitchen, Host Stand, Dining, Bar, Restrooms, Office. C. Functions a. Primary Functions - Dining, Cooking, Serving b. Secondary Functions of Space - Storage, Office Space, Utility Closets, Receiving Deck c. Support (General Aspects of the Space) - Bathrooms, Closets, Storage D. Standard Objective a. Health & Safety - Meet fire safety codes, ADA Compliance, Health & safety restaurant codes. Fire exits and Egress windows should be able to be accessed from any place in the building and visible signage. Use finishes and furnishing that promote health and safety. b. Psychological & Physical Issues - Building must be well ventilated with multiple windows to promote mental and physical health. It is important that the space be well designed, but also functional for customers and employees. c. Operational Issues - Spacing between table, bathroom stalls, hallways, and walkways must be ADA compliant. Each space should be easily accessible. No drastic floor changes unless marked. d. Contextual Issues - Atmosphere should feel friendly and inviting. Design should be interesting and unique while still being calming and easy to process. Table and bar seating should promote conversation. E. Relationships Between Among The Subdivisions a. Spatial Adjacency - On attached sheet. b. Isolations F. General Constraints a. Codes & Standards - ADA, IFC, IEBC, NFPA, ASTM b. Standard Practices - Employees must comply with fire safety and food health and safety guidelines. c. West Door and wall to be removed and rebuilt as needed for restroom space.

G. Anticipated Future a. Projected Growth / Change in Space - Must account for employees and/or guests with disabilities such as blindness, wheel chair, deafness, etc. b. Changing Roles of Users - Not Forseen. c. Technical Change - Space must be equipped for upgrades in POS Systems and Kitchen utilities. d. Design Change - Not Forseen. H. Space Requirements a. Area Requirements - Approx 70% Dining Space and 30% Kitchen Space b. Branding Accommodations - Must have Space at entrance, back walls, and bar for signage. Menus and all other displays should be properly branded with approved design. Floor Mats will also be used with branding. c. Furniture Accommodations - Varying table sizes must be present for different party sizes. Chairs, tables, and booths must be able to accommodate and size or disability. I. Subdivision Requirements a. Environment Support - Climate control should be energy efficient. Illumination control should have optional dimming switches to promote saving energy. b. General Requirements - Kitchen must have all needed hookups for appliances. Bathrooms must have specified wet walls and proper plumbing for sinks and toilets. Electrical units will be needed for outlets at all booths.Wifi should be connected and usable at all areas in space. J. Conclusion a. Specialized Design Characteristics - Simplistic mid century inspired design with clean lines, symmetry, natural woods, and warm colors. The space should feel comfortable and welcoming while still being unique. Space should promote socialization and a family friendly environment. b. Specialized Concepts - The space is inspired by Wes Andersons, Moonrise Kingdom. Warm yellows and browns and jewel tones are found in the film along with symmetrical cinematography and vintage items. The space will also be highly functional. c. Other Specialized Requirements - All of the descriptions above should be present while still keeping the space user friendly to all ages and types of people.
