VITAMIN A CASSAVA AND MAIZE FOOD PRODUCTS COMMERCIALIZED IN NIGERIA HarvestPlus – Nigeria and partners are on a mission to make more nutritious foods available to everyone, everywhere. We combine the skills of farmers who grow biofortified crops and the expertise of chefs and nutritionists to develop nutrient-rich food products specific to Nigerian tastes using low cost production models. There are 25 such products, 10 of which have been commercialized:

Toasted granules, often eaten as snack with groundnut or as a paste with vegetable

COMBOBITE Fried snack, made from a combination of vitamin A cassava flour and cowpea

CASSTARD Cooked porridge, made from fermented vitamin A cassava starch – similar to maize custard

TUWO Cooked paste, made from vitamin A maize flour – similar to ‘Nsima’ in East and South Africa

FLAKES Breakfast cereal made from vitamin A maize

VITAMIN A FUFU Fermented mash/flour, often cooked into a paste and eaten with vegetable

CASSMOI Cooked snack, made from a combination of vitamin A cassava mash and cowpea

CASSARITA Fried snack, made from fermented vitamin A cassava chips – similar to French fries

OGI/AKAMU Cooked porridge, made from fermented vitamin A maize often taken with bean cake

GREEN MAIZE Vitamin A maize is often consumed boiled or roasted
