BY PAM BURKE Understanding insulation, weatherizing measures and structural ventilation needs are keys to making winter and summer temperate within your home. Whether the issue is cold temps that are coming with the approaching winter or the hot temperatures north-central Montana sees in the height of summer, insulating and weatherizing your home are important for comfort, cost savings and longevity of your home. The effectiveness of an insulation is called R-value, which is a number applied to a material’s resistance to heat flow. The

higher the number, the more resistance and the better insulating effectiveness the material has. “The R-value depends on the type of insulation, its thickness, and its density,” the Energy.gov website says. “When calculating the R-value of a

multilayered installation, add the R-values of the individual layers.” Technically, the thicker the insulation material, the more resistance to heat flow, which means your house stays warmer in winter and cooler in summer. But installation plays a factor, too. If insulation is compressed, it loses effectiveness, so putting 5-inch thick blanket insulation, such as fiberglass or wool insulation, into a 2-by-4 wall will drop the R-value. Also, when insulation is installed between construction materials like wall studs, floor

joists, trusses and beams, the structure itself has less R-value than the insulation. The structural material doesn’t have the same R-value. The area with lesser R-value, a wooden wall stud, for example, is called a thermal bridge. Gaps left between insulating material leaks heat or cool air. On the flip side, blown-in insulation done correctly can effectively fill gaps and even cover thermal bridges to an extent, but too much of a good thing can cause ventilation problems. See the sidebar on ventilation for more information. The Department of Energy considers all of Montana a Zone 6 area for R-value recommendations. The numbers they recommend are R49-R60 for an attic; R30-R60 for a cathedral ceiling; R13-R21 for the cavity, or exterior walls; R5-R6 for insulation sheathing, or rigid foam or other boards used to cover the exterior walls; and R25-R30 for floors. An R48 value is equivalent to about 16 inches of fiberglass or wool-type insulation, Havre ProBuild salesman Tim Dwyer said.

Insulation can be broken into three basic types: blanket, foam and blown-in. The types of materials in these categories can overlap, though. Blanket type insulation is, literally, a blanket of material such as fiberglass, mineral “wool,” plastic fibers and natural fibers, woven or loosely matted together. Some of it comes with a facing, usually paper, to provide a seal between the home and the outdoors. The most common of these are fiberglass and natural wool sold in rolls (with or without a paper or plastic facing) and batting. Faced insulations are good for walls because they can be attached to the framework, while the batting is

Other materials used for blow-in insulation are foam, cellulose (shredded paper with a fire-resistant coating), fiberglass and mineral wool, and while the fiberglass can be installed by the homeowner, Dwyer recommended the others be done by contractors because they each have complicated installation techniques, especially for installation in walls where gravity can pull at the insulation, causing it to slough or collapse. Also, some evidence exists to show that blow-in foams, which are mixed from different chemicals, can cause health issues of mixed incorrectly. Blow-in insulations are good for sealing drafts like might be found in an older home and for sealing around irregular surfaces, as well as for in-filling walls to add more insulation to an existing structure. Foam insulation is also sold as a rigid board. Also make sure to change or clean furnace filters, and get yourself on a schedule to check them once a month — or at least as often as the manufacturer recommends, Gibbons added. Having a programmable thermostat installed is another big energy saver, Young said. The thermostat can be programmed to turn down the heat for times of the day when it’s not needed, like when everyone is at work or in bed, but it can also automatically start the heat up before the house occupants get home or get up in the morning, so occupants don’t notice any difference in their comfort level. The key to the programmable thermostat, any or these measures, is to follow through. Program the thermostat, shut storm windows and doors, and keep track of furnace filters, Young added. A home energy audit from NorthWestern Energy can help their customers with assessing home heating problems, as well as water-heating problems. Two energy auditors take an hour to conduct a survey on the customers’ habits in relation to energy usage,

A report is compiled and sent to the customer. If a house has not been audited in the past and it is older than five years, NorthWestern Energy staff can perform a free home energy audit. “We’ll give them all the recommendations of the
things that they can do to make their house more efficient and help them prioritize where they’re going to get more bang for their buck,” Young said. Customers are given recommendations on changes to make in usage, home construction or appliances. Among other information, NorthWestern Energy offers service and rebate information, as well as how-to

Home Ventilation
While the urge might be to super insulate and seal off all drafts, homes need a certain amount of ventilation to function correctly. Lack of ventilation can cause problems with carbon monoxide. Homes with fuel-burning heat sources need fresh air ventilation for that combustion process to take place and outgoing ventilation to let carbon monoxide release outside rather than inside. Moisture buildup can also occur without adequate ventilation. This moisture buildup can occur within the walls where mold can grow before you are aware of it. Tim Dwyer, salesman at ProBuild in Havre said that one mistake people make is using house wrap on the inside of a house when faced insulation is being used too. Moisture can build up between the plastic sheet and the paper facing. from the front line BY PAM BURKE When Dave and Sue Armstrong built their house nearly 25 years ago, in a time before internet could provide a wealth information at their fingertips and before energy-saving homes were the standard, they still added a lot of features to help make the house super-insulated. “I think, in the overall run, I must’ve done most of it pretty close to correctly,” he said. “We’ve lived there 25 years, now, basically, and we still want to stay there.” In the midst of some current remodeling projects, Dave reflected on lessons they learned along the way. Their house has 2-by-6 walls, which was a big step up from the 2-by-4 walls that were standard in its day. It has insulation along the crawlspace and low-e, argon-filled, double-pane windows and trusses that extend more than 2 feet over the edge of the outside walls to ensure that the attic had plenty of insulation above the exterior walls to avoid creating a cold spot at the top. He also put in about 22 inches of a blow-in insulation in the attic. Concerned about air leaks, he put up extra wrapping around the house — house wrap on the outside and plastic on the inside walls and roof to seal it from drafts. He said
he knew at the time this would cut down on the ventilation of the home, but he thought that a family of four active people would be in and out enough to keep it ventilated adequately. That wasn’t the case, though. Sealed that well, “you end up building up all the humidity in the house, and that collected on the plastic then down the walls, and that started to run water down the walls,” he said, adding, “That was just one of those things that I never foresaw was getting something so tight that humidity from the cooking, laundry and the bodies and such being in the house would affect that space.” As a simple, no-cost solution, Dave said, he went up to the attic, reached down through the insulation and ripped a few holes in the plastic. This has worked since without any changes or remodels. The only other change to the attic came after a trip up there during summer. He said, the extreme heat in the attic space drove him to add a forced-air ventilator plus a few more vents in the soffit. The majority of his current remodeling is in response to last year’s hailstorm — new roofing, metal this time, and a rock facade to replace one wall of siding for which they could no longer find matching
material. He is also replacing one door that has seen wear and tear from 25 years of use, and the replacement will be an upgrade. The door faces south where the sun and the majority of wind and storms come from. These elements have added to the deterioration of the door, Dave said, to an extent he had not predicted. He said he spent a little extra money for a top-of-theline, heavy duty door with a low-E window that has a built-in blind. And because the sun shining through the storm door glass discolored the previous door, the new storm door will have low-e glass as well to cut the UV ray damage. The house has needed no major remodels over the years due to workmanship or design, he said, adding that he uses only 800 gallons of propane a year for heating the 1,600 square foot home and cooking, so he’s pleased with his work and the few lessons learned. Dave said a take-away from the experience is that it’s possible to do a few things wrong and still come out ahead — even if you’re not experienced with building or all the aspects of super insulating a home and want to work on the project yourself.

Leann Johnson grew up among Italian cooks, and this early influence drove her lifelong career as a cook and the opening of her own Italian restaurant. “I was always around my mom and my grandparents and they were always cooking, making bread, making everything,” Johnson said. “I was always an Italian cook.” After working at Andy’s Supper Club for many years and owning Quench-N-Bench for eight more, Johnson decided it was time to pursue her dream, opening Nonna’s Coffee House and Trattoria in 2014 in partnership with her cousin Teresa Miller. “When I said I was going to open a coffee house slash Italian restaurant my mother looked at me and she said, ‘Are you serious? Are you trying to kill yourself?’ and I said, no. I just like good food and having somewhere to eat besides what we have,” Johnson said. “I liked the Quench-N-Bench,” she added. “I loved it. I loved all my customers, but I didn’t like
the sandwich part of it. I’m Italian; I love to cook Italian. I learned from the best, my mother, my grandmother, and my aunt and everybody. Johnson said she doesn’t have anything against sandwiches themselves. She serves them at Nonna’s and has always liked baking bread, but she does have a problem with processed meat, and that was the main staple for the sandwiches on her former menu. “You ain’t gonna find processed meat in here, because I just won’t have it,” she said with an adamant tone followed by a hearty laugh. With the exception of traditionally processed meats like bacon, ham and pancetta, Johnson uses all fresh meats, along with homemade and commercial pastas and noodles, homemade breads and lots of fresh, locally purchased fruits and vegetables — beyond what she grows in her own garden. “We like fresh,” she said. Reflecting this, the menu is transitional as she cooks with what foods are in season. The restaurant’s menu also reflects the foods she

Meaty Sauce of Bologna, Italy
Ragù alla Bolognese is a basic Italian pasta sauce, said Leann Johnson, co-owner of Nonna’s Coffee House and Trattoria. “It’s a tight, thick, yummy flavorful sauce, that’s all I can say,” she added, and “it’s really kind of like my grandma used to cook.” The name of the sauce is its description in Italian. Ragù means it’s a meat-based sauce and Bolognese means that it comes from the Bologna area. Bologna is, in fact, the capital of the Emilia-Romagna Region in northern Italy and the city encompasses a 350-acre historic area notable for its expansive neighborhoods of stucco buildings with terra-cotta tiled roofs and its wealth of medieval, renaissance and baroque artistic monuments. Unlike marinara sauce which has tomatoes and no meat and could be described as runny, Bolognese is thick from its tomato paste base, Johnson said, and the meat makes it a heartier sauce. She said she uses a chuck roast for the beef, cutting it into about 1-inch pieces. And for the pork, she cuts up and strips the casing from sausage or cuts up pork ribs. Because the sauce is cooked down until it’s thick, meats like hamburger can be used, she added, but they break down more than the one-inch chunks of roast. Johnson likes to serve the Bolognese on top of a substantial noodle like bucatini, which she described as a round noodle, like spaghetti, but with a hole down the middle, or she uses linguini. To create a whole meal, Johnson said she recommends serving the Ragù alla Bolognese on bucatini with sides of homemade bread and a green salad that includes lots of vegetables like peppers, onion and cucumber and fruits that are season with a blackberry balsamic vinegar dressing.
INGREDIENTS
½ pound beef, chopped, very lean ½ pound pork sausage, skin removed or chopped 1 medium onion, finely chopped 1 carrot, finely chopped 1 stalk celery, chopped 6 tablespoons olive oil
1 small can tomato paste ½ cup hot water dash nutmeg 2 dried cloves 1 teaspoon salt Parmigiano Reggiano, grated aka Parmesan cheese 2 pounds bucatini or linguini noodles
INSTRUCTIONS Saute onion in olive oil until onion is clear, add carrot and celery, add chopped meat and sausage. Mix together and cook for 5 minutes, then add salt nutmeg and cloves. Stir well. Add tomato paste to ½ cup hot water, stir until mixed, add to meat. Cook on low, stirring occasionally. Cook down until “tight” — not runny. While cooking, prepare noodles. Serve sauce over a bed of cooked bucatini or linguini and sprinkled with Parmigiano Reggiano.

grew up with and those she loves to eat herself, Johnson said. “We lived with our grandma. You always knew when grandma was cooking ’cause you could smell it from blocks away,” she said, adding, “My grandma was full-blooded Italian and she didn’t even know how to speak English, so we always would stand over the stove and watched her. Every Sunday we had a huge Sunday dinner, always had pasta and fried celery and fried chicken and sometime it may have been rabbit.” Johnson said there were 10 people in her family, and friends always stopped by at meal times, especially during those big Sunday dinners, and were invited to sit down to eat, “Mangia,” she said
in Italian. The cousins’ business model for Nonna’s reflects this homey approach to mealtime — even Trattoria translates to family-style eating, Johnson said. The restaurant is open 7:30 a.m. to 2 p.m. Monday through Friday, but it’s also open Mondays, Wednesdays and Thursdays for private dinners of eight or more. These dinners are served family style from a selection of entrees. Johnson’s mom fills in when Miller can’t be there, and everyone pitches in preparing their specialties. Fridays they have Dinner Under the Stars night, outside when the weather is nice. Diners pick from three different entrees that aren’t on the regular menu and the
meal includes an appetizer, salad, homemade bread, dessert and espresso or tea. Nonna’s also has an annual Mystery Meal night, which is an entirely Italian meal. Even the menu is written in Italian, and this adds to the mystery and fun, Johnson said, because the five courses are not listed by category. Diners choose five
menu items from the list, which they probably can’t read, and get served these dishes in whichever order they are chosen. Sometimes, she said, people end up with crazy combinations of courses. “This neighborhood supports us well,” she said, “and I love all my customers.” Johnson said she has been called a food critic, but added that it’s more like she is studying people and their interaction with food. “If we go to restaurants or anywhere, I’m always looking at people because you can tell if somebody likes what they’re eating right away by the look on their face,” she said. “I just like to see people enjoy good food,” she added. “I want them to enjoy good food, and I like to put out good food.”

People are turning away from crisp flavors in favor of things reminiscent of fall and winter, including pumpkin. As it turns out, pumpkin spice flavor has stretched beyond the world of lattes and into the realm of flavored vodka — and Johnson shared how to incorporate the pumpkin liquor into a festive fall drink that is as good hot as it is cold. A fan of Pinnacle Vodka, Johnson said she came across the pumpkin version and decided to create a drink using it. “We’re constantly experimenting,” she said, adding she enjoys coming up with new combinations for people to try. Since then, the flavored vodka has been part of a popular special that incorporates RumChata cream liqueur, half and half, and pumpkin pie spice. “It goes really fast,” Johnson said about the demand for the drink when it is available. To make the drink, pour a shot of the pump-

kin vodka and a shot of the creamy, cinnamon RumChata over ice. Add half and half to fill the glass and garnish with a dash of pumpkin pie seasoning. The more ice, the stronger the mix, Johnson said. For fall days that border on freezing instead of brisk, people can replace the ice with warm coffee, Johnson suggested. If pumpkin isn’t for you, experiment until you find what you do like, Johnson said. “We play around with everything,” she said. For any drink, pick a flavor you like and run with it, she said. To avoid wasting supplies and torturing your taste buds, use your nose before you taste test. “Honestly, I smell them,” Johnson said about her mixcreating process. Put the bottles together and sniff to see if they will work. “And if they go well together, mix them with something,” she said, shrugging at how simple it can be to create a new drink. Also, don’t be afraid to mix liquors with liqueurs, which Johnson said, are meant to be combined. Hot chocolate makes a good mixer for people who want a warm drink. Just make sure to fully mix the powder into the hot water before adding liquor to avoid splashing the drink out the side of the cup when stirring, Johnson said. Or use hot tea as a base to mix with whiskey or blackberry brandy, she added. And don’t forget about cream. “Cream is good in anything. If something doesn’t taste right, add cream,” Johnson said, adding to be sure to pour it last to avoid curdling.
