One of the main reasons I started HD Living Magazine back in 2008 was to explore and bring to our local residents, new and old, some of the great people, places and scenes that are offered in our community. Over the years, we have found everything from a Wolf Sanctuary to the meaning behind that sign on the 15 that starts with a Z. We have discovered numerous individuals and historical spots to write about and bring to life in the pages of HD Living. This issue we bring to you our cover story featuring Dr. Michael Fanous, who I had the pleasure of meeting back in 2008. As you will see, Dr. Fanous is not only a local physician who not only cares about his patients here in the community, but he also cares for patients with his time and efforts abroad. We also found a historical site that brings back fond memories for those who have lived in the Victor Valley for many years, as the name Roy Rogers is synonymous with the High Desert. We take you on a journey to the Double R Bar Ranch in Oro Grande, as the new owners look to bring some of that history from the days of old. In “Sustainable House of Dreams” we bring you the unique and creative residence of an Apple Valley couple who value and epitomize what is High Desert Living. HOME & GARDEN SHOW SINCE 1984, THE HIGH DESERT HOME SHOW has been a local attraction bringing the best High Desert contractors and service professionals together for this bi-annual event. The show, which started in 1984, has grown substantially over the years. Home Show General Manager Jeff Bygum tells us how the show, which used to encompass only two buildings at the San Bernardino County Fairgrounds, now fills all four commercial buildings, over 56,000 interior square feet and over 100,000 square feet of exterior exhibits. “The sole purpose has been to bring together local home owners from the High Desert to one centralized location in order to meet and talk to licensed home improvement contractors, have their questions answered, set appointments for estimates, and compare services from several home improvement trades” says Bygum. This year will be the 32nd annual show, with an emphasis on home improvements, reducing energy bills, improving home efficiency & insulation, HVAC, windows, mitigating water usage, gardening and outdoor landscaping ideas, so make sure to stop by this year’s show and find that local business that will help you with all your home improvement needs. SANTA FE TRADING COMPANY The Shopping Experience Different TUCKED AWAY ON OLD HISTORIC ROUTE 66 in Victorville is a local treasure for shoppers seeking the extraordinary and unique. The Santa Fe Trading Company is a delightful and different shopping experience, housed in a cluster of historically significant little buildings packed with treasures from around the world. Tucked into these rooms is a hand-selected, dazzling collection of eye-catching Talavera, rustic furniture, folk art, Dia de los Muertos figures and dioramas, exotic textiles, and garden art. They also offer non-GMO soaps and lotions by RAD Soap Co. of New York; non GMO hot sauce, seasonings, bbq sauce, salsa, and Bloody Mary mix by Sting ‘N’ Linger of Tempe, AZ; as well as incense, candles, fountains, garden supplies, and anything else you might need to make your home unique and beautiful. This warm and festive collection of treasures is the brainchild of Steve Blech, lifetime Victor Valley resident and store owner. The building itself is fascinating, a place where you can almost feel the town’s history. It was purchased by Blech’s grandfather in 1937. It was originally a Texaco gas station and penny candy store. The family has lived on site

since then. The second building was his mother, Dorothy Blech’s beauty salon until 2005. Spend time in the courtyard, enjoying the gentle sounds of wind chimes, fountains and birds, and you will know why so many locals flock to this charming oasis smack in the middle of town. Starting later this spring, Santa Fe Trading Company will again host their 2nd Saturday Art and Craft Fairs, which will be held on April 9th, May 14th, June 11th, October 8th, November 12th, and December 10th. Each show is from 10am-4pm, and features local artists, live music, and delicious food from local vendors. AVE YOU EVER BEEN TO THE HEALTH FOOD STORE and seen nutritional yeast, and wondered, “what in the world is that?” Then lucky for you, you are about to know more about this delicious and nutritious food called nutritional yeast. By definition, a yeast is a microscopic fungus consisting of a single cell that reproduces by budding, or fission, and is capable of converting, by fermenting, sugar or carbohydrates into alcohol and carbon dioxide. First, understand that the most common forms of yeast you will hear about when discussing food are brewer’s yeast, bakers yeast, and nutritional yeast (sometimes called “nooch”). Brewer’s yeast is a type of yeast grown from hops and is a byproduct of producing beer. Nutritional yeast is typically grown from sugar cane, beet molasses, or wood pulp, which has been heated and made inactive; because nutritional yeast is heated, or killed, it will not activate and grow or froth like other yeast used in baking. Baker’s yeast is what is typically used to make bread rise. Since yeast feeds on sugar, but needs vitamins and amino acids, yeast is capable of manufacturing its own amino acids and vitamins. Right now, someone is saying, “I thought yeast was bad for you”, and that someone is right, to a certain degree. Anyone who has taken a course of antibiotics and then suffered from a yeast infection afterwards knows what some yeast can do to your health. Our body has yeast in oral cavities, in the digestive tract, and on our skin. Having “good” bacteria keeps the “bad” yeast under control, hence when antibiotic treatment is used, harmful and “good” bacteria are killed, thus upsetting the balance of good bacteria and bad yeast in the body. This is one reason why it is so important to replenish the good bacteria during and after antibiotic treatments with fermented foods such as sauerkraut, kombucha tea, and probiotic supplements. The most common bad yeast you will hear about is Candida; a Candida Albicans infection can lead to many symptoms, including tiredness after eating, constipation, diarrhea, mood swings, brain fog, sugar cravings, anal itching, skin infections, night sweats, food allergies, vertigo, increased susceptibility to fungal infections like

jock itch or athletes foot, asthma, food allergies, autoimmune diseases, chronic pain, and more. However, nutritional yeast is a valuable food source, with one serving of 16g -- or about 2 tablespoons-- containing 45 calories, 8g of protein, 4g of fiber, and 1g of sugar with a glycemic load of 1; generally any food below a glycemic load of 10 is considered low and good. Nutritional yeast is packed with great things like thiamin, riboflavin, niacin, vitamin B6, folate, B12, Pantothenic acid, magnesium, zinc, chromium (which some studies have shown to help people better control blood sugar), amino acids, minerals, vitamin A, vitamin C, vitamin E, phosphorous, and is 71% protein by weight (a great source of lower fat protein for those who eat vegan or vegetarian). These B vitamins in their whole-food form (recall the past article where we discussed whole food vitamins vs synthetic vitamins) are important for energy and brain function, as well as many other essential processes in the human body. Keep in mind that B vitamins are depleted with stress, anesthesia, and by digesting carbohydrates. Remember too, that the B vitamin complex is a water soluble vitamin, and if you consume more B complex than your body can utilize, it will be excreted in your urine, so don’t be surprised at the bright yellow color following a meal with nutritional yeast. Despite nutritional yeast’s unappetizing name and unappealing appearance, it could be one of the best things you can add to your diet in terms of taste and nutrition. Its appearance can be described as crispy golden flakes, while its flavor has been described as a nutty, cheesy flavor. Typically, nutritional yeast can be found in flakes, but it also exists in powder form. Try adding nutritional yeast to salads, soups, and Italian food for a cheesy flavor. One of the most delicious things to try is a combination of cashews and nutritional yeast to make a vegan “cheese” for nachos or macaroni and cheese; it sounds weird, but it is quite tasty. So venture out; try something new like nutritional yeast. Who knows? You might like it. I know I do. VER TIME, THE ROGERS’ RANCH HAS TAKEN ON A LIFE OF ITS OWN, and now comes a transformation that the Rogers family would certainly approve of. The ranch has seen better days, but its new owners, Jim and Deena Heffel, are undertaking a renovation project to transform it into a guest ranch – a place where adventurous spirits can go to connect with the history of the West, and the cowboys and cowgirls who it inspired; a working ranch that will offer its guests trail rides along the Mojave River and its environs. For people who are big fans of the Old West, and those who are curious as to what the Old West experience was like, the ranch offers a wonderfully authentic experience. The ranch has horse training facilities, a half-mile race track, and it rehabilitates horses that have been injured or mistreated. Currently, the ranch has nine horses of mixed breeds, including paints, morgans, and quarter horses. The Heffels also plan to introduce some longhorn steers in the future.

Fifteen horse stalls, some of which have been turned into guest quarters, each feature the name of a famous cowboy and his horse over the entrance. One has been named in honor of the Lone Ranger’s horse, Silver, and the next honors Tonto’s horse, Scout. Probably one of the best ways to really get the feel of the Old West is to spend a night as a guest in one of these rooms. With the whinnying of the horses, the whispering of the wind, and the ambiance of an authentically decked out room, you’re sure to get the feel of the bygone days when the West was wild, and cowboys lived free and rode hard. You might even hear Roy singing the song his wife, Dale Evans wrote, “Happy Trails to You.” The Roy Rogers and Dale Evans television series once captured the imagination of both young and old. Airing from 1951 to 1957, the Wild West was still a part of the American consciousness. Small ranching and farming were still a viable part of the economy, and large conglomerates were just beginning to evolve. Around the turn of the century, Wild West shows were very popular. Buffalo Bill’s Wild West Show played in arenas in Europe and America from 1883 to 1913. The most popular television shows in the 50s were series about the Wild West. It was only forty

years since the spectacular Wild West shows had entertained the imaginations of the modern world, so cowboys and Indians were a recent part of American history. Indians, wild buffalo, terrifying bears, rustlers, cattle herds, Calamity Jane, Annie Oakley, Sitting Bull-- they were all a part of our culture. They were our link to the pioneer days, and showed us of what made our heroes heroic.

Roy Rogers and Dale Evans were more than King of the Cowboys and Queen of the West. They were heroes fending off the bad guys. They stirred the imagination, and all good girls and boys wanted to be like them. The romance of the Wild West enthralled the nation. One man who was caught up in it was Jim Heffel. He remembers vividly watching a home-made family movie from 1965 that his father made where he is wearing cowboy boots while at play with his Roy Rogers Double R Bar Ranch set. That fond memory has inspired his dream – owning the Roy Rogers Double R Bar Ranch. The ranch has been, and continues to be, a labor of love to all those who have labored there, smelled the fresh breeze, and found a good horse to keep him company. The original Roy Rogers Double R Bar Ranch was located in Chatsworth, California. The television series was filmed at this ranch which was estimated to be over 300 acres. There has been some confusion that the television series was filmed at the Rogers ranch in Oro Grande. It was not. Dusty Rogers, Rogers’ and Evans’ son, has said that whenever the town got too close, his dad would move the family to a place not so densely populated. Chatsworth’s neighbors just got too close. That was when Roy moved his family to the High Desert. Though they lived in Apple Valley, the ranch was where he went to be in his element, his sanctuary. He was a singing cowboy, an actor, and ranch hand, and his spirit lives on at the Double R Bar. The new Double R Bar Ranch rests on 67 acres, located by the Mojave River. The Ranch includes not only the proverbial red barn, but two houses, stables and guest quarters. It is a perfect spot for weddings, business retreats, and family vacations. It is a place where the romance of the Wild West lives on.

When they found a slice of land on the edge of town, nestled up against the ancient Joshua tree forests, they pounced at the chance at ownership, knowing the serenity of the location would help foster their creativity. The bustle of the city sometimes made it hard to record music and daydream poems. However, because music and poetry can be such fickle mistresses, the couple decided to go small, creating a 900 square foot, solarpowered Spanish-style cottage sanctuary, which they filled with memorabilia from their many travels--books, exotic textiles, and folk art which coexist with fresh flowers, overstuffed furniture, and a piano in the main room. When asked what the secret to living harmoniously in such a tiny space is, the poet responded that, as with good writing, the secret is in the editing. If they don’t absolutely love something, it cannot stay. Well, editing, and separate bathrooms, she adds with a smile. The couple notes with some happiness that their home has also become a retreat for their city-dweller friends, not just for the companionship, but for the stunning night skies, as well as the restful silence. Indeed, all you hear are fountains, rustling leaves, wind chimes, and the occasional peacock (they just show up here, the poet observes)around this home that is completely off-grid. Even the couple’s several dogs seem reluctant to shatter the calm with any barking. Their home has become the perfect escape where the couple can realize their creative dreams.

Located on Mariposa Road in Hesperia near Bear Valley, the Whiskey Barrel is a restaurant and saloon that touts great steaks, drinks, and entertainment. This is the only fully dedicated country bar in the High Desert. Not only is it a restaurant and bar, it has live music, line dancing, and occasionally, dueling pianos. Nearly every day of the week, you can find something to suit your mood. Taco Tuesday has all you can eat tacos at $5.99; Wing Wednesday has $0.39 wings in 13 different flavors; half-price burgers are not to be missed every Thursday night; and Prime Rib Fridays is going to make kicking off your weekend even better. But only for the brave, as owner Shadi Haddad calls anyone who dares order it, there is the Quadruple Bypass Burger—it is a burger with layers and layers of beef, bacon, onion rings, cheese and more. The Whiskey Barrel also has a massive collection of whiskey for you to choose from. With 120 different whiskeys, you will not soon run out of options. It’s a good thing, too, because the endless variety of live entertainment that performs here is going to make a regular out of you. In March, the

dueling pianos will be back, and also in March, the Whiskey Barrel will welcome Blue County. Blue County—the country music duo made up of Aaron Benward and Scott Reeves—will be performing their unique brand of country music. You might recognize Scott Reeves as the Daytime Emmy nominated actor, best known for his acting roles in General Hospital and The Young and the Restless. After opening in November 2014, the Whiskey Barrel has quickly become a High Desert favorite for steaks, entertainment, a relaxed country vibe, a friendly staff, and meeting new people. PAIRING So, what’s for dinner this week? ETHNIC H FARE WITH FLAIR

mmm… If you’re anything like me, you like to change it up a bit. Being raised in Southern California, the land of cultural diversity, my palate has migrated well beyond diner-dull pot roast and mashed potatoes (not that I can’t appreciate both) and has come to desire more eclectic fare, dishes with a robust kick, savory ethnic cuisine. By now you may already know that a good Cabernet Sauvignon is a perfect steak wine, Sauvignon Blanc or Chardonnay can complement basic chicken dishes, and lean and flaky white fish is delightful when paired with Chenin Blanc or a fresh and fruity Pinot Grigio. But, what wine are you going to pair with the Pad Thai Noodles you may devour on Monday or the spicy Tandoori Chicken dish that could happen on Thursday night? While no category of ethnic cuisine can be packaged neatly into one tasty box (how boring would that be?), I’ve provided a few pairing options for your sampling pleasure.

CHINESE Sweet and sour, spicy and salty—the complexity of Chinese sauces can make wine pairing a challenge. To avoid flavor wars, it’s a good idea to lean toward less oaky, low tannin, fruity whites. An off-dry Riesling is a safe bet and an excellent match for Szechuan dishes. If you prefer reds, just keep in mind that strong flavors, such as hoisin sauce, can conflict with dry reds and result in bitterness. However, a jammy Malbec may be an enjoyable option for you. MEXICAN Mexican food can vary from intense and spicy to mild and sweet. If you’re meal consists of rich and creamy white sauces, chicken, or is heavy on the cheese, you may want to pair it with a refreshing white, such as an unoaked buttery Chardonnay. A good Zinfandel is a decent match for dishes immersed in deep red or chipotle sauces, and a Moscato is well-paired with meals doused in light, citrusy or cheesebased sauces. If hot and spicy is your preference, I’d counter that with a sweet, light wine, such as a Riesling or Gewurztraminer.

INDIAN Finding the right wine match for the flood of flavors in Indian food can be quite a struggle. As many dishes are seriously spiced, fruity wines such as German Riesling, Pinot Gris, or Gewürztraminer are noble choices. On the other hand, a sparkling Rosé or bubbly Champagne can do much to boost heavy, cream-laden fare. THAI Because of the pronounced spicy, hot, and sour flavors of Thai food, I would steer clear of highly tannic, meaty reds. A crisp Gewürztraminer or Chenin Blanc can make great Thai dinner companions, and Rieslings are known to complement the fare well. Sparkling wines also pair delightfully with Thai cuisine.

California’s T Bright Promise BY SUSAN LANDERS

HERE’S BEEN A LOT OF TALK IN THE LAST YEAR or so about free college education and about the enormous amount of student debt being accrued by newly minted graduates. President Obama’s call for tuition-free community college nationwide is really nothing new for California, but merely a harkening back to California’s Master Plan for Education. Affordable and accessible higher education became another hallmark of California’s golden promise. According to a 2003 UC Regents document outlining the original Master Plan, 1960, not unlike the dawn of the 21st century saw an unprecedented number of college students ready to enter higher education. The Master Plan was put into place with the idea that any California high school graduate would find a place in one of the three segments of higher education: the University of California (UC), California State University (CSU), and Community College (CC). The three levels had particular roles in this system. The UCs were designed as the foremost academies of research, as well as providing education for undergraduates, graduates, and doctoral students; the CSUs were primarily the educators of undergraduates, as well as offering a school of education for school teachers; the CCs (at the time sometimes called junior colleges) were to offer education to any adult who desired a higher education. The UCs and CSUs guaranteed a spot for a certain percentage of California’s high school grads while the CCs offered open access to any student who wanted to complete the first two years of a fouryear degree (lower division) for transfer to a four-year college, career technical/ vocational training in a variety of fields, as well as English as a Second Language, and other adult education courses. Until the early-1980s, California’s higher education system lived up to its promise. California’s community colleges had no per-unit tuition and minimal fees, the UCs’ and CSUs’ in-state tuition was quite low, and students could afford to complete college without overwhelming debt accrual. Since the 1980s, tuition and per-unit fees have been instituted at CCs, and the tuition rates at both UCs and CSUs have skyrocketed along with cost of living, while the minimum wage has stagnated, making it nearly impossible for many students not to head into debt just to gain an education. So, what changed? Many things: administrative costs have risen substantially, tax revenues have not kept pace with costs, among other factors. Like many challenges we face, there are no easy fixes either. The idea of two-years (some candidates are pushing for four years) of free college is nothing new—California provided that for decades and with the Board of Governors (BOG) waiver and Pell Grants, still does to a certain extent. So, before we decide that “free” or low-cost/high quality college education is out of the question, let’s remember that California has already done it and can do it again, if we get our priorities straight, put more money back into the classrooms not the boardrooms, and return to the promise of California’s Master Plan.
