Sprouts
There is so much goodness in sprouts! Radish, sunflower, pea, broccoli and lentil sprouts are examples of this amazing living superfood. Sprouts are loaded with nutrients and enzymes and they are a good source of protein. They are a superstar ingredient that you can pair with your favourite salad or sandwich. We use them in the Mega Salad from our cookbook, Made with Love. The combination of the sprouts and herbs create a salad bursting with flavour.
Fresh Herbs
Fresh herbs are magical ingredients. Herbs have so many healing qualities, and they power up flavours especially when they are not cooked. Our favourite is mint which we use in Kelly’s Bikini Season Tonic from our cookbook, Made with Love because it leaves you feeling vibrant and healthy.
Lettuce
Lettuce is one of our favourite things to purchase at our local farmers’ market. We love it so much that we even named our restaurant, Lettuce Love Cafe after it! You can pick up so many varieties of lettuce and they all add a different flavour and texture to your meal. Dark leafy greens are nutritional powerhouses and a great building block for any salad. We recommend trying to buy organic whenever you can to avoid pesticides.

What is so wonderful about salads is the more you make them, the more you get comfortable with experimenting and discovering new favourite flavours. Trust us, salads are addictive. Treat this recipe as a guideline, substituting whatever nuts, seeds or sprouts are your faves. Makes 4 servings.
Ingredients
8 cups any greens (romaine, arugula and/or spinach), torn into bite-size pieces 2 cups any sprouts (radish, sunflower, pea, broccoli, lentil etc.) 1 cup fresh cilantro leaves, chopped 1 cup fresh basil leaves, chopped 1 cup fresh mint leaves, chopped 4 tablespoons fresh lime or lemon juice ¼ cup avocado oil Pinch of sea salt ½ cup walnut pieces ½ cup dried blueberries ½ cup hemp seeds ½ cup raw sunflower seeds ¼ cup raw pumpkin seeds 2 avocados, pitted and cut into ½-inch chunks 2 tablespoons Brazil Nut “Parmesan” (optional)
Directions
1. In a large bowl, mix the greens, sprouts and herbs. Toss with lime juice. 2. Add the avocado oil and toss to coat the leaves thoroughly. 3. Sprinkle with salt to taste. Toss until well combined. 4. Add the walnuts, blueberries, hemp, sunflower and pumpkin seeds, and toss well.
5. Add the avocado chunks and toss gently to fully incorporate. Sprinkle with Brazil nut “Parmesan” (if using). Serve immediately.
Sprinkling the sea salt after the lime juice and avocado oil is an important step, as it helps the salt stick to the leaves and make the greens taste more fresh and vibrant.

Team
At a Farmers’ Market, you can get all different tomato varieties, shapes and colours. It’s guaranteed that they will be at their peak freshness, sweet and not sitting in storage for weeks before hitting stores. We eat tomatoes raw like apples, in salads, soups, sauces or tomato jam.
Cheese
You will find many varieties of the creamiest, richest and most original cheese at the farmers’ market. Not only can you can speak directly to the cheese artisan and discover where and how the cheese is produced, but you can also taste before buying and find new flavour-packed cheese.
Local Berries
You can be sure that berries at the farmers’ market will be plentiful, sweeter and perish much slower as they’re likely fresh from the field. As well, berries will be less expensive than at your grocery store and you can ask farmers directly if they have been sprayed with any pesticides.
ROASTED BEET, GOAT CHEESE & FARRO SALAD
Farro (pronounced FAHR-oh) may be as old as the hills (20,000 years and counting) but definitely not past its prime. In fact, this protein and fiber-rich ancient cereal grain is hitting its stride in mainstream cuisine, gracing everything from soups to salads with its nutty flavour and chewy texture.
Dijon Vinaigrette
⅓ cup olive oil ¼ cup Champagne vinegar 1 tsp Dijon mustard 1 tsp honey ½ tsp kosher salt ¼ tsp freshly ground black pepper
Roasted Beets
6 medium-sized beets, trimmed and rinsed
Farro
1½ cups uncooked farro, rinsed 6 cups water ½ tsp kosher salt
Salad
6 cups mixed greens 3 celery stalks, chopped ¾ cup crumbled goat cheese
Directions
1. FOR THE DRESSING, in a small bowl, whisk olive oil, Champagne vinegar, Dijon mustard, honey, salt and pepper. Set aside.
2. FOR THE ROASTED BEETS, preheat oven to 400°F. Pat beets dry after washing and wrap each individually in aluminum foil. Place all on a baking sheet and roast 30–40 minutes, until fork tender. Remove from oven, discard aluminum foil and place beets in a bowl of cold water. When cool enough to handle, rub off the peel, cut into wedges and set aside.
3. WHILE THE BEETS ARE ROASTING, prepare the farro. In a large sauce- pan, combine farro, water and salt. Bring to a boil over high heat, reduce heat to low and simmer for 20–25 minutes until tender. Drain and set aside to cool. 4. TO ASSEMBLE SALAD, in a large serving bowl, combine mixed greens, chopped celery, roasted beets and farro. Add dressing and toss well to combine. Sprinkle goat cheese over top and serve.

This mother-daughter duo believes that the family who eats together usually argues a lot about what to have for supper. It’s impossible for us to leave the farmers’ market without picking up cilantro, red pepper and garlic. Cilantro simply tastes like summer, and it’s protective against sun damage while also supporting the liver. Part of the reason we like to get red pepper from the market is we find it really hard to grow in our garden! It’s also high in beta carotene and vitamin C. And garlic is one of our favourite beauty herbs, since its sulphur content is great for hair and nails!
With these 3 farmers’ market finds, we threw together this Fiesta Farmers’ Market Salad. It’s perfect for summer potlucks since it’s gluten free and vegan friendly! Quinoa is one of the few plant foods that provide all the essential amino acids. The tiny ancient grain also an easy source of B vitamins, calcium, fibre, magnesium, phosphorus and potassium. Try it in all your salad recipes in place of rice.

FIESTA FARMERS’ MARKET SALAD Salad Ingredients
1/2 cup uncooked quinoa 1 cup water 1 tablespoon olive oil 1 red pepper, diced 1/2 cup onion, chopped 1 medium carrot, in coins 3 garlic cloves, minced 1 cup sweet corn 1 19 oz can black beans, rinsed 2 medium tomatoes, diced 1/3 cup fresh cilantro, chopped 1/2 cup salted peanuts to top (optional)
Dressing Ingredients
1/2 cup olive oil 1/2 tsp black seed oil Juice of 1 lemon 1/2 - 1 tsp cayenne pepper, depending on spice preference 1/2 tsp ground cumin
Directions
1. In a small saucepan, boil water. Add quinoa; return to boil. Reduce to medium heat; cover. Cook until done. Allow to cool, fluff, and place in large bowl. 2. Meanwhile, sauté peppers, onions, carrots and garlic in oil until crisp-tender. Add to bowl with quinoa. Stir in tomatoes, corn, beans and cilantro.
3. In a small bowl, whisk together olive oil, lemon juice, black seed oil, cayenne and cumin. Pour over salad and stir to coat. Doctor with salt and pepper. This salad is best enjoyed at room temperature.

1 fresh rhubarb stalk 2 cups frozen strawberries 1-2 tbsp. agave syrup 1/3 cup unsweetened almond milk 1/3 cup NutraCleanseâ„¢
Directions
Chop rhubarb into chunks and place in a high-powered blender. Add the rest of the ingredients and process first on low, and then slowly turn to high.

Amazing Amino Acids for Health Amino Acids (AA) are the building blocks of proteins, hormones, neurotransmitters and antioxidants. AA are the fundamental components in the structure of every cell in the human body. By Marva Ward, CNP
These 20 amino acids are joined together in unique sequences to perform millions of biological functions from tissue repair to cognitive and neurological functions, and from the regulation of vitamins, minerals and hormones to their role in methylation and gene expression. Nine AA are referred to as “essential” as they can only be acquired through the diet. The remaining 11 are synthesized in the body through the utilization of essential AA, and thus they are classified as “nonessential” amino acids. Any amino acid missing or in short supply affects the availability of others and over time the deficit of these vital nutrients may create an imbalance in the body, leading to illness and disease. Conversely their ability to support the body and bring it back to a state of homeostasis (balance), health and vitality is well documented.
Cardiovascular Disease
Taurine, L-Arginine and L-Citrulline are known to support healthy cardiovascular function. Taurine plays a key roll in the regulation of sodium, potassium, magnesium and calcium. This can help stabilize the heart, as irregular heart beat is often linked to the dysfunctional mineral utilization inside and outside of the cells. 1000mg - 3000mg of Taurine daily has been shown to be effective in controlling irregular heart beat. Nature’s vasodilators are found in the amino acids L-Arginine and L-Citrulline. Supplementation supports the production of nitric oxide which in turn regulates blood pressure.
Neurological Health from ADD to Depression
There are also a number of amino acid precursors and derivatives that play an important role in maintaining neurological health. GABA and 5-HTP help to manage depression and anxiety disorders by either increasing inhibitory neurotransmitter activity (GABA) or increasing circulating levels of serotonin (5HTP). Glutamate – the latest research supports the finding that stimulating the excitatory neurotransmitter, glutamate, in the prefrontal cortex of the brain may be the key in controlling some cases of ADHD due to its interaction with dopamine.
TMG – Trimethylglycine addresses the methylation needs of children for detoxification. Methylation is involved in the function of neurotransmitters, in controlling inflammation, in detoxifying the body via the antioxidant system and it also influences gene expression.

It is a powerful mucolitic agent (loosens and clears mucous) and is used in the management of conditions such as emphysema, bronchitis, TB and cystic fibrosis, just to name a few. As it is the precursor to the liver’s own primary antioxidant and detoxification agent, glutathione, it is commonly used in hospital emergency rooms as an antidote for acetaminophen overdoses.
Due to the fundamental roll of amino acids in the structure of the human body, it is understandable why the medical and naturopathic communities are looking to these basic building blocks to play a major role in solving a variety of everyday health issues. t

This is my take on a breakfast burrito. It doesn’t have the wrap, but that doesn’t mean you couldn’t bring one with you. Get the recipe at: healthydirections.ca
1 WATERMELON, FETA AND ARUGULA SALAD
This salad is one of my all-time favorites. Not only is it super-easy to prepare, but the combination of watermelon and feta, with a hint of fresh mint, makes it a refreshing summertime lunch. Makes 1 serving.
Ingredients
• 1-quart (1 L) mason jar 2 tbsp extra virgin olive oil 1 tbsp balsamic vinegar Salt and freshly ground black pepper 1 cup chopped watermelon 2 cups tightly packed arugula 1⁄2 cup crumbled feta cheese 1 tbsp chopped fresh mint
Directions
1. Pour oil and vinegar into jar, wiping down any splashes on the side of the jar. Season to taste with salt and pepper. Layer watermelon and arugula on top, tightly packing the arugula. Top with feta and mint. Seal jar and refrigerate for up to 3 days. 2. When ready to serve, turn jar upside down in a bowl and let the dressing coat the salad.

Omega-3 DHA
The essential long chain omega-3 fatty acid docosahexaenoic acid (DHA), found in fish and fish oil supplements is crucial to brain and eye development in our early years and plays an important role in supporting optimal brain and vision function throughout adolescence and adulthood. Babies often get DHA from their mothers before birth, during breastfeeding following birth and through their diet after age two. But the average diet is often deficient in DHA sources, which is why supplementing with fish oil can be a great option.
Scientists from the University of Kansas found that infants fed DHA-enriched formula from birth to 12 months scored significantly better than the control group on several measures of intelligence conducted between the ages of three and six years old. Specifically, the children showed accelerated development on detailed tasks involving distinguishing patterns and learning rules and also performed better on two widely used standardized tests. Babies can also get
DHA by taking small doses of fish oil from birth or by breastfeeding from their mothers who are eating a diet high in fatty fish or are taking a fish oil supplement.
During childhood, higher blood levels of DHA have been linked to better reading ability and memory performance in children. Scientists at the University of Oxford found that healthy kids, ages seven to nine, who underperformed in school showed improved reading and behavior after supplementing with 600 mg of DHA for 16 weeks. DHA helped improve reading performance in the poorest readers, so they could catch up with the other students in their grade level.
Low omega-3 intake during our growing years can also be linked to anxiety and hyperactivity. In addition, studies indicate that eating junk food fats during adolescence can have long-lasting effects on learning and memory during adulthood. Children can support their brain health by reducing their intake of saturated fats and junk food while increasing omega-3 intake. Healthy omega-3s actually undo some of the damage done to kids’ brains by junk food.
Phosphatidyl Serine
Another nutrient that supports children’s brain health is phosphatidyl serine.

Phosphatidyl serine supports transmission of molecular messages from brain cell to brain cell, also known as thoughts and memories. Lyme Disease Awareness

Lyme disease is a very old infectious disease, dating back thousands of years. Unfortunately, until as of late, it has not received
much attention and many people are unaware of its detriments. It is an infection caused by the Borrelia burgdoferi bacteria, and is usually found in forest birds and animals. It is transmitted to humans by ticks, which usually feed on the infected animals first, then pass it on through bites. It is present in most of Canada, although in more rural areas such as campgrounds and forests, it can also affect those in urban environments.
Prevention is critical when it comes to this infection. The primary mode in this case is to minimize the risk of tick bites by dressing appropriately in wooded areas, assessing the body for any bites after being in a tickprevalent area, and seeking prompt medical treatment should a rash or flu-like symptoms develop.
Common symptoms associated with Lyme disease can be but are not limited to, a bulls-eye rash surrounding the bite, followed by flu-like symptoms such as fever, extreme fatigue, headaches, jaw pain, joint pain and muscle stiffness. If left untreated, Lyme disease coupled with many co-infections can progress to devastating neurological symptoms including memory loss, inability to concentrate, mild seizures, facial paralysis and extreme body pain,. There are four common tests which are done to diagnose Lyme disease. The ELISA test, the Western Blot test, the PCR test and the Antigen test. These tests can yield false-negatives since Lyme bacteria are very sparse and may not be in the test sample. It is important to look at the patient’s entire medical history and symptom picture to make an informed and accurate diagnosis. unique needs of the body, at a cellular level. This type of support stems from natural means such as hydration, good fats, low glycemic index foods, nutritional support attained through diet as well as nutraceuticals such as digestive aids, multivitamins, minerals, antioxidants, anti-virals, and of course anti-microbials. Since this is a microbe-borne disease, it is imperative to treat it with powerful agents that can control the progression of the disease. A few such anti-microbes to consider are berberine, black walnut and stabilized allicin. HOW TO REMOVE A TICK Both Health Canada and the CDC Centers for Disease Control and Prevention suggest the best method of tick removal is with fine-tipped tweezers. If you are not comfortable with removing a tick, visit your health care provider.
Using clean tweezers, carefully grasp the tick as close to the skin as possible. Pull slowly upward, trying not to twist or crush the tick. If parts of the tick's mouth break off and remain in your skin, remove them too. Once the tick is removed, wash the area where you were bitten with soap and water and disinfect the area. Wash your hands with soap and water. Visit your health care provider if you cannot remove: parts of the tick's mouth in your skin, the tick itself because it has buried itself deep into your skin. You can also submit ticks for testing in a sealable plastic bag or pill bottle. Refrigerate. Submitting a tick for identification and testing will not lead to a diagnosis or treatment but leads to an understanding of how black legged ticks have spread in Canada and exposure risk.

FUN AND SUN BARBECUE SEASON SURVIVAL CELEBRATE THE SUMMER

Ahh, the sounds of summer! The sizzling meat on the barbie, the scratching of plastic forks on paper plates, the burps and toots of bloated partygoers… Well, not everything about summer is music to the ears – or to the gut! DIGESTION DO’S • Stop drinking 30 minutes before you eat and only take small sips as needed throughout the meal. The extra liquid dilutes your stomach acid, making food harder to digest.
• Take smaller bites of your food. • Chew well so you can swallow easily.
• Stop eating before you feel full. We tend to overeat in party environments. Pay attention to what your body is telling you.
Here are some tips to keep your digestive system in harmony as you enjoy barbecue season.
Sour Notes
When all goes well, you probably don’t even think about your digestion. But, when it’s out of whack, diarrhea, heartburn and flatulence likely put the damper on your party mood.
Meat is notoriously difficult to digest, which is why you may feel sluggish, sleepy, and a little constipated after a barbecue. Less obvious signs of digestive weakness include pimples appearing in the mirror or breaking your nails more easily. Left unaddressed, digestive troubles can lead to nutrient deficiencies and their associated health effects.
What's Supposed to Happen
Digestion involves breaking down food both physically through chewing and churning, and chemically, through the use

of strong acids as well as digestive enzymes. Enzymes are primarily manufactured in the pancreas, and each different macronutrient (protein, fat and carbohydrate) has a dedicated team of enzymes to help with their digestion.
When chewing the first bite of your burger, for example, an enzyme in your saliva called amylase begins digesting carbohydrates like your burger bun. After you swallow, gastric acid works with protease enzymes to digest proteins, like those found in your barbecued meat. Partially digested food then leaves your acidic stomach to enter the alkaline environment of your intestines, where fats are broken down by lipase enzymes. This is a crucial step, because we need fats not only for energy and to support our brains and cell membranes, but also to help with the absorption of fat-soluble vitamins A, D, E and K. Unfortunately, digestion becomes more difficult as we get older, due, in part, because stomach
acid loses its strength with passing years. At the same time, we produce fewer digestive enzymes as we age, which might explain why you can't eat the same way you have in years past. Fortunately, there are a few strategies you can use to amp up the digestion and absorption of your food.
Party Prelude
Set the stage for a gut environment that’s conducive to proper digestion and absorption by creating a healthy intestinal balance. Nourish the good bacteria (probiotics) in your gut that help with nutrient absorption and the production of certain vitamins. Eat fermented foods like plain, unsweetened yoghurt, kimchi, or sauerkraut – which would be great on your burger at the party, too! If you’re not a fan of fermented foods, consider taking a probiotic supplement with more than one strain of bacteria to contribute to diversity in your gut.

Try dark, leafy greens like kale, spinach and lettuce along with your burger, to increase your intake of beta carotene and calcium. And since hitting the recommended target of 10 vegetables per day can be a challenge, consider mixing a greens powder with highly nutrient-dense ingredients like spirulina, kelp, and alfalfa to hummus or a veggie dip. Taking care of your digestion now will help you enjoy the parties of the summer and fall’s family get togethers.t

The summer is a great for that laissez faire attitude, but now that we need to get to school/work on time, those carefree summer days are going to have to come to an end. Children between the ages of 5-12, need 10-12 hours of sleep per night. Lack of sleep is connected to poor attention and memory, lower grades and mood disturbances.
Start by turning technology off at least an hour before bed. Keep lights dim and the mood calm. Set a bedtime routine with a bath / shower, reading, snuggles, and lights out. A cup of chamomile tea at bedtime can help relax the nervous system and aid in a restful sleep.
2) Bring back a healthy diet.
We’ve all had our fair share of summer ice creams but now that school is back we want to decrease the sugar load, which can excite our nervous systems. the over consumption of sugar. Being back in school also means being surrounded by large populations of germs and in order to maintain healthy immune systems we need to keep the sugar out.
3) Up the intake of fruits and vegetables.
We want our children (and ourselves) to “eat the rainbow” daily. With such bounty this summer of fresh and local produce it should come easily. Fresh produce is rich in vitamins, minerals, fiber and antioxidants. These food choices keep us energetic and healthy, which are two essential ingredients for successful learning. If your little ones are reluctant to dive into the fruit or veggie platter; ask them to eat as many pieces as how old they are, cut pieces into fun and exciting shapes, or feed them in stages with the fruit or veggies coming first while they are most hungry.
4) Get kids active outside everyday!
The downfall of school is the need to sit at desks for large periods of time. The recommended guideline is for our children to have 1 hour of outdoor activity daily and sadly only 7% of children are reaching this. Try to make this a priority for your children.

5) It might be time to bring the supplements back.
One of the best things you can give your kids (and yourself!) for focus and concentration is a good quality fish oil supplement. Omega-3 essential fatty acids are important for brain development, mental focus and a balanced mood. Most people (kids included!) are deficient in omega-3’s; so, a high quality fish or vegan algae oil is key.
Foods rich in omega-’s are; flax or hemp seed oils, chia seeds and hemp hearts, walnuts, and fatty fish (salmon, mackerel, anchovies, sardines and herring). Consult with a naturopathic doctor about appropriate supplementation for your family. Collagen is a glyco-protein found in the human body where it forms all the tissues and organs through fibrillary networks and accounts for over 30% of our bodyâ&#x20AC;&#x2122;s total molecules.
Collagen represents the true chemical skeleton of the body. It allows us to have our rigid shape and thus supports all the organs and tissues allowing them to function adequately. For instance, collagen fibrils represent 90% of the skin, 67% of the cartilage, up to 50% of the bones and are found at different levels in the various tissues of the body. However, as we age the fibrillary structure of collagen continually comes under attack (by a variety of factors in our environment) and its repair mechanisms become sluggish and less efficient. This can lead to conditions such as osteoarthritis and osteoporosis. The body needs some help.
To this day, conventional treatments of osteoarthritis have emphasized pain reducing and anti-inflammatory drugs in order to alleviate pain. However, most of these therapeutic approaches do not take into account the significant potential of endogenous repair mechanisms. This is where supplemental hydrolysed collagen comes into play. Although there are a certain number of natural extracts that may act as valuable anti-inflammatory drugs, only a very few can act as a stimulator in the damage repair process. The metabolic structural building blocks represent a unique category of molecules. These include glucosamine, chondroitin and peptides found in hydrolysed collagen. These

building blocks make up the much larger molecules of the cartilage tissues. With respect to hydrolysed collagen, this substance acts in four distinct ways. First, it provides the right building blocks cartilage tissues require for repair; second, it stimulates cellular processes in the cartilage and surrounding tissues, sending signals to generate new fibrils that get integrated into the cartilage matrix; thirdly, it counteracts existing inflammation and finally it reduces pain. An individual suffering from osteoarthritis who undergoes a conventional treatment to reduce inflammation and pain, should also consider using the above structural building blocks as complemental therapy. It is important to remind ourselves of the two major approaches in treatment: (i) reducing damage (via an appropriate antiinflammatory treatment) and (ii) stimulating repair to improve mobility (by harnessing the properties of hydrolysed collagen).
Finally but not least, another exceptional advantage associated with this approach is the low toxicity and the absence of any side effects. Many people suffering from arthritis indeed have a hard time with conventional anti-inflammatory drugs, and may eventually choose this novel treatment approach not solely as a short-term complementary strategy but also as an alternative for the long-term.t

From a biological viewpoint this makes sense. If every organ, muscle and thought of the body depends on the nutrients we give it to work properly, then good digestion is nothing short of a monumental vital process by which food and drink are broken down into their smallest parts; so, the body can use them to build and nourish cells and to provide energy.
However, in the West, when we discuss detoxification we go straight to the principle organ by anatomical standards. In this case, the liver, and from there to prescribing drugs that treat the condition or recommend supplements that replace what’s missing in their diet. This ranges from antioxidants to highly specialized vitamin or herbal combinations to aid the chemical process of detoxification. Unfortunately, this process completely bypasses what should be our first question – why are the nutrients missing? Certainly, diet is a consideration. But, at least in the West, food is prevalent and the tell-tale signs of malnutrition are rarely seen. Ayurveda suggested thousands of years ago the organ to target first is the digestive tract.
India’s system of healthcare gave us a timeless trio for proper digestive support, and one which was most often the first step in herbal treatment: Triphala. Triphala has far reaching and scientifically validated effects on the digestive system. The studies are mounting and seem to show this ancient trio of herbs, and one of herbalism’s oldest formulas, affects the intestines, bowels and colon in the way enzymes, fiber, and probiotics work today.
Triphala, which translates to “Three Fruits” or “Three Sours,” contains equal parts of three offerings: amla fruit, belleric myrobalan and chebulic myrobalan.
