etter fromTHE PUBLISHER It might not feel like it outside but Summer is soon transitioning into Fall and we are entering a new season in many ways. School is resuming, beach trip and family vacations are coming to an end and hopefully soon we can get slightly cooler weather. But that doesn’t mean you still can’t make time to have some fun in the sun! Being outside can improve memory, fight depression, lower blood pressure and most importantly, alleviate stress. With more families getting out into nature and spending more time at home, we are bringing you some ideas of how best to make use of your time whether in nature or getting in a good workout. Writer Rebecca Maglischo is our go-to girl for anything outdoors. Her knowledge and expertise are effective and fun, so we hope you enjoy her stories about the Monarch Butterfly and her suggestions for at-home workouts!

As the school year approaches, parents are faced with anxiety and doubt in our current state of uncertainty. Fortunately, our counties are offering several options for how the new school year with look for students, teachers and parents. Some students will be going back to face-to-face learning in a classroom, others will be going with the virtual school option and some parents will be homeschooling their children. I encourage you to support each other’s decision as parents try their best to navigate what is right for their family. To bring some comic relief, beloved Peanuts© character Charlie Brown is here to share a few of his Life Lessons. We all need a little humor and pick me up every once in awhile and I think he was the guy for the job. Writer Lisa Beach also shares with us how she encourages and participates with her family in giving back. Just a few simple tips that you could incorporate into your family or maybe already do. We like to hear your stories so make sure and share them with us so we can share them with our readers! We round out this issue by giving you a glimpse inside a state-of-the-art equine facility lead by Dr. Liz Steele, DVM and her husband, TJ. For horse enthusiasts, this facility is worth checking out to keep your beloved horse healthy and at top performance. She also provides internships for students interested in a career in veterinarian medicine and the list goes on. This is a great facility to have here in the Heartland. Especially in times such as these, we are thankful for our advertisers and readers. As we all try to navigate the uncertainty that lies before us today, I encourage you to remember, we are all in this together. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (20152018). She is Arts & Culture Alliance Director (13 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah.

and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.

LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

JESSICA PLEGER is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.

LISA FIELDS grew up in South Florida, moved to Big Pine Key in the early 80's and spent 18 wonderful years in the fabulous Florida Keys. She now resides in Avon Park after working in the Electrophysiology field in Ft. Lauderdale, is a proud wife, mother of two and devoted to the family business of growing the best quality bromeliads at Grant's Farm Nursery. In her spare time, Lisa enjoys spending time with her horses and animals, along with her family. She loves to dabble in photography, cook, fish, spend time on the water and on the beautiful countryside with her horses. Life is good and she is blessed and grateful!

Readers Kindness Heroes Hope Faith

Small acts of kindness can make a big difference during tough times. The focus for months has been on COVID-19, how to prevent the spread of the virus, the latest actions that the government is taking and health officials sharing the rising number of cases throughout the country. However, the Heartland community has found ways to bring people closer together during this difficult time. Our communities are full of local heroes, not only our health care and essential workers, but also heroes delivering food for the hungry, volunteers who’ve made hundreds of face masks, helping local businesses, taking care of our students and even local farmers providing fresh home-grown food. At a time of so much uncertainty, these acts of kindness — for those committing and receiving them — gives us hope and faith. The unifying act of humanity reminds us that we are all in this together. And together is the only way we’ll get through it. Heartland LIVING would like to highlight a few acts of kindness that saturated the Heartland Area over the past few months. We wish we could list all of the multitudes of kind acts but there were just too many to fit within these pages.

A flash of orange catches my eye from across the street. I stand and wipe the dirt from my hands; my shovel sticks up from the ground, mid-dig. Shielding my eyes, I squint into the sun trying to follow the dizzying path. Frederic Chopin’s classical etude, affectionately dubbed “Butterfly,” plays in the background of my mind. The orange flutter settles on a tall Goldenrod in my garden. She takes a long drink and lifts off again moving here, there and everywhere. I look down to my left and see the tiniest beginnings of a Milkweed plant, maybe 4 inches tall.

butterfly follows my gaze and miraculously finds her destination. Amongst the hundreds of plants in my garden, she has found the last of this one. It seems impossible. I watch as she dutifully bends her body and deposits a single golden yellow egg under a leaf. She spreads her wings and flies away. I wonder what will become of this glorious butterfly, the Monarch. Her timing is off. I wonder if she is terribly behind or impressively ahead of schedule. My brow furrows with truths. She has a story; itâ&#x20AC;&#x2122;s a story with all the components of a great literary work. The story of the Monarch Butterfly is a story of endurance and beauty. It is also a story of neglect and death. It is a story of action and hope. It is a cautionary tale. The Migration of the Monarch Butterfly is a miracle and a wonder that has captured the imaginations of citizen scientists and spurred gardeners to action. But more than anything, the story of the Monarch is a tale of kindness and caring. It is the timely message of how one small act of goodness towards another in need can send forth ripples of hope and a lifeline for survival. Â&#x201E;

the winter of 1997, over a million Monarch butterflies made the long flight from Canada across the United States. Coming together in huge swarms, they flew over 2500 miles and formed clusters on the branches of the Oyamel Fir trees in the forests of Mexico. The branches of the trees were so thick with butterflies that they dragged the ground and onlookers exclaimed that the sounds of the wingbeats echoed through the forest like a rushing stream. These butterflies have been making this trek for an estimated 10,000 years. It is a migration like no other in the world. In 1937, Fred Urquhart began to plot the route taken by the migrating Monarchs. He was the first to record that monarchs move in a south to southwest direction during the North American fall and that these movements were correlated to high pressure systems. He began the first successful tagging program which returned data by advertising for â&#x20AC;&#x153;interested personsâ&#x20AC;? to call by phone if they found his butterflies with their tiny stamped wings. He and his volunteers recognized the existence of roosting behavior and hoped that citizen scientists could help discover the migration destination of the Monarch butterfly. Â&#x201E;

January 1975, after nearly 40 years of research, Catalina Trail and Kenneth C. Brugger responded with the location of a major Monarch overwintering site. One scientist, hundreds of volunteers, and thousands of interested citizens had provided the legwork to solve the mystery of the Monarch butterfly. As temperatures begin to rise in late February, Monarchs fly north from inland Mexico following the northeastern progression of blooming milkweed, the host plant for this species of caterpillar. The migrant butterflies deposit eggs in northern Mexico, Texas, Louisiana, Alabama, Mississippi and North Florida through May. Catalina Trail c.1976

These offspring are referred to as the first generation. From here, the butterflies reproduce two more times on the return path to Canada, each generation coming to life mind-bogglingly close to the site of its great great great great grandparent a year previous. The fourth and final generation in the cycle is produced in June as Canadian residents. This “super” butterfly will make the massive migration back to Mexico, survive 8 months (other generations live anywhere from 25 days to 7 weeks), deposit the first northbound eggs of the next cycle, and only then pass back to the soil. In 2020, a mere 29,000 butterflies spent the winter in the Oyamel Fir forests of Mexico, an 80% decline from the high numbers recorded just over 20 years ago. The Monarch Butterfly, an icon of America, a natural wonder and symbol of all that is magical in nature, faces a migratory collapse and extinction. The introduction and widespread use of “Round Up Ready” corn and soy allow for the ubiquitous spraying of glyphosate, a herbicide. While the crops remain unaffected, the wildflowers and milkweeds on which the Monarch butterfly rely, are killed as weeds. Usually found in fields and pastures, native milkweeds are no longer as prolific as they were in decades past. These precious wildflowers are dwindling along with the butterfly itself. But scientists are hopeful. Today, scientists and conservationists are making the call again.

butterflies need the help of everyday citizens, like you and me. It’s as simple as planting some flowers, some for nectar and some to host the caterpillars (milkweed). Well, almost as simple... As the Monarch Butterfly and butterfly gardens, in general, gained popularity, large nursery suppliers began carrying mass quantities of tropical milkweed, Asclepias curassavica. Because of its color and year-round vegetation, it seemed a perfect solution. While this tropical milkweed can certainly host caterpillars, it becomes an “ecological trap” for monarchs. The year round food source has encouraged butterflies to stay in locations when they should most definitely go. Monarchs that take up year round residence in North and Central Florida, are vulnerable to winter cold snaps. Additionally, the tropical milkweed is prone to a disease-causing parasite called OE (Ophryocystis elektroscirrha) because it persists even through the winter months. This parasite causes birth defects in emerging butterflies, crimped and wrinkled wings. Native milkweeds have a life cycle that is perfectly suited to the Monarch with which it evolved, emerging and dying at just the right time to support the Florida population that takes a shorter trip to The Keys during the winter. “There are over twenty species of native Florida milkweed, but only three can be found reliably in the native nursery trade,” says Kathryn Adeney, joint owner of The Nectary, a native plant nursery in Lakeland, FL. Native matters for the success of the Monarch, and with just a bit more effort, these beautiful Florida milkweeds can make a wonderful addition to any landscape. ""If you aren't able to get your hands on native milkweed for your yard,” she adds, “you can cut your tropical milkweed back to the ground by Thanksgiving to minimize the persistence of harmful parasites." It's not an all or nothing thing. Many scientists point out that host plants are the most pressing need. Everything helps.

bend over to investigate the tiny egg. Most of my plants have been eaten clean, not another leaf in sight. It takes a village, I think to myself smiling. I make a mental note to call the native nursery. I’m going to need more milkweed ASAP for the hungry little caterpillar that’s due sometime in the next week. My mind flutters like a butterfly to “the village” that has surrounded my own family this year. Simple acts of kindness and small gestures of care have helped me hold it together, despite all the uncertainty. I scan my yard. Maybe I could create just one more area for butterflies.

Giving back to others tops the list of life lessons weâ&#x20AC;&#x2122;ve tried to teach our two boys since they were little. To drive this point home over the years, we adopted a three-pronged approach to giving: we donated our money, gave away our things and offered up our time. Sometimes we did this as a family, while other times, it was a solo effort. But the net result? We infused our family with the spirit of giving. Â&#x201E;

When my boys (now 15 and 18) first started receiving an allowance, my husband and I made them divvy it up into three jars: spending, saving and giving. Their giving jar coins would accumulate for months until we found a worthy cause to help. Then, weâ&#x20AC;&#x2122;d match them dollar for dollar and donate the money outright or purchase items and then donate them.

Over the years, our family has given money in a variety of ways, usually tying into something that will benefit other kids. •We bought backpacks, school clothes and school supplies every August and donated them to organizations conducting back-to-school campaigns to help needy kids in our community.

•Every Christmas, the boys would each pick a name off of the “Angel Tree” at our church and then we’d all shop for gifts. Another year, we pooled money with several families to help out a boy on my son’s soccer team whose family was really struggling financially. We bought coats, clothes, toys, books and new bicycles for the soccer buddy and his three brothers, plus food and even a few presents for his parents.

•Through Children International, we sponsored a boy named Spencer from Zambia for 10 years, helping to provide food, clothing, medical care and other necessities. The boys would chip in from their giving jar when we sent in our monthly sponsorship gift.

When we donated the very things we owned and loved, it’s almost like we were sharing a part of ourselves with others. Over the years, we’ve donated hundreds of things that our family no longer needed. •As our growing boys regularly outgrew their clothing and toys, we donated them to Goodwill, Salvation Army and various community organizations. We literally raided our sons’ closets one chilly night when we found out that the previously mentioned soccer buddy and his older brother didn’t have any long pants to wear.

•As a homeschooling family, we accumulated a lot of books and magazines. After we finished reading them, we’d often donate them to local schools and our public library.

•When my boys outgrew their beloved wooden train set, they donated it (along with the wooden train table my husband built) to Boys Town for the young residents to enjoy.

Sometimes we volunteered as a family. Other times, my husband and I did our own volunteering gigs, partly out of our passion for the cause and partly just to model a giving heart in action.

•As a family, we volunteered with Give Kids the World, a wish-granting organization that provides a free vacation to kids with life-threatening illnesses and their families. This magical, 70-acre resort allows “wish families” to take a break from medical tests, doctor visits and therapy appointments and just have fun together. We served ice cream, made milkshakes, distributed pool towels, handed out games and even served as “engineer” for the train ride around the resort.

•Our boys have volunteered more than 150 hours on their own over the last few years. They painted murals for the library’s puppet shows, doled out food at a food pantry, refereed soccer games at the YMCA, distributed school supplies at a back-to-school fair, worked as a summer camp counselor for the Down’s Syndrome Association and provided social media marketing for a nonprofit’s fundraiser.

•My husband served as a volunteer coach for my son’s soccer team (first through the YMCA and then through other youth soccer leagues) for almost 10 years, teaching soccer skills right alongside good sportsmanship.

•When the boys were in public school, I volunteered in their classrooms and served on various PTA committees. When the boys were home-schooled, I volunteered to help lead, coordinate, teach or participate in various projects, events, classes and activities for our homeschool support group.

Over the last decade or so, our threepronged approach definitely infused the spirit of giving into our family. But the key is to simply do whatever works for your family.

ith year-round Peanuts specials airing on TV, the Peanuts gang is still teaching us life lessons after 70 years. This made me reminisce about my childhood love affair with Charlie Brown, dubbed America’s lovable loser. Despite his hairless, pumpkin-size head and a penchant for wearing zigzag shirts, Charlie Brown had me at “Good, grief! Since 1950, that endearing blockhead taught me how to keep getting up when life knocks me down. Brilliant cartoonist Charles M. Schulz channeled his inner Charlie Brown in every comic strip, breathing life into an Everyman character that captured common struggles and imparted kick-ass insights. From the classic holiday TV specials to the weekly Sunday comics, here are six life lessons I learned from that resilient, round-headed kid.

According to Schultz, “Charlie Brown must be the one who suffers, because he’s a caricature of the average person. Most of us are much more acquainted with losing than winning. Winning is great, but it isn’t funny.” Through Charlie Brown’s steady stream of struggles and failures, I learned to find humor (often in retrospect) at my own foibles and botched attempts. When things don’t go my way and I draw the short straw in life, I often turn to my Sweet Babboo (my husband) and say, “I got a rock” to remind myself to laugh at my streak of Charlie Brown luck.

Just like Charlie Brown, everyone feels afraid at some point. But itâ&#x20AC;&#x2122;s what you do with your fear that matters. Charlie Brown rose above his anxieties again and again, facing his fears head-on, one comic-strippanel at a time. Afraid to quit my job, start a freelance career, be a stay-at-home mom and homeschool my kids? You bet! But like Charlie Brown, I refused to let fear cripple me. Instead, I let fear fuel me. Â&#x201E;

Good ol’ Chuck never gave up, even in the face of his overwhelming loser history with kite-eating trees, footballyanking Lucy and I’m-just-not-that-into-you Little Red-Headed Girl. Despite kite-flying failures, missed punts and unrequited love, Charlie Brown kept at it. With a soft heart and tough spirit, he courageously bounced back every time with an “I-got-this” determination that inspires me.

If it weren’t for the wise and often encouraging words of best friends Linus and Schroeder, Charlie Brown might have tapped out long ago. Instead, he leaned on compassionate, philosophical Linus (described by Schulz as “the house intellectual”) and telling-it-like-it-is Schroeder to bolster his spirit. Like any good BFFs, his pals picked him up when he felt down and reminded him to stay true to himself. If we saw Charlie Brown as an adult, he’d probably be hanging out at a sports bar with Linus and Schroeder, sharing a few beers, commiserating over their recent loss on the baseball diamond and talking about girl troubles. And don’t even get me started on the powerful bond between Snoopy and Woodstock. Best. Friendship. Ever.

As the perpetual fall guy and victim of countless verbal assaults (especially from Lucy), Charlie Brown literally took a beating on a regular basis. But despite it all, he forgave his doubters and tormentors, looked for the good in others and behaved kindly toward them. You didnâ&#x20AC;&#x2122;t see Charlie Brown plotting some evil revenge against his classmates or trash-talking that bully Lucy. Instead, he epitomized grace.

. Charlie Brown did not let his terrible win-loss record stop him from playing baseball. He showed up on the pitcherâ&#x20AC;&#x2122;s mound every time purely for his love of the game. This serves as a terrific reminder to keep on writing regardless of how many rejections I might get from publishers, how hard it might be to grow my humor blog or how much I need to learn about tech apps and social media. I love to write, and I believe in myself.

As students, teachers and parents prepare to head back to school, in one way or another, it can be quite unnerving to think about all the things that will be different this year. You’ll have a new teacher, new classmates, maybe a new school and some may be experimenting virtual or homeschooling this year. The good thing is that none of these “new” worries stick around for long. In order to be properly prepared for this new adventure, let’s look at all the ways you can better prepare yourself mentally and physically for a new school year.

Know what to expect on the first day of

The first day is often the most important and in order to be off to the right start, you’ll want to get a great night’s sleep the night before and eat a healthy wholesome breakfast the morning of.

Elementary School

This is the day that you’ll get to meet everyone and get to know a little more about them. This can be quite nerve racking, in order to make your day a little more comfortable, try wearing a special outfit or if you’re required to wear a uniform, try adding a favorite watch, or accessory to show off your personal style. When you enter the classroom, your teacher should have specific instructions for you, find the instructions then reach out to your teacher because you never know, they might be just as nervous as you.

Middle School

Entering middle school often means a new school so take the time to research the school beforehand to be more mentally ready. It will help to have all your school supplies in order, and to pick out your outfit ahead of time. If you’re required to wear a uniform, find something special that you can take with you to make you less nervous.

High School

If you’re in middle school or high school you will most likely dive head first into your studies but luckily most schools will hold an orientation before school starts. Use this opportunity to get to know someone in your classes and learn your way around the school building so you don’t feel overwhelmed on the first day. Believe it or not, a lot of the people you’ll talk to at orientation, will probably be feeling nervous as well. If you start a conversation with them about your common concerns, you may just spark a new friendship before school even begins.

Know how to adequately

based on your grade level. Transitioning into a new grade level can be challenging for the student but it is a natural part of all educational programs. Just remember that each grade level brings its own unique challenges, so youâ&#x20AC;&#x2122;ll want to properly prepare for the teachers, classmates, schedules, buildings and routines of your own grade level.

Elementary School

If your child is starting Kindergarten or 1st grade, make sure they are ready to take care of themselves and their supplies but be sure to put their name on everything just in case. Youâ&#x20AC;&#x2122;ll also want to make sure they are able to open their snacks on their own. Have talks with them about what to expect from their new school so they are mentally ready to handle the expectations that await them in their new grades.

Middle School

If youâ&#x20AC;&#x2122;re transitioning into middle school be prepared to deal with higher volumes of homework, more long-term projects, and tests such as midterms and final exams. The best way to prepare for this is to find the study method that fits you best, reading and understanding the provided study guides, and finding a friend or parent to quiz you.

High School

If you’re transitioning into high school be prepared to deal with higher frequencies of tests and quizzes, harder curriculum, and higher stakes. Remember that your grades in high school affect where you go to college. So, try getting involved in things that will look good on your transcripts such as joining extracurricular activities, clubs, student government, and sports. Developing a love for independent reading will help you greatly in high school and on into your higher education.

Steele Equine Veterinary Services and Performance Horse Center has provided unsurpassed Veterinary services since it was founded in 1998. Dr. Liz Steele, DVM, along with her husband TJ and all the amazing staff, provide exceptional services, diagnosis and treatment to help keep your equine in great health. Their vision to create a unique Veterinary facility offering innovative diagnostic, performance horse, surgical, reproductive, and rehabilitative services in Hardee County and surrounding areas has come to fruition as they opened their new facilities. Performance Horses With the addition of their new facilities, Steele Equine Veterinary Services & Performance Horse Center is now home to some of the top notch professional fitness training equipment for performance horses in the Central Florida area. They are equipped with a Kraft salt water walker that effectively works the horse’s muscles. With this equipment they are also able to raise and lower the water levels depending on the necessary training required for the horse. Steele tells us that, “When the water levels are low, the horse naturally wants to step higher pulling their hoofs out of the water and strengthening their core muscles. This is particularly good for a horse who may have back problems. While with higher water levels, the horse will experience more water resistance when stepping forward allowing them to work on resistance strength training, and muscle growth to the quadriceps and biceps femoris. Fifteen to twenty minutes in the walker is equal to 1 hour of ground or saddle exercise.” An additional benefit is that the walker is filled with salt water which helps purify any skin or foot problems a horse may deal with, acts as a drawing effect for horses with swollen legs or inflammation, and has a nebulizing effect on the lungs for any horses experiencing respiratory/ breathing issues. Another benefit of the salt water is that it helps keep the water clean.

Performance horses can also train on a state-of-the-art treadmill that can be raised or lowered depending on whether the horse needs to train on an incline or on level ground. It also allows them to pick the right speed according to the horse's needs. Outside of the facility, they are equipped with a Kraft covered outdoor walker with German GeoTextile (GGT) Jumperâ&#x20AC;&#x2122;s Blend footing made up of synthetic fiber and fine sand. This equipment can also be used for rehabilitation for injured horses as well as performance horses. Some horses are asked to burn loads of energy on the weekend at various competitions but need to be worked during the week to stay healthy in between events. This facility has everything an owner would need to have their athletes kept in shape.

With their access to cutting edge diagnostic tools, Steele Equine has the experience and capability to provide your horse with the treatments and general surgeries they may require. Liz Steele and her associate, Dr. Stephanie Kirchman are professionally trained to perform surgeries and their new facility is equipped with a sanitized, padded operating room. Their surgery room is a perfect place for them to operate in a clean space with state-of-the-art equipment where they are able to keep the horses under anesthesia longer in order to complete the necessary operation. They are also hoping to recruit a board certified surgeon to join their team and assist with specialized surgeries. Â&#x201E;

Podiatry and Dentistry TJ Steele, a certified equine dental technician and certified journeyman farrier, along with Dr. Stephanie Kirchman, DVM, are able to assist with any podiatry or dentistry needs a horse may have when at the facility. If a horse loses a shoe during training, they are able to call the farrier and make a specialty shoe right there on sight. Teen Camps and Interns Not only does Steele Equine minister to horses they also provide an engaging learning/training environment for aspiring veterinarians from youth to advanced Veterinary Students. They are in the process of building their bunkhouse and will use it to house summer camps for kids ages 10-15 who hope to be a veterinarian. This will be a 3-day camp allowing the kids to eat, sleep, and breathe equine. They also partner with the University of Florida along with other Veterinarian schools to allow students to experience a real life practice. This also gives students who are in their Junior and Senior year the ability to complete their 2-week clinical rotations.

They hope to have the bunkhouse 100% complete by the beginning of next year and will be able to host different veterinarians and guests in case of an emergency surgery went late in the night and they need a place to sleep through the night. Cattle Drive Sculpture Project Presented by Okeechobee Main Street’s Arts & Culture Alliance

Okeechobee Main Street’s Art and Culture Alliance is raising funds to bring a bronze cattle drive sculpture to Okeechobee. The project will consist of ten bronze sculptures and will include a horse with rider, calf, dog, six head of cattle and cowboy on a fence. The sculptures will celebrate the ranching lifestyle in Okeechobee County as well as celebrate the 500-year anniversary of the first cattle brought to Florida. In 1521 the earliest Spanish explorers and seven Andalusia cattle arrived on Florida shores. The project will be installed in the City of Okeechobee at Flagler Park in the Fall of 2021. The cattle sculptures will graze on the grass along side of the sidewalk with native plants added for authenticity. Visitors will be able to walk along the sidewalk and feel like they are in the middle of a cattle drive and will also be able to read about the history of Okeechobee ranchers. The OKMS Arts and Culture Alliance’s mission is to connect people to the arts and to each other. We want our art projects to celebrate the uniqueness of our community. This exhibit will not only be a celebration of Okeechobee ranchers but will also be an interactive installation containing historical content within the exhibit. This sculpture project will preserve the legacy of Florida heritage for many generations to come, allowing the essence of the Florida Cowboy to come alive here in the Heartland. As summer turns into fall we start craving heartier foods — the kind of stick-to-your-ribs comfort food that warms you up and give you energy for all kinds of outdoor activities. Our Southern Chef shares these recipes that are exactly what you've been looking for.

BARBECUE BACON CHICKEN BAKE Five chicken breasts, cut in half and then cut into cutlets. Barbecue Rub: 1 Tbsp. Salt 1 tsp. pepper 1 Tbsp. garlic powder 1 Tbsp. smoked paprika 1 Tbsp. onion powder 1/2 tsp. cayenne pepper

20 slices bacon 1 cup barbecue sauce (favorite) 10 slices cheese (cheddar preferred) 2 green bell peppers, sliced 2 red bell peppers, sliced

Preheat oven to 350 degrees. Prepare chicken breasts (end size should be 3 x 3 x ½ inch). Prepare Rub. Place chicken in bowl and pour spice rub over; stir until completely coated. Arrange bacon slices in loaf pan, making sure that bottom and sides and completely covered with excess bacon draping over sides. Layer: 4 chicken pieces, 2 tablespoons barbecue sauce, 5 slices cheese, 4 more chicken, 2 tablespoons barbecue sauce, green pepper, and onion with 2 tablespoons barbecue sauce. Continue with red bell pepper, 5 slices cheese, with chicken on top. Wrap loaf with excess bacon completely covering loaf. Cover with aluminum foil, place on baking sheet. Bake for 1 hour. Remove foil and carefully drain any excess fat. Bake for additional 30 minutes. Remove from oven. Invert loaf onto baking pan, brush with remaining barbecue sauce and broil 5 minutes. Slice like meatloaf and serve.

MEATBALL LASAGNA 8 oz. pasta (any type: campanile, pappardelle, penne rigate, orecchiette) 22 oz. bag of frozen small Italian style meatballs 25.5 oz. jar of favorite tomato pasta sauce 1 1/2 cups water 1 tsp. Italian seasoning 1 tsp. Oregano powder 1 tsp. dried Oregano leaves 2 cups shredded Mozzarella cheese Heat oven to 375 degrees. Spray 13 x 9-inch baking dish with cooking spray. Mix all ingredients (except cheese) and pour into prepared dish. Cover tightly with aluminum foil. Bake 40 minutes. Remove dish from oven; uncover and stir to thoroughly combine ingredients. Sprinkle cheese on top and bake an additional 5-10 minutes longer or until pasta is tender and cheese is melted. Note: I want to try this in my slow cooker!

CHOCOLATE PEANUT BUTTER LAVA CAKE 1 stick butter (1/2 cup) 2 Tbsp. cocoa powder 4 oz. dark chocolate, chopped or chips 1/2 cup peanut butter (your choice) 1/3 cup sugar 3 eggs 1 tsp. vanilla In microwave bowl, add dark chocolate and butter. Microwave at 15 second intervals, stirring until fully mixed and melted. Preheat oven to 425 degrees. In separate bowl whisk eggs, sugar and vanilla. Once combined add chocolate mixture. Prepare ramekins. Butter sides and bottom and dust with cocoa powder. Place scoop of batter (approximately 1/4 cup) into each ramekin. Spoon approximately 2 tablespoons of peanut butter in center of each ramekin. Cover peanut butter with remaining chocolate batter. Bake at 425 degrees for 10-12 minutes. Sides should be firm but soft center. Do not overbake. Go around ramekin with knife to carefully loosen. Place dessert plate over ramekin and with dish towel to hold hot ramekin invert lava cake onto dish. Sprinkle with cocoa, powdered sugar if desired. Great with ice cream.

Good health is not as complicated as the fitness magazines would have you believe. The healthiest people seem to have some general basics under control, and everything else is just the low sugar, all natural, non-GMO icing on top. Four simple Pillars of Health seem to form a solid foundation for vitality and longevity- solid nutrition, plenty of exercise, great sleep and as little stress as possible. While these four areas are of arguably equal importance, exercise is often the easiest entry point for positive life changes. While you can’t simply exercise yourself healthy, it does seem that exercise provides some immediate benefits in other areas like stress relief, better sleep, and possibly the mindset that after all that work you should feed your body well. Starting an exercise routine doesn’t require much of anything either. You can begin exercising right in your own home with little or no equipment at all! The entry point is easy and the options are limitless. “If you are going to work out at home, the most important thing is to have a plan,” says Jacob Vandergriff, lead strength and conditioning coach at Haka Fitness. “Choose a balanced set of exercises that gets you moving in different directions. Keep your heart rate high and limit the overall workout to a doable 15-35 minutes.” A great home workout can be summed up with 5 basic principles.

GET MOBILE!

Before you get to the hard stuff, be sure to get your body warmed up with some simple movements that generate some heat in the body. You could do a few Yoga sun salutations, a Pilates core series, take a 10 min power walk, or string together some basic mat exercises such as planks, bridges, and inch worms. Whatever you choose, your body should feel looser and your brow should be shimmering with the first bits of sweat at the end of a warm up.

GET UP, GET DOWN! An at home workout can be designed in a variety of ways. One surefire tactic for getting as much movement as possible while keeping the heart rate high is to combine prone (lying down) movements and standing movements. Moving from a lying down position to a standing position requires a greater cardiac output. You can incorporate this philosophy by creating a circuit of 2-3 exercises with one exercise placing the body in the horizontal position. You might do pull-ups followed by push ups followed by squats. Take a rest of 60-90 seconds and repeat the circuit for 5 or 6 rounds. Â&#x201E;

GET BALANCED! A common mistake of the workout enthusiast is to work only the muscles that can be seen in the mirror and ignoring the opposing muscles. It is certainly more difficult to effectively work the posterior chain (back of the body) but it is incredibly important to keep the body in balance! Try to think in a 1:1 ratio. If you want to work upper body, do one exercise each for the chest or biceps and one exercise each for the back and triceps. If you are hitting the total body, make sure to plan one upper body exercise for every one lower body exercise. And donâ&#x20AC;&#x2122;t neglect the back of the legs, either. Dumbbell dead-lifts, bridges, or stability ball drags are all easy exercises to strengthen the hamstrings and glutes. Â&#x201E;

GET MOTIVATED! The most difficult part of the at home workout program is sticking with it. Try enlisting a few friends to workout at your home with you, or meet virtually, and rotate who creates the workout. It can also help to make your workout a game! Try picking 3 exercises and then rolling a dice to see how many times you have to do the circuit before you can rest. Another option is to assign an exercise to each suit in a deck of cards. When you flip a card, you do the number indicated by the card (face cards are 12, Aces are 20) of the exercise indicated by the suit- hearts are lunges, spades are pushups, etc. Instead of counting reps, try setting a repeating 30 sec beep on a GymBoss timer or phone app. Move from exercise to exercise on the beep. However you design it, the most important thing is to move!
